ALMOND RICOTTA BARS

Uses a 12x18 (half sheet) pan*

FOR BARS: • 2 1/2 cups King Midas flour* • 1 Tbsp baking powder • 1 tsp salt • 2 sticks unsalted butter, softened • 2 cups white sugar • 2 eggs • 2 tsp almond extract* • 1 tsp pure vanilla extract* • 1 (15oz) whole milk ricotta cheese • 1 bag sliced almonds* (for topping)

- Preheat oven to 325 degrees. - Grease bottom & sides of 12x18 pan.* - In medium bowl, sift flour, baking powder, & salt. - In bowl of electric mixer, beat 2 sticks butter & sugar till light & fluffy. - Add eggs & beat thoroughly. - Add almond & vanilla extracts. - Add ricotta cheese till just combined. - Spread batter in prepared pan & bake 35-45 minutes till edges are lightly golden. -Cool completely on wire rack.*

FROSTING: • 1 stick butter • 4oz cream cheese • 3 cups 10X sugar* • 1 tsp almond extract*

- Place all ingredients in bowl. Using an electric mixer, beat until combined - Spread over cooled bars, cut into squares & top with sliced almonds.

FRUITCAKE BARK

This one is for grown-ups only. Or Santa.

• 2/3 cup candied fruit* • 2 Tbsp brandy • 1/2 cup chopped walnuts* • 1 lb Merckens white chocolate*

- Add brandy to candied fruit in original container with lid. - Let soak for 1 week, turning occasionally. - Melt Merckens white chocolate. - Add brandied fruit & nuts, stirring until all coated. - Spread onto wax paper or parchment*. Let set. - Break into bite sized pieces.

CHERRY SNOWBALLS

• 1 cup butter, softened • 1/2 cup 10X sugar* • 1 Tbsp water • 1 tsp vanilla extract* • 2 cups King Midas flour* • 1 cup quick cooking oats • 1/2 tsp salt • 36 maraschino cherries, well drained • 1 lb Merckens white chocolate* • 2 cups sweet coconut*

- In mixing bowl, cream butter, sugar, water and vanilla. - In separate bowl, combine flour, oats and salt. Gradually add the creamed mixture. - Divide dough into 36 tablespoon sized pieces. - Wrap each piece of dough around a cherry, forming a ball. Place 2 inches apart on ungreased baking sheet.* - Bake at 350 degrees for 18-20 minutes. Cool on wire rack.* - Melt white chocolate. Dip each ball and roll in coconut. Let set.
