Coast Brothers’ Keto Pizza Chaffles

Keto Pizza Chaffle tastes like pizza and is fun to make. You can customize toppings and it’s great for family suppers. Chaffle is always made with egg and cheese. To make a pizza chaffle, you add in more ingredients for the “pizza” taste. Made in a waffle iron, it’s easy to make and you can freeze the chaffles for later. (We’ve posted the how-to video online.)

CHAFFLE (MAKES 2)

1 tablespoon almond flour 1 egg white 1/2 cup mozzarella cheese, shredded 1/4 cup softened cream cheese 1/4 tsp baking powder 1/8 tsp Italian seasoning 1/4 tsp garlic powder 1 pinch sea salt

Chaffle Pizza Topping

3 tsp low carb marinara sauce Fresh mozzarella Thick pepperoni slices 1 tbsp parmesan cheese, shredded

INSTRUCTIONS

1) Heat up waffle iron and start the broiler in your oven. 2) In a small bowl, mix almond flour, egg white, mozzarella cheese, softened cream cheese, baking powder, garlic powder, Italian seasonings, and a pinch of salt. 3) Pour 1/2 the batter in the waffle maker, close the top. Cook for 3-4 minutes or until chaffle edge is crispy. 4) Top each chaffle with tomato sauce (1 1/2 tsp), pepperoni, parmesan and non-starchy veggie toppings such as bell peppers. 5) Place chaffle on a baking sheet on oven top shelf for 2-3 minutes or until cheese is melted and bubbly.

They are fabulous in a Negroni, Martini or with tonic. Most are made from rice, barley or corn-based neutral spirits, but some use sweet potato or sugarcane. Island Grill, Rumfish, Caddy’s and Bongo’s make some of the best Mudslides in town. Whip up Kahlua with this simple recipe pinched from a Tijuana bartender. Ingredients: 2 cups vodka, 2 cups white sugar, 1 cup water, 1 tablespoon vanilla and ½ cup Café Bustelo instant coffee crystals. Directions: Bring the water to a simmer and stir in the sugar, vanilla and coffee crystals. Simmer at low heat for about ten minutes until the mixture resembles a syrup. Let syrup cool. Pour vodka into a Mason jar and add syrup. Refrigerate.

Italian Holiday: Thanks to Jarrett Sabatini at Intermezzo, I’m a huge Italian aperitif fan of Aperol and Campari. While he is currently purveying tiki cocktails, I’ve made my summer of love drink the Cardinale with Campari, club soda and Aranciata, a bitter orangeade. Campari’s strong bittersweet flavor with a hint of orange peel, cherry, clove, and cinnamon is a perfect picnic cocktail and I love daSesto Italiano’s take on both this and Aperol Spritz.
