Welcome to this celebration issue in the first quarter of the party calendar year. Topping the list of attended events and parties is the MIDNIGHT CELEBRATION INTO 2017, which, from the joyous sounds of champagne flutes clinking, back slaps, kisses, songs of praise, choruses of happiness, sparklers whooshing and fireworks rattling around the world, culminated in the Celebration of St. Valentine’s Day. From Times Square in New York to Trafalgar Square in London, to Capetown, Dubai and Lagos - here at our very own Boat club, the best parties of the year were hosted in over 39 different local time zones. Unwittingly around the world, the celebrations have collectively set the mood for the rest of the year! Valentine’s day was celebrated with kisses, proposals of love, chocolate and secrets on how to keep the knot tied. Writer EMMANUEL BASSEY From the idyllic retreat of the countryside to the bustle of the city, culinary expert, Tom Wolfe has carved a niche for himself in the competitive cooking industry. He honed his craft at the French Culinary Institute and later on, under the watchful eye of the Chilean Restaurateur, Veronica Segovia. He launched his food, fashion and design company, Tom Wolfe Produktions in 2000. He has since catered for celebrities such as Jennifer Lopez, Madonna and Stella McCartney. Adding to his star-studded client list are luxury brands such as Dom Perignon, Dior, Roberto Cavalli and Hennessey who invite him to art direct, exhibit, style and more importantly, cook! Was becoming a chef an innate conscious decision? I grew up in the states and learned to cook with my swedish grandmother since the age of 5. I always knew I would be a chef but had no idea I would reach the heights I have done. You are known for your fusion of art and food, what is the inspiration behind your style? I was trained in French cooking which is a great basis to cook any cuisine. I travel so much it was just natural to start fusing flavours and cultures. From all the countries you have been to what’s your favourite cuisine? That’s a tough question! Russian and Latino, but visiting Nigeria last year and taking some cooking classes affected me profoundly!
What is your favourite Nigerian cuisine? Jollof rice and moi moi! What was it like catering for Madonna’s Hard Candy Gym? She has been such an influence on my life and we are both born in Michigan, moved to NYC in our teens so lots of similarities. I’ll never forget when I got the phone call from her manager - a dream come true ! Exciting and challenging - it literally used all my skills in one event ! The food was Kosher Vegan and I cooked with the chefs from the Kabala centre - a great experience! What is your advice for chefs who are inspired by your art? Create dishes that inspire you and follow your heart. Now especially it’s about being individual What are the challenges you’ve faced in the food industry? When I was young it took me a long time to get professional training because the school fees were so high. My mentor Jane Warrick helped me receive a full scholarship to the French Culinary Institute in NYC that changed my life. I feel there should be more mentoring and scholarship programs available for young chefs. Also in the beginning when i 1st set up my company many people didn’t understand my fusion of food art and cultures but I didn’t let it stop me. Now I have a blessed life!

Elion House Hotel welcomes guests on the Lagos Island metropolis for delicious dining and provides a lovely home away from home for visitors in Nigeria’s largest city. My dining partner had the Nigerian dish, which had the warmth and taste of homemade food. The chef came out to greet us, a merry man as he went about his duties with a smile printed on his face.

Their menu offers a wide variety of mouthwatering starters for vegetarians and omnivores. I had the steak, which was sautéed to perfection.
The wines were top-notch but we found them a tad pricey yet really worth sampling. Our recommendation, dine here when you can afford it but know the experience will be worth your while.

sweet bundt cake
INGREDIENTS For the Cake: 400 grams of unsalted butter 3 cups cake flour, sifted, plus more for the pan 1 12 -ounce bag fresh or frozen cranberries, thawed if frozen 2 cups maple syrup 1/2 cup sugar 6 tablespoons whole milk or almond milk 3 large eggs plus 2 egg yolks 2 teaspoons vanilla extract 2 tablespoons finely grated Meyer lemon zest 1 1/2 teaspoons baking powder 1/2 teaspoon sea salt or Himalayan salt For the Syrup and Glaze: 1/4 cup granulated sugar 1/2 cup plus 2 tablespoons Meyer lemon juice 1 1/2 cups confectioners’ sugar
DIRECTIONS Cake Preheat oven to 175 degrees Celsius. Coat the bundt pan with a thin layer of butter and dust with flour. Whisk the milk, eggs, maple syrup and vanilla in a bowl. Whisk the flour, lemon zest, baking powder and salt in a large bowl. Add the 400 grams of butter and beat with mixer until smooth. Add half of the milk mixture, and beat until smooth. Add the second half and do the same. Pour the batter into the bundt pan and smooth evenly. Bake for 45 to 60 minutes, a toothpick inserted into the center of the cake should come out clean. Syrup Mix 1/2 maple syrup into 1/2 cup lemon juice in a saucepan over low heat. Once the cake is fully baked, use the toothpick to poke 20 holes on top and pour the syrup on. Cool in pan for 10 minutes, then remove from pan and wrap tightly in plastic and let sit overnight. To serve, whisk the confectioners’ sugar and the remaining 2 tablespoons lemon juice until smooth. Spoon over the cake. (last step optional)

In Nigeria you don’t need to look too far to find a wedding, baby shower, engagement party, birthday party, you name, it to attend. Maybe you have never considered yourself much of a host but you are willing to dip your toes into the action if you are given a good enough reason. You are smart though, so actually you know that there are 1001 reasons to throw a party. Parties are a great way to meet new people, especially if you are single and have become particularly adept at coaxing your male friends into bringing one of their friends along. Parties are also a great way to catch up with all your friends at once. At some point you get tired of picking up phone calls only to hear, “You just forgot about me sha”. That gets annoying so you could decide to throw a party, spend some time with all your people and then enjoy the next few months of guilt free phone calls. But there is another reason to throw a party. It’s not particularly something we all want to talk about, but let’s do it. Let’s jump right in with one exposing question. Why can’t you seem to make any more really good friends?

To paraphrase a gorgeous line by E.E. Cummings, “Here is the root of the root and the bud of the bud, and the sky of the sky of a tree called life and the wonder that’s keeping your relationships too shallow”, the older you get, the more effort you need to put into creating experiences. So how do we fix this and where do parties come in?
Of course, it is difficult to recreate such powerful experiences outside of school and that particular ‘coming of age’ phase. That said, there is nothing innate to about adulthood that makes it more difficult to make good friends. Somewhere in between 6am wake-ups for the gym and a school run and work and getting home for dinner and that side hustle, you can’t seem to find the time to spend quality time with your friends. And before you even mention it, “going out for drinks” is not quality time and “meeting up for coffee” is not quality time. In fact, you’ll find that all you ever do during those outings is talk about past experiences as opposed to creating new ones. So the next time your tethering on the edge and wondering if you should throw yourself a birthday party, my darling go for it. Make it out-of-this world lavish or a cozy intimate affair, blow through your budget on decor or bunker down for a DIY affair, hire the most famous chef in the country or enlist your friends to help with the menu. Whatever scale and with whatever budget, creating a shared experience only demands two or more people and some good humour.

Or perhaps it will make more sense if you instead, take a look at your inventory of close friends and realize that you have known most of them since your schooling days. Why is this realization so universal? Here is one theory: shared experiences, or some powerful memory you have lived through with someone else. Your former schoolmates have seen you laugh and cry. They’ve seen how you react when you’re irritated, disappointed, devastated. Shared experiences create shared ties that are not so easily unknotted. This is why you probably have that one friend, that no matter how much she irritates you, no matter how many letters you intend to send her officially ending the friendship, you never do. This is because to imagine your life going forward without this person that has seen you in your barest and often at your most vulnerable moments, is unthinkable.

I am willing to bet that straight after Nigeria’s independence ceremony on 1 October 1960 at the then Race Course, now known as Tafawa Balewa Square (named after Prime Minster Alhaji Tafawa Balewa) the new ministers of independent Nigeria must have driven straight to Queen’s Drive in Ikoyi for an afternoon tea reception in true British style.
Go to any of the private members clubs in Lagos, that have practised the longest of British tradition, ask the waiter for afternoon tea and you are likely to be offered chicken suya accompanied with mingown as a hot beverage. Afternoon tea Ke! “In this hot afternoon why should I drink tea, do you think you are in London?”
The Race Course was known to have had the finest horses, it was here that affluent Nigerian and British politicians would gather on weekends for horse racing and betting games. Renowned Ambasador Dehinde Fernandez was one of such privileged Nigerians who owned a stable of horses, and would host afternoon tea to perfection. He continued this tradition at the Ritz Hotel for many years of his life in France. Although afternoon tea was not only enjoyed by the elite, so did university students. Most would have gathered at the Ikoyi Park now called Park View for a picnic after school hours which consisted of an afternoon tea and snacks popularly called Gala. 56 years later Nigerians are not drinking afternoon tea. With an increasing number of mums on school runs, with polo replacing horse betting as a front-line sport, but there are enough luxury afternoon tea lovers to bring back the clime for hosting afternoon tea parties in this bubbling city of parties and events.
I combed the city from hotel to hotel, deli to deli and found only one location serving afternoon tea in its true English style of scones and sandwiches, Soraya’s Deli at the Wheat Baker Hotel . However in other parts of Africa, with similar colonial heritage afternoon tea is quite an affair. I recall a visit to Victoria Falls in Zimbabwe, a must see! One of the seven wonders of the world. High tea is very much a tourist attraction, the place is bustling with tourists who want to sip tea against the backdrop of the Victoria Falls bird watching, here the baboons come out for high tea also. The baboons know exactly what time high tea is, so there I was with my three tier tray of treats, the scones at the middle tier, a great big baboon swooped on three tables in a jiffy and made away with all the scones each on the middle tier set on three tables. Enough reason for our party planners to introduce tea parties as a high point in the social event calendar for 2017! (Share your

High Tea parties have taken over afternoon tea for two, there are hardly any luxury venues at which to enjoy afternoon tea as a special occasion, one simply will have to organise it oneself and invite friends over. When you do send out your pretty invite guests may wonder if the treat will include a glass of champagne with a sizzling plate of “small chops”! Our local small bites that have substituted a culture of scones, sandwiches and cakes. A fusion of the two would be delicious! Business is booming for the small chops vendors, have a chat with Saheeto the king of small chops. He has more than a thing or two to entice you away from your nine to five job into the catering world of small chops. But so does Chocolate Royal and Cactus and the like that dot the corner shops of Lagos, they are high end on macaroons, cheese and chocolate moose cakes, desserts and candies.

Or imagine lazy sunbathed town of Cape Town, the luxe hotels make a show of afternoon tea, go to most hotels between 2 p.m. and 5 p.m. there is a buffet spread of little bites, displayed in a very attractive sumptuous and inviting manner. Only the well disciplined or shy eaters, can resist returning for multiple helpings. Budget wise the three tier tray is best for hospitality on a budget. Party wise I love a buffet display of minis set at different levels of trays and on interesting props. Back in the villages and townships afternoon tea will be a mug of a hot beverage with freshly baked bread served straight from the bakery. Either way make a celebration of it, a time to chill in the mid afternoon and invite friends over for a sweet treat.

The cloud of anxiety looms dangerously over an event planner’s head, as thoughts quickly swell into a storm in the sky. What are the event’s objectives? How do I best cater to my client? How forthcoming will they be? Will I be remunerated? Then comes the critical choice of vendors. Will the client choose based on quality or be biased by their own cloud of pressure from family and friends? Will the in-laws be hired to make the cake and the best friend hired to cater the food- even if to the detriment of the event? The budget is presented, and I immediately begin weaving ideas in my mind of how, within monetary constraints, I will still deliver a triple A rated party. But working within the constraints of a budget means some aspects will need to take priority. Will the client prefer to splurge on location or dedicate more to catering. Thunder shoots from the clouds as decor and gbegiri compete for their share of the budget, but attention to detail makes you an excellent planner and so designing each of these steps can easily become your worst nightmare!

By the time negotiations were complete my fees were negotiated to bare bones, but my consultant encouraged me to take on the job and my crew promised to support me, as it was my first major event. .....And support they did, everything was set. My client was on and on about this and that. I needed to impress both her and my consultant so I delivered beyond the contract. I became the planner as well as the event manager, the decorator, the coordinator, and the designer. Before I realised, I was neck deep doing everything that I did not charge for but with the support of the different department heads, I was confident the event would be a success and I could secure me my next job. D-Day came; we produced and put into action a great event. Everything was in place, the food was great, music good, guests happy, and I gave myself the much deserved tap on the back. Phew, I could look forward to my next event, which I needed to build a customer base for my growing brand. Suddenly, arriving late just as the party was about to come to a close, a group of models; beautifully dressed, make up on point, head turning ladies each with gentlemen on their arms and a body guard trailing behind. Seeing that there were no more available seats as I had already seated fifty extra guests, more than was arranged and budgeted for, Madam celebrant orders me to conjure a table of 12 seats. “Temi – Tope,” she called. “Quickly, please show my guests to their table”. “Uh hmm, there are no empty seats and no tables ma.” “Fix it!!” She said behind clenched teeth, “If my guests are left standing for one more minute, you are not getting your balance!”

I scuttled along to the truck of props and rentals, two ushers scuttling behind me in confusion and in two minutes, the table was set and guests were seated. We had to squeeze the table on the walkway left for waiter service, not the best but Madam seemed okay with it. What mattered for the moment was that they were seated however- the carefully planned seating arrangement was further distorted by more guests pulling chairs to sit at this newly created table. I was baffled, as a table for 10 became a table for 18. Mr. Thomas the headwaiter and Jumbo the chef catered to the guests. The duo work well together, impeccably dressed, they provide a five star service. “Yeeeh! My Deola Sagoe outfit! Why now! Do you see what you have done?” Jumbo took the white Napkin and started dabbing her outfit, bags, and shoes. “Stop! Don’t you dare put your hands on me! You are going to pay for this,” she continued. Jumbo was stunned as he continued to apologize but she was clearly having none of it as she continued yelling about the mishap. The rest is history as so much fuss ensued, everyone upset, Madam celebrant stopped her dancing and her 12 VIP guests all left in sympathy of one of their own. Meanwhile other guests took the opportunity to head to the next party, the music changed, the hall emptied out- much faster than intended. The party came to an abrupt end! Just like that the clouds gave in and my mind was flooded with pouring rain. This quickly became my worst nightmare- the seating arrangement mishap that brought an event to its knees. At the end I never got the balance due and the VIP guests berated me on social media as a planner no one should ever go to! Lesson learned: Nigerians will always bring plus fives and to be an excellent planner you have to plan for that and the worst.

Can they work within your budget? A crucial step because the budget is the engine for any event. Anything exceeding what you have budgeted for may spell disaster. To avoid such a situation, it is advisable to ensure that the planner understands how much you can afford to spend and is willing to work within such confines. Once a financial agreement is reached, you can get down to creating unforgettable experiences.
Can you have access to previous event productions? This would give you a clearer idea of your planner’s capabilities. From there, you can also pick out ideas that inspire you for your own event.
Does he/she have a command of the right team members? Putting an event together cannot be done alone. An important aspect of any planning is the right event team. A pre-meeting with the event planning team before the event can be requested for so as to fully grasp that they understand and are up to the task of giving you the topnotch event you so desire.
How often can you meet for briefings before the event? Truly, there are no limitations to the number of times you can meet before an event. What is important is that the key messages are passed during those briefings which can be by telephone, video calls and meetings in persons.

Can you meet with the vendors or service providers for the events? Yes, you can. This does not mean that you are undermining the expertise of the planner. In fact in most cases, the planner does organize such meetings so that everyone knows who is who and are more clear with regards to what it is that must be done to make your event a success.

Can you have access to referrals from previous persons they’ve worked for? Nothing sells a business better than a good referral. This also goes a long way to presenting an understanding of the planners interpersonal relationship skills and how well he/she is able to build a customer base because a happy customer will only chatter away about how excellent goods or services are when pleased.
Do they fully understand the concept? Every event is different. Like no two birthdays will be designed the same way, even though they’re both birthdays. For example, a 70th birthday party for Mr. Smith will certainly be different from the 50th birthday party of the same Mr. Smith. page 67
