1 Bring the quinoa and tea to a boil in a medium pot. Reduce heat to low, cover and simmer for about 15 minutes. Remove from heat and stir in spinach. Cover and let stand. 2 Toss the potato cubes with 2 tbsp olive oil and spread on a foil-lined baking sheet. Roast at 400°F for about 20 minutes, stirring once, until potatoes are tender. 3 Transfer potatoes to a large bowl. Add the quinoa-spinach mixture, cranberries, almonds and parsley. Mix well. Whisk together orange juice, zest and 1 tbsp olive oil. Pour over salad and mix well. Grind SalTEA Topper to taste. Enjoy!
