Drawing on both his professional training and Italian background, Naples caterer Patrick McGrath Beraduce matches his customers with meals that are creative, healthy, and fun. “My mother was an entrepreneur,” says the chef, “so I was always in the kitchen with my grandmother when I was growing up. She was from the Campobasso region of Italy and taught me both traditional recipes and family secrets.” He founded the company Quality Thyme Meals last year during the pandemic in response to customers who were seeking a private, in-home dining experience. In addition to providing tasting menus for families and groups, he works with businesses, schools, and specialty purveyors, such as the Southwest Florida Picnic Co.
Beraduce began working in restaurants at age 14 and graduated from the Culinary Institute of America at Hyde Park in New York with a bachelor of business administration degree in food business management. After cooking school, he became fascinated with the process of distillation and worked with the Taconic Distillery in upstate New York as well as Seattle’s Westland Distillery. He managed both tasting rooms and served as the in-house chef at Westland, devising food pairings for the peated whiskey selections.
As a chef, he focuses on using hyper-local ingredients like guanabana, a relative of jackfruit that he uses in desserts such as crème brûlée. He’s also fond of braising Florida wild boar in red wine and mushrooms to make a filling for tortelloni.

Apples, in particular, have long been a symbol of the fall harvest, and drinking apple cider (the unpasteurized, unfi ltered juice made from apple mash) is a festive way to reap the fruit’s health benefi ts. Ingredients
Cinnamon sugar for rim Several fennel fronds, plus more for garnish 1 1/2 oz. blanco tequila 1/2 oz. agave 1/2 oz. fresh lime juice 2 oz. fresh-pressed apple cider Rim a glass with cinnamon sugar and set aside. In a shaker, muddle a few fennel fronds. Add the remaining ingredients and shake well. Add fresh ice to the prepared glass and the prepared glass and strain the blend. David McCone is an ambassador for the probiotic goodness of fermented and pickled foods. Building on the success of The Naples Canning Co., which he launched in 2019, McCone recently opened The Farm Stand, a gourmet food store on Bonita Beach Road.
“I wanted to have retail distribution,” he explains, “but since I use local, organic, and small-batch products, I realized I wasn’t going to be stocked in supermarkets and big-box stores. I needed to branch out on my own.”
At The Farm Stand, McCone carries his popular jams, jellies, and pickles sourced from produce at Inyoni Organic Farm in Naples and 12 Seasons Farm in Fort Myers. He’s added handmade cast iron skillets from Smithey Ironware Co. in Charleston, South Carolina, and ceramics from Vermont’s Farmhouse Pottery, plus a curated selection of wines as well as coffee and chocolate from area artisans.
“Everything is culinary-related, and nothing is cookie-cutter,” he says. “Quality always comes first. As a result of COVID, I think there’s a huge amount of interest in anti-inflammatory foods. Gut health is vitally important—we’re constantly learning about the ways in which it’s connected to everything else.”
McCone also offers a variety of picnic baskets, a step toward his goal of establishing a CSA (community-supported agriculture) program that will allow him to showcase local farmers. “This is a good start, but I have a broad vision of what it could become.
