CRAVINGS SECOND HELPINGS
There are certain foods we dream about and indulge in again and again, but what are the cravings of those who cook for a living? We asked local chefs and restaurateurs to reveal the dishes they can’t get enough of.
By Mark Spivak
Angelo Romano, Paradiso Ristorante, Lake Worth Craves: Smoked wahoo crudo, The Grove, Delray Beach

PAIRINGS FOR HEAVEN’S SAKE
SB MEDIA GROUP
Pairing sake with food takes many wine connoisseurs into unknown territory. We asked Art Piyavichayanon, owner of The Sea Southeast Asian Kitchen & Sushi Bar in Delray Beach, for guidance in navigating his extensive menu and robust sake list. (theseaasianbistro.com) —M.S.
The Dish: Gai Yang Chicken The Sake: Oze No Yukidoke Sake Behind the Pairing: “This roasted, organic half-chicken is served with turmeric rice, fried shallots, cilantro, jalapeño lime sauce, spicy tamarind, and cucumber mango slaw. It goes very well with Oze No Yukidoke Sake, a light-bodied sake with hints of wet stone and a super dry finish that pairs with fried foods, orange chicken, and meat and seafood options.”
SB MEDIA GROUP
The Dish: Filet Mignon Massaman The Sake: Sayuri Nigori Sake Behind the Pairing: “This grilled 8-ounce filet mignon is served with potato croquettes, tempura brussels sprouts, and cucumber slaw. I pair it with Sayuri Nigori Sake, an unfiltered sake with notes of cream, cherry blossom, and white grape. This is a full-bodied, sweet sake that is a good match with spicy dishes and grilled meat.”
SB MEDIA GROUP The Dish: Hong Kong–style
Chilean Sea Bass « The Sake: Bunraku Sake Behind the Pairing: “We steam the fish with fresh ginger, garlic spinach, scallions, leeks, shiitake mushrooms, and an umami soy broth. Bunraku Sake [has] intense notes of apple and poached pear with floral undertones. Rich and lush, with additional flavors of ripe melon and a hint of nuttiness, it pairs well with sashimi, seasoned foods, and steamed or grilled fish.”

EDITORS’ PICKS TACOS
Zipitios Zipitios
Daphne Nikolopoulos, Daphne Nikolopoulos, Editor in Chief
Nothing tingles the taste buds like a Tinga D Pollo taco from Zipitios. This Mexican street food classic stars a stewed, shredded chicken in a zesty chili-tomato sauce with just a hint of smokiness, served with traditional accompaniments like queso fresco and salsa verde aioli. You’ll be dining at Grandview Public Market in West Palm Beach, but you’ll swear you’re in Playa del Carmen. (facebook.com/zipitios)

Taco Chula
Kristen Desmond LeFevre, Contributing Editor
Don’t be deterred by the line at Taco Chula in Palm Beach Gardens—it moves fast—or the lack of places to sit—you’ll wolf down your food so quickly you won’t need a chair. Tucked away in the corner of a sleepy shopping plaza, this neighborhood secret serves up some of the best tacos anywhere. My favorite? It’s a three-way tie between the carnitas, the barbacoa, and the al pastor tacos, all served in double-hulled, handmade, soft corn tortillas. (tacochula.com)
Casa Linda
Mark Spivak, Wine and Spirits Editor
Located in a strip mall in Boynton Beach, Casa Linda is a hidden gem with a well-rounded menu. They serve variations of tacos al carbon, a dish that evolved from fajitas and essentially is an assembled version of that sizzling classic. Tacos al carbon are traditionally fi lled with steak, but Casa Linda also off ers chicken, carnitas, tilapia, or snapper. Lettuce, tomatoes, cheese, pico de gallo, and guacamole round out the presentation on handmade corn tortillas. (casalindamexican.com)
