SPANAKÓRIZO WITH FETA AND ZUCCHINI

INGREDIENTS 1 BAG SPINACH, CHOPPED 1 CUP RICE, COOKED 1 ZUCCHINI, CHOPPED 5 TBSP. OLIVE OIL 2 CLOVES GARLIC, CHOPPED 1 TSP. TURMERIC 2 TBSP. EACH PARSLEY AND DILL, CHOPPED 1/2 CUP FETA SALT AND PEPPER TO TASTE
METHOD
• Sauté onion and scallions in 2 tablespoons olive oil until translucent, about 3 minutes. Add garlic and cook until fragrant. Add salt, pepper, and turmeric and stir to combine. • Add the zucchini and cook until tender, about 5 minutes. Toss in the spinach and sauté until wilted. Add parsley, dill, and rice, and stir to combine. Adjust seasoning and add feta. Let it all simmer for 10 minutes. Serve with warm, crusty bread or pita chips.
