accountancy
Account for success with expert advice From tax to stock-taking, a professional accountancy firm can help licensed trade operators to improve several aspects of their business
A
CCURATE, reliable and relevant accounts information and regular stock-audit is vital to any business — none more so than those in the licensed trade. This specialist market requires accounting services that know the trade and can advise on the pitfalls, the allowances and the peculiarities, so when HMRC comes calling accounts have already been prepared to the required standards. As established pub accountants in the UK, Roslyns uses the latest technology to provide licensees with
up-to-date, relative and accurate information which is accessible via the firm’s website, by email or by post. Roslyns has been recommended by major pubcos, major breweries and is widely recognised as the benchmark for the industry. The firm has been in operation for 24 years to aid businesses with their finances. Examples of the service standards the company sets and maintains are: • Management accounts are received by clients within eight working days of receipt of paperwork.
Roslyns
• Several levels of service are offered, ranging from quarterly to monthly or even weekly accounts; all include balance sheet, bank reconciliation and budget variance. • All stock-takers are liveried, an automated text confirms appointments, stocks are completed on-site and an email copy is sent direct. Roslyns uses the latest handheld technology to minimise disruption on-site and improve accuracy. • Pay-slips are sent password protected to your staff with a summary to you from £1 per payslip.

Adding a little extra heat to the menu With food becoming an increasingly important part of the on-trade, Cinders Barbecues reckons al fresco catering can give outlets the edge
F
OOD and drink go hand in hand in today’s on-trade, and as the lines between pub and restaurant continue to blur, it’s never been more important for an outlet to get its food offer right. There’s more than one way to stack a rack of ribs or slide out hamburgers to hungry customers, but for operators looking to add some authenticity to their venue’s dining experience bringing out the barbecue can help an outlet stand out from the competition. The team at Cinders Barbecues reckons its equipment is versatile
enough to allow on-trade operators to take every opportunity that arises to boost food sales this summer. As an investment prospect, Cinders Barbecues said its kit can be paid for in a matter of hours on a hot summer day, while the equipment itself has a lifespan of years and includes a commercial warranty. For operators who want to get the most out of their barbecue, the company said there are several steps to grilling success. • Organisation is the key to large catering; organise your staff
accordingly and make sure they each know what their specific job will be. • Your menu should be prepared well in advance; make sure you keep the fat content of food low as excess fat causes flares and smoke. • Experiment with your menu, always have a good supply of sauces, salads and coleslaw on hand and remember vegetarian customers. • Use social media to good effect and build excitement; don’t forget the most valuable free advertising of all, ‘word of mouth’ – tell everyone about your barbecue.

bespoke fabrication
Keep things moving with bespoke fittings An efficient outlet is one that’s well equipped and Vision Sheetmetal Work reckons it has the keys to creating a well-oiled on-trade machine
T
HERE may be nothing better for a business owner than the sound of the tills ringing, but when a venue gets busy the pressure on staff can build, which makes efficiency crucial to serving as many customers as possible while maintaining high standards. The importance of fit for purpose facilities in the on-trade was highlighted by Vision Sheetmetal Work, a firm specialising in the manufacture and installation of bespoke stainless steel fabrications for restaurants, hotels, bars and commercial kitchens. Established in 1985, the East Lothi-
an-based firm focuses on creating efficient working layouts for its on-trade customers, with detailed planning taking into account everything from the bar sink to bottle openers. In addition to well-planned serving facilities, Vision Sheetmetal Work also puts quality at the core of its installations to ensure they stand the test of time. When it comes to kitting out the ontrade, Vision brings a team of fully qualified experts to the table giving the firm the ability to provide custom-built stainless steel fabrication including
sinks, tables, bar work, heated and refrigerated counters, extract canopies and ventilation. Not prepared to rest on its laurels, the team at Vision recently made a major investment in new machinery, allowing the firm to improve its products further, ensuring on-trade customers are provided with products of the highest standard. “As technology moves on we at Vision believe that we should use the best of technology to keep on improving our service but not forgetting good old fashioned values,” said the firm.

Turn heads and fill tills with strong POS With competition in the on-trade fierce, UK POS reckons operators can give venues an edge with effective point of sale and visual displays
A
T a time when competition for customers is fierce, innovative and high quality point of sale (POS) can help operators ensure their outlet stands out from the crowd, increase sales and footfall, and ultimately encourage brand loyalty. UK Point of Sale (UK POS) is a firm specialising in visual display and point of sale for the hospitality industry. The family-owned business has been advising on-trade operators for over 25 years and said there are a number of ways in which operators can use point of sale and visual displays to drive footfall
and sales. UK POS advised licensees to re-evaluate their POS and visual displays ahead of the summer season in order to fully capitalise on the extra sales potential. And the firm highlighted a few basics which it said are often overlooked when it comes to displays. UK POS said licensees should ask themselves if their external POS is working as hard as it could be, utilising pavement signs, A-boards and café barrier systems in an effective way to entice potential passing customers. Inside an outlet, operators should use
POS to sell premium priced drinks and create the impression of a more exclusive experience for customers, according to UK POS. The firm’s new chalkboard range is one example of a display product which can give a rustic and independent feel to a venue whilst being cost effective and easy to update. UK POS also reckons venues selling food can use POS to lift alcohol sales by marketing the drinks range through snap frames, menu holders and pavement signs which promote combined food and drink offers.

catering equipment
Furnishing the trade with top quality kit On-trade equipment has taken a technological leap forward, and New Concept is on hand to ensure operators reap all of the benefits
W
HETHER it’s a completely new venture or the refurbishment of an existing outlet, all licensed trade businesses will need to pick up new catering equipment or furniture at some stage. And choosing the right fixtures and fittings is crucial, as it can mean the difference between an outlet which stands out from the crowd, and one that blends in. Equipment and furnishings supplier New Concept recognises how important it is for operators to embrace modern design and technology.
The firm supplies the on-trade with bar systems, furniture and catering equipment sourced from both Britain and Italy with a range of products that can’t be found anywhere else. New Concept’s range takes full advantage of the advancements in technology that have occurred in the catering equipment market in recent years and offers a range of traditional products which utilise modern technology. Products include the La San Marco coffee machine, which works through Bluetooth and has over one million colour combinations for
LED surface lighting, and the Moretti Forni S Series pizza oven which can be updated by USB stick and consumes up to 50% less electricity than older models. As well as understanding the kit itself, it’s important operators appreciate the full potential of the equipment they are buying; and the team at New Concept encourages customers to attend forums in its Clydebank show room where new products are showcased. These sessions allow customers to buy confident in the knowledge that they have the right equipment for their needs.

Attracting customers with the right drinks The Scottish on-trade is still the best platform to showcase drinks brands, reckons The Keg Shed, and the wholesaler is keen to work with operators
W
ITH so many customers spending their leisure time away from the on-trade it’s never been more important for operators to offer the highest levels of value and service, providing something that can’t be replicated at home. But despite stiff competition, the emergence of new and exciting drinks brands creates an opportunity for the on-trade, according to independent wholesale keg and bar supplier The Keg Shed, as it’s Scotland’s pubs and bars that are the platform on which to showcase drinks at their best.
Trading since 2008, The Keg Shed supplies more than 600 brands and over 70 different draught and cask beers to on-trade outlets in southern Scotland. In addition to its ever-growing portfolio of beers, ciders, wines and spirits, the firm also provides post mix solutions and bar equipment hire for outside events. The team at The Keg Shed reckons wholesalers can play a crucial role in helping operators deliver great customer service, product knowledge and the perfect serve – some of the key components to keeping customers satisfied.
Beyond supplying a broad range of products, The Keg Shed also offers access to market insight, brand owner support and local service. ‘Local’ is a watchword for drinks brands at the moment, and The Keg Shed has responded to growth and interest in locally-produced small-batch spirits and beers. The firm has working relationships with The Craft Beer Clan of Scotland and Matt Munro of Pour Brands as well as major brewers such as Heineken UK, which allows The Keg Shed to carry a portfolio of world beers and ciders.

DESIGN & REFURB
Smart revamps can drive business in Standing still is a cardinal sin for on-trade operators, but design firm Hugh Stirling has a range of solutions – from full refurbishments to freshen ups
I
T’S no secret that some customers can be fickle and, outside of regulars, many visiting the on-trade are on the look out for something new, which is why it’s vital operators keep their venue looking fresh. Glasgow-based design firm Hugh Stirling said one of the biggest mistakes operators can make is to stand still, particularly given the massive changes both legislatively and in terms of leisure habits of customers. The firm has helped numerous businesses over the years by refurbishing and extending premises to allow for
increased food sales, enhanced ‘kerb appeal’ and new external areas. With customer expectations of the on-trade higher than ever, it’s vital operators maintain standards and keep up to date with current trends, which is why Hugh Stirling takes steps to stay on top of new developments in the industry. From a contracting and development point of view, the firm makes use of the many new and more durable products available to enhance interiors and ensure cost efficiency and longevity.
LED lighting in a venue, for example, can result in significant savings on energy bills while timber floors can be replaced with more durable timber effect tile floors. As a company with over 40 years of experience serving the Scottish licensed trade, Hugh Stirling remains committed to putting its experience to good use. The firm can advise and implement on all the necessary permissions for a refurbishment as well as assist with finding the best value solution for both construction and materials.

Technology at the heart of a business Point of sale technology is now used for much more than just payment. Modern systems can touch on every aspect of an outlet’s operation
I
N the fast-moving and demanding licensed trade, electronic point of sale (EPOS) continues to adapt and evolve. Licensees rely on their systems being as efficient and reliable as possible, but even as the focus turns to mobile ordering, customer loyalty and realtime, web-based reporting, operators can be assured that security and accountability remain at the core of the best systems. Posera’s Maitre‘D system is a case in point. With more than 25,000 restaurants
and bars powered by Maitre’D, it is at the heart of every part of the operation – on the restaurant floor and at the register; making orders easier to read, prepare and expedite; and enabling orders to be taken wirelessly and online. Maitre’D also plays an important role in the back office, keeping track of every garnish and guest to ensure an outlet’s profitability. Posera’s international team – including a hundred trained and certified resellers – handles all the Maitre’D set up, installation and support, from
entering an outlet’s menus to setting schedules to configuring accounting integration. That includes all the conversions when a business is switching systems. The team will install Maitre’D so that it won’t disrupt business or affect revenue. They’ll teach operators and staff how to use Maitre’D – for taking orders, preparing meals, managing the office, offering gift cards, managing loyalty programmes and more. And licensees can be certain they will receive ongoing support all the time.

finance
Money talks. But are you listening? Traditional funding is not always the best option for operators in the licensed trade. Fortunately, there are alternatives available
T
HE pressure is on for licensed trade operators to provide more of a complete experience for their customers beyond being ‘just a pub’. Unfortunately, this costs money. Over the last few years, as traditional banks reduced the level of funding available for small businesses, a number of new funders entered the market offering a range of financial products as an alternative to traditional bank finance. However, recent research carried out by the National Association of Certified Finance Brokers indicates that close to 50% of small businesses are not aware or
are not taking advantage of this shift in the finance world. Bank finance may not always meet the needs of licensed trade operators so it is essential these operators broaden their knowledge of what financial products are out there and make the best decision for their business and what they are trying to achieve. The Daily Telegraph recently reported that traditional bank overdrafts are disappearing and this will have a significant effect on licensed trade businesses, especially when cash flow is down.
A cash advance, as offered by Liquid Finance, is an ideal replacement and can be used to plug seasonal cash flow gaps. Licensed trade operators should speak to their broker, their peers, and other bodies such as the local chamber of commerce or Federation of Small Businesses (FSB) office. They should consider utilising expert advice prior to committing to a particular financial package to help reduce risk. Those experts are ideally suited to find the most appropriate form of funding for each opportunity.

GIN
A spirit with a strong point of difference Impressing with its wide range of complex flavours, provenance and brands, gin has become the darling of bartenders and customers alike
N
OT everyone loves whisky, and for years many bars have struggled to offer customers something that comes close in terms of the complexity and variety of flavours that whisky offers. However, on the back of a recent boom which has seen small-batch distillers pop up all over the country, gin has emerged as a viable alternative. Gin production has much in common with whisky, in terms of the methods and equipment used, and it can be produced faster making it more affordable both to produce and to
drink. People have really taken to gin in recent years because it offers the complexity of aged spirits and is seen as far more ‘democratic’ – that is, there aren’t so many conventions attached to the consumption of gin and it isn’t so gendered as other drinks. It’s also a versatile spirit, which can be enjoyed in a variety of ways beyond the Martini or G&T. Furthermore, consumers are said to be tiring of the tendency towards homogenising the customer experience – the new desire is for traceability and story.
And it’s for that reason consumers are said to be engaging with Pickering’s as it has a real story and a real location in the centre of Edinburgh for people to visit. Everything the firm produces is handmade by a small team, from distillation to labelling to individually wax-dipping every bottle. Pickering’s gin is made using a Pickering family recipe dated 1947, and the fact people can see the framed recipe in the distillery and hear the story of where Pickering’s fits in to the wider history of gin is a huge selling point.

Helping to navigate the legislative maze There are many legal hoops operators are required to jump through, but Hill Brown Licensing is on hand to fight the on-trade’s corner
I
N recent years operators have been challenged with four licensing Acts, more than two dozen regulations and 32 ever-changing licensing board policies, which means getting specialist legal advice has never been a bigger priority. Even diligent operators can feel overwhelmed by the waves of legislation that have rushed over the trade; and with more major amendments set to come into force in stages this year, licensing has become a real maze for operators. In this context, it’s vital operators get
advice from true specialists. Hill Brown Licensing has been advising major players in the Scottish trade for almost 70 years, with some client relationships spanning several decades. And Hill Brown Licensing isn’t just for the big names; the team’s same expertise is also trusted by independent operators in all sectors across the Scottish trade. Licensing lawyers Jack Cummins, Peter Lawson and Audrey Junner have gained a reputation for being thorough and very ‘hands on’. The Hill Brown Licensing team can guide a licensing applicant through the
red-tape tangle and help avoid costly mistakes, as well as ensuring clients are continually compliant with their legal obligations. As a division of Miller Samuel Hill Brown, Hill Brown Licensing can also offer its clients access to the firm’s expert court department, ensuring on hand support to licensing clients where action is being taken against them. The firm can also offer access to a specialist employment team experienced in working closely with both operators and individuals in the trade.

refrigeration
Efficient chillers can melt the bills away Increasingly energy-efficient refrigeration equipment can help on-trade operators slash their electrical overheads, and Capital Cooling can help
N
OBODY wants a warm beer when they visit the on-trade, which is why refrigeration is a key component of any venue worth its salt. Fridges aren’t just about keeping bottles cool, however; developments in technology in recent years have led to improvements in the energy efficiency of back-bar coolers, bringing electricity costs down for operators as well as helping cut an outlet’s carbon footprint. To ensure on-trade operators are getting the most bang for their buck when it comes to refrigeration, the
team at Capital Cooling makes it a priority to keep up to date with the latest developments in refrigeration and energy efficient technology. And the firm said there are significant savings to be made. Replacing a three year old doubledoor bottle cooler, which costs around £150 per year to run, with Capital Cooling’s latest ECO-COOL can half the running costs to £69 per annum, according to the firm; as well as aiding energy saving, the LED lighting on the ECO-COOL is said to improve the cooler’s merchandising visibility.
And it’s not just bottle coolers the firm supplies to the on-trade. Capital Cooling designs, manufacture, installs and maintains a range that includes refrigeration equipment, ice machines, cellar cooling, walk-in cold rooms and kitchen refrigeration. As something of a one-stop-shop, Capital Cooling can act as a single point of contact for all of a venue’s refrigeration requirements, and the firm also offers after care on its products. Capital Cooling operates a support network which includes 24/7 call logging and nationwide engineers.

WASTE MANAGEMENT
No time to waste in sorting collections The majority of outlets now have to arrange collection of food waste. But recycling is about more than compliance - it can pay dividends
W
ITH further food waste regulations having come into force on January 1, it is more important than ever that licensed premises recycle efficiently in order to reap the benefits and avoid penalties. The most recent changes mean that the threshold at which food waste must be separated for collection has been drastically reduced from 50kg to 5kg. Regulations state that businesses, apart from those in rural areas, are required to segregate paper, card, plastic, metal, glass and food from general waste. In the Scottish licensed trade, the
majority of sites will prepare and serve food, meaning most licensed premises require food waste collections. Understanding food waste recycling can help businesses avoid hefty landfill charges and compliance fines. The landfill tax has been increased to £84 per tonne of waste, therefore recycling more efficiently can save a business a lot of cash – another powerful incentive to encourage recycling. Businesses that do not comply with food waste regulations risk incurring fines of up to £10,000. But help is at hand. Keenan Recycling provides an
award-winning food recycling service for businesses throughout Scotland, ensuring that companies understand the benefits of more efficient recycling – both for themselves and the environment. “We always strive to demonstrate and advise our clients and potential clients of the benefits of managing their food waste and thus saving their business money,” said a spokesman for Keenan Recycling. “We make sure our customers understand why they are doing it and show them the difference it will make to the environment and their business.”
