The results of the 2014 SLTN Awards will be announced at the trade night of the year at Glasgow’s Hilton Hotel on Thursday, November 6. Now in its 19th year, the SLTN Awards continues to represent the benchmark for excellence in Scotland’s licensed leisure, hospitality and tourism sector. This preview brochure highlights the people and businesses that have made the final cut. Boudoir, a contemporary outlet that is heavily committed to staff training in wine, has a carefully chosen list that specialises in French and Italian wines as well as carrying some great wines from elsewhere. Wedgwood The Restaurant Edinburgh Wedgwood The Restaurant combines a wide-ranging, excellent value wine list, which provides interesting options by the glass, half-bottle and bottle, with inspiring enthusiasm for wine from owners, staff and customers. There’s excellent take up of WSET training by the team. And staff members have been involved in choosing wine for the list. Customer feedback is positively encouraged.

Nicky Craig The Basement Bar & Restaurant, Edinburgh Working with parent company Signature Pubs, Nicky helped design the food and drink offer at The Basement before it reopened late last year. Drinks are clearly a passion of Nicky’s and as general manager of the unit, he presides over a regularly changing product range that includes craft beer as well as cocktails and the bar’s specialty of tequila. Under his stewardship, the bar has retained a lot of its previous regulars, as well as reaching out to new customers.
Della McGill Winstons, Edinburgh Having worked in sister pubs The Volunteer Arms in Uphall and Platform 3 in Linlithgow, Della already had a well-rounded knowledge of the pub trade before moving to Winstons, in Corstorphine, earlier this year. As manager, she has worked with the outlet’s owners to expand the pub’s spirits and cask ale selection, as well as introducing initiatives such as whisky tastings and ‘meet the brewer’ events. Della has also created her own training booklet for new staff.
Adam Teale Greyfriars Hotel St Andrews Coming from an on-trade family, it’s little surprise Adam chose the trade as a career himself. Working at Belhaven’s managed pubs in St Andrews, Adam has led the charge to introduce a broader selection of craft and cask beers, as well as events such as quiz nights and live music to help attract new customers. As assistant manager of Greyfriars Hotel, his responsibilities include training new staff as well as overseeing weekly stock checks.

Six° North is one of only three bars to be supplied with a limited amount of Cantillon Zwanze beer – something which creates a buzz with regulars and beer enthusiasts. Six° North has a huge range of bottled, draught and cask beers; the focus is on Belgian beers but there is plenty of choice for the discerning beer drinker. Food and beer matching is key here and the menu is perfectly suited to the quality beers on offer.

Judges were impressed by the commitment to beer quality at this large and very busy venue. A daily cleaning programme, recording and logging of cellar temperatures, and a scrupulouslymaintained weekly line-cleaning schedule mean that procedures are thorough and consistent. Stock rotation is also carefully organised and implemented. Staff training is viewed as crucial and the outlet’s many employees have access to regular comprehensive training sessions.
Beer plays a leading role at the impressively extended bar of North Berwick’s Nether Abbey Hotel. It provides a diverse range featuring major brands as well as the products of artisan brewers, including local firms. There’s a developed system of cellar monitoring and pipes are cleaned at seven-day intervals. Staff training includes comprehensive induction plus continuing training, with perfect serving of beer given high priority. The Fly Half also stresses excellent skills in racking, tasting and monitoring.
This famous Glasgow beer venue is known for its huge range of well-kept cask ales, main beer brands, premium keg products and world beers. Beer quality systems are central to the success of the bar. Staff are thoroughly trained in stock rotation and replenishment, line cleaning, cellar management, and the serving of beer. Training includes formal sessions as well as extensive on-the-job training. The bar is involved in the mystery customer reports programme run by owner Maclay Inns.

When Edinburgh gin bar Heads and Tales opened its doors recently, Sian Ferguson was tasked with creating a drinks list that would perfectly emulate the bar and its place in the burgeoning Edinburgh cocktail scene. Already a veteran of the bartending scene, having made a name for herself in Aberdeen, Sian rose to the challenge with a unique, quirky and constantly evolving cocktail list that combines her technical skill with a sound grasp of spirits and flavours.
Over the past couple of years Alex has really established himself in Orchid. With ambitious plans to make the venue a premier destination for cocktails he has been closely involved with an imminent refurbishment and reimagined cocktail list. Alex has achieved great success in a number of high profile competitions, testament to his passion for spirits and flavours, and he is just as comfortable discussing molecular mixology as he is the spirts on Orchid’s back-bar.
It has been a busy year for Corey McCulloch, who moved from the renowned Blythswood Square hotel to the buzzing party atmosphere of Tiki Bar. At Tiki Bar, Corey has created several new cocktails and is charged with further development of the menu over the coming months. Beyond his day job he continues to experiment with new recipes and flavours. Corey’s main focus is making sure his customers are smiling.

The unit focuses heavily on the community and offers a wide range of entertainment all year round in the outdoor area. Dennis also makes the most of outdoor advertising and branding opportunities through his use of several screens and a mural.
With an extensive and well-branded courtyard in the heart of Edinburgh, which boasts its own stage, the Pear Tree offers a programme of outdoor live entertainment. There’s also an outside bar and food area which is used for busier periods of trade. The unit makes the most of the space with branded parasols and attractive plants and foliage, supplying heaters for the cooler months and parasols for sunny summer days.
With a good location on Leith’s shore, Teuchters Landing offers a great outdoor area and it’s clear the owner has worked hard over the years to develop the space. The floating non-smoking pontoon and sheltered pagodas make clever additions to the outdoor space and these developments – in addition to well thought out food and drinks menus – saw last year’s turnover increase.

Unsung Hero Billy Gold Hielan Jessie Bar Glasgow
John Burns Bloc, Glasgow John is a very modest person who is passionate and totally committed to making a difference to the music industry in Scotland. John uses his position in the licensed trade to give young musicians the opportunity to be heard. He recently supported and funded the ‘a human is not alone’ musical campaign, which was established by his terminally ill friend, Robbie Cooper, to raise funds for MarieCurie Cancer Care. Since Robbie’s passing John has continued to support this worthwhile cause.
Billy is passionate when it comes to caring for people and fundraising, working tirelessly on events for many charities. Even through his bereavement following the loss of his partner Josephine, he still focused on raising money for Marie Curie in order to help others in similar circumstances. In 2013 Billy helped to raise over £1280 for Cash for Kids and £951 for Children in Need.
Samuel Wightman Café Kisa, Auchterarder Sam is a very humble individual who is dedicated to raising money for his chosen charities. He recently raised £40,000 for Cancer Research by doing a scooter trip to Morocco - ‘Scoot for Africa’ - on the 20th anniversary of his mum passing away. He has since gone on to form a local charity organisation – The Auchterarder and District Cancer Research Fundraising Group, which now has 20 members. The organisation has regular monthly meetings to discuss and plan upcoming fundraising events.

Established 12 years ago, this dynamic bar and restaurant group has steadily expanded to comprise a portfolio of eight outlets in Ayrshire. In the past year alone, Buzzworks has invested heavily in a refurbishment of Elliots in Prestwick and rebuilt and relaunched its Lido venue in Troon, which was gutted by a fire in 2012. The family-run firm has developed its own bakery, which will ultimately supply all of the venues in the group; it is also set to launch a new outlet in Kilwinning later this year and revamp one of its existing units.
It might have clocked up almost 30 years in the trade, but this family-run business shows no signs of slowing down. From its Duck Bay hotel and restaurant at Loch Lomond, Cawley Hotels has grown and diversified over the years to span four businesses in the west of Scotland. Last year, the firm took the decision to revamp the final venue still operating under the Hungry Monk brand, which the Cawley family had established in 1989; the move paid dividends, with the Lochwinnoch outlet enjoying a record-breaking year.
Founded 29 years ago, Di Maggio’s Group continues to expand throughout Scotland and beyond. The group now totals some 15 outlets under its Di Maggio’s, Amarone, Barolo Grill and Cafe Andaluz brands. There’s also a food court operation, which extends to five sites, including Manchester and Belfast. In September of this year, the group diversified once again, launching the Anchor Line Bar & Grill in a Grade A-listed building on Glasgow’s St Vincent Place. And there are plans for further expansion.

A ‘name above the door’ licensee, Scott Clark of Clarks in Dundee has created a destination pub for music lovers in the city. Judges were impressed with the attention to detail exhibited by Clark in creating a music offer, drinks range and food menu tailored to his clientele. With plans for the future including the introduction of hospitality packages for local events, Clark is a licensee with innovative ideas.
Graham Guthrie celebrated his 25th anniversary in charge of The Golf Hotel in Crail this year but shows no sign of winding down. Guthrie is a hands-on licensee, paying particular attention to staff training and sourcing local produce. Judges were impressed by Guthrie’s continued investment in the business and the level of commitment to customer service shown by both himself and his staff.
Operating a bar just off the Royal Mile, Caroline Mair has a lot of plates to keep spinning, with a combination of locals, students and tourists passing through the doors of Holyrood 9a. Judges were impressed by Mair’s commitment to ‘beer education’, working with suppliers to ensure the Holyrood 9a staff have the product knowledge required to cater to any customer.
