This colorful "salad" is perfect on weekend mornings. The fresh, bright flavors of the oranges and grapefruit awaken the senses and put everyone in a festive mood.
Easter Citrus Salad
Ingredients: 6 navel oranges 3 grapefruits juice from 1 lemon juice from 1 lime zest from 1 lemon zest from 1 lime 2 tablespoons raw (turbinado) sugar
Directions: Cut off orange peel of 5 oranges with a sharp knife, including all the white pith, leaving behind just the flesh of the oranges. Cut oranges into thin slices and arrange onto a platter. Cut off grapefruit peel in same manner and cut fruit into segments, leaving behind the white membrane. Arrange over orange slices. Finely grate the zest from the lemon and lime and place in a small bowl. Squeeze the juice from the remaining orange into the bowl as well as the juice from the lemon and lime. Drizzle juice mixture over the oranges and grapefruit and sprinkle with raw sugar. Cover and refrigerate for at least one hour, preferably overnight. Serve with Easter Brunch or lunch. Bon Appetit! WIMBLEDON CHAMPIONS WIMBLEDON CHAMPIONS of Yard the Month
APRIL The April Yard of the Month has been awarded to the Lower family in Wimbledon Champions’ Garden Section. The home is located in the cul de sac and consistently has well-manicured landscape. Seasonal color throughout all of the gardens is seen in purple, white and yellow Pansies. As Spring approaches, many of the evergreen plants and shrubs will produce additional color in this garden. The Indian Hawthorn is already starting to bud and, in addition, there are Liriope, Crepe Myrtle, Agapanthus and Roses still to bloom. Centered in the garden on one side is a twenty foot tall Mexican Fan Palm and a blossoming Japanese Magnolia centered in the other garden. In appreciation for all of their efforts, the Lower’s will receive a $50 gift certificate from Plants for All Seasons and have their address highlighted on the Wimbledon Champions marquee on Cypresswood Dr. as Yard of the Month. Barbara Bush Library Read-A –Thon April 12 Everyone likes to be read to and on Saturday, April 12, 2012, from 10:00 am to 5:00 pm the Cypress Creek Chapter of Pi Beta Phi will host a Read-A-Thon at the Barbara Bush Library. There will be continuous reading where every twenty minutes a new group of books will be featured. Book selections vary from ‘Texas and the Wild, Wild West’, ‘Man’s Best Friend and Cats too’, ‘Priceless Princesses’, ‘Scary and Spooky’, and ‘Celebrating Seuss’. From 10 am to noon, the Chick-fil-A Cow will visit and all participating kids 10 & under will receive a free Chick-fil-A coupon. At noon and 1:00 pm, author and illustrator Warren Hanson will be reading his books and illustrating in the Children’s multi-media room. For those who want to practice their reading skills, there will be a special area for them, too! Just bring your favorite book! The event is free and registration is not required. Just come and ENJOY! The library is located at 6817 Cypresswood Drive.
