The Easter Bunny made his scheduled visit to Steeplechase on Saturday, March 27th to wish everybody a Happy (or should I say Hoppy) Easter. No pool tags required on Monday, May 31st.….all Steeplechase residents welcome. Pool tags required for entry on Saturday, May 29 and Sunday, May 30. So, bring your chairs, your snacks and supplies and enjoy a day in the sun by the pool. Covid restrictions in effect on Memorial Day will apply to the pool area.

Fight to the Finish FlyoverMay 10th
In honor of those that served and sacrificed during WWII, and to commemorate the 75th anniversary of VE Day, the Lone Star Flight Museum and its supporting partners will fly nearly 30 rare and historic warbirds over the City of Houston in an epic aviation event called the Fight to the Finish Flyover. FLIGHT PLAN Take off from Ellington Airport and fly a 120-mile flight plan over the skies of the Greater Houston area. This historic flight will last just over one hour, landing back at Ellington Airport. THE LINE-UP The fleet of more than two dozen historic warbirds includes: B-25 ‘Devil Dog’, P-51 Mustang, T-6 Texan, BT-13 Valiant, L-17 Navion, T-34 Mentor, Beechcraft BE-18 and A-36 Bonanza. Additional, pending aircraft: Grumman HU-16 Albatross, Curtiss SB2C Helldiver, Bell P-63 King Cobra, Japanese Zero replica, North American T-28. The aircraft lineup is subject to change. Ellington Airport will not be open to public viewing but we could all meet nearby to watch as they fly in/out. Here is a map of viewing locations
National Apple Pie Day 13th Celebrate National Apple Pie Day with this tasty recipe…Apple-Cranberry Pie Serves 8
• 1 recipe pastry dough (or 1⁄2 a recipe pastry dough and 1 recipe of streusel) or store bought • 3 large apples, peeled, cored, and sliced into 16ths • 1 can whole cranberry sauce • 3⁄4 cup packed light brown sugar • 1⁄4 cup all-purpose flour 1 t ground cinnamon • 1⁄4 t ground nutmeg 1. Roll out and press dough into pie plate. Crimp edge if planning to do a streusel. Refrigerate plated dough while you prepare the filling. 2. In a large bowl, gently combine apples, cranberries, brown sugar, flour, cinnamon and nutmeg, making sure apples are well coated. Transfer filling to prepared bottom crust, gently pressing apples into pastry with your hand. Place top crust over pie, crimp edge, and make vents if doing a top crust. Place pie on baking sheet and bake in preheated 400F oven for 30 minutes. 3. If baking a double-crust pie, put a pie shield over the pie edges and return it to the oven at 350F for 30 more minutes. If using a streusel topping, remove pie from oven, reduce temperature to 300F and sprinkle streusel over apple filling. Return pie to oven and continue baking for 25 to 35 minutes more or until streusel is nicely browned, apples are tender and juices are bubbling. If pie starts to get too brown before it’s finished baking, cover loosely with a piece of tented foil. Let cool on wire rack for 1 hour before serving. STEEPLECHASE Plant: ornamental & wildlife • Annuals: zinnia, cosmos, sunflower, celosia, penta, periwinkle, gomphrena, portulaca and other “ice” plant succulents, Mexican sunflower, salvia coccinea • Perennials & vines: (shade them for a week or so) • Semi-tropicals like Pride of Barbados • Tropical plants • Succulents • Crinum lilies, cannas, caladiums, ginger • Ornamental (clumping) grasses like muhly and Mexican feather grass • Clean up and replant containers—annuals, perennials, herbs, hibiscus, vegetables in larger containers • Top new containers with light layer of mulch to conserve water; use decomposed granite, pea gravel or other grit for potted succulents • Plant: herbs • Basil, catnip/catmint, comfrey, fennel, horseradish, oregano, thyme, rosemary, Mexican mint marigold, peppermint, lemongrass, lemon balm, lemon verbena, bay laurel • Plant: food crops • Cantaloupe, okra, Southern peas, sweet potato slips, pumpkin, summer & winter squash, watermelon
