DO YOUR HOMEWORK Before any renovation begins, look at design magazines and websites for inspiration and current trends. GET A GREAT TEAM Do it the right way, right away. Of course, we recommend working with a designer and/or architect to help you get started, but you also need to work with a contractor and subs that are experienced and know what they’re getting into. SET A BUDGET Factor everything into the equation including labor costs, materials, timeframes and living arrangements. Add a 20% buffer to your budget, but otherwise, stick to it. Not only is Kevin repairing, rewiring and refinishing antique light fixtures for customers throughout the country; he is also creating beautiful, one-of-a-kind custom lighting. Historic Lightworks has the largest selection of antique lighting in the state, with nearly 2000 fixtures and over 3500 original shades. Find pre-electric gas fixtures from the 1800s to 1900s and early electric lighting from the 1900’s to 1940s. PINK SQUIRREL PIE AN ADULTS-ONLY PIE TO CELEBRATE WARMER NIGHTS AND LONGER DAYS NO-BAKE PINK SQUIRREL PIE

1 stick butter 1 large Hershey chocolate bar (6 oz.) 2 Cups Rice Krispies cereal 1/2 gallon vanilla ice cream 2-3 Tablespoons Cream De Noyaux (almond) 2-3 Tablespoons Creme De Cacao Melt butter with the chocolate bar in 30 second increments in the microwave or over a double boiler; stir into cereal. Press mixture into a greased pie dish. Soften the ice cream and mix with two liquers, pour into pie crust. Freeze overnight.

MARGARITA PIE 1⁄2 cup butter 1 1⁄4 cups finely crushed pretzels 1⁄4 cup sugar 1 (14 ounce) can sweetened condensed milk 1⁄3 cup lime juice concentrate 2 -4 tablespoons tequila 2 tablespoons triple sec or 2 tablespoons orange-flavored liqueur 1 cup whipping cream, whipped

In sauce pan, melt margarine; stir in pretzel crumbs and sugar. Mix well. Press crumbs on bottom and up sides of a buttered 9-inch pie plate; chill. In a large bowl combine sweetened condensed milk, lime juice concentrate, tequila and triple sec; mix well. Fold in whipped cream. Pour into pie crust. Freeze 4 hours until firm OR Chill 2 hours in the refrigerator until firm.

is a distinction given to about 3 million acres in North Central Kansas; an area where a single bed of rock (the 8-12” Fencepost bed of the Greenhorn limestone layer) was used so extensively for fence posts during early Kansas settlement days that the posts have become an identifying feature of the landscape. Settlers to Kansas found that the area was destitute of timber and turned to the material at hand: a layer of rock close to the surface they found

could be used for fencing as well as building. Besides being durable and fire resistant, this limestone was persistent, extending with little interruption for miles. And when freshly quarried it was soft enough to shape with tools and hardened after being exposed to air. Even settlers with little knowledge of how to quarry or lay stone used it to line wells and cellars, to form inside walls and outside fronts of dugouts, to build fireplaces, to make steps and porches. The 1870’s was Post Rock Country’s formative period as well as being the period of time that saw the greatest influx of European immigrants. Soon every community in North Central Kansas included stone masons from the “old country” which assured knowledge about the building potential of post rock and their inclination to use it. The architecture remains the most visible link of these communities to their past and gives insight into the way they worked, played, and worshipped. MWMKS.COM |

HISTORICAL HUNTING

ATCHISON BEAUTY Atchison is home to a vast collection of stately, turnof-the-century Victorian mansions, and the threestory brick Queen Anne on Fourth Street is one of the most impressive. Built in 1885 by lumber merchant George Howell, the 14-room beauty boasts a slate roof, eyebrow windows and an inviting wraparound porch. For several years prior to construction, Mr. Howell carefully collected magnificent woods of oak, walnut and mahogany to handcraft this masterpiece. Handsome parquet floors and hand carved woodwork can be found throughout, and especially unique are the carvings of the faces on the ornate newel posts in the lower hall. The eight faces are said to represent the Howell family. Cast bronze hardware is found on all the doors. Embossed leather is found on the paneling in the dining room and both lower and upper halls. Beautifully etched glass embellishes the transoms above the bedroom doors on the second floor. Stunning stained glass windows in unique jeweltoned colors brighten the solarium, dominate the second-floor landing and adorn the top panels of the parlors and dining room windows. The house is now owned and maintained by The Muchnic Foundation, which has graciously made it available to the community. Since 1970 the second floor has been dedicated as exhibition space for the Atchison Art Association. The ”Prairie Skyscrapers,” or ”Sentinels of the Prairie”, have long been an indication of prosperity in it’s region. The stark structure is not void of beauty and form as some might propose. ONE-OF-A-KIND ARCHITECTURE Unique to North America, the structure was designed for function and simplicity without unnecessary decoration. Engineered to endure the tremendous pressures of stored grain while protecting the harvest from hot dry summers and cold blustery winters. They were fortresses against fierce prairie winds and violent storms. The familiar form appeals to us on many levels, and evokes in us a sense of nostalgia. A cultural monument that identifies who we were and who we are.

MEANINGFUL WORK From the beginning of settlement, profitable commercial agriculture in rural Kansas depended upon the railroad, primarily to transport winter wheat to market outside of the state by box car. However, there is an important step between the harvested crop and its shipment to a processing plant. During it, the grain was received from the grower, graded, cleaned, dried, weighed and elevated to the top of a building where it was distributed by gravity to vertical storage bins or waiting railroad cars. This entire process was completed at the country elevator. Technically, the grain elevator was (and is) a facility that stored dry, small cereal grains. It had a function different from cribs and silos, which stored corn still on the ear and fermenting pieces of an entire plant. Elevators also handled grain in bulk, rather than in bags or other containers, and stored, moved and processed grain vertically.


EFFICIENT DESIGN Concrete elevators seldom stood alone. Attached or adjacent to the bins or “tanks,” operators often built a rectangular, single story office or retail facility. Scales to weigh trucks were usually connected to this building. If the elevator was a part of a cooperative or retail establishment, the property usually contained a single story warehouse with a loading dock where sackfeed was stored and dispensed. The concrete elevator was a part of a vital commercial center. On a grand scale, it was the community’s domestic and international connection, but within its domain, people knew each other by name. Farmers gathered in the early morning to share a cup of coffee. Under its towering silhouette families worked and played, shaping a deep-rooted culture always eager to welcome us home.

TIMELESS STRUCTURES As we shift from a rural to urban population, it is only natural that we cling to something with which we identify. It is now left to the artists, photographers, historians, and poets to capture the essence of the country grain elevator. These are the ones who will paint the strokes of function, architecture and social significance into visual representations that will be used by future generations to evaluate and appreciate its legacy.

SITE DETAILS The land and building site was chosen for it’s 25 acre lake and abundant timber available for construction of the lodges and natural windbreaks. Ed Bugner of Lies Bugner Homes in Wichita envisioned the rustic, pioneer-style architecture. The basement of Mallard Mansion is a haven for relaxation, with a large projector screen, over-stuffed seating, large stone fireplace and ample room for everyone to spread out.



THE DUNN DETAILS Wendy Dunn ‘s vision of the lodges is carried through with personal touches in everything. Imagery, artwork and countless mounts showcase Eric Dunn’s hunting adventures across the country. Eric’s hunting dog Devon (pictured right) is a favorite mascot of Hooray, and seen in many of the pieces. The wood used throughout most of the buildings on campus came from a 200 year old barn in Canada that was torn down. The wood was then kiln dried in North Carolina and sent to Kansas. You will still find all of the hand made notches and pilings that came original with the wood.

THE REFUGE A refuge is a place of rest, food and water for ducks. The last building built at Hooray Ranch, the 15,000 square foot REFUGE, is a place for rest, food and drink for guests who stay and hunt at the campus. A full service restaurant-style kitchen, full time chef and full service bar offer opulent options to wind down. Many of the chandeliers and twig accents were created by an artist in New York, lending a natural elegance to the rustic design.

Banana bread is an ideal way to use up the overripe fruit, but sometimes another loaf of plain banana bread just won’t do. Try this easy chocolate version and decide whether to eat it for breakfast, dessert or both.

1½ cups flour ½ cup cocoa powder 1 teaspoon baking soda ½ teaspoon baking powder ½ cup butter ¼ cup brown sugar ½ cup white sugar 2 eggs 4 small bananas, mashed (1 1/3 cups) ½ cup chocolate chips Topping ¼ cup half & half 2 tablespoons brown sugar, packed 1 teaspoon butter ½ teaspoon vanilla 6 tablespoons chocolate chips

Preheat oven to 350 degrees. Grease & flour a 9x5 loaf pan. Combine flour, cocoa powder, baking soda and baking powder in a large bowl. Set aside. Cream butter and sugars together until fluffy. Stir in eggs and bananas. Add banana mixture and chocolate chips to flour mixture. Stir just until combined. Bake 50-60 minutes, or until a toothpick comes out clean. Topping Heat half & half and brown sugar over medium heat until brown sugar has dissolved and tiny bubbles start to form on the edges. Stir in vanilla and butter until melted and turn off heat. Add chocolate chips and do not stir, let sit 2-3 minutes. Whisk chocolate chips until smooth. Cool completely and drizzle over bread.

BLUEBERRY BISCUITS Bust through a breakfast rut with this sweet blueberry version. 2 cups all-purpose flour 2 teaspoon baking powder ½ teaspoon salt ¼ teaspoon cinnamon 3 Tablespoon solid vegetable shortening 1 tablespoon granulated sugar ½ cup buttermilk ¾ to 1 cup blueberries, fresh or frozen flour for rolling biscuits solid vegetable shortenig or vegetable oil for pan Preheat oven to 450 degrees Grease a pan: try your iron skillet! In a bowl combine flour, baking powder, salt, and cinnamon. Cut shortening into dry ingredients until mixture resembles coarse crumbs. Add milk and mix until the dough sticks together. Try not to over-mix. Dough will be stiff. Fold in blueberries. Sprinkle a flat surface lightly with flour. Knead slightly and pat into ½” thick. Cut with a biscuit cutter. Bake at 450 degrees 12 to 15 minutes or until lightly browned.

Easy and delicious, these are ideal for a mid-week meal.

4 cups Bisquick baking mix, plus more for dusting 1 cup sour cream 1 cup 7-Up or other lemon-lime soda 1/2 cup melted butter Preheat oven to 425 degrees. Mix Bisquick, sour cream and soda (1 cup of soda, not 1 CAN!) The dough will be very soft. Melt butter in bottom of a 9”x13” pan. You can either place drop-style biscuits on top of the butter or turn the dough onto a floured surface and pat into 1/2” thick. Cut with a biscuit cutter and place rounds on top of butter for baking. Bake 12-15 minutes or until lightly browned.

Notes

The key to real biscuits is not in the ingredients, but in the handling of the dough. The dough must be handled as little as possible or you will have tough biscuits; a food processor produces superior biscuits, because the ingredients stay colder and there's less chance of overmixing.

SWEET POTATO BISCUITS Sweet potatoes give a soft texture and subtle sweetness to these fluffy, melt-in-your-mouth biscuits. 1 3/4 cups all-purpose flour, plus more for kneading and shaping 2 tablespoons light-brown sugar 2 1/2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 6 tablespoons chilled unsalted butter, cut into pieces, plus 1/2 tablespoon melted butter and more for pan 3/4 cup Sweet-Potato Puree, chilled 1/3 cup buttermilk *Create the sweet potato puree by peeling and dicing a sweet potato and boiling until fork-tender; drain and mash with a bit of butter to create a creamy consistency Make the dough: In a large bowl, whisk together flour, sugar, baking powder, salt, and baking soda. With a pastry blender or two knives, cut in butter until mixture resembles coarse meal, with some pea-sized lumps of butter remaining. In a small bowl, whisk together sweet potato puree and buttermilk; stir quickly into flour mixture until combined (do not overmix). Shape the biscuits: Turn out dough onto a lightly floured surface, and knead very gently until dough comes together but is still slightly lumpy, five or six times. (If dough is too sticky, work in up to 1/4 cup additional flour.) Shape into a disk, and pat to an even 1-inch thickness. With a floured 2-inch biscuit cutter, cut out biscuits as close together as possible. Gather together scraps, and repeat to cut out more biscuits (do not reuse scraps more than once). Bake the biscuits: Preheat oven to 425 degrees, with rack on lower shelf. Butter an 8-inch cake pan. Arrange biscuits snugly in pan (to help them stay upright). Brush with melted butter. SOUTHERN BUTTERMILK BISCUITS This recipe is authentically southern, passed down 4 generations, that yields the most tender and flaky biscuits. It is sure to be a new favorite. 2 cups unbleached all-purpose flour, plus more for dusting the board 1⁄4 teaspoon baking soda 1 tablespoon baking powder 1 teaspoon kosher salt or 1 teaspoon salt 6 tablespoons unsalted butter, very cold 1 cup buttermilk (approx) 1⁄2 cup sugar (for topping) Preheat your oven to 450°F. Combine the dry ingredients in a bowl, or in the bowl of a food processor. Cut the butter into chunks and cut into the flour until it resembles course meal: if using a food processor, just pulse a few times until this consistency is achieved. Add the buttermilk and mix JUST until combined. If it appears on the dry side, add a bit more buttermilk. It should be very wet. Turn the dough out onto a floured board. Gently, gently PAT (do NOT roll with a rolling pin) the dough out until it’s about 1/2” thick. Fold the dough about 5 times, gently press the dough down to a 1 inch thick. Use a round cutter to cut into rounds. You can gently knead the scraps together and make a few more, but they will not be anywhere near as good as the first ones. Place the biscuits on a cookie sheet- if you like soft sides, put them in a casserole dish; If you like ”crusty” sides, put them about 1 inch apart- these will not rise as high as the biscuits put close together. You may sprinkle the sugar over top of the biscuits now if you choose a sweet Bake for about 10-12 minutes, or until the biscuits are a beautiful light golden brown on top and bottom. Notes

You must pat the dough out with your hands, lightly. Rolling with a rolling pin is a guaranteed way to overstimulate the gluten, resulting in a tougher biscuit. You can make these biscuits, cut them, put them on cookie sheets and freeze them for up to a month. When you want fresh biscuits, simply place them frozen on the cookie sheet and bake at 450°F for about 20 minutes.
