These delicious, nutrient-dense cookies pack over 4g of protein per cookie, far outshining the typical 1-2g found in store-bought options. They’re designed to keep blood sugar steady plus keep you satisfied for hours. No-one ever guesses these are healthier and sugar free as they’re so yum!

Ingredients

¼ cup butter

¼ cup peanut butter (or other nut butter)

2 large eggs, room temperature

2 cups almond meal, blanched

2 tsp baking powder

½ cup choc chips (min. 70% cocoa)

⅔ cup Lakanto classic sweetener (or similar granulated sweetener)

Method

Preheat oven to 170 degrees celsius (fan-forced) and line baking trays with greaseproof paper.

1. Place butter and peanut butter in heatproof bowl and microwave on high for 30 seconds or until melted.

2. Stir butters together then add eggs and whisk together until combined.

3. In a medium bowl, add all dr y ingredients and mix until well combined.

4. Add wet mix to dr y ingredients and stir together well to form a dough.

5. Roll tablespoons of mixture into balls and place on lined trays.

6. Flatten down with fork or palm of hand, cookies won’t spread much.

7. Bake for 15-18 mins or until golden brown.

8. Allow to cool on tray for 10 minutes before transferring to wire rack to cool completely. Cookies will be soft when warm and firm up as they cool.
