If oyster perfection is an impossible pursuit, Winter Point Oysters is devoted to achieving the impossible. Theirs is an extraordinary product from a singular place on earth — a gift of nature. They are considered the finest — both by elite chefs and discerning consumers from Maine to California, because of their unique provenance, flavor characteristics, and dedicated business practices.

Deep Maine History

Winter Point Oysters are farmed year-round, exclusively from the secluded cove for which they are named. Winter Point, the pristine land that abuts the trough of water that pushes out to the New Meadows River known as Mill Cove, has served as a saltwater farm for more than 300 years and remains family owned. Here, Winter Point Oysters are infused with a brew of marine mud, cold tidal waters, and a rich, constant supply of minerals from the Atlantic, a vortex of superior flavor conditions.

Ideal Conditions for Superior Flavor

While some oysters develop their taste suspended in the surface water, the origins revealed in the flavor of Winter Points can be traced directly to the muddy floor of this special Maine location. Winter Point Oysters are grown and harvested on the bottom, immediately differentiating them from top-grown oysters. They never leave the nutrient-rich waters off Winter Point, from seeding to planting in the hard-packed clay of Mill Cove. It’s here they develop a distinctive salinity, clarity, a particular sweetness, a robust meatiness, the coveted briny flavor. “…as close to perfect an oyster as you can get.” says Cara Stadler, Owner/ Chef at Tao Yuan in Brunswick, Maine.

“…they have an especially deep cup which we particularly like and the oyster itself has a meatiness and unique salinity which makes it very special”

–Eric Ripert of Le Bernadin New York City

Considered the Finest

Shiny, clean, colorful shells that are uniform in size, easy to shuck, and that lie flat on the plate – these are the characteristics that distinguish a Winter Point Oyster. Their taste is often described as sweet and clean, with a medium salinity — salty up front with a mineral finish. Best served on the half shell, Winter Points hover atop a cup of briny “liquor.” The result is a distinctive and unforgettably flavored Maine oyster – a gift of nature.
