COOKING METHOD slow roasting

Cooking food slowly over a long period of time, is typically done in a rounded, lidded pot on the stovetop or in the oven which infuses flavors gradually by simmering on low heat. This method is ideal for stews, soups, sauces, or tougher cuts of meat. Beef selections include chuck roasts, country style ribs and shoulder clod. Whole chickens and bone-in ducks are also best when prepared this way.

rosemary a woodsy flavor with resinous piney notes, evergreen, lavendar, citrus, sage, and mint.

thyme a concentrated herbal flavor with sharp grass, wood, and floral notes

FLAVOR PROFILES

Spices used in slow roasting depend on the cut of protein and recipe, but adding thyme, bay leaves and rosemary, along with salt and pepper to sauteed onions and chopped garlic make a great spice base. Use dried spices in the recipe, and you can always add some fresh herbs for garnish.

This star-shaped spice is the dried fruit of a small Asian evergreen tree (a member of the magnolia family). Harvested when it’s still green and unripe, it’s dried in the sun, where it develops its red-brown color and a sweet warm flavor that’s reminiscent of licorice, clove, fennel seed, and aniseed. Star Anise is used primarily in Vietnamese and Chinese cooking. Ground star anise is a dominant ingredient in Chinese five-spice powder. Despite its sweetness, star anise traditionally is used in savory recipes, particularly with meats. It often is added whole to soups, stews and braising broths, to which it adds a sweet-licoricepeppery flavor.

COOKING METHOD braising

Braising, the cooking of meat or vegetables by heating them slowly with oil and moisture in a tightly sealed vessel. Braising differs from stewing, in which the food is immersed in liquid, and from covered roasting, in which no liquid is added. Braising is a combination of covered roasting and steaming.
