Native American Feature Recipes
Native American Heritage Month, is a significant and meaningful time to celebrate the rich culture and enduring contributions of Native American communities in the United States. Try one of the featured recipes below to give you a taste of authentic, traditional cooking.
Wahonpi Soup
Wohonpi is a traditional soup that would have been made with bison meat, prairie turnips, and blo (wild potatoes). Today, it is made from bison or beef, potatoes, and other vegetables. If using bison, remember to decrease the cooking time Bison has much less fat than beef, and if overcooked, it can get very tough and hard to eat.
3 cups cooked cubed bison or beef
6 cups beef broth
3 potatoes, peeled and cubed
3 carrots, cut in half
1 Tbsp Worcestershire sauce (PFS #23368)
Salt & pepper to taste
INGREDIENTS
5lb bag frozen berries (PFS #CP356)
2 cups sugar (PFS #EC390)
8 cups water
4 Tbsp cornstarch, dissolved in cold water (PFS #22438)
DIRECTIONS
If using beef, add meat to broth in a stockpot. bison, add to stockpot in last 15 minutes of cooking. Add carrots, potatoes, and Worcestershire sauce. Simmer over low heat for 45 minutes. Season with salt and pepper to taste.
Wojapi
Wojapi is a berry soup. Traditionally, wojapi was made with dried chokecherry patties, and dried/powdered timpsila (prairie turnip) was used as a thickener These days, wojapi is made from a variety of berries (either fresh, frozen, dried, or canned), and cornstarch as a thickener.
Put the frozen berries in a stock pot with water and simmer uncovered until softened (about 1 hour).
1. Mash the berries with a potato masher or immersion blender. 2. Add the dissolved cornstarch slowly, stirring, until incorporated. 3 Wojapi can be enjoyed warm or cold. A favorite way to eat wojapi in Lakota country is with fry bread 4
Three Sisters Stew
The Three Sisters are corn, beans, and squash, which are three main agricultural crops of various Indigenous peoples of North America. The are called “the three sisters” because they nurture each other like family when planted together.
INGREDIENTS
1 tablespoons vegetable oil
2 cloves garlic, minced
1 medium onion, diced
1 medium green pepper, chopped
1 butternut squash, cubed
1 can diced tomatoes with juice
2 cups corn kernels
2 tsp ground cumin
1 tsp dried oregano
1 tsp salt
1 tsp pepper
2 cups vegetable stock
1 can (4 oz) chopped mild green chiles
2 cups cooked black beans
DIRECTIONS
¼ cup chopped fresh cilantro
In a large pot, heat oil. Add garlic, onion, green pepper and squash and sauté a few minutes over medium heat. Stir in tomatoes, chiles, beans, corn, cumin, oregano, salt and pepper & cook until hot.
Add stock and bring to a boil. Reduce to a simmer, cover and simmer 30 minutes.
Taste and adjust seasoning as desired Add cilantro just before serving.
Squash with Maple
Squash with maple combines two wonderful and naturally sweet Indigenous ingredients into one delicious and easy-to-make dish.
INGREDIENTS
8 cups cubed butternut squash
2 Tbsp extra virgin olive oil
2 Tbsp maple syrup
1/2 tsp salt
1/2 tsp cinnamon
2 pinches cayenne pepper
DIRECTIONS
1. Drizzle the squash with oil and syrup, sprinkle with salt, cinnamon and cayenne pepper. Toss squash to coat evenly.

Preheat oven to 425 degrees. Spread out the cubes on lined baking sheets.
2. Roast the sheets of squash for about 30 minutes and broil 1-2 min to caramelize.
