The thin ones, although you can do it, tend to dry out really fast if you are not careful. For instance, on the thin ones, you want a really hot fire and just a few minutes on both sides. That way you won't overcook them and dry them out. But if you go for the thicker cuts of chops and then brine them, you are putting everything into place in your favor for coming out with great tasting pork chops which are full of flavor and moist and not dry. Here is another tip that will help you have some great pork chops recipes, try marinating your pork chops overnight. That is almost as good as brining. You can find some good citrus-herb marinades on the shelf in the grocery store. However, you know how I am, with just a little homework on your part, you can come up with your very own marinade for the chops. In the end, just remember, when they are done to an internal temperature of 160 degrees F., let them sit for a few minutes before you cut into them.
