Welcome to November ... There’s lots going on in November with fireworks galore, Christmas preparation and Remembrance Sunday, which falls on the 9th November. Read inside about the Commandos – a fearless group who, among thousands of other service men and women, fought bravely to protect our country. This month’s ‘Did You Know?’ tells the story of Guy Fawkes and the gunpowder plot and there’s plenty of firework displays going on around the county – but spare a thought for our furry friends and, if you’re unsure, talk with your vet for advice on how to keep them calm throughout the firework season. There’s the usual competitions for you to enter, as well as the chance to win Christmas party tickets courtesy of Manor By The Lake and Over Farm. Delicious Dishes with Helen Kingscott

Beef Wellington Serves 4 Ingredients: 10g dried porcini mushrooms; 50g butter; 2 shallots, finely chopped; 300g mixed mushrooms; 1 sprig thyme, leaves picked; 200ml Madeira; 2tbsp double cream; 1tbsp vegetable oil; 500g beef fillet; 250g ready-made all-butter puff pastry; 1 egg, beaten, to glaze; 1 tbsp poppy seeds. Method: 1 To make mushroom paste, soak dried porcini in 150ml boiling water for 20 minutes. Reserving the soaking water, squeeze mushrooms and finely chop. 2 Melt butter in frying pan over medium heat and cook shallots until pale and golden. Add mixed mushrooms, porcini and thyme, and cook until the mushrooms have softened. Pour in 150ml of the Madeira, season, turn up the heat and cook until the wine has evaporated. 3 Scoop three quarters of the mixture into a bowl and put the rest aside. Add the double cream to the bowl, season to taste and set aside. 4 Preheat oven and a flat baking sheet to 220 degrees. Heat the oil in a frying pan over a high heat and, when smoking, add the fillet and sear on all sides until well browned and crusted. Season generously and allow to cool. Don’t wash the pan yet – you’ll need it for the sauce. 5 Roll out the pastry to a rectangle a bit wider than your fillet, long enough to wrap it in and 3mm thick. Brush

it all over with beaten egg then spread the mushroom paste over it. Put the beef on top of the paste at one end of the pastry and carefully roll it up, making sure the join is on the bottom. Trim the edges and tuck them in to seal the parcel, using a fork to press the edges together. Brush the outside of the pastry with beaten egg and sprinkle with poppy seeds. Put the Wellington on the hot baking sheet and bake for 30 minutes, until golden, then rest for 15 minutes. Meanwhile, make the sauce. Heat the pan in which you seared the beef and pour in the remaining Madeira. Add the reserved mushrooms and porcini liquid and allow to reduce slightly. Taste and season. Serve the Wellington with the sauce and vegetables of your choice.

History in the heart of Gloucester The New Inn is an historic restaurant and hotel located in the heart of Gloucester. The tudor building was constructed over 560 years ago and the wooden structure was formed from scrap war ships. Originally, the Inn served as a hostel for pilgrims who were visiting the tomb of King Edward II and had dormitorystyle rooms. Nowadays, it still provides food, drink and a bed for travellers but with a little more comfort, and has 33 double rooms with three more under construction. There’s something for everyone here with a restaurant that seats up to 70 people and serves a carvery every day of the week, a quaint cafe for those looking for a bit of peace and quiet, an ale bar that serves up to 10 real ales at any one time, the Regency Room that is licensed for weddings and hosts functions for 80 guests, and the Treetops Clubroom for over 25s who can enjoy a night of 60s, 70s and 80s music. Each element adds to the intriguing history of the establishment and every room has great character. There is regular live music, karaoke and tribute

nights to entertain guests, and in the summer the courtyard hosts Shakespearean plays. Paranormal groups even visit the Inn in the hope of experiencing some mysterious encounters – especially in the cellar. The Mojito was created on the island of Cuba and is one of the country’s cultural icons. Like the majority of cocktails, there are several stories surrounding its origin. One story links the drink to the famous explorer Sir Francis Drake, who was travelling to the city of Havana in the 1500s when an epidemic of scurvy and dysentery hit his ship. The local South American Indians were known to have remedies for tropical illnesses, so the ingredients were gathered from Cuba and formed into ‘El Draque’ – a cocktail of aguardiente (a crude form of rum), lime, sugar and mint. The lime juice would have helped significantly in fighting off the illnesses, and the mint and sugar helped to hide the harsh taste of the rum. Others say the drink was created thanks to the African slaves who worked in the Cuban sugar cane fields during the 19th century. Sugar cane juice called Guarapo was popular amongst the slaves and is often used to make mojitos. Ernest Hemingway became a big fan of the cocktail following a visit to a local Cuban bar called ‘La Bodeguita del Medio’. The mojito regained popularity in 2002 after it played a prominent role in a scene in the James Bond film ‘Die Another Day’, with James Bond (Pierce Brosnan) using the drink to seduce Jinx (Halle Berry). Ingredients: 1½ limes, cut into slices or wedges; 20 fresh mint leaves; 2½ tsp granulated sugar; 65ml white rum; splash of soda water or lemonade; ice; fresh mint sprig to garnish. Method: 1 Place the limes, mint and sugar into a highball glass and mash with the end of a clean rolling pin to bruise the mint and release the lime juice. 2 Add the ice and pour over the rum. 3 Add soda water or lemonade to taste and stir well. Garnish with a sprig of mint and serve.

Short Walks in the Cotswolds Biddlestone & Slaughterford 4¾ miles (7.5km) ~ 2½ hours Moderate

There are no major architectural masterpieces or panoramic views on this route – it is simply a very pleasant walk through small villages and very attractive meadows. Do not be put off by the road section, for the lanes are very quiet. The large village green and duck pond form the visual centrepiece of Biddestone, a spot that tempts you to linger. Slaughterford was probably named similarly to the other more famous Slaughters, as 'the ford by the sloe trees'. A Park the car in Biddestone. At the road junction by the pond, take the left road signposted to Hartham. Just past the church bear right along Challows Lane and follow the road to the road junction (Weavern Lane) at the bottom of the steep hill. 1 The earliest parts of Biddestone church were completed by the middle of the 12th century. Its most notable feature, however, is the Early English bell turret, the lower section built in the 13th century and the remainder in the 15th. B Turn right and follow the road above the river to the road junction by the bridge. Turn right to the sharp right hand bend just ahead. C Take the footpath ahead passing

the old waterwheel after about 200yds (180m) and cross the footbridge. Follow the path through the meadow to the gated weir. Remembering our heroes Thousands of people across the country will be coming together in November to remember our fallen and injured heroes who fought to protect us. We will take time to remember the sacrifices our brave Service men and women have made, not only in the First and Second World Wars, but in more recent conflicts too. There are monuments all over the country and abroad to commemorate these valiant people. Our picture on the right shows a monument that has a special local link. The statue – situated near Achnacarry 12 miles north of Fort William in Scotland – is of three members of the Commandos and was made by H.H. Martyn, a Gloucestershire-based company with a reputation for excellence that, amongst other great creations, produced sculptures for locations across the globe, including the Cenotaph in London (pictured below).

Feared by enemies across the world A plaque on the rear of the Commandos monument was unveiled on 13th November 1993 and tells the story of the special force’s creation, training and successes: In 1940, Britain’s spirits were low and an enemy invasion was threatened, which prompted Winston Churchill to order the creation of an elite force to raid the enemy-held coastline of Europe. The force, which was initially made up of volunteers from the British Army, was called ‘Commandos’. Over the next five years, the Commandos fought with such success that they became feared by all enemies. In 1942, the Commando Basic Training Centre was established in the Scottish Highlands where potential Commando soliders – who came from the British Army, Royal Marines and Allied Armies – underwent rigorous training. Some of the soldiers who trained there came from Gloucestershire, and it is known that some of them lost their lives during operations. Those who completed the training had the privilige of wearing the famous Green Beret, which was the mark of the highest standards of military training, physical endurance, selfdiscipline, bravery, initiative and courage.

The Commandos earned an incredible 38 battle honours and many awards, including eight Victoria Crosses, but suffered significant losses with 1,700 soldiers losing their lives and many others seriously injured. This year’s ‘Remembrance Sunday’ is the 9th November and many organisations and churches will be conducting services and, in some places, parades. Why not express your gratitude for the sacrifices made and attend a service near you?

NOVEMBER Following on from last month’s article dissecting CVs, it seems only natural for my attention to shift this month onto the CV’s ugly cousin – the personal statement. Here lies two words that will bring fear and dread to thousands of students across the county, but fear not – advice is at hand. A personal statement is not dissimilar to a CV. The key difference is that a personal statement reads more like a short speech – it is a free-flowing piece of text, not bullet pointed and you don’t have to worry about making it appear eye-catching. One of the main problems people have when writing personal statements comes back to this problem of having to openly talk about yourself. It is human nature to find this difficult and it is tricky to write a personal statement without sounding too pretentious. Your job is to advertise yourself. It is important to sell yourself as an out-going, enthusiastic, self-believing individual – however, there is a fine line between being self-confident and being pretentious. University coordinators will want to read a personal statement that stands out for being confident – it is OK to write positively about yourself, just try not to show off too much!

Don’t be afraid of re-writing When I wrote my personal statement, everyone in the year found themselves re-writing it at least three or four times. This isn’t a bad thing. Initially, once your supervisor, tutor or head of Sixth Form sends it back to you with numerous mistakes, it can be deflating. But there is nothing wrong with re-writing it several times. I’m just starting to write my dissertation and we have already been told that whatever we write, our first draft will be rubbish – the best writing is refined. After a couple of re-writes, your personal statement will read very differently and you will see a significant improvement from your first draft. Try not to stress about it too much – after all, it is an opportunity to tell University staff how great you are and about all the fantastic things you’ve done and achieved. Cultural strategy There are times when Gloucester, I think unfairly, has been accused of being something of a cultural desert. It’s true that perhaps we don’t have the cultural facilities of our neighbours the other side of the Golden Valley, like the Everyman Theatre. Nor is our festival programme quite as well-developed. However, we do have the Guildhall for live music, comedy, film and more, plus the Olympus and King’s Theatres for drama. Our portfolio of events has also blossomed in recent years to include the Tall Ships Festival, the Blues Festival, the Cajun Festival, which add to established events such as the Three Choirs Festival. In 2007, we adopted a 10-year cultural strategy for the city, which sought to build on our strengths – heritage, sport and diversity. In recent months it seems to have been coming together nicely! The “Jolt” and “Strike-A-Light” festivals have brought new and different performances to Gloucester. The “Paint Jam” street art festival certainly brought some colour (and a sprinkling of controversy) to the city centre, along with a legacy of some striking pieces of art on buildings such as ‘Fab & Faded’, ‘H2O’ and ‘The Brunswick’. It was surprising just how widely its appeal was felt across the ages.

Find our cultural niche During September and October, we have seen the Crucible 2 contemporary sculpture exhibition at Gloucester Cathedral, building on the success of the first such event four years ago. This time even more people visited the exhibition, providing a boost for traders in Westgate Street and beyond. The Arts Council are keen to support culture in Gloucester and have been generously funding some of the events I mentioned above – I believe we should take advantage of their enthusiasm. There could even be scope for a cultural element to the Rugby World Cup. The Cultural Strategy urged the City to undertake a “transformational project” but didn’t go as far as suggesting what it should be. I think we need to find our cultural niche and come up with something unique for Gloucester. What do you think it should be? t: 01452 384051

Did You Know? with Lois Kingscott For over 400 years bonfires have been lit on 5th November to mark the failure of the Gunpowder Plot. Did you know in 1605 a group of 13 young men decided to take violent action against King James I. Following the death of Queen Elizabeth I, who persecuted many English Catholics under her rule, people hoped her successor would be more tolerant of their religion. However, James I was not more tolerant and so the small group of men – under the leadership of Robert Catesby – decided to take violent action against him. Their idea was to blow up the Houses of Parliament, assassinating the King, the Prince of Wales and the Members of Parliament who were making life difficult for the Catholics. They gathered 36 barrels of gunpowder and stored them in a cellar under the House of Lords. As the plot developed, though, it became apparent that innocent people would be hurt or killed, leading to some members having second thoughts. The Local Answer

One member sent an anonymous warning letter to his friend telling him to keep away from the Parliament on 5th November. This letter reached the King and plans were made to stop the conspirators.

Caught, tortured and executed Guy Fawkes was found in the cellar when the authorities stormed it in the early hours of November 5th and he was caught, tortured and executed. From 5th November 1605, bonfires were burned to celebrate the safety of the King. This night has become known as Bonfire Night and the event is celebrated every year with burning effigies of Guy Fawkes and firework displays.

Tidy up those leaves Clear and compost fallen leaves from the lawn – you can leave them on the borders as long as they are not covering evergreens such as heathers, as the worms will pull them down into the soil over the winter and by spring they will be gone! Evergreen leaves like holly or laurel are something else and will not easily decompose – remove these from the borders. The deciduous leaves can be put into large compost bags with a few holes in – half fill a bag and tie the top then stack somewhere out of the way and use in the borders the following autumn. November is a good month to look back at how your garden was over the summer and to perhaps decide you would like to change some aspects of it. We are not talking necessarily about a complete garden makeover but even the best gardens need reworking as the years go on.

Clean and oil tools ready for Spring Perhaps a border is getting too congested, the winter garden has no redeeming features, or the garden looks stunning in spring and then fizzles out becoming boring for the rest of the year – all these can be rectified. Prune blackcurrants now removing two or three of the oldest branches down to the base. You can take cuttings really easily from blackcurrant bushes by cutting some healthy 25cm long shoots that have formed this year (make a slanted cut at the bottom so you know which way up they go) and simply sticking them in the ground – it really is that easy. If shrubs such as Cotinus (smoke bush) have become too large they can be cut back now by a third, providing the weather is still mild. This will produce a more compact shrub next year. Cotinus grown for their foliage only can be cut down to the ground in early spring, thus producing large spectacular leaves. When the mowing has come to a halt later this month, book your mower in to be serviced – this way you will beat the spring rush. Now is also a good time to clean and oil tools and send off secateurs to be sorted out if they are in a bit of a state. As I have mentioned before, I sent my Felcos off to a company in Leicester and they came back like new! I must get round to doing it again soon – although it may cost around £20, it is well worth it.

Tax return time Why is it that everything is left to the last minute when it comes to things we think we don’t want to do? Take filling in your tax return for example. By the time you read this article the deadline for submitting a paper return for the 2013-14 tax year will have passed (it was 31 October). Those who are planning to make an online submission (which is now everyone who hasn’t done one so far) have until 31 January 2015. Quite apart from the obvious benefit of knowing that you have got the job out of the way, there are several reasons why doing something before you are pressed into doing it during the last few days before a deadline can be beneficial to you, especially when it comes to tax returns.

The tax man could pay for Christmas 31st January is not only the deadline by which you have to file your tax return, it is also the date for paying any tax that you owe for last year plus a payment on account for next year. If you have a liability, or think you are likely to have one, why leave it until a few days before payment is due to establish how much you are going to have to find? If you don’t have the money readily in a bank account, it doesn’t give you long to sort out finance, does it? And what happens if HMRC owes you money? Surely it is better off in your bank account than the Treasury’s? Think what you could spend a repayment on. Christmas is just around the corner and the tax man could pay for all your shopping. How good would that be? Accountants all over the land work ridiculous hours every January to deal with those people leaving things to the last minute. In addition to helping people to comply with their obligations to file accurate and timely returns, we save clients money by making sure that they make all of the claims to which they are legitimately entitled. Bringing all your papers in at the last minute gives us less chance to spend the required time on such considerations. Give yourself a chance by giving us a chance and act now.
