Delicious Dishes with Helen Kingscott

Chicken Tikka Skewers Enjoy these succulent skewers and fresh salad at a BBQ this summer Ingredients: 150g low fat natural yoghurt; 2 tbsp hot curry paste; 4 boneless skinless chicken breasts, cubed; 250g pack cherry tomatoes; 4 wholemeal chapattis, warmed to serve.

For the cucumber salad: ½ cucumber, cubed; 1 red onion, thinly sliced; handful chopped coriander leaves; juice 1 lemon; 50g pack lamb’s lettuces or pea shoots; lemon slices to garnish.

Method: 1 Put 8 wooden skewers in a bowl of water to soak. Mix the yoghurt and curry paste together in a bowl, then add the chicken. Place in the fridge and marinate for one hour. 2 In a large bowl, toss together the cucumber, red onion, coriander and lemon juice. Chill until ready to serve.

3 Shake off any excess marinade, then thread the pieces of chicken and cherry tomatoes onto the pre-soaked skewers. Cook under a medium grill for 15-20 minutes, turning from time to time, until cooked through and nicely browned. 4 Stir the lettuce/pea shoots into the salad and top with lemon slices, then divide between 4 plates. Top each serving with 2 skewers and serve with warm chapattis. 5 You can use any meat for this recipe – just always make sure it is cooked thoroughly before eating, especially if cooking on a BBQ.

Food ‘to die for’ I love Thai food and had been looking forward to visiting So Thai for some time. I can tell you now, I was certainly not disappointed! On arrival, we were welcomed by the friendly staff into a lovely bright room, which is perfect for enjoying the summer weather. Our table, though, was downstairs in a beautifully decorated, authentic room with decadent features and candlelit tables – a truly romantic setting. My friend and I were keen to try a variety of the starters so opted for the So Thai mixed starter, which included chicken satay, spring rolls, pork spare ribs and prawn on toast accompanied by sweet chilli dip, sweet plum sauce and a light salad garnish. Each element was really fresh and the dipping sauces complimented them beautifully – the plum sauce was just amazing! The prawn toasts were meaty, the spring rolls light and tasty, the ribs were smothered in a spicy, flavoursome sauce and the satay chicken was tender with crushed peanuts for added texture.

A completely satisfying, truly tasty curry Onto the main course and what a wonderful selection! The traditional curries, noodles and rice dishes were all there, as well as speciality dishes unique to So Thai. My friend chose Geang Massaman – aromatic Thai massaman curry with chicken, potato, onion and roasted peanut, which she said had well balanced flavours that came together to create a completely satisfying, truly tasty curry. I opted for Gaeng Phed Ped Yang – roasted duck breast with red curry sauce, pineapple and cherry tomatoes. The creamy sauce had just the right amount of heat and whoever thought of adding the pineapple is a genius – absolutely delicious!

A word of warning when choosing your dishes – look out for the chillis marked next to each meal. Even dishes with one chilli have a good kick to them so if you can’t handle spice very well, I would recommend a dish with one or none. Having said this, although my main meal was marked with 2 chillis, this didn’t overpower the fantastic flavours of the food. Having been told by three people that the chocolate brownie was “to die for”, we thought it only right to give it a go! We were both quite full by this point so we shared the homemade rich gooey chocolate brownie, which was accompanied by a scoop of wonderful Mövenpick Swiss dairy ice cream. We chose mint choc chip flavour, but there is an extensive list of mouth watering flavours to choose from, which made it difficult to make a decision! Overall, we both agreed that the meal was fantastic, the service was excellent and we wouldn’t hesitate to return in the near future.

When in Rome Romans are possessively proud of their historic city, and why wouldn’t they be? There are few cities in the world that evoke the sheer wonder and amazement of Rome, with an unforgettable history. Outstanding art, ancient history and religious icons are around every corner and, when it all gets too much, you can join the locals in sipping espresso in one of the city’s many squares. With so much to see and do, the real test will be trying to fit it all in. A monument to raw, merciless power, the Colosseum is one of the most thrilling ancient sights in Rome. It’s not just its vast size, but the sense of violent history that resonates – gladiators met here in mortal combat and condemned prisoners fought off wild beasts in front of bloodthirsty crowds. Two thousand years later it is not only Rome’s, but Italy’s most popular tourist attraction, drawing in between 16,000 and 19,000 people on an average day. Located between the Circo Massimo and the Roman Forum, the Palatine Hill is an atmospheric area of majestic ruins, towering pine trees and unforgettable views.

According to legend, this is where Romulus killed his twin and founded Rome in 753 BC. If you only have time to fit in one art gallery on your visit, be sure to visit the Museo e Galleria Borghese. Not only is it stunning, but it provides the perfect introduction to Renaissance and baroque art without being overwhelming. Due to its popularity, visitors are admitted at twohourly intervals, so you’ll need to call to pre-book and enter at an allotted entry time.

Listen out for the Italians Italians are famous for their love of good food and their skills in making it. Rome is bursting at the seams with restaurants, trattorias, pizzerias, osterias and more, but while the sit-down lunch is a favorite pastime in the ‘Eternal City’, Romans certainly love their street food too. If you’re trying to pack as much sightseeing and culture as you can into your holiday, Rome has a bounty of snack options that are budget friendly and perfect for when you’re on the go. For a gourmet sandwich (panino), Tricolore Panini is the place to go. Located in the Monti district – a short walk from the Colosseum – this place serves up delicious treats from an everchanging menu, including freshly baked potato bread, roast pork cheek and falafel. Around the corner from the market is 00100 Pizza, where the infamous Roman street food snack ‘trapizzino’ was born. The delicious pizza pockets are filled in front of you with classic flavours like meat and tomato ragu or braised chicken.

The latest craze in Rome street food is the Romeo Ape Truck – a mobile sandwich shop showcasing local, fresh and seasonal ingredients and Rome’s famous Roscioli bread out and about on the streets of Rome. And who could forget about gelato? Italy certifies select shops as ‘gelaterie artigianali’ as mark of an establishment that uses only fresh ingredients and no artificial colours, flavours or thickeners. Gelateria del Teatro, just off the pedestrianised via dei Coronari between piazza Navona and the lungotevere Marzio, is a gelateria artigianale, using specially sourced ingredients including almonds from Bari and pistachios from Sicily. The picturesque location offers outdoor seating in a tiny alley and the gelato itself includes several flavours of chocolate ranging from ‘al latte’ (milk) to ‘puro’ (reputedly 70% chocolate). Other choices include cassata and tiramisù flavours plus caramel-pear and ricotta-fig-almond. The trick is to look out for long queues and listen out for the Italian language – if the locals are eating somewhere, you can bet you’re on to a winner! Whether you’re drawn to Rome for the food or its history, this beautiful city is sure to leave you wanting more.

Motoring with Christian Tilbury

Going Continental doesn’t have to feel foreign If you’re one of the many motorists that are planning on driving in Europe this summer, then there’s plenty more to remember than simply sticking to the ‘wrong’ side of the road. Seasoned travellers will know the ins and outs of motoring on the Continent, but for anyone embarking on their first motoring holiday the differing rules and regulations can be daunting. That said, it’s only a problem if your preparation extends to little more than checking the tyre pressures and chucking a map in the car. To find out what you need for visiting a specific country, it’s best to visit a website like that of the AA – www.theaa.com. However, a few essentials are high visibility vests (compulsory in countries including France and Austria), a GB sticker (compulsory within the EU),

headlamp beam adaptors to ensure your car is fit for the road, spare bulbs (you must always be in a position to replace any blown exterior light), and, if you’re driving in France, even an in-date alcohol breathalyser.

Carrying a sat nav can land you with a fine France and many other countries also require you to carry a warning triangle, while a first aid kit and fire extinguisher are even more of a good idea as, under the European Good Samaritan Law, you are required to stop and help in the event of an accident. Also, be aware that carrying any device capable of detecting speed cameras, including satellite navigation systems, can land you with a fine from the French Police.

If you’re hiring a car, then there’s no need to worry about much of this, as it should come with any extra equipment that might be required by law. What may be an issue though, is the DVLA’s recent decision to scrap the paper counterpart of your driving licence. What this means is that to hire a car, you’ll need to log onto the DVLA’s website to generate a licence check code before you go – the code usually lasts for 72 hours. This code will enable rental companies to check details of penalty points and endorsements, but there is concern that these businesses won’t be aware of the change and will still insist on seeing your paper licence – even if it has no legal status. The best advice is to get the code before you go, but still take the paper counterpart of your licence.

There’s no denying that there’s a fair bit to consider, but spend some time doing your research and even though you’ll be driving in another country, you’re sure to feel right at home on Europe’s roads.

Wildlife Matters with John Bromley

One swallow doesn’t make a summer “One swallow doesn’t make a summer” is an old saying, but by the time the air is filled with swallows, swifts and house martins you can be sure that summer isn’t too far away. Swallows prefer to nest in outbuildings such as barns and garages where there are nooks and crannies for them to use, whilst swifts need height such as old houses and church steeples so they can ‘drop’ out of the nest into the air. House martins, as their name suggests, nest on the outside walls of houses in the triangular angles under the eaves. Prior to the 1800s house martins predominately nested on cliff faces. During the 1800s the explosion of brick built houses across the country provided new opportunities for house martins to colonise more areas – even towns and cities, provided the air was clean enough to be filled with flying insects, which is their staple food.

The birds have an amber ‘at risk’ status Since the 1970s the number of house martins has steadily declined to the extent that the birds have now been given an amber ‘at risk’ status. Their total reliance on flying insects for food leaves them vulnerable to extended periods of cold wet weather and, as we all know, the unpredictability of our British summers means there is no guarantee of sunshine and an abundance of insects for them to feed on.

If where you live there is no naturally occurring mud available how about digging a small hollow in your garden and keeping the soil wet and muddy. Adults and children alike cannot fail to be enthralled watching the birds coming down to scoop up pellets of mud in their beaks. Typically it takes a pair of birds up to three weeks to build their nest. Once the main nest building period is over, keep a little mud available for birds to carry out running repairs to their nests.

Flying insects provide much needed food If a nest with young in falls to the ground it is possible to encourage the parents to keep feeding their young. Place the nest in a strong box or wall hanging item as close to the original nest site as possible. If young birds fall from the nest, or the nest is too badly damaged, a substitute nest can be made using something like a lidded four litre icecream container. Make a hole of approximately 25mm x 60mm and roughen up the inside of the container below the hole with sandpaper to give the young birds a surface they can scramble up when the parents arrive with food. If space allows, why not plant a tree or two or some shrubs to provide shelter for flying insects, which in turn provide much needed food for house martins.

House martins are also reliant on access to mud for nest building and, whilst we cannot do much about the weather or flying insect numbers, we can always give a little helping hand here and there. Believe it or not we have just gone through a very dry winter and spring to the extent that many small ponds and water features have all but dried up. I walk through Springfield Park in Cheltenham most days and several of the ponds there are now rock hard with dry and cracked mud – totally useless for birds needing mud for nest building. Even the main pond contains just a fraction of its normal head of water for the time of year, but fortunately it is providing mud for house martins to build their nests.

Previously I have written about exercising young dogs and puppies, but puppies grow up to be big, boisterous adult dogs and all too often we underestimate how much regular exercise these dogs need. Dogs that don’t get regular exercise can be destructive, frustrated and ultimately suffer physically like us humans when we don’t get enough exercise – they get overweight and unhealthy. Not all dogs are the same – energy and exercise requirements will vary from breed to breed and with age and health. Brachycephalic breeds are those with particularly short faces and noses such as the pugs and bulldogs. These breeds can easily overheat in hot weather and so care needs to be taken with these dogs. Other breeds like the greyhound for example are built for short bursts of speed and aren’t suited for endurance exercise, but these are the exceptions rather than the rule. Most dogs need a minimum of 60-90 minutes of active exercise daily, ideally off the lead (if their temperament allows it). A large garden is no substitute for going on a walk. Not only do dogs benefit from being outside but they benefit from the mental stimulation of interacting with other dogs, people and the environment. Older dogs and those with health problems may need less vigorous exercise, but keeping active physically and mentally is just as important. We must also be mindful that most dogs cope better with cooler weather, particularly those bred for colder climates or with heavier coats. On very warm days make an effort to get out early or later in the day. Two recent studies looking at shelter dogs measured their stress levels and discovered that just 30 minutes of exercise a day reduced the amount of stress hormones in their saliva as well as reducing the behavioural signs of stress. What is also undeniable is the health benefit to us as pet owners to getting outside with our four-legged friends. Personally there is no better way to start the day than standing on the top of Cleeve Hill on a clear morning with my two Vizslas, Bart and Tassie.

Piña Colada A sweet, rum-based cocktail made with rum, cream of coconut and pineapple juice, the Piña Colada’s origin is contested by three Puerto Rican bartenders. Ramón ‘Monchito’ Marrero Pérez claims to have first made the cocktail at the Caribe Hilton Hotel’s Beachcomber Bar in San Juan in August 1952, using the newly-available Coco López cream of coconut. Coco López was developed in Puerto Rico in 1948 by Don Ramón López-Irizarry, hence the Puerto Rican connection and the 1952 account of the drink’s creation. Some say the drink did not acquire its name until the 1960s. Lower back pain Lower back pain – one of the most common and debilitating musculoskeletal problems affecting us in this age. Over 80% of adults suffer with lower back pain at some point during their life time, and in 2013, 31 million sick days were taken due to lower back pain and similar conditions, which contributed to a net loss in the EU of up to 2 billion pounds – more than both minor illnesses and stress related problems! Back pain is commonly associated with the rise in people working in offices, sitting regularly for up to eight hours a day. It is suggested that ‘sitting is the new smoking’ due to its effect on our health and wellbeing. Though it is not just sitting that causes back problems. Often those working in heavy lifting labour based jobs are also at risk, with poor lifting technique and repetitive movements leading to acute and chronic back pain. Often working on strengthening or mobilising areas of the body can reduce and get rid of back problems, and below are some tips to counter agonising back pain!

Strengthen your core The core is the body’s centre – if weak and imbalanced, it can cause back pain due to muscles over or under working. Often people work on the front of the core (the abs) and neglect the lower back. Following a welldesigned core routine can prevent back pain. Though be careful of performing any exercises that flex the spine, such as the classic ‘sit up’. This can aggravate and weaken the lower back, leading to problems in this area.

Get a sports massage Sports massage will help back pain by releasing off tight muscles that are causing poor movements, posture and blood flow to muscles. Certain techniques can help reactivate underactive muscles and pump out any toxins within the muscles. Therapists can also prescribe strengthening and

stretching exercises to perform at home, which will help alleviate and prevent back pain.

Work on your hips Lower back pain can often be brought on by underactive muscles within the hips, specifically around the gluteals or bottom muscles! These muscles can be inhibited due to a lot of sitting or using poor movement patterns, often leading to wrong alignment of the pelvis. Talking to a therapist or trainer about strengthening the gluteals and realigning the hips will help relieve pressure on the lower back.

Yoga & pilates Regularly taking part in a yoga or pilates class can promote better mobility and strength of muscles that contribute to lower back pain. Often tight muscles will compress nerves, leading to pain and weakening of muscles. Regular stretching will release muscles, leading to an improved blood flow, better movement and posture. Both classes also help strengthen the muscles around the core. Though the above tips will help with certain types of back pain, it is always suggested to book an appointment with a physiotherapist or GP when back pain is severe and lasting over 6 weeks. Summer sunshine – the pros and cons During the summer months, we hopefully see a few more sunny days and enjoy warmer weather. Getting some sun has many benefits – as long as we’re careful not to overdo it. Physical benefits of sunshine include the opportunity for the body to absorb Vitamin D – a vitamin that the body cannot create by itself. This is essential for healthy bones and also plays a part in cell growth and immunity – helping the body to stay fighting fit against germs and minor illnesses. There is also evidence that suggests that Vitamin D can help to reduce the risk of developing several illnesses including Alzheimer’s Disease and diabetes. Though there are risks to over-exposure to the sun, as too much sunlight can damage the surface of the skin and the cells underneath, which causes cell mutations that can lead to cancer. Young children and the elderly are particularly vulnerable to sun exposure.

So, using sunscreen with UV protection is important to shield skin from sun’s rays, as is not staying out in the sun for long periods at a time, especially between the peak hours of 11am-3pm when the UV rays are at their strongest. Sunglasses and a sun hat are also useful to protect the eyes from the bright light. Another bonus is that getting plenty of natural daylight helps to regulate sleep rhythms. If you have trouble sleeping try to get as much daylight during the day as possible, then when the sun begins to set, start to wind down for the evening so that your body gets used to associating darkness with tiredness.

Depression sufferers find the sun lifts their mood Emotional benefits of sunlight are that it increases levels of serotonin in the body – a chemical in the brain that makes us feel good and increases happiness. Some people who suffer from depression find that getting outside in the sun, even for just 20 minutes, can help to alleviate their symptoms and lift their mood. Sunshine also helps to combat stress, as it lowers blood pressure, and the warmth helps us to relax. However, being outside a lot and being in the sun can dry your skin and cause dehydration, so ensure you stay hydrated. Intake of fluids is essential to keep the brain and body

functioning properly, as humans are 65% water. Dehydration can lead to drowsiness, poor concentration and irritability. If you find water a bit ‘boring’, try flavoured water. Alternatively, spice it up by adding your own flavours such as a slice of lemon or lime, or maybe adding a few berries or mint leaves for a refreshing taste. Fruit juices are also energising during hot days, although they do contain lots of natural sugars so drinking them diluted is better. Also, many fruits and vegetables have a high water content – for example melon, oranges, berries, tomato, cucumber, celery, and broccoli – so you don’t have to just rely on drinks to keep your body hydrated.

All foster carers are blessed with an innate generosity of spirit, a warm, loving energy that fills a child, imbuing them with confidence – a vital part of the family experience. Your experience, whether as a parent or in caring for other children, as a friend or relative, will be valued

in the foster parent role. After all, kids don’t come with a manual! The most important quality for anyone considering fostering longterm is ‘stickability’ – the ability to remain committed to your child through good and bad. Accepting that the ride is unlikely to be smooth, and that these children will be challenging as a default, will prepare you well to be a brilliant parent. If you can accept ‘what is’ rather than having some glowing vision of ‘a perfect family’, and know that your job is to be a parent – yes, it is a job with responsibilities, consequences and rewards – then you are likely to make an awesome foster parent. The Café René ‘Real Ale & Cider Festival‘ with over 40 Real Ales and 20 Ciders and Perrys from Monday to Sunday is extremely popular with Ale connoisseurs and first timers alike. Each year the festival is FREE for all to enjoy, and is one of the last free entry Blues Festivals in the country. Throughout the week Café René raise money through various fundraising activities. Last year the sum raised was £3103.70 for Macmillan Cancer Support. Last month I spoke of the flowering part of the dog rose. Shortly after they flower, you should be able to harvest the hip (red berry like part). Below is a recipe that is straight out of the wartime leaflet “Hedgerow Harvest, Ministry of food, 1943”. Full of vitamin C, families were encouraged to harvest the Rosehip to replace missing vitamins in their diet normally found in oranges and the like, which were next to impossible to come by during the war. For 2 pounds of hips: • Have ready 3 pints of boiling water. Mince the hips in a coarse mincer, drop immediately into boiling water or, if possible, mince the hips directly into the boiling water and again bring to the boil. Stop heating and place aside for 15 minutes. Pour into a flannel or linen crash jelly bag and allow to drip until the bulk of the liquid has come through. • Return the residue to the saucepan, add 1½ pints of boiling water, stir and allow to stand for 10 minutes. Pour back into the jelly bag and allow to drip. To make sure all the sharp hairs are removed, put back the first half cupful of liquid and allow to drip through again. • Put the mixed juice into a clean saucepan and boil down until the juice measures about 1½ pints, then add 1lb 4ozs sugar and boil for a further five minutes. Pour into hot sterile bottles and seal at once. If corks are used these should have been boiled for 15 minutes just previously and after insertion coated with melted paraffin wax. It is advisable to use small bottles, as the syrup will not keep for more than a week or two once the bottle is opened. Store in a dark cupboard. If you’re not 100% sure that the plant you’re picking is safe for human consumption, don’t pick it. If you’re prone to food allergies, or pregnant, always seek medical advice before consuming anything foraged in the wild.

Polish up your garden in no time Now is a good time to prune early summer flowering shrubs like Philadelphus, Deutzia, Wiegela, and Rubus as they have finished flowering. Pruning will encourage new shoots to spring up from the base, and if you cut out about one in three of the thickest old branches at the bottom, these new ones will take their place and ensure the flowering doesn’t decrease. As with all shrubs when you’ve pruned, lightly fork in some pelleted chicken manure or balanced fertiliser – such as Growmore – around the base, water well and mulch with some compost or well rotted manure to give the plant a real boost. Don’t touch the stems with the mulch or they could start to rot. Try your hand at taking cuttings from perennial herbs such as Lavender, flowering side-shoots that are soft at the Rosemary and Sage. Take the cuttings tip and woody at the base – about 10cm early in the day and choose non- long. Pull away from the main stem, gently leaving a little bit of the bark still attached – these are called ‘heel’ cuttings. Take off the lower 5cm of leaves from the stem, dip the end into hormone rooting powder (garden centres have this) and then insert several of these cuttings into a small pot of gritty compost. Firm them in and water well, then cover the whole pot with a plastic bag (ensuring it doesn’t touch any of the leaves), label and place somewhere warm but out of direct sunlight. The cuttings should have rooted by late August. Spare a thought for the owners of the gardens open in the National Garden Scheme – imagine all the work they have

to do to prepare for visitors! I was thinking about this the other day and asked myself if I had 20 minutes to do something to tidy up my garden before visitors arrived, what would be the tasks to do? I would plump with weeding the front 10cm of the border leaving bare earth, cutting the grass and trimming the edges. Obviously some of you have more garden than me and this would take an hour or two, but it is the equivalent of a quick vacuum up and spraying polish around in the house – it really looks more than the time it takes and you can ignore the back of the border especially at this time of year when it is probably full to bursting with luxurious growth, unless you have the time.

There is something that you can and should do about it at the outset – write it down. Set up a shareholder agreement that establishes firstly how each party will behave in terms of day-to-day management of the business, and secondly what happens if the parties need to go their separate ways. Don’t get dragged into a debate about the costs of drawing up an agreement. Yes you will need a solicitor to draw up the document, but don’t begrudge them the money. They will charge you a lot more to sort out the unholy mess that you are likely to get into in the absence of an agreement.

Providing protection for those with a small stake in the business A good agreement will set out the duties of each party and confirm the parameters of delegated authority. It will specify what happens if one wants to leave and provide a basis for introducing newcomers to the company. It also provides protection for those who have only a small stake in the business. It doesn’t sound like rocket-science does it? It isn’t, but it could save major stress and costs in the event that your business rocket doesn’t fly true to its course.

Be wary in the warm weather With spring turning into summer, the weather getting better (most of the time!) and longer evenings, the demands on the local policing team change slightly. We carry on dealing with our day to day work such as beggars and retail crime in the town centre, and we will also be out and about in the evenings keeping an eye on things in town. The good weather often leads to a few more pints or glasses of wine being drunk by the locals – please enjoy the town but remember if you are driving early the next morning, be careful how much you drink the night before. Alcohol stays in the body longer than you would think. As the weather improves more people enjoy the parks and open spaces of Cheltenham. We’ve just had the Science Festival in Montpellier Gardens, quickly followed by the Food and Drink Festival, as well as Cheltenham Lido opening in May. Whilst the vast majority of people will enjoy these events, this can lead to opportunist thieves chancing their arm with thefts of personal items. Please be careful and don’t give the thieves an easy chance. Members of the local Neighbourhood Watch team will be out and about keeping an eye on things – please stop and say hello if you see them!

Report any suspicious activity to us This is a good time to remind you about ensuring you keep your home locked and secured at all times. Though burglary dwellings are currently low in Cheltenham, you would be amazed how many properties are targeted because of insecure windows and doors. Please lock out the baddies! Crime is low and falling in Cheltenham. Having said that we’re still locking up criminals. PCSO Hamid Charafi (a well known face to many in the town centre) identified a local man as having been the offender for 3 sexual assaults on young women in the town centre. These incidents were of great concern to us, but great work by Hamid and colleagues resulted in the male being locked up and now on remand. Colleagues in the Force Crime Ops Team have recently charged and remanded in custody four burglars from Cheltenham, including two local males who were caught on CCTV breaking into a home in Charlton Kings. Please report any suspicious activity to us – it might be the crucial bit of information we need. Enjoy the good weather and, as my colleague Inspector Tim Waterhouse always says, keep ‘em locked!
