As a communication platform, The Local Answer has gone from strength to strength since the first issue was launched in March 2009 in the south-east of Cheltenham. The publication’s success is largely due to the way it has been received by residents – they have enjoyed the variety of articles, puzzles, competitions, event notices and other local information presented through our pages.

Food ‘to die for’ I love Thai food and had been looking forward to visiting So Thai for some time. I can tell you now, I was certainly not disappointed! On arrival, we were welcomed by the friendly staff into a lovely bright room, which is perfect for enjoying the summer weather. Our table, though, was downstairs in a beautifully decorated, authentic room with decadent features and candlelit tables – a truly romantic setting. My friend and I were keen to try a variety of the starters so opted for the So Thai mixed starter, which included chicken satay, spring rolls, pork spare ribs and prawn on toast accompanied by sweet chilli dip, sweet plum sauce and a light salad garnish. Each element was really fresh and the dipping sauces complimented them beautifully – the plum sauce was just amazing! The prawn toasts were meaty, the spring rolls light and tasty, the ribs were smothered in a spicy, flavoursome sauce and the satay chicken was tender with crushed peanuts for added texture.
A completely satisfying, truly tasty curry Onto the main course and what a wonderful selection! The traditional curries, noodles and rice dishes were all there, as well as speciality dishes unique to So Thai. My friend chose Geang Massaman – aromatic Thai massaman curry with chicken, potato, onion and roasted peanut, which she said had well balanced flavours that came together to create a completely satisfying, truly tasty curry. I opted for Gaeng Phed Ped Yang – roasted duck breast with red curry sauce, pineapple and cherry tomatoes. The creamy sauce had just the right amount of heat and whoever thought of adding the pineapple is a genius – absolutely delicious!
A word of warning when choosing your dishes – look out for the chillis marked next to each meal. Even dishes with one chilli have a good kick to them so if you can’t handle spice very well, I would recommend a dish with one or none. Having said this, although my main meal was marked with 2 chillis, this didn’t overpower the fantastic flavours of the food. Having been told by three people that the chocolate brownie was “to die for”, we thought it only right to give it a go! We were both quite full by this point so we shared the homemade rich gooey chocolate brownie, which was accompanied by a scoop of wonderful Mövenpick Swiss dairy ice cream. We chose mint choc chip flavour, but there is an extensive list of mouth watering flavours to choose from, which made it difficult to make a decision! Overall, we both agreed that the meal was fantastic, the service was excellent and we wouldn’t hesitate to return in the near future.
Lunch Express Menu SPECIAL OFFER 2 COURSE MEAL £8.95 Select one main course and either a starter from 1-7 or a dessert from the menu (specialities not included) Takeaway available Sunday-Thursday. 10% off menu prices

Piña Colada A sweet, rum-based cocktail made with rum, cream of coconut and pineapple juice, the Piña Colada’s origin is contested by three Puerto Rican bartenders. Ramón ‘Monchito’ Marrero Pérez claims to have first made the cocktail at the Caribe Hilton Hotel’s Beachcomber Bar in San Juan in August 1952, using the newly-available Coco López cream of coconut. Coco López was developed in Puerto Rico in 1948 by Don Ramón López-Irizarry, hence the Puerto Rican connection and the 1952 account of the drink’s creation. Some say the drink did not acquire its name until the 1960s. Ricardo García, who also worked at the Caribe, says that it was he who invented the drink, while Ramón Portas Mingot says he created it in 1963 at the Barrachina Restaurant. The restaurant stands by his claim to this day. National Piña Colada Day is celebrated on the islands on 10th July. Ingredients: Ice; 35ml white rum; 1 tbsp coconut-flavoured rum; 50ml coconut cream; 50ml pineapple juice; 3-4 pineapple chunks; pineapple slice and maraschino cherry to garnish. Method: 1 Pour the two rums, coconut cream, pineapple juice and chunks of pineapple into a blender and blend until smooth. 2 To serve, pour into a cocktail glass and garnish with a pineapple slice and a maraschino cherry.
PLEASE DRINK RESPONSIBLY Why not have a Mocktail? For a non-alcoholic alternative, mix 60ml coconut milk, 50ml crushed pineapple, 25ml pineapple juice, ice and 1tsp brown sugar. Page 8

3 Shake off any excess marinade, then thread the pieces of chicken and cherry tomatoes onto the pre-soaked skewers. Cook under a medium grill for 15-20 minutes, turning from time to time, until cooked through and nicely browned. 4 Stir the lettuce/pea shoots into the salad and top with lemon slices, then divide between 4 plates. Top each serving with 2 skewers and serve with warm chapattis. 5 You can use any meat for this recipe – just always make sure it is cooked thoroughly before eating, especially if cooking on a BBQ.

In The Garden with Julia Smith
Polish up your garden in no time Now is a good time to prune early summer flowering shrubs like Philadelphus, Deutzia, Wiegela, and Rubus as they have finished flowering. Pruning will encourage new shoots to spring up from the base, and if you cut out about one in three of the thickest old branches at the bottom, these new ones will take their place and ensure the flowering doesn’t decrease. As with all shrubs when you’ve pruned, lightly fork in some pelleted chicken manure or balanced fertiliser – such as Growmore – around the base, water well and mulch with some compost or well rotted manure to give the plant a real boost. Don’t touch the stems with the mulch or they could start to rot. Try your hand at taking cuttings from perennial herbs such as Lavender, flowering side-shoots that are soft at the Rosemary and Sage. Take the cuttings tip and woody at the base – about 10cm early in the day and choose non- long. Pull away from the main stem, gently leaving a little bit of the bark still attached – these are called ‘heel’ cuttings. Take off the lower 5cm of leaves from the stem, dip the end into hormone rooting powder (garden centres have this) and then insert several of these cuttings into a small pot of gritty compost. Firm them in and water well, then cover the whole pot with a plastic bag (ensuring it doesn’t touch any of the leaves), label and place somewhere warm but out of direct sunlight. The cuttings should have rooted by late August. Spare a thought for the owners of the gardens open in the National Garden Scheme – imagine all the work they have
to do to prepare for visitors! I was thinking about this the other day and asked myself if I had 20 minutes to do something to tidy up my garden before visitors arrived, what would be the tasks to do? I would plump with weeding the front 10cm of the border leaving bare earth, cutting the grass and trimming the edges. Obviously some of you have more garden than me and this would take an hour or two, but it is the equivalent of a quick vacuum up and spraying polish around in the house – it really looks more than the time it takes and you can ignore the back of the border especially at this time of year when it is probably full to bursting with luxurious growth, unless you have the time.

Finishing touches Once you have your room painted and furniture placed it is the ‘finishing touches’ that add personality to your interior and make it more personal to you. This can be achieved in the following ways.
1. Fresh flowers and plants This is a quick transformation and doesn’t have to be anything dramatic and expensive. Fresh flowers add colour to your room just by simply placing them on a coffee table or cabinet. You can change vases and the colour of the flowers so the room is always updated. A long clear vase filled with lily gives off a beautiful scent and will certainly lift your spirits and wow your guests. The way flowers are displayed can make a huge difference to the look of your room. If a simple plant pot is more your style then just ensure you have a fabulous container and you dust the leaves! I have to say I am not a keen fan of fake flowers, although saying that there are some great ones on the market and good
for those who are not green fingered!
2. Artwork Paintings and works of art are all very personal taste. Bare, boring walls get a real lift with a pop of colour from a colourful poster, collection of prints or simply family photos. Try to focus on a colour scheme or theme. Black and white photographs mounted in black frames, which can be purchased very reasonably from places like Ikea, can really make a statement. You could choose one large piece and create a focal point in the room. Picture lights over artwork really do bring paintings to life and it also creates another dimension to the room.
not a museum and will soon look very cluttered. You can easily change If you have a hobby and collect displays around if you get bored and things such as books, teapots or bring out different items to keep the sporting equipment then you can room fresh and interesting. display the collection as a point of interest. However, you don’t need to 4. Combine textures and display everything, as your home is feel A combination of cushions in different fabrics, textures and colours can add another dimension to sofas and chairs and stops them looking ‘flat’. You can mix patterns and colours. Colours and fabrics can be changed seasonally – you may wish to pack your wool cushions up now and replace with linen or cotton cushions, and replace a wool throw with a linen one for the spring.
3. Collectables
5. Lighting Re-visiting your lighting can help enhance the look of your room. Don’t see lights as just practical products – they can be used to create artistic effect. You can create a layered look by installing a combination of ceiling and wall lights, lamps and recessed lights. Alternatively, you could place uplighters in plant pots to throw light up to the ceiling, and these can easily be hidden behind a chair. The Local Answer

Renewable Technologies – dispelling the myths Economic, energy efficient and environmentally friendly. Renewable Technologies don’t have to be eyesores or excessively disruptive and can usually benefit any property, quickly saving the homeowner a great deal of money. This is the message that Pete Toth (pictured below) and his colleagues are working hard to convey, in and around the county. PBT are independent plumbers, heating, gas and oil engineers based in Gloucestershire with a passionate belief in, and extensive knowledge of, Renewable Technologies. Pete says, “in conversation with customers over the years, we have regularly come across the same myths, namely that Renewable Technologies are expensive and unsightly and require a huge amount of space or land. “People also often think that they only benefit newbuilds, which is simply untrue as so many technologies can now be added to existing systems. In offering free advice and consultations, over the phone or at the property, we hope to dispel these misconceptions and gain the opportunity to make homes as energy efficient, comfortable and economical as possible, for less money than you might think.” Some technologies recommended by PBT are: ● Solar Panels harness energy from the sun to heat the hot water in your house. Government grants are currently available to pay much of the initial investment on some installations. ● Heat Pumps take warmth from the air or ground, regardless of outdoor temperature, and turn it into energy to heat your water and your house. ● Underfloor Heating can be installed in conjunction with a heat pump, or simply by using your existing hot water source. It provides controllable heating evenly and efficiently, eliminating cold spots in a room and maximising space by avoiding the need for bulky radiators. If you are having building work done, thinking of changing your heating system or simply want to save money on utility bills, then maybe Pete and his team could open your eyes to valuable options that you hadn’t previously considered. For more information, call Pete or Laura on 01242 323923, email info@pbtrenewables.co.uk or visit www.pbtrenewables.co.uk. The Local Answer

Cloudy2Clear Windows – Service With A Smile!
It’s been a crazy few months for Cloudy2Clear Windows. The company which specialises in repairing windows which are steamed up, broken or damaged by replacing the panes – not the frames – has grown rapidly as homeowners take advantage of their services. Managing Director Paul Spiller feels that it’s all about service: “Our product is simple. If your double glazing is misted up we can replace the glass at a fraction of the cost of a new window, in any type of frame, and with a new 5 year guarantee. But it’s not just

about saving people money, although that obviously helps. “Many tradespeople have struggled since last year and I honestly feel that during the good times a minority perhaps didn’t focus on customer care as much as they should have done. We make sure we turn up when we say we will, do the job the customer requires and leave their house as clean as a whistle. I often get comments back from customers on how they really didn’t expect that sort of service which, in a way, is very sad for the service industry as a whole.”
Cloudy2Clear service Gloucestershire and the Cotswolds, and Paul is finding that his approach is a major factor in his success. “The truth is that it’s not just the personal satisfaction that I get from doing a good job but also it makes good business sense. I get a huge amount

Shareholder agreements It’s easy when you start out in business with a colleague or even another member of the family to think of the positives and indeed, in many ways, you should. “This time next year, Rodney, we’ll be millionaires”. But, too few such entrepreneurs think enough about what can happen if it all goes terribly wrong and sadly I’ve seen a couple of these cases recently. It can be worse than a marital breakdown in some ways, but hopefully without the kids.
Write it down! There is something that you can and should do about it at the outset – write it down. Set up a shareholder agreement that establishes firstly how each party will behave in terms of day-to-day management of the business, and secondly what happens if the parties need to go their separate ways. Don’t get dragged into a debate about the costs of drawing up an agreement. Yes you will need a solicitor to draw up the document, but don’t begrudge them the money. They will charge you a lot more to sort out the unholy mess that you are likely to get into in the absence of an agreement.
Providing protection for those with a small stake in the business A good agreement will set out the duties of each party and confirm the parameters of delegated authority. It will specify what happens if one wants to leave and provide a basis for introducing newcomers to the company. It also provides protection for those who have only a small stake in the business. It doesn’t sound like rocket-science does it? It isn’t, but it could save major stress and costs in the event that your business rocket doesn’t fly true to its course. The Local Answer
