Delicious Dishes with Helen Kingscott
Chicken Tikka Skewers Enjoy these succulent skewers and fresh salad at a BBQ this summer Ingredients: 150g low fat natural yoghurt; 2 tbsp hot curry paste; 4 boneless skinless chicken breasts, cubed; 250g pack cherry tomatoes; 4 wholemeal chapattis, warmed to serve. For the cucumber salad: ½ cucumber, cubed; 1 red onion, thinly sliced; handful chopped coriander leaves; juice 1 lemon; 50g pack lamb’s lettuces or pea shoots; lemon slices to garnish. Method: 1 Put 8 wooden skewers in a bowl of water to soak. Mix the yoghurt and curry paste together in a bowl, then add the chicken. Place in the fridge and marinate for one hour. 2 In a large bowl, toss together the cucumber, red onion, coriander and lemon juice. Chill until ready to serve. 3 Shake off any excess marinade, then thread the pieces of chicken and cherry tomatoes onto the presoaked skewers. Cook under a medium grill for 15-20 minutes, turning from time to time, until cooked through and nicely browned.
4 Stir the lettuce/pea shoots into the salad and top with lemon slices, then divide between 4 plates. Top each serving with 2 skewers and serve with warm chapattis. 5 You can use any meat for this recipe – just always make sure it is cooked thoroughly before eating, especially if cooking on a BBQ.

Piña Colada A sweet, rum-based cocktail made with rum, cream of coconut and pineapple juice, the Piña Colada’s origin is contested by three Puerto Rican bartenders. Ramón ‘Monchito’ Marrero Pérez claims to have first made the cocktail at the Caribe Hilton Hotel’s Beachcomber Bar in San Juan in August 1952, using the newly-available Coco López cream of coconut. Coco López was developed in Puerto Rico in 1948 by Don Ramón López-Irizarry, hence the Puerto Rican connection and the 1952 account of the drink’s creation. Some say the drink did not acquire its name until the 1960s. Ricardo García, who also worked at the Caribe, says that it was he who invented the drink, while Ramón Portas Mingot says he created it in 1963 at the Barrachina Restaurant. The restaurant stands by his claim to this day. National Piña Colada Day is celebrated on the islands on 10th July. Ingredients: Ice; 35ml white rum; 1 tbsp coconut-flavoured rum; 50ml coconut cream; 50ml pineapple juice; 3-4 pineapple chunks; pineapple slice and maraschino cherry to garnish. Method: 1 Pour the two rums, coconut cream, pineapple juice and chunks of pineapple into a blender and blend until smooth. 2 To serve, pour into a cocktail glass and garnish with a pineapple slice and a maraschino cherry.

Exercising your dog Previously I have written about exercising young dogs and puppies, but puppies grow up to be big, boisterous adult dogs and all too often we underestimate how much regular exercise these dogs need. Dogs that don’t get regular exercise can be destructive, frustrated and ultimately suffer physically like us humans when we don’t get enough exercise – they get overweight and unhealthy. Not all dogs are the same – energy and exercise requirements will vary from breed to breed and with age and health. Brachycephalic breeds are those with particularly short faces and noses such as the pugs and bulldogs. These breeds can easily overheat in hot weather and so care needs to be taken with these dogs. Other breeds like the greyhound for example are built for short bursts of speed and aren’t suited for endurance exercise, but these are the exceptions rather than the rule. Most dogs need a minimum of 60-90 minutes of active exercise daily, ideally off the lead (if their temperament allows it). A large garden is no substitute for going on a walk. Not only do dogs benefit from being outside but they benefit from the mental stimulation of interacting with other dogs, people and the environment. Older dogs and those with health problems may need less vigorous exercise, but keeping active physically and mentally is just as important. We must also be mindful that most dogs cope better with cooler weather, particularly those bred for colder climates or with heavier coats. On very warm days make an effort to get out early or later in the day. Two recent studies looking at shelter dogs measured their stress levels and discovered that just 30 minutes of exercise a day reduced the amount of stress hormones in their saliva as well as reducing the behavioural signs of stress. What is also undeniable is the health benefit to us as pet owners to getting outside with our four-legged friends. Personally there is no better way to start the day than standing on the top of Cleeve Hill on a clear morning with my two Vizslas, Bart and Tassie.

There are few cities in the world that evoke the sheer wonder and amazement of Rome, with an unforgettable history. With so much to see and do, the real test will be trying to fit it all in. A monument to raw, merciless power, the Colosseum is one of the most thrilling ancient sights in Rome. It’s not just its vast size, but the sense of violent history that resonates – gladiators met here in mortal combat and condemned prisoners fought off wild beasts in front of bloodthirsty crowds. Two thousand years later it is not only Rome’s, but Italy’s most popular tourist attraction, drawing in between 16,000 and 19,000 people on an average day. Located between the Circo Massimo and the Roman Forum, the Palatine Hill is an atmospheric area of majestic ruins, towering pine trees and unforgettable views. According to legend, this is where Romulus killed his twin and founded Rome in 753 BC.

If you only have time to fit in one art gallery on your visit, be sure to visit the Museo e Galleria Borghese. Not only is it stunning, but it provides the perfect introduction to Renaissance and baroque art without being overwhelming. Due to its popularity, visitors are admitted at two-hourly intervals, so you’ll need to call to pre-book and enter at an allotted entry time.
Listen out for the Italians Italians are famous for their love of good food and their skills in making it. Rome is bursting at the seams with restaurants, trattorias, pizzerias, osterias and more, but while the sitdown lunch is a favorite pastime in the ‘Eternal City’, Romans certainly love their street food too. If you’re trying to pack as much sightseeing and culture as you can into your holiday, Rome has a bounty of snack options that are budget friendly and perfect for when you’re on the go. For a gourmet sandwich (panino), Tricolore Panini is the place to go. Located in the Monti district – a short walk from the Colosseum – this place serves up delicious treats from an ever-changing menu, including freshly baked potato bread, roast pork cheek and falafel.
Around the corner from the market is 00100 Pizza, where the infamous Roman street food snack ‘trapizzino’ was born. The delicious pizza pockets are filled in front of you with classic flavours like meat and tomato ragu or braised chicken. The latest craze in Rome street food is the Romeo Ape Truck – a mobile sandwich shop showcasing local, fresh and seasonal ingredients and Rome’s famous Roscioli bread out and about on the streets of Rome. And who could forget about gelato? Italy certifies select shops as ‘gelaterie artigianali’ as mark of an establishment that uses only fresh ingredients and no artificial colours, flavours or thickeners. Gelateria del Teatro, just off the pedestrianised via dei Coronari between piazza Navona and the lungotevere Marzio, is a gelateria artigianale, using specially sourced ingredients including almonds from Bari and pistachios from Sicily. The picturesque location offers outdoor seating in a tiny alley and the gelato itself includes several flavours of chocolate ranging from ‘al latte’ (milk) to ‘puro’ (reputedly 70% chocolate). Other choices include cassata and tiramisù flavours plus caramel-pear and ricotta-fig-almond. The trick is to look out for long queues and listen out for the Italian language – if the locals are eating somewhere, you can bet you’re on to a winner! Whether you’re drawn to Rome for the food or its history, this beautiful city is sure to leave you wanting more.

Going Continental doesn’t have to feel foreign If you’re one of the many motorists that are planning on driving in Europe this summer, then there’s plenty more to remember than simply sticking to the ‘wrong’ side of the road. Seasoned travellers will know the ins and outs of motoring on the Continent, but for anyone embarking on their first motoring holiday the differing rules and regulations can be daunting. That said, it’s only a problem if your preparation extends to little more than checking the tyre pressures and chucking a map in the car. To find out what you need for visiting a specific country, it’s best to visit a website like that of the AA –
www.theaa.com. However, a few essentials are high visibility vests (compulsory in countries including France and Austria), a GB sticker (compulsory within the EU), headlamp beam adaptors to ensure your car is fit for the road, spare bulbs (you must always be in a position to replace any blown exterior light), and, if you’re driving in France, even an in-date alcohol breathalyser. France and many other countries also require you to carry a warning triangle, while a first aid kit and fire extinguisher are even more of a good idea as, under the European Good Samaritan Law, you are required to stop and help in the event of an accident. Also, be aware that carrying any device capable of detecting speed cameras, including satellite navigation systems, can land you with a fine from the French Police. If you’re hiring a car, then there’s no need to worry about much of this, as it should come with any extra equipment that might be required by law. What may be an issue though, is
the DVLA’s recent decision to scrap the paper counterpart of your driving licence. What this means is that to hire a car, you’ll need to log onto the DVLA’s website to generate a licence check code before you go – the code usually lasts for 72 hours. This code will enable rental companies to check details of penalty points and endorsements, but there is concern that these businesses won’t be aware of the change and will still insist on seeing your paper licence – even if it has no legal status. The best advice is to get the code before you go, but still take the paper counterpart of your licence.
There’s no denying that there’s a fair bit to consider, but spend some time doing your research and even though you’ll be driving in another country, you’re sure to feel right at home on Europe’s roads.

Alternatively, you could place uplighters in plant pots to throw light up to the ceiling, and these can easily be hidden behind a chair.
3. Collectables 1. Fresh flowers and plants This is a quick transformation and doesn’t have to be anything dramatic and expensive. Fresh flowers add colour to your room just by simply placing them on a coffee table or cabinet. You can change vases and the colour of the flowers so the room is always updated. A long clear vase filled with lily gives off a beautiful scent and will certainly lift your spirits and wow your guests. The way flowers are displayed can make a huge difference to the look of your room. If a simple plant pot is more your style then just ensure you have a fabulous container and you dust the

Polish up your garden in no time Now is a good time to prune early summer flowering shrubs like Philadelphus, Deutzia, Wiegela, and Rubus as they have finished flowering. Pruning will encourage new shoots to spring up from the base, and if you cut out about one in three of the thickest old branches at the bottom, these new ones will take their place and ensure the flowering doesn’t decrease. As with all shrubs when you’ve pruned, lightly fork in some pelleted chicken manure or balanced fertiliser – such as Growmore – around the base, water well and mulch with some compost or well rotted manure to give the plant a real boost. Don’t touch the stems with the mulch or they could start to rot. Try your hand at taking cuttings from perennial herbs such as Lavender, flowering side-shoots that are soft at the Rosemary and Sage. Take the cuttings tip and woody at the base – about 10cm early in the day and choose non- long. Pull away from the main stem, gently leaving a little bit of the bark still attached – these are called ‘heel’ cuttings. Take off the lower 5cm of leaves from the stem, dip the end into hormone rooting powder (garden centres have this) and then insert several of these cuttings into a small pot of gritty compost. Firm them in and water well, then cover the whole pot with a plastic bag (ensuring it doesn’t touch any of the leaves), label and place somewhere warm but out of direct sunlight. The cuttings should have rooted by late August. Spare a thought for the owners of the gardens open in the National Garden Scheme – imagine all the work they have
to do to prepare for visitors! I was thinking about this the other day and asked myself if I had 20 minutes to do something to tidy up my garden before visitors arrived, what would be the tasks to do? I would plump with weeding the front 10cm of the border leaving bare earth, cutting the grass and trimming the edges. Obviously some of you have more garden than me and this would take an hour or two, but it is the equivalent of a quick vacuum up and spraying polish around in the house – it really looks more than the time it takes and you can ignore the back of the border especially at this time of year when it is probably full to bursting with luxurious growth, unless you have the time.

Write it down! There is something that you can and should do about it at the outset – write it down. Set up a shareholder agreement that establishes firstly how each party will behave in terms of day-to-day management of the business, and secondly what happens if the parties need to go their separate ways. Don’t get dragged into a debate about the costs of drawing up an agreement. Yes you will need a solicitor to draw up the document, but don’t begrudge them the money. They will charge you a lot more to sort out the unholy mess that you are likely to get into in the absence of an agreement.

It’s easy when you start out in business with a colleague or even another member of the family to think of the positives and indeed, in many ways, you should. “This time next year, Rodney, we’ll be millionaires”. But, too few such entrepreneurs think enough about what can happen if it all goes terribly wrong and sadly I’ve seen a couple of these cases recently. It can be worse than a marital breakdown in some ways, but hopefully without the kids.
A good agreement will set out the duties of each party and confirm the parameters of delegated authority. It will specify what happens if one wants to leave and provide a basis for introducing newcomers to the company. It also provides protection for those who have only a small stake in the business. It doesn’t sound like rocket-science does it? It isn’t, but it could save major stress and costs in the event that your business rocket doesn’t fly true to its course.
