Sangria Sangria Sangria is a typical beverage from Spain and Portugal, which usually consists of wine, chopped fruit, a sweetener, and a small amount of brandy. The fruit can include orange, lemon, lime, apple, peach, melon, berries, pineapple, grape, kiwifruit and mango. A sweetener such as honey, sugar, syrup or orange juice is often added to take any bitterness away from sour fruit or the brandy. Instead of brandy, other liquids such as Seltzer, Sprite or 7 Up may be added. T h e u s e o f t h e wo r d s a n g r i a i n l a b e l s i s n ow r e s t r i c t e d under European law. Only sangria made in Spain and Portugal is allowed to be sold under that name after the European Parliament green-lighted new wine labelling was introduced in January 2014. Turkey w ith b acon, p eas Turkey with bacon, peas and cream cream and SServes erves 2 2-3 -3 IIngredients: ngredients: 3 thick rashers of streaky bacon or pancetta, diced small; oil for frying; 1 medium onion, chopped; 1 clove garlic, chopped; leftover turkey, chopped fairly small; 200g frozen peas; 2-3 tbsp double cream; salt and pepper. TTo o sserve: erve: 200 -300g tagliatelle; fresh parmesan or coriander depending on preference. Method: M ethod: 1 In a heavy frying pan fry the bacon or pancetta until just crispy. Turn the heat down, then add the onions and garlic and cook gently until soft but not coloured.

2 Add the peas and allow to bubble for a couple of minutes. When the pan is almost dry again add the turkey and heat through. 3 Add the cream and season well with salt and pepper. Allow to bubble until the cream has reduced a little and the sauce has a nice coating consistency. 4 Serve tossed with the cooked tagliatelle, with either the parmesan or coriander. Tip: For those who like a little more sauce, try adding Tip: some chicken stock when you add the cream.

His down to earth view of life has really proved there is still room for characters in our politically correct culture. Formula One World Champion Damon Hil l also released his autobiography this year and I have heard rave reviews. Having bought a dog-eared 1971 paperback copy of his father’s book ‘Life at the Limit ’ at Prescott Hill Climb earlier this year, I hope the quality of anecdotes runs in the family.

Why not create a new tradition this year – no matter the type of family you have? With a little time and planning, you can create a celebration season that is exactly w h a t w o r ks fo r y o u . A n d h e r e a r e some ideas...

You can add to it year on year, which makes it a wonderful way to collect memories for your children. Interview older family members a n d f r i e n d s a b o u t t h e i r l i ve s a n d record the interviews along with a photo, as something to look back on in the years to come. There is so

much wisdom in our elders that they are only too happy to share if only we would ask! For baby ’s first Christmas, making a handprint on a new tree skirt and recording their name and the year will create a new tradition to mark a growing family – and more permanent than scratches on the d o o r p o s t , e s p e c i a l l y i f yo u m ov e a lot.
Kindness K indness ffirst irst I love to encourage kindness and caring, and now we can embrace Kindness Elves – an alternative to the Elf on the Shelf Tradition that hit us in the past two years. Kindness Elves is about knitting (or buying) a couple of ‘Visiting Elves’ that only choose to v i s i t t h e h o m e s o f k i n d c h i l d re n . ‘ T h e y ’ w r i te l e t te r s to t h e c h i l d r e n observing acts of kindness, and also suggest ideas for sharing kindness more widely. This is a lovely way to encourage good and beneficial behaviours without the ‘sneaky spying’ element of the judgemental Elf on the Shelf. You can really see children bloom
under the praise and recognition, e s p e c i a l l y w h e n t h ey t h o u g h t n o one was looking. Patterns for such elves are readily found online – or elves can be sourced in kits complete with an elf house and heart shaped ‘letters’.
SSilent ilent n night ight My personal favourite is the carol singing, for regardless of belief, I cannot resist a good sing-song. You will find local carol concerts in churches across the region, but also in town centres, community centres or even local parks. They are a great way to get out and meet people if you are without family at this time, and you can take time to observe all ages coming together in the spirit of sharing and joy. And don’t forget those struggling this Christmas – make a space in yo u r s c h e d u l e to d o n a t e t o a l o c a l charity, visit elderly relatives or n e i g h b o u r s, a n d m ay b e g e t t h e children to choose a toy to give to the children’s ward or drop-in centre for those less fortunate. Whatever you find yourself doing this Christmas, I hope you are happy a n d b l e ss e d a n d f i n d j oy i n a l l t h e corners!

Lungs Lungs aand nd bbreathing reathing On average, each of us takes about 19 -20,000 breaths per day. Breathing (respiration) is extremely important for the whole body, as without ox yg e n w e w i l l ev e n t u a l l y d i e . Breathing is an unconscious reflex , meaning the body regulates it without us having to think about it. When we breathe, the diaphragm and muscles between the ribs move, which ‘pumps’ the lungs. When we inhale, the lungs expand, drawing in oxygen, and when we exhale the lungs contract and carbon dioxide is released via our nose or mouth. W h e n t h e a i r e n t e r s t h e l u n g s, i t p a ss e s t h ro u g h t i n y a i r s a c s c a l l e d alveoli and into the capillaries where it can be transported around the body in the bloodstream via the red blood cells.

For example, being hunched over a desk can cause us to breathe more shallowly, which leads to more carbon dioxide in our blood. This can cause us to feel tired, and we may start to yawn to get more oxygen
into our system. Abdominal breathing is m u c h b e t te r f o r u s, a s i t gets a decent amount of oxygen into the body, p r ov i d i n g u s w i t h m o re energy. This is also why s t re tc h i n g a n d t a k i n g a short walk is beneficial, as it opens up the chest a n d g et s o u r l u n g s wo r k i n g m o re effectively. Deep breathing also helps us to feel more re l a xe d . W h e n we f e e l a n x i o u s, o u r breathing becomes quicker and shallower, so taking a few deep breaths can help to calm us down. Even when we do breathe from o u r a b d o m e n , at a m ax i m u m , t h e majority of us only use 70% of our lung capacity. There are many factors that can affect the way we breathe – lifestyle factors including smoking and being over-weight , short-term health problems like having flu or allergies, and more serious, longer-term i l l n e ss e s s u c h a s a s t h m a o r bronchitis.

This leads to reactions like coughing, sneezing and a blocked or runny nose. Asthma is a condition in which the air passages to the lungs become inf lamed or partial ly blocked with mucus, making them narrower and so decreasing the amount of air we c a u s es can take in. This breathlessness, wheezing, and a tight feeling across the chest. It is not really understood why some people develop asthma and others do not.

Have H ave yyou ou cconsidered onsidered aan n aapprenticeship? pprenticeship? Apprenticeships have existed in one form or another in Britain for several hundred years. Originally aimed at providing skills-based training of artisans and for trades and industry, t h ey h a ve s e e n a r ev o l u t i o n i n t h e i r scope and the level of qualifications that can be achieved through this route in recent years. Apprenticeships are available at Intermediate (Level 2; equivalent to five good GCSE passes), Advanced (Level 3; equivalent to two A-level passes), Higher (Level 4/5; equivalent to a Foundation Degree) levels and Higher Degree Apprenticeships, which include a full bachelor ’s or master ’s degree. They provide the opportunity to gain on-the-job work experience whilst completing theoretical learning, at varying levels at a college or through a private training company. The system also provides training in functional skills and addresses gaps in literacy and numeracy skills for those that require it .
IItt iiss iimportant mportant tto ob be e ccommitted ommitted All apprenticeships are a minimum of 12 months duration, but the length of time an apprenticeship will take varies d e p e n d i n g o n t h e s e c to r c h o s e n , previous qualifications held, the ability of the individual apprentice and the employer’s requirement. Since an apprenticeship will take between one and four years to complete, depending on the type of framework chosen, it’s important that you’re committed enough to see it through. Training is made up of several components, all of which have to be passed. Combining work and study is certainly not an easy option, but does provide the balance between earning an income, the opportunity for career development, and progression and the acquisition of qualifications that is The Local Answer
increasingly attractive to many. Starling Season As we say goodbye to the long warm days of summer and the colour that autumn brings, it’s easy to feel a little down-trodden by the harsh lines and cold air of winter. You’d be forgiven for thinking it a dull season for wildlife, but to the avid eye, it is rich with delights that don’t grace our landscapes in warmer months. We welcome migrant birds such as re d w i n g s and fieldfares to hedgerows; the occasional flock of spectacular waxwings to garden berry trees; beautiful ducks such as teal, shoveler, wigeon and pintail overwinter on wetland sites such as Coombe Hill. But perhaps the most spectacular of winter treats is the sight of a starling murmuration.

They are year-round residents in the UK and by no means a rare sight in gardens and atop telegraph p o l e s . through the sky in a murmuration. Mesmerising to watch, the birds gradually gather on the wing and swoop together in unison, creating i n c re d i b l e f l u i d s h a p e s t h r o u g h t h e air. The freewheeling, pulsating curves produced by masses of these small birds are an annual highlight for many a wildlife-enthusiast.

While they roost in a number of different habitats – from reed beds to city centres – like so many of nature’s wonders, you’re never guaranteed to see one, which is what makes them even more special.

Murmurations could be a way of confusing predators – staying as close to the centre of the group as possible would mean less chance of being picked off, while the large group

You might be forgiven for thinking you have turned to the gardening page, but no this is ‘Money Matters’ and the author hasn’t gone mad! I’m referring to the increasing number of apprenticeships that are being taken on in small businesses. I’m speaking from first-hand experience. We took on Peter as an apprentice fifteen months ago and he has proved to be a first class signing. When the time is right, we will probably repeat the exercise all over again. So why aren’t all small firms taking on a school leaver and growing their own staff for the future? Judging by the difficulties we have had recently in recruiting a qualified member of staff, growing your own is definitely the way forward.

I’m not saying that is the sole reason, but student debt has to be a big factor in the decision making for those reaching their GCSE and A-level years. So the availability of candidates increases. T h e G o ve r n m e n t h a s b a c k e d u p i t s p ro m o t i o n o f apprenticeships with legal protection for the term ‘apprentice’ and set out very clear and stringent rules for what an employer has to deliver if he/she is to get the financial benefits on offer in terms of grant assistance. They have also introduced an apprentice levy on larger firms to help pay for the cost of expanding the scheme.
