Daiquiri The Daiquiri has developed into a family of cocktails with rum, lime and a sweetener as the common denominators. Variations range from a banana daiquiri to a cranberry daiquiri, but the most popular variation is probably the strawberry daiquiri. It is believed to have been created in Cuba in the late 19th century as a medicinal treatment. However, it is also possible that the daiquiri was invented by an American mining engineer named Jennings Cox, who ran out of gin whilst entertaining guests and had to use what was available – rum. Having remained localised for around 100 years, the daiquiri was introduced to the Army and Navy Club in Washington, D.C. and became increasingly popular over the next few decades. In the 1940s whiskey, vodka and other spirits were hard to come by in America because of wartime rationing. However, thanks to Roosevelt’s Good Neighbour policy, which opened up trade and travel relations with Latin America, Cuba and the Caribbean, rum was more easily obtainable. Ingredients: Ice; 50ml light rum; 30ml fresh lime juice, 1 teaspoon simply syrup, lemon slice to garnish. Method: 1 Pour rum, lime juice and sugar syrup into a cocktail shaker with ice cubes. 2 Shake well and strain into a chilled martini glass.

Delicious Dish with Helen Kingscott

Chicken Curry Ingredients: 1kg boneless chicken breasts, cut into chunks; 1½ tsp ground black peppercorns; ½ tsp salt; 1½ tsp coriander seeds; 1tsp garam masala; 1tsp paprika; 1½ tsp turmeric; ½ tsp chilli flakes; 2 fresh tomatoes, sliced; 200g mushrooms, sliced; handful of fresh coriander, chopped; 3 bay leaves; 400ml water. For the sauce: 3tbsp sunflower oil; 2tsp cumin seeds; 2 medium onions, peeled and chopped; 1 head of garlic, cloves peeled and crushed; 200g tinned tomatoes; 5cm piece of root ginger, peeled and grated; 2 green chillies.

A hearty chicken curry, bursting with flavour and spice – the perfect meal to cook for your dad this Father’s Day!

Method: 1 For the sauce: Heat the oil in a large pan, add the cumin seeds and fry for 10 seconds. Add the onions and fry until golden brown, then add the garlic and fry for 2-3 minutes. Drain the tomatoes (keep the juice to one side) and add them to the pan. Add the ginger and chillies and cook until the oil begins to separate. 2 Wash the chicken and drain well. 3 Put the chicken, peppercorns, salt, bay leaves, herbs and spices into the pan and cook over a fairly high heat. Keep turning the chicken and cook until the meat is sealed and browned and the liquid has evaporated. Add the juice from the tinned tomatoes and about 400ml water, bring to the boil and simmer over a medium heat for about 15 minutes or until the chicken is tender. Add the fresh tomatoes and mushrooms for the final 5 minutes of cooking time. 4 Sprinkle fresh coriander on top of the curry and serve with naan bread or boiled rice.

The ‘Pick Your Own’ season gets well under way in June and Primrose Vale has an abundance of delicious berries, currants and beans for all the family to enjoy collecting – a fantastic way to entertain the children and encourage them to eat healthily. You’ll probably end up doing most of the picking yourself, but tasting fruit and veg fresh from the fields is a delightful and positive experience for everyone. Primrose Vale Farm Shop & PYO has been developed over the years by owners Charlotte and Paul Keene to become a wonderful source of locally grown or reared produce – keeping food miles to a minimum and supporting nearby farmers simultaneously. There is a large selection of delicious food all year round. There’s also a great variety of crops for you to gather. The most popular fruits with customers at this time of year are strawberries and raspberries prominent towards the end of the month. You don’t have to damage your back in the process of picking them – raspberry bushes are tall and the strawberries are now grown on raised platforms, so there’s no slugs, bugs or mud either! To the side of the shop a recreational area has been created for customers to use during opening hours. Whether you need a sit down or your children want to use the sandpit, ride the vintage tractor, play on the swings and slides or see the rabbits, you are encouraged to use the facilities. In fact, Charlotte and Paul are more than happy for you to take your little ones to use the play area, even if you’re not picking or visiting the shop specifically. AUG

Focus RS – master of all trades When you think of classic Fords – the Escort, the Capri, the Sierra – the iconic designs that instantly spring to mind are the ones that have been proud to wear the RS (Rallye Sport) badge. RS has allowed Rally fans throughout the years to buy a car equivalent to the ones they have watched their sporting heroes drive.

Beautifully composed It felt special when Ford invited me to the launch of their new All-Wheel Drive Ford Focus RS (MK3). I had heard the car was exceptional and, driving from the country house of Aynhoe Park to Silverstone, I soon discovered it was. The Ford Focus RS was beautifully composed on the road. Taking it out on the Stowe circuit, I then discovered a compelling track car with a stiff chassis and all the tools you required for the role in hand. The team at Ford Performance have worked hard to include all the iconic performance car elements. The exhaust on the new RS was totally redesigned several times to get the acoustics right and still meet global requirements. The large bore system is as straight through as possible to remove back pressure, and Ford Performance even had a

strategy to ensure (in Sport, Track and Drift modes) the exhaust pops, baubles and bangs like a rally car when driven hard. The Ford Focus RS project team planned from day one to minimise drag, maximise cooling of both the engine and the Brembo brakes, and make the car handle as well as possible. The 350PS Ecoboost 2.3 litre engine in the RS has come from the new Mustang and has been specifically tuned for 0-62mph in 4.7 seconds and a top speed of 165mph.

Improved agility and stability Good grip is essential for an iconic car and the new Focus RS is equipped with a clever Torque Vectoring system which, during cornering, transmits increased torque to the outer drive wheel. This helps to improve agility, stability and avoid understeer. The Michelin Pilot Super Sport tyres (235/35 R19) work in beautiful harmony with the new technology. The Focus RS is a very professional piece of kit that makes an average driver look exceptional. It has set a new

bar for the five door performance hatchback. The hugely functional aerodynamic styling blends into the package, making a sophisticated looking car that I know will become a future classic.

Elderflower “Old girl, give me some of thy wood and I will give thee some of mine when I grow into a tree.” Perhaps not the most imaginative rhyme ever and not exactly a promise I can see anyone being able to deliver on (unless biology lessons at school were way off the mark), but it was once often recited whenever a person needed to prune or cut down an elder. The Elder Mother was a mythical being, generally considered to be a witch, and the elder tree’s self appointed guardian. Should anyone dare take without asking, she would curse that person with bad luck.

Don’t take too many flowers Whether you decide to recite the poem or not when harvesting elderflowers, make sure you don’t take too many if you want to come back later in the year for the berries. There are so many uses for elderflowers – most of which involve turning them into some form of beverage – that it’s worth looking online for some recipes. But I’m a simple soul and I don’t have a lot of space for fermenting more than one batch of anything per year. As a result, for a hassle free spring treat, I pick one or two flower heads and dip them in batter before lobbing them in the fryer until crispy. Serve with a light drizzle of honey and sit in the sunshine while eating. What better way to spend a lazy afternoon than having the tastes and smells of spring filling your senses and a cold beer dulling them. If you’re not 100% sure that the plant you’re picking is safe for human consumption, don’t pick it. If you’re prone to food allergies, or pregnant, always seek medical advice before consuming anything foraged in the wild. Page 26

June would not be June without the rose June would not be June in England without the rose. Every garden should have at least one rose in it, and preferably several! The cheapest way to buy roses is to get them in winter as ‘Bare Root’ plants, which are exactly that. They arrive from the nursery in a plastic bag and need soaking for a couple of hours before planting in a well-prepared hole with plenty of organic matter and some mycorrhizal fungi granules – which are a fairly new idea and help the roots establish quicker.

A great selection available If you wish to put roses in the garden at this time of year there is no problem, as there is a really good selection available in pots from the nurseries or garden centres, and in a way it is easier to choose them when in bloom. Some roses only bloom once in the summer and some bloom continually, so that is something to check. Also some roses have no scent (who wants a rose with no scent?!). Some roses have more resistance to

disease than others, and if you don’t like spraying plants with a fungicide, that is something that you should check. Some roses will put up with a degree of shade (no rose would like being in heavy shade) such as Madame Alfred Carriere – a lovely old white rose with a pink blush dating back to early Victorian times, which is great for a partially shaded wall, and will flower from June through into

Autumn. Good plants for growing under roses are things like perennial Geraniums, the silver foliage of Nepeta x faassenii, or Salvia nemorosa, and the more compact lavenders.

The ‘Chelsea Chop’ The ‘Chelsea Chop’ is a way of shortening perennials, which can become leggy. It promotes smaller, later flowers but in an increased quantity. It is done around the time of the Chelsea flower show (hence its name) – at the end of May or beginning of June. You can try it on lots of plants such as Sedums, Rudbeckia, Echinacea, Helenium and Asters. You could also cut back half the stems and leave the other half, thus lengthening the time of the flowering display – have a try and see how you get on. Derby day is the traditional time of year to give Box a first trim, although obviously it varies from area to area – but by 7th June frost is unlikely in Britain! Don’t cut it in hot sunshine as the leaves will get scorched. Feed with some bonemeal or slow release granules and water well when you have finished.
