A Apricot pricot ssponge ponge p puddings uddings w with ith ccaramel aramel ssauce auce Ingredients: Ingredients: For For the the pudding: pudding: 200g dried apricots, chopped; 1½ tsp bicarbonate of soda; 100g unsalted butter, softened; 225g unrefined caster sugar; 3 eggs, beaten; 225g self raising flour; 4 tbsp ground almonds; 1 tsp vanilla essence; 1 tsp grated lemon rind. FFor or tthe he sauce: sauce: 150g unsalted butter, cubed; 150g unrefined light brown sugar; 250ml double cream; one orange, zest grated; a couple of dried apricots and a few pecans, chopped ready to garnish. M ethod: Method: 1 Heat the oven to 180°C (gas mark 4). Grease 8 individual metal pudding moulds with butter. 2 Put the apricots and bicarbonate of soda in a bowl and pour on 400ml boiling water. Set aside. 3 Beat the butter and sugar until pale and fluffy. Add the eggs a bit at a time, beating well after each addition.

4 Sift in the flour and stir in the almonds. Add the apricots and their juice, then the vanilla and lemon rind. Mix well. 5 Pour into the tins and bake for 20 -25 minutes, or until risen, golden brown and firm to touch. A skewer inserted into the centre should come out clean. If not serving immediately, leave to cool in the tins. 6 When ready to serve, make the sauce by putting the butter, sugar, orange zest and cream in a small saucepan. Bring to the boil and simmer for 5 minutes. Heat the oven to 200°C (gas mark 6). 7 Carefully turn the puddings out of their tins and place them on a baking tray. Pour about one third of the sauce ov e r t h e p u d d i n g s a l o n g w i t h s o m e o f t h e c h o p p e d apricots and pecans. Place in the oven for 5-7 minutes or until the sauce is golden and bubbling. 8 Serve with the rest of the hot sauce and ice cream.

Dark Dark ‘n’ ‘n’ SStormy tormy This classic drink is a highball cocktail made with black rum and ginger beer, served over ice and garnished with a slice of lime. Classic, easy to make and tasty, the Dark ‘n’ Stormy is the national drink of Bermuda. Many people believe there’s only one specific type of dark rum this cocktail can be made with – Gosling’s Black Seal. They say: “If it ain’t Gosling’s, it ain’t a Dark ‘n’ Stormy.” With regards to its origin – as with the majority of rum history – the story of the cocktail comes from sailors. In the 17th century it was standard practice for the British Royal Navy to allot rum rations to sailors, and the rum was sourced from various bases on Caribbean rum-producing islands such as Bermuda. A ro u n d t h e l a te 1 8 6 0 s, t h e G o s l i n g B ro t h e r s ’ r u m distillery, located in Bermuda, began marketing a heavy blend of dark rums, which eventually became the Gosling’s Black Seal that is marketed today. The Royal Navy added a ginger beer plant to their dockyard on Ireland Island (Bermuda). Ginger is a wellknown tonic for seasickness so may have been used in an attempt to wean sailors off heavy rum-drinking. The name itself is said to have originated when a sailor held the drink up to the sky and observed the drink was “the colour of a cloud only a fool or a dead man would sail under”. IIngredients: ngredients: Ice; 50ml Gosling’s Black Seal Rum (or other black rum); 150ml ginger beer; lime wedge (optional). M ethod: Method: 1 Fill a highball glass with ice and add 150ml ginger beer. 2 Top up with 50ml black rum and garnish with a lime wedge (optional).

EEar ar iinfections nfections aare re e extremely xtremely ccommon ommon One of the most common complaints is the ear infection (‘otitis externa’), which dogs are particularly prone to – some breeds more than others. Hairy ear flaps that flop down over the ear canal can predispose to moist , humid conditions in the ear canal, which bacteria and fungus particularly like. Dogs that like swimming can pick up infections and dogs with skin allergies are particularly prone to the skin of the ear canal getting itchy and infected. There are many drops and solutions that can soothe and fight ear infections, although the greatest challenge is convincing Fido or Felix to sit still long enough to correctly administer the medications! Sometimes we use long lasting preparations or ear wicks (sponges impregnated with antibiotics) to avoid daily treatment of difficult patients! In young puppies, kittens and rabbits we sometimes see ear mites – tiny parasites that live in the ear canal causing an intense itching of the ears. Fortunately, they are easy to treat and much less rarely bother adult animals. Not uncommonly, foreign materials can get trapped in the ear canal. Grass seeds are particularly problematic, as their barbed ends get caught in the hair around the ear, meaning they quickly work their way down the tube until resting painfully against the ear drum. Tumours or cancers can also occur in the ear canal. Cats are particularly prone to ear polyps, which grow low down in the ear canal and are often prone to getting infected – these can be quite challenging to remove. If an ear drum ruptures or an infection damages the ear drum (tympanic membrane), an infection will spread to the tympanic cavity and cause a middle ear infection (otitis media). These can be much more difficult to cure and more aggressive treatment, such as repeated ear flushes, may be required.

The ‘otic canal’ (the outer ear tube) is designed to funnel noise down to and through the ear drum (tympanic membrane), which provides a physical barrier to bacteria and foreign material. Behind your ear drum is the middle ear,, an air-filled space called the tympanic cavity, and the inner ear, which contains the delicate hearing apparatus, as well as the vestibular system, which regulates your balance. Problems in any of these areas cause common ear complaints in dogs, cats, rabbits and rodents.
These days we can use special cameras to inspect the ear drum and middle ear. Special scans or X-rays can highlight disease or growths in the lower ear canal or behind the ear drum. We have a great selection of medications and washes to control and treat infections, and clever surgical techniques allow us to treat even the most troublesome ear problem. Common symptoms include holding an ear on one side, a foul smell or discharge coming from the ear canal, or excessive scratching or head shaking. If your pet is bothered by its ears, consult your vet for the most appropriate and, hopefully, easiest treatment to administer.

With underwear, I’m not quite ready for second hand. I have around eight bras, but probably only wear three of them, and am a fan of the basic t-shirt bra in a practical colour. Usually I bolster my collection after Christmas, using up a high street gift voucher on some new lingerie. What better way to start the New Year than with new knickers?

Old, broken bras used to get chucked in the bin when t h e y n o l o n g e r o f fe r e d t h e s u p p o r t I n e e d e d . At t h e t i m e I t h o u g h t , w hy would someone want a worn out bra? It has seen better days and surely can’t be reused or recycled… or can it? Whatever you do, please don’t do what I did and put unwanted textiles in the bin. All our textiles can be either r e u s e d o r r e c yc l e d – e v e n o u r o l d underwear. Here are a few options: Upcycle: The internet is a great place to find upcycling inspiration, and with a quick search plenty pops up on what to do with old bras! Make a ‘brall’ (bra ball) for your pet to play with simply by stitching the cups together; transform your bra into a bandeau,
sw i m to p o r b u s t i e r a n d m a k e underwear into outerwear; or even get inspired by the WI and use your old bra as a plant holder and make a ‘brasket’. Recycle: Check with your local council if you are able to recycle textiles in your kerbside recycling box . If so, bras can go in there too! Make sure to place all textiles in a plastic bag so garments don’t get wet , in case it rains on recycling day. Donate: Most charity shops accept used bras that are in good enough condition to be worn again. Even if bras don’t resell on the shop floor, a textile recycler will purchase them along with a n y o t h e r u n s e l l a b l e d o n a t i o n s f ro m the shop. This means even an old bra can help fundraise for the charity ’s beneficiaries. From the 5000 tonnes of textiles Bristol Textile Recyclers (BTR) diverts from landfill in the UK each year, around 0.5% are bras – this equates to a staggering 320,000 bras per year that have been collected from charity shops and textile banks. BTR weighs the bras and other textiles and pays the charity by the kilogram. At the factory, each bra’s reusability is checked by hand and

Making Making TTax ax D Digital igital We went on a seminar last month, presented by our software suppliers. Sure, they were trying to sell us their products, but the underlying message that they carried was positively frightening. We’ve known for a while that ‘Big Brother’ is quietly taking over our daily lives, but HMRC’s initiative of Making Tax Digital is going to be a major i n t r u s i o n i n to o u r b u s i n e ss, a n d ev e n p e r s o n a l , f i n a n c i a l affairs. They are selling it under the banner of removing the need for tax returns and giving us all greater and easier access to our tax affairs. What they really mean is that they are going to access digitally all of our business records. We haven’t seen the detailed legislation yet and the devil is always in the detail. But let me share with you a few of the headline plans.

Every business that is assessed to tax on its profits will have to keep its records in an electronic format that can report its transactions to HMRC . Gone are the days of spreadsheets and good old-fashioned pen and paper. Even your Sage accounting systems won’t be good enough unless you obtain the digital version. You will be obliged to report your transactions to HMRC every quarter. No longer will you be given months after your year-end to prepare your figures. Now they are going to be reported in what HMRC describes as ‘real-time’. For a lot of people, the change of timing will be most uncomfortable. Many of our clients write up their records at their own pace, with a lot of them thinking about accounts and tax just once a year, perhaps a few months before their returns are due for submission. This will require a complete change of mindset and introduce undue pressure to submit without having the chance to think or plan.
Quarterly reporting also means quarterly payment of your tax . They are saying it’s voluntary at the moment, but it’s only one step away from mandatory payment. And they will have details of your bank account so it would be easy for them to extract it direct . Great cash flow for the Treasury, but not for the businesses that are the life blood of the economy that feeds the Treasury. It doesn’t affect just businesses. Anyone with rental properties will be subject to the same rules. Frightened yet? You should be. The legislation is s c h e d u l e d fo r e n a c t m e n t by 2 0 1 8 a n d H M R C i s n o t fo r backing down. Don’t believe me?
