Singapore Sling This iconic cocktail was created at Raffles Hotel at the turn-of-the-century by Hainanese-Chinese bartender, Mr Ngiam Tong Boon. In the Hotel’s museum, visitors are able to view the safe in which Mr Ngiam locked away his precious recipe books, as well as the Singapore Sling recipe, which was hastily jotted down on a bar-chit in 1936 by a visitor to the Hotel who asked the waiter for it. Originally, the Singapore Sling was meant as a woman’s drink – hence the attractive pink colour. Today it is very definitely a drink enjoyed by all, without which any visit to Raffles Hotel is incomplete. Ingredients: Ice; 30ml gin; 15ml cherry brandy; 120ml pineapple juice; 15ml lime juice; 7.5ml cointreau; 7.5ml Dom Benedictine; 10ml grenadine; a dash of Angostura Bitters; slice of lime or pineapple and a maraschino cherry. Method: 1 Mix all ingredients in a cocktail shaker. 2 Strain into an ice filled collins glass. 3 Garnish with a slice of lime or pineapple and a maraschino cherry.

PLEASE DRINK RESPONSIBLY Why not have a Mocktail? For a non-alcoholic alternative, mix 120ml cherry soda, 60ml ginger ale, splash of freshly squeezed lemon juice, ice cubes and 1tsp grenadine. Garnish with a wedge of lemon and a maraschino cherry. PAGE 

Delicious Dish with Helen Kingscott

Butternut squash and red lentil soup We usually cook this soup with pumpkin, but as we make the recipes in advance, it was a little too early for pumpkin season. Butternut squash is a great alternative. If the kids want to make carvings this Halloween, why not use the leftover flesh to create this hearty, warming soup? Ingredients: 1tbsp and 1tsp olive oil; 2 onions, diced; 2 garlic cloves, finely chopped; approximately 800g chopped butternut squash flesh, plus the seeds; 100g split red lentils; ½ small pack thyme, leaves picked, plus extra to serve; 1 litre hot vegetable stock; pinch of salt and sugar; 50g crème fraîche, plus extra to serve.

Method: 1 Heat the tablespoon of oil in a large pan. Fry the onions until they soften and start to turn golden. Stir in the garlic, butternut squash, lentils and thyme, then pour in the stock. Season, cover and simmer for 2025 mins until the lentils and vegetables are tender. 2 Meanwhile, wash the butternut squash seeds. Remove any flesh and dry them with kitchen paper. Heat the teaspoon of oil in a non-stick pan and fry the seeds until they start to jump and pop. Stir often, but cover the pan in between to keep them from jumping out. When the seeds look nutty and toasted, add a pinch of salt and sugar, and stir well. 3 Blend the cooked butternut squash mixture in a food processor until smooth, then add the crème fraîche and blitz again. Taste for seasoning and adjust accordingly. 4 Serve with a spoonful of crème fraîche, a few thyme leaves and the toasted seeds scattered on top.

Congratulations! A great big high five to all of you who entered our ‘TLA Charity’ competition back in August. We had a fantastic response, which shows how much the Gloucestershire community supports its great local causes. The lucky winner of the £1,000 prize was New Start Cat Rescue, nominated by one of their supporters, Tiffany Caucutt. Both Tiffany and Jackie, who runs the charity, were over the moon and couldn’t thank us and Albany Windows enough. New Start Cat Rescue helps unwanted cats and kittens of any age to get a new start in life – whether that’s neutering and returning ferral cats to their normal colonies, or finding loving family homes for abandoned kittens. They encourage responsible cat ownership, offer advice to owners, promote regular vaccination and worming programs, and encourage neutering and microchipping when the cats are old enough. This money will go towards helping rescue and rehome the 60 cats and kittens the charity helps every single month. A good time for fruit trees This month sow some of the sweetpeas I suggested you bought last month in pots made of the inside of toilet rolls, lined with a bit of newspaper to stop the compost falling out the bottom. Soak seeds overnight and plant two per roll, using seed compost that you can buy at garden centres. Water in and leave to germinate inside at 18-22°C. Once germinated, pinch out the smaller plants and move them outside to a sunny cold frame. They will be ready to plant into their position in the spring.

Enough fruit to fill the freezer all year round Fruit trees are really becoming popular, as they take little looking after (unlike vegetables) and can provide enough fruit to fill the freezer to use all year round. October is a good time to prepare the ground for new fruit trees and bushes. If

planting on heavy soil, add plenty of grit to ensure drainage is adequate. Work in plenty of well-rotted manure into each planting position and add a handful of slow release fertiliser when you plant the new trees.
