Delicious Dish with Helen Kingscott

Butternut squash and red lentil soup We usually cook this soup with pumpkin, but as we make the recipes in advance, it was a little too early for pumpkin season. Butternut squash is a great alternative. If the kids want to make carvings this Halloween, why not use the leftover flesh to create this hearty, warming soup? Ingredients: 1tbsp and 1tsp olive oil; 2 onions, diced; 2 garlic cloves, finely chopped; approximately 800g chopped butternut squash flesh, plus the seeds; 100g split red lentils; ½ small pack thyme, leaves picked, plus extra to serve; 1 litre hot vegetable stock; pinch of salt and sugar; 50g crème fraîche, plus extra to serve.

Method: 1 Heat the tablespoon of oil in a large pan. Fry the onions until they soften and start to turn golden. Stir in the garlic, butternut squash, lentils and thyme, then pour in the stock. Season, cover and simmer for 2025 mins until the lentils and vegetables are tender. 2 Meanwhile, wash the butternut squash seeds. Remove any flesh and dry them with kitchen paper. Heat the teaspoon of oil in a non-stick pan and fry the seeds until they start to jump and pop. Stir often, but cover the pan in between to keep them from jumping out. When the seeds look nutty and toasted, add a pinch of salt and sugar, and stir well. 3 Blend the cooked butternut squash mixture in a food processor until smooth, then add the crème fraîche and blitz again. Taste for seasoning and adjust accordingly. 4 Serve with a spoonful of crème fraîche, a few thyme leaves and the toasted seeds scattered on top. KM

Singapore Sling This iconic cocktail was created at Raffles Hotel at the turn-of-the-century by Hainanese-Chinese bartender, Mr Ngiam Tong Boon. In the Hotel’s museum, visitors are able to view the safe in which Mr Ngiam locked away his precious recipe books, as well as the Singapore Sling recipe, which was hastily jotted down on a bar-chit in 1936 by a visitor to the Hotel who asked the waiter for it. Originally, the Singapore Sling was meant as a woman’s drink – hence the attractive pink colour. Today it is very definitely a drink enjoyed by all, without which any visit to Raffles Hotel is incomplete. Ingredients: Ice; 30ml gin; 15ml cherry brandy; 120ml pineapple juice; 15ml lime juice; 7.5ml cointreau; 7.5ml Dom Benedictine; 10ml grenadine; a dash of Angostura Bitters; slice of lime or pineapple and a maraschino cherry. Method: 1 Mix all ingredients in a cocktail shaker. 2 Strain into an ice filled collins glass. 3 Garnish with a slice of lime or pineapple and a maraschino cherry.

Why not have a Mocktail? For a non-alcoholic alternative, mix 120ml cherry soda, 60ml ginger ale, splash of freshly squeezed lemon juice, ice cubes and 1tsp grenadine. Garnish with a wedge of lemon and a maraschino cherry. Page 6

Lois and Tiffany present the cheque to Jackie with a little help from Newt!

Congratulations! A great big high five to all of you who entered our ‘TLA Charity’ competition back in August. We had a fantastic response, which shows how much the Gloucestershire community supports its great local causes. The lucky winner of the £1,000 prize was New Start Cat Rescue, nominated by one of their supporters, Tiffany Caucutt. Both Tiffany and Jackie, who runs the charity, were over the moon and couldn’t thank us and Albany Windows enough. New Start Cat Rescue helps unwanted cats and kittens of any age to get a new start in life – whether that’s neutering and returning ferral cats to their normal colonies, or finding loving family homes for abandoned kittens. They encourage responsible cat ownership, offer advice to owners, promote regular vaccination and worming programs, and encourage neutering and microchipping when the cats are old enough. This money will go towards helping rescue and rehome the 60 cats and kittens the charity helps every single month. So from Jackie, Tiffany, the volunteers and, of course, the gorgeous cats and kittens – thank you! To find out more about New Start Cat Rescue and how you can support them, please call Jackie on 07510 134805 or visit www.newstartcatrescue.org.uk. In The Garden with Julia Smith

A good time for fruit trees This month sow some of the sweetpeas I suggested you bought last month in pots made of the inside of toilet rolls, lined with a bit of newspaper to stop the compost falling out the bottom. Soak seeds overnight and plant two per roll, using seed compost that you can buy at garden centres. Water in and leave to germinate inside at 18-22°C. Once germinated, pinch out the smaller plants and move them outside to a sunny cold frame. They will be ready to plant into their position in the spring.

Enough fruit to fill the freezer all year round Fruit trees are really becoming popular, as they take little looking after (unlike vegetables) and can provide enough fruit to fill the freezer to use all year round. October is a good time to prepare the ground for new fruit trees and bushes. If

planting on heavy soil, add plenty of grit to ensure drainage is adequate. Work in plenty of well-rotted manure into each planting position and add a handful of slow release fertiliser when you plant the new trees.

Get on with tidying up October is also a good time to get on with the tidying up process in the borders. The soil will still be warm and moist, ideal for planting. Continue lifting and dividing clumps of perennials that have grown too big. Swap amongst your friends to increase your diversity of plants – everyone loves something for nothing! One word of warning – it may be prudent to take all the soil from the roots of a plant from a friend’s garden, and washing them off will ensure you get rid of any perennial weeds like bindweed, so do be careful.

harm even in a very hard winter and will romp away in the spring. Why not plant some Cyclamen hederifolium, which should be in flower now. Plant somewhere with shelter from the sun and wind, digging in some leaf-mould if you have some – under the shelter of trees is ideal. By planting now, when they are living plants you can see what you are buying and they will establish quickly. The dainty wired stems with lovely pink flowers really brighten up a shady spot, and the leaves form a silver and green carpet later on.

Bath time a struggle? It needn’t be ...

Wash and relax with peace of mind For some of us the bathroom no longer holds the charm it once did. Gone are the days of soaking in the bath, and practicality has become foremost in our minds … “We got in the bath, but how on earth are we getting out?” We specialise in taking baths out and replacing them with low level shower cubicles. All cubicles are designed with safety and comfort so you can wash and relax with peace of mind that getting out will be easy.

Unobtrusive mobility solutions Our goal is to design your bathroom so that you can walk in without even realising it has been altered to meet your mobility needs. We provide unobtrusive mobility solutions from a simple grab rail, high raise comfort WC pan, slip-resistant flooring, easy to use taps and much more, and it’s all fitted by our own inhouse work force – no sub-contractors!

At Severn Vale Bathrooms we never use tiles, but instead opt for easy clean UPVC panels. There are numerous colours and designs to choose from. The benefits of panels are that there is no grout to discolour, they reduce condensation and, above all, they are low maintenance. So, if your bathing needs are changing and your bathroom needs a revamp, visit our extensive showroom and see what we can offer, or alternatively call for a free quotation.

Interior Design with Caron Burrows

Choose your interiors style Most of us gravitate to our own likes and dislikes when it comes to choosing a style for the place we call home. Interiors are portrayed in various styles – contemporary, coastal, country, eclectic, industrial, Scandinavian and shabby chic, to mention just a few. Join me over the following months to assist you choosing or identifying a design style for your home. This month we are talking about Contemporary Design.

towards minimalism by keeping clutter to a minimum. Kitchen surfaces should be mostly clear and shelves not muddled with knick knacks and books. Clean line storage is the key and the first step to completing a contemporary style.

What is it?

Colour choices should be exciting and used in an original, eye-catching way. Black and white is a classic colour scheme that never grows old and works well in a bold contemporary home. Don’t be afraid to try these colour choices in a child’s room. Pastels and sugary shades will easily lift your scheme, whilst adding a modern edge to your home. Do not be tempted to use too many colours – limit your choice to just two or three.

Contemporary style is about now – a contemporary home expresses this through its finish and fabric, as well as its furniture, latest building techniques and architectural ideas. The contemporary look provides the excitement of new and modern – perhaps being the first to have the latest sofa or latest gadget. It’s about incorporating state of the art fixtures and fittings that look amazing, but also work to improve the quality of our lives.

Quick tip

Ask yourself before each design decision: “Would my Gran like this?” If Cut down on the clutter Your chosen furniture should be all the answer is a big fat NO, the chances A contemporary home often moves about designs that are up to the are it is contemporary!

Subtle designs for your individual needs Lifestyle Bathrooms is a local business based in Chalford near Stroud, specialising in bathrooms where easy access is needed. As we get older, we all find it that little bit harder to climb in and out of the bath. Losing your balance, experiencing difficulty getting up from the toilet, and finding stiff taps difficult with arthritic hands are all problems that can be solved very easily with a little help from Lifestyle Bathrooms. The company’s main clientele are retired, and often people who have difficulty getting around their home, as well as out and about. Lifestyle Bathrooms offer an

‘at home’ service whereby they visit your home to measure and design your bathroom to suit all your individual needs, the space available and your budget. From easy access showers and comfort height toilets, to single touch push button electronic showers, designer Rex (pictured) can help you to achieve your perfect bathroom. The team at Lifestyle Bathrooms want to enable their clients to remain in the comfort of their own homes for as long as possibile, and strive to create subtle designs that other family members or carers can use.
