Delicious Dish with Helen Kingscott

Butternut squash and red lentil soup We usually cook this soup with pumpkin, but as we make the recipes in advance, it was a little too early for pumpkin season. Butternut squash is a great alternative. If the kids want to make carvings this Halloween, why not use the leftover flesh to create this hearty, warming soup? Ingredients: 1tbsp and 1tsp olive oil; 2 onions, diced; 2 garlic cloves, finely chopped; approximately 800g chopped butternut squash flesh, plus the seeds; 100g split red lentils; ½ small pack thyme, leaves picked, plus extra to serve; 1 litre hot vegetable stock; pinch of salt and sugar; 50g crème fraîche, plus extra to serve.

Method: 1 Heat the tablespoon of oil in a large pan. Fry the onions until they soften and start to turn golden. Stir in the garlic, butternut squash, lentils and thyme, then pour in the stock. Season, cover and simmer for 2025 mins until the lentils and vegetables are tender. 2 Meanwhile, wash the butternut squash seeds. Remove any flesh and dry them with kitchen paper. Heat the teaspoon of oil in a non-stick pan and fry the seeds until they start to jump and pop. Stir often, but cover the pan in between to keep them from jumping out. When the seeds look nutty and toasted, add a pinch of salt and sugar, and stir well. 3 Blend the cooked butternut squash mixture in a food processor until smooth, then add the crème fraîche and blitz again. Taste for seasoning and adjust accordingly. 4 Serve with a spoonful of crème fraîche, a few thyme leaves and the toasted seeds scattered on top.

More nightlife options coming to Gloucester Nightlife in Gloucester has improved in recent years and is due to get better still. The leisure quarter at Gloucester Quays, with a new cinema, restaurants and bars, has given our residents more options and stemmed the flow of people going elsewhere for a night out.

Singapore Sling This iconic cocktail was created at Raffles Hotel at the turn-of-the-century by Hainanese-Chinese bartender, Mr Ngiam Tong Boon. In the Hotel’s museum, visitors are able to view the safe in which Mr Ngiam locked away his precious recipe books, as well as the Singapore Sling recipe, which was hastily jotted down on a bar-chit in 1936 by a visitor to the Hotel who asked the waiter for it. Originally, the Singapore Sling was meant as a woman’s drink – hence the attractive pink colour. Today it is very definitely a drink enjoyed by all, without which any visit to Raffles Hotel is incomplete. Ingredients: Ice; 30ml gin; 15ml cherry brandy; 120ml pineapple juice; 15ml lime juice; 7.5ml cointreau; 7.5ml Dom Benedictine; 10ml grenadine; a dash of Angostura Bitters; slice of lime or pineapple and a maraschino cherry. Method: 1 Mix all ingredients in a cocktail shaker. 2 Strain into an ice filled collins glass. 3 Garnish with a slice of lime or pineapple and a maraschino cherry.

PLEASE DRINK RESPONSIBLY Why not have a Mocktail? For a non-alcoholic alternative, mix 120ml cherry soda, 60ml ginger ale, splash of freshly squeezed lemon juice, ice cubes and 1tsp grenadine. Garnish with a wedge of lemon and a maraschino cherry. Page 8

More recently, the new Greek on the Docks restaurant has opened at Merchants Quay and is proving popular, with Grillshed – a new healthy eating concept backed by Gloucester Rugby stars – due to open shortly next door. Also at the Docks, several new restaurants are planned in the long-term vacant building next to the Soldiers of Gloucestershire Museum and a new wine bar is opening in the Barge Arm. More bars and restaurants are planned at Bakers Quay too. Elsewhere in the city, the former Wetherspoons Water Poet pub in Eastgate Street has been refurbished and rebranded as “The Doctors” and Butlers has plans to extend into the former Zest Bar to create a larger VIP area called Bar 103.

Providing student accommodation Work is also now starting on the former Jumpin’ Jaks building in Brunswick Road (an old haunt of mine) after many years of lying empty. The plan is for a club catering for the premium end of the market with a bar and restaurant on the ground floor with student accommodation above. Westgate Street too is seeing its share of the action with a specialist Thai restaurant replacing the Shahi Balti and a new takeaway business on the corner of Three Cocks Lane. Enterprise Inns have submitted plans for an overhaul of The Fountain. The Sword Inn (formerly The Union) also seems to be doing well.

Drawing in the customers to support new outlets Having lots of evening activities as we have seen this summer, and more people living in the city centre, helps to draw in the customers to support these new outlets. So there is no shortage of new places to go to spend your evening in Gloucester and I’d encourage you to give them a try. Drifting into autumn As October arrives, the season starts to change and autumn is upon us. The mornings have that damp feel and there is a chill in the air. It can be a difficult month where clothes are concerned because the days often have that cool start, but by lunchtime there is brilliant sunshine and we are sweltering in what now seems an ill-chosen outfit. The children are now settled into their new school, and mums and dads are getting to know some of the other parents at the school gate. I remember well how important it was for me to try to look my best first thing in the morning – and how difficult!

Dressing casual is not as effortless as it sounds Now I know that moments before you leave the house you are going to be scooting around the floor on hands and knees, helping to clean teeth and all manner of tasks that mean you cannot be wearing anything too precious. I also know that even dressing casual is not as effortless as it sounds. So let’s put some effort into achieving effortless! The first thing to consider is actually that being casual is also being stylish. Don’t simply use the clothes that have past their best as casual wear – they are still past their best and not necessarily appropriate for the school gate. Why not treat yourself to a few pieces that are just for casual wear. As you may spend most of your time wearing casual clothes, it’s worth the effort.

Sugar and spice – all things nice? Our physical bodies require a good nutritional input in order to work productively. If we eat too much sugary or fatty food, our bodies will become lethargic and unhealthy – both on the inside and out. So many foods these days contain added salt or sugar – including white bread, cereals and ready meals. An excess of sugar can cause blood glucose levels to fluctuate dramatically, and this constant rise and fall can lead to low energy overall and also low mood, restlessness and poor concentration. Refined sugars and fatty foods also have a negative effect on our hair and skin, making it oily and more prone to spots, and sugars also increase the risk of developing tooth decay.

Or for savoury meals, spice up your food with different flavours, such as cinnamon, turmeric or oregano. Also, try to get out of the habit of adding extra salt or sugar to your meals.

Like a number of other native species, many of us may first have been introduced to the water vole through literature. The popular children’s story ‘Wind in the Willows’ featured Ratty – a river-loving fellow with good manners, a tidy home and a fondness for his friends. Despite his name, Ratty was in fact a water vole.

Meticulous and tidy As the character’s name would suggest, the water vole is similar in appearance to the brown rat. But they’re smaller (14-22cm in length), their noses are rounder, their ears are smaller (usually hidden behind their chestnut brown fur) and their furry tails are shorter. Much like Ratty, they are meticulous and tidy – their burrows in steep river banks are usually neat holes, around 4-8cm in diameter, with carefully gnawed ‘lawns’ in the surrounding area. Their water repellent fur and plump figure make them buoyant and allow them to glide easily along rivers and streams. Their herbivorous diet includes grasses, reeds and rushes, which they’ll often chew away at and leave small neat piles of nibbled stalks along banks. When Kenneth Graham wrote the book in 1908, water voles were enjoying a prosperous time with over eight million inhabiting our waterways. With plenty of watercourses rich in vegetation and banks perfect for burrows, they were widespread throughout the UK.

Intensive farming methods are destroying habitats Sadly, their time of prosperity was not to last. Due to the increase in intensive farming methods, their precious habitat began to disappear.

This was accompanied by the introduction of the American mink in the 1920s. Originally brought to the UK to satisfy the growing fur trade, mink were frequently released into the wild and preyed upon the water vole. Surveys carried out in the late 1990s by Gloucestershire Wildlife Trust indicated that county populations had declined by 83% over a 25 year period, leaving just a few fragmented populations – a statistic that reflected the decline across the UK. In response, a number of conservation projects were set up to help this beloved creature. In Gloucestershire the Cotswold Rivers Project aims to stop the decline and recreate appropriate habitats so that the water vole can thrive once more. Advice and information is given to landowners, while habitats are managed to allow wildlife to travel between sites more easily. As a result, water vole numbers have increased in the county, with isolated populations spreading to new areas. Greystones Farm Nature Reserve in Bourton-on-the-Water

remains a stronghold for the precious species. So there is hope for the water vole yet – as long as careful conservation work continues.

Look out for water voles near watercourses It is always worth looking out for water voles when near watercourses. We’d be grateful for sightings. Look for the burrows along steep sided banks, the mounds of chewed vegetation and grazed ‘lawns’. Their droppings look like dark green/brown Tic Tacs, oval in shape, 8-12mm in length and odourless. Of course, the most obvious sign that there is a population nearby is spotting the furry creatures on banks and in water. However, like Ratty, they are only really fond of their friends and quite shy with strangers so spotting them can be tricky. If you think there might be one nearby, stay quiet and listen out carefully for a gentle ‘plop’. Ratty may just have dropped into the water, heading downstream to see Mole, Toad and Badger.

A good time for fruit trees This month sow some of the sweetpeas I suggested you bought last month in pots made of the inside of toilet rolls, lined with a bit of newspaper to stop the compost falling out the bottom. Soak seeds overnight and plant two per roll, using seed compost that you can buy at garden centres. Water in and leave to germinate inside at 18-22°C. Once germinated, pinch out the smaller plants and move them outside to a sunny cold frame. They will be ready to plant into their position in the spring.

Enough fruit to fill the freezer all year round Fruit trees are really becoming popular, as they take little looking after (unlike vegetables) and can provide enough fruit to fill the freezer to use all year round. October is a good time to prepare the ground for new fruit trees and bushes. If

planting on heavy soil, add plenty of grit to ensure drainage is adequate. Work in plenty of well-rotted manure into each planting position and add a handful of slow release fertiliser when you plant the new trees.

Get on with tidying up October is also a good time to get on with the tidying up process in the borders. The soil will still be warm and moist, ideal for planting. Continue lifting and dividing clumps of perennials that have grown too big. Swap amongst your friends to increase your diversity of plants – everyone loves something for nothing! One word of warning – it may be prudent to take all the soil from the roots of a plant from a friend’s garden, and washing them off will ensure you get rid of any perennial weeds like bindweed, so do be careful.

Roadkill Quite often I'm alerted to the presence of something edible (or a close approximation) when Renée, my endearingly dopey dog, starts to look a little less befuddled by her surroundings and takes an unusual interest in something by the edge of the road. I can usually tell the quality of the morsel by her reaction. If she rolls in it, it’s been there a while. If she starts to eat it, it’s still fairly fresh. If she yelps and runs back to hide behind my legs then it’s probably so fresh that a quick call to the RSPCA might be in order. It’s a sad fact that we humans are an intrusive and destructive species, the evidence of which can be seen laying dead or dying on country roadsides. But why leave something that is perfectly good eating to decay meaninglessly?

I will admit that I don’t make a habit of eating roadkill. In fact I’ve only done it twice. Once was a squirrel that I found within a short time of its untimely demise and took home just so I could cross two items off my bucket list (tasting squirrel and eating roadkill, two for one deal there). The other was a pheasant, which looked pretty questionable but Renée seemed to think it was fine dining, which was good enough for me. Even though I ate every mouthful with trepidation and within dashing distance of a toilet, I have to say that I wasn’t disappointed. To check how fresh something is give it a quick sniff test – the smell of rotting meat is unmistakable. Also, prod it with a stick – if it’s still soft and squishy then it’s a recent statistic. If it’s rigid then rigour mortis has set in and it’s been there for a good few hours at least.
