Delicious Dish with Helen Kingscott

Blackberry Bonanza! September is a great time to go blackberry picking with the family. Take advantage of and explore our wonderful countryside whilst collecting some fresh ingredients to make these delicious recipes!

Blackberry Coulis Ingredients: 250g blackberries; 50g golden caster sugar; 100ml water; ½ teaspoon vanilla extract. Method: 1 Put the blackberries, sugar and water into a saucepan and bring to the boil. Simmer for 5 minutes until the

fruit is soft. Stir in the vanilla, remove from the heat and cool a little. 2 Tip the mixture into a blender and puree, then strain through a sieve, rubbing it through with a spoon. 3 Serve warm or chilled. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.

Blackberry and clotted cream shortcake Ingredients: For the cake: 300g self raising flour; 1tsp baking powder; pinch of salt; 140g butter, chilled and cut into small pieces; 100g golden caster sugar; 75ml buttermilk; 1 egg, beaten. For the filling: 500g blackberries; 3tbsp golden caster sugar; 275g pot clotted cream; icing sugar, to serve.

Method: 1 Heat the oven to 190°C (170°C fan/gas mark 5). 2 Tip the flour, baking powder and salt into a mixing bowl. Add the butter and rub everything together with your fingers until it resembles breadcrumbs. Stir in the sugar. 3 Make a well in the middle of the flour mixture, then tip in the buttermilk and egg. Gently work the mixture together until it forms a soft, sticky dough. 4 On a lightly floured surface, knead the mixture for a few minutes, then mould it into an 18cm round and put on a lightly greased baking sheet. Bake for 30-35 minutes until golden and risen and a skewer comes out clean when inserted into the middle. Leave to cool. 5 Lightly mash the blackberries with the sugar. Slice the shortcake in half and spread the bottom layer with clotted cream. Spoon the berries over the cream, then top with the second shortcake layer. Dust with icing sugar and serve in slices.

Sex on the Beach If you’re thinking of planning a last-minute holiday for September, this popular drink is sure to get you in the mood – and it would be rude not to have a few cheeky cocktails while you plan! The most well-known claim to the invention of Sex on the Beach dates back to the autumn of 1987 in Florida, USA. A new drink – peach schnapps – had just started to be distributed and, with thousands of tourists expected to visit for the spring holiday, the distributor created a contest to popularise the new beverage. The bar that sold the most peach schnapps would receive a bonus of $1000 and the bartender responsible for the highest sales would receive $100. Ted, a young bartender at Confetti’s Bar, mixed peach schnapps with vodka, orange juice and grenadine, and was soon asked what the cocktail was called. He immediately thought of the main reason why people came to Florida for their spring break – the beach and sex! “Sex on the Beach!” he replied. As the drink became more and more popular, thousands of students returned home and requested the cocktail at their local bar. The bartenders didn’t know how to make the drink, as they had never heard of it, so they asked around and this led to the multiple variations of the drink. Ingredients: Ice; 50ml vodka; 25ml peach schnapps; 50ml orange juice; 25ml grenadine. Method: 1 Add ice, vodka and peach schnapps to a highball glass. 2 Top up with orange juice and drizzle grenadine to create a ‘sunset’ appearance.

Doggy dementia and senile felines It’s not too surprising that our four legged friends suffer the same old age problems we do – aches and pains, fading sight and hearing, and sadly also the decline of mental acuity. Sometimes the symptoms are relatively subtle – becoming quieter, withdrawn, mild confusion and disorientation. However, more significant symptoms can occur, such as toileting indoors or outside litter trays, meowing or barking for no reason, anxiety or fearfulness at things that never used to bother them, and restlessness at night. This is sometimes referred to as ‘Sundowner Syndrome’, where a dog might bark incessantly at night and seem unable to settle, but conversely sleeps throughout the day!

Cognitive Dysfunction Syndrome One positive is that it is extremely rare for these behavioural changes to progress to the severe forms of dementia that humans suffer from. While dogs and cats can certainly exhibit some marked changes in old age, they are very unlikely to become severely debilitated by senility. In dogs and cats, dementia is referred to as ‘Cognitive Dysfunction Syndrome’. Pet owners often quietly accept the declining interaction and strange behaviour as ‘just part of getting old’, but there are treatments and medications that can improve dementia symptoms. Typtophan supplements have become popular in recent years, as they increase natural serotonin levels – a neuro-chemical produced in our brains, associated with feelings of happiness and well-being. This has helped with anxiety and fearfulness, and is a gentle non-medicative option. Likewise, melatonin supplements have been used with dogs suffering from Sundowner Syndrome, as the hormone can help encourage normal sleeping patterns.

A good diet and exercise can help Various medications are licensed for use in dogs with senility. Propentofyllin (VivitoninTM) increases the oxygenation of neurological and cardiac tissue, and has been shown to help with mental function and general demeanour. Selegeline (SelgianTM) – used in humans primarily to treat depression and Parkinsons – can have a dramatic effect on some of the more severe symptoms of senility in dogs. While these drugs aren’t licensed for cats, there are options available. As a pet owner you can do other things to help as well – feed a good quality diet rich in omega fatty acids and antioxidants, and keep taking dogs out for gentle daily exercise. Ensure any other health problems, such as arthritis or dental disease, are being treated adequately – pain associated with these issues can contribute to anxiety and depression. Keep the home environment as comfortable and stable as possible – moving furniture or pet beds can add to confusion and anxiety, as senile pets are less likely to cope well with change. Make sure you talk to your vet if you have any worries about an older pet. Page 8

Its buzz sounds like overhead electricity cables Then there’s the Roesel’s bush cricket – a species that has spread from it’s stronghold in the South-East with our changing climate. Its penetrating buzz sounds like overhead electricity cables. No less impressive than the other bushcrickets, it has a distinctive yellow margin around the saddle (pronotum), behind its eyes. So this September, check out your garden, park, green space or nature reserve and keep an eye (and ear) out for all things that hop and chirp. You may just find something otherworldly.

On the other end of the spectrum, the orthoptera (that’s something in the grasshopper or cricket family) making the news more regularly is a rather more colourful specimen. Along with two other grasshopper species, the field grasshopper – a usually inconspicuous insect – has a tendency to succumb to a genetic mutation, leaving it bright pink in colour. They are quite a spectacle for the finder, so it’s no wonder they’ve made the headlines. Unfortunately, these bright pink lovelies don’t tend to last long. Being so indiscreet, they are easy prey for predators and are usually gobbled up quick-smart. So be sure to take a photo should you spot one! Something a lot less common, but iconic in the county, is the great green bush cricket. This giant of the insect world can reach lengths of 7cm, making it the largest of our bush crickets. And it spends its time in trees and on grassland. In contrast to the dark bush cricket, their song is loud and long, being likened to the noise of a sewing machine. I don’t like crickets. I love them. With sightings of bright and colourful alien-esque creatures popping up in the county, I thought I’d shed some light on these much overlooked insects. Throughout summer and heading into autumn, the calls and noises of crickets and grasshoppers are familiar sounds. Echoing the muchloved character of conscience in Disney’s Pinnochio, you may feel that, at this time of year, there is constantly a cricket chirruping on your shoulder. And you’re not far off.

The brain creates our every thought and action and develops all our memories, therefore keeping this organ in good working order is vital! With the rise of awful conditions such as Alzheimer’s and dementia, which block and eventually kill nerve cells in the brain leading to memory loss, confusion and problems with spacial awareness, keeping the brain in a healthy functioning state can help prevent and reduce the onset of these horrible conditions. Here are some tips to keep the brain healthy.

A weight on our shoulders How are you sitting or standing right now? Is your back rounded and your chin protruding? If so, you may potentially be putting your muscles and bones under unnecessary pressure and strain. The human head is heavy! The head is the third heaviest part of the human body (after the skin and liver), largely due to the weight of the brain. It accounts for 8% of our total body weight, weighing about 10-12lbs, which is as heavy as a bowling ball.

Poor posture increases the load on the neck and spine When we sit in a poor posture, with our head in a forward position, it increases the load on the neck and spine. It causes the muscles on the back of the neck to lengthen whilst they are trying to contract to support your head’s weight, and this in turn puts pressure on the spine. The head gains its own weight for every inch it protrudes forward, which adds a lot of effort to the surrounding muscles to keep it upright. This makes the muscles go into spasm, which can then cause fatigue and dizziness. The more the head leans forward, the more flexed the body becomes. Over time, this can lead to a humpback posture sometimes seen

in elderly persons, which can become permanent and lead to fractures, and even contribute to a shortened lifespan.

Living a sedentary life causes musculoskeletal problems A lot of problems these days are caused by too much sitting – at office desks, in front of the TV, or working on personal computers. Living a largely sedentary life causes shortened, weakened muscles, and sitting for long periods of time can cause many musculoskeletal problems and general pains like headaches, neck pain, and lower back pain, which is becoming more and more common. Similarly, looking down at phones and other hand-held devices can cause headaches and neck ache, which can lead to longer-term problems relating to posture and movement. Ideally, the head and neck should be upright, with the bottom tips of the earlobes directly in line with the middle of the shoulders (front to back), and the hips. Become more aware of your body’s position throughout your everyday life. Remember to get up and stretch several times every 20-30 mins – taking a short walk down the corridor is better than not getting up at all. Having the spine curved forward too much also restricts breathing, as the ribs can’t be lifted as much. This leads to shallower breathing, which in turn decreases the amount of oxygen in the body, leading to lightheadedness and other

symptoms, and it can cause or exacerbate head and neck pains.

Keep moving to prevent your body from stiffening Train yourself to breathe correctly by using your abdomen, so that when you inhale the tummy expands, and when you exhale it moves inwards. Ensure you get daily exercise, whether it is a brisk walk to the shops, a session at the gym, or a dance class. Keep moving to prevent your body from stiffening up, and remember that more activity will actually decrease levels of fatigue – which will keep you going for longer.

Autumn is coming September is often a lovely month and has the added appeal that the children are back at school! Sow salad crops for autumn and winter use. You can use the plastic containers that mushrooms come in, and keep them near the back door to snip at.
