IIngredients: ngredients: 300g puff pastry; olive oil; 1 finely chopped shallot; 100g baby spinach (remove the thick central stalks); 100g watercress (only use the leaves); 40g cream cheese; 2 tsp chopped dill (put the rest in the freezer to use next time); 1-2 tbsp creamed horseradish, depending on your taste; extra flour for rolling out; 2 salmon fillets at about 250g each, or as I used, a pack of 4 from the supermarket (490g) – remove the skins; 1 beaten egg; salt and pepper. M Method: ethod: 1 Wash the spinach and watercress leaves and tip onto a clean tea towel to dry. 2 Heat a drop of oil in a frying pan. Add the spinach, watercress and salt, and toss until the greens have just wilted. Tip into a sieve and squeeze out the water, transfer to a bowl. 3 Add another drop of oil and gently sauté the shallot, then add this to the spinach and watercress, leaving it all to cool. Then add the cream cheese, horseradish and dill and stir until it’s nicely mixed together. 4 Pop a sheet of greaseproof paper onto a baking tray then roll out the puff pastry on a lightly floured surface into a 30cm square.

5 Pat your salmon fillets dry with kitchen towel then season with salt and pepper. Place your one or two fillets in the middle, then top with the spinach mixture. Pop the other one or two fillets on top. 6 Use both hands and lift the pastry to meet at the top so it just overlaps, trimming off any excess. Brush the edges with beaten egg and press firmly to make a seal. Brush both short ends and press together, cutting off any excess. There should just be a small gap between the salmon and the pastry seals. 7 Pop the parcel of salmon onto the baking tray with the seal on the bottom. Brush all over with the beaten egg and chill in the fridge for at least 30 minutes. 8 Preheat the oven to 220°C (200°C fan/gas mark 7). Put the Wellington in the oven for around 35 minutes until golden brown. Leave to rest for a few minutes before slicing. I served mine with salad leaves and plum tomatoes.

IIntolerant ntolerant to to food! food! Over recent years there has been a dramatic rise in the number of people suffering with a food intolerance. We sometimes take for granted the amazing variety of food we have available to us in the UK, but this can often be processed and full of refined sugar. Nearly all foods require an enzyme for proper digestion. According to the British Allergy Foundation, enzyme deficiencies are a common cause of food intolerance. Certain chemicals in foods and drinks can cause intolerance – for example, amines and some foods have naturally-occurring chemicals that can have a toxic effect on humans. Food intolerance and food allergies are very different and the following ways show why.

Food Food A Allergies llergies • A reaction from your immune system as it mistakenly treats proteins found in food as a threat • Can rapidly trigger typical allergy symptoms, such as a rash, wheezing and itching,

after eating just a small amount of the food • Common food allergies in adults are fish, shellfish and nuts, and in children it’s usually milk, eggs, peanuts, other nuts and fish • Can be serious

pain, bloating, diarrhoea, migraines, vomiting and lethargy after eating, and they usually come on within a few hours after eating the food.

Food F ood IIntolerance ntolerance

The symptoms of a food intolerance can also be related to a number of other health conditions, so if you are experiencing them it is important to visit your GP to find out the cause. Your GP may ask for a skin prick test or order some blood tests to find the cause, neither of which are 100% reliable. Therefore, keeping a food diary is the best way to try to figure out what you might have an intolerance to. Note what you eat, what symptoms you experience and how long after eating the food they appear. Once you have a good idea which food is the problem, eliminate it from your diet for 2-6 weeks to see if the symptoms improve. Then if you want to, you can reintroduce the food gradually and see if the symptoms return.

• Does not involve your immune system – there is no allergic reaction, and it is never life-threatening • Causes symptoms that come on more slowly, often many hours after eating the problem food • Only results in symptoms if you eat reasonable amounts of the food (unlike an allergy, where just traces can trigger a reaction) • Can be caused by many different foods As food intolerance is not as serious as a food allergy, many people often ignore the symptoms and continue to suffer whilst eating the foods that might be causing the problem. S Switzerland, witzerland, Bond-style Bond-style The latest James Bond movie, the twenty-fifth, will be in cinemas in April 2020, with locations including Jamaica, Norway and mountainside Matera in southern Italy. But for me, with Ian Fleming and Bond’s Swiss connections, and so many Bond missions visiting Switzerland over the decades, it’s a shame ‘Bond 25’ won’t. So let’s put that right with a tour of three classic Bond-movie locations in my favourite Alpine republic. Wherever you enter Switzerland, it’s not far to the eagle’s nest eerie of Piz Gloria, high in the Bernese Oberland that featured so spectacularly in ‘On Her Majesty’s Secret Service’. To reach the heavily 007themed attraction, head south of Interlaken and ride the Schilthornbahn cableway to the heights. Check in at the Hotel Eiger in car-free Mürren for Bond-style luxury overlooking the Eiger, Mönch and Jungfrau. Then continue up to the Schilthorn’s 2,970m-high peak as George Lazenby and the late Telly Savalas did in 1969.

Joint Joint replacements replacements Commercially available hip replacements for dogs have been available since 1974. Over the years many different types of prosthesis have been developed, different materials tried and surgical techniques refined. Hip replacements traditionally use a metal ball replacement fitting into a polyethylene (medicalgrade plastic) cup. Some of the earliest metal hips were made of stainless steel – now they are titanium alloy coated with diamond-like carbon! Ultra low friction, corrosion and wear resistant.

Traditionally, this surgery was used in larger breed dogs, although now mini hip replacements are available for dogs and cats as small as 2.5kg. It’s important to realise that the need for hip replacements is not based solely on radiographic evidence of severe arthritis. Surgery is not advised unless a patient’s clinical signs of hip disease cannot be adequately controlled with medication, weight loss and physical rehabilitation. In more recent years knee replacements have also become available. The knee is more of a hinge joint and lends itself to metal and plastic replacement parts successfully.

Elbow arthritis, like hip arthritis, is usually as a result of elbow dysplasia. It is very common and difficult to manage once it has formed. The challenge in the elbow is that there are three bones all fitting together and not only does the joint have a hinge like motion, but also rotates inwards and outwards. Many different designs have been developed but to date all have limitations and are considered a last ditch option for unmanageable, painful elbows. Hip and elbow screening schemes are common in certain breeds and have greatly reduced the incidence of congenital hip and elbow dysplasia. Prevention and avoidance are better than cure and medical treatment is better than surgery, but it’s good to know if all else fails these options are available for our pets.

Prom Prom perfection perfection A few months ago, my niece asked if I could review something that would also work for me to take her and some friends to their high school prom. Thinking cap on, we quickly agreed on the refined luxury of a Jaguar XJ. While the long-wheel base version would have offered more leg room, the shortwheel base version is still massive, so room for three prom-bound girls and their dresses in the back without issue. The ride was perfect – refined, elegant, luxurious, wafting along the roads with only a barely detectable rumble from the twin exhausts to bely the power that was on tap, should it be needed. Not that you would have heard the exhaust with the 825 watt stereo (complete with subwoofer) at the hands of my niece, whose music taste is actually very good as it turns out. I’ve kept the playlist she had prepared, but I listen at a slightly lower volume!

Adaptive speed limiter with road sign recognition, 360 degree parking cameras and cross-traffic warnings for blind junctions – necessary with such a long car, in my opinion – and a really quite relaxing seat massager system. But that’s not what really grabbed my attention.

Scrolling through the menu of settings with the steeringwheel mounted buttons (very well laid out, by the way), I found some settings for the headlights. With this Jag though, I fear I may be beaten. It’s comfortable for both drivers and passengers, has plenty of space and all the refinement and technical know-how you would expect from the brand, and it goes like stink, should you need it to, as well. Yes, the price is a bit steep at just south of £75k, but it really is a master of many different tasks and in reality, the only complaint I have on that price tag is that I can’t afford it, but that’s not really something I can criticise the car for, is it? They came very, very close to realising their aim last season, finishing second in Division One West, just three points behind Easington Sports after winning 16 of their 22 league games. Unfortunately for Saracens, just one team were promoted to the Premier Division – in another season two may have gone up – and while obviously a disappointment, chairman Graham Roberts insists: “We go again.” The club knew that just the champions would get promotion last time out with Roberts adding: “It depends on the pyramid above us, sometimes two teams go up, sometimes one. “We lost a few games we should have won, we missed a couple of crucial penalties.”

The recently-turned 39-yearold is in his fourth season as skipper and the club have been flying high in the Gloucestershire Division of the West of England Premier League in 2019. “Yes, I’m the dad figure,” laughed Price, who is in his seventh season with the club. “We’ve got quite a lot of young players, they’re like my kids! “I’m always one of the designated drivers because they all drive tiny cars!”

Saracens have been outside the Hellenic League’s flagship division for around six years now – ironically they could have gone up a couple of years ago when they finished second, but declined the opportunity because the team was breaking up following the departure of the club’s then management duo. “It’s very important that we get back into the Premier Division,” Gloucestershire’s ‘Mr Table Tennis’. He’s not the only one who has done so much good for the sport over the years, of course, but the current chairman of Gloucestershire Table Tennis Association has certainly played his part in making sure that the game remains readily accessible to anyone who wants to play it. Harvey, now 70, has played and coached to a very good level, as well as being prominent on the admin side and even though he is now into Dave Harvey his eighth decade, his love for the sport has not diminished one jot. “Up until a couple of years ago I was still playing in eight leagues,” he said.

Promotion is the only onwards progression.” Masterminding what the club hope will be a very successful season are joint managers Ryan Betteridge and Stuart Mitchinson. These days they are just concentrating on managing the team but while the success of the first team is all important, there is much, much more to a club that have been going since 1964. They will be running two teams in the Cheltenham League this season and it will be the first time that they have run a third team for a good number of years. It’s a role that the just turned 58-year-old took on at the start of the season, having become eligible to play seniors golf three years ago. C Charlie harlie Raglan Raglan is is looking looking forward for ward tto op ushing o n aatt C heltenham pushing on Cheltenham Charlie Raglan freely admits that one of the big reasons he has signed a two-year contract with Cheltenham Town is because he will be working with manager Michael Duff. Like Duff, Raglan is a central defender and the 26-year-old credits his boss with helping to develop his game in the second half of last season. Raglan spent the final four months of 2018/19 on loan with Cheltenham from Oxford United and he said: “I’ve come on in leaps and bounds since I’ve worked with him at Cheltenham. “He’s played at the top level as a defender and he’s very keen on the details. “A lot of it is quite logical, simple stuff – your body position, doing things the right way, but it definitely works.” Raglan played as part of a back three for Cheltenham last season, so does he prefer playing as a trio or being part of a central defensive duo at the heart of a back four? “If you’d asked me that in January I’d have said playing in a back two,” admitted Raglan. “All my previous experience had been playing as part of a back four. “But the manager was very clear when I came how he wanted to play and I’ve played on both the right and the left of a back three. “I definitely did better on the right but I’ve learned a lot and the manager has given me the confidence to play in a new system. “You have to adapt to new formations and if you ask me which I prefer now I’d say I’m not sure.” Cheltenham fans of a certain vintage will remember Duff as a rangy right-back when he broke into the team in his late teens in the mid to late 90s. His time at Cheltenham in the late 90s and early noughties coincided with the greatest period in the club’s 130-plus years history and there is renewed optimism among the club’s supporters that further good times could be just around the corner. Season-ticket sales are up ahead of Duff ’s first full season in charge after the club had a very good second half of 2018/19, during which they pulled well clear of the relegation trapdoor, going on to finish 16th. Their fans will certainly be hoping for a top half finish this time around, but while Raglan would love that too he is urging caution. “The aim is definitely to improve on last season, that’s what we all want,” said Raglan. “We need to improve our away form, that is important.

“But it won’t be easy. There are some big teams coming down, two big teams have come up and quite a lot of clubs have spent a lot of money. “We need a good start, we’ll see where we are at Christmas and then we’ll have a better idea.” Cheltenham begin their campaign at promoted Leyton Orient on Saturday 3rd August – Salford City have also been promoted – while the teams relegated from League One were Plymouth, Walsall, Scunthorpe and Bradford. And while Raglan is understandably cautious about how the season will pan out for Cheltenham, he knows exactly how much the club have done for him during his short time with them. “I love it,” he said. “I’ve always said how grateful I am for being given the opportunity to play here. “They are a proper football club. Things are done correctly, the day-to-day business. “As players we work hard in training and then on a Saturday we try to perform to the best of our ability.”

Thanks to the foresight of St. Mary’s Church Open Group who raised the funds to pay for a 24/7 community defibrillator, the Parish Council was able to take on the responsibility for installing and managing it, together with the South Western Ambulance Service Trust. Our equipment is part of the National Defibrillator Network that the British Heart Foundation, NHS and Ambulance Service Trusts will launch via a BHF App later in the Summer, to show the location of every publicly available defibrillator. The Charlton Kings equipment is located on the wall of the Stanton Hall and can be used there or taken away for use elsewhere. 80% of Cardiac Arrests occur at home. No key is needed to remove it.

T The he Strays Strays o on n ttheir heir n new ew album album Since The Strays last spoke to The Local Answer it’s fair to say they’ve been busy. One of the most popular bands to come out of Cheltenham in recent years, the group performs virtually non-stop. The band is made up of Stella Sonic on vocals, guitarist Sam Cordrey, drummer Gary Chamberlain and Kris Jakab-Hall on bass, and this year were signed to renowned rockabilly label Western Star Records. “We had heard of Alan Wilson at Western Star basically because he is a rockabilly and psychobilly legend,” said Stella. “We were really keen to try and work with him somehow so we bugged him until he agreed to have u s rec ord t he al bum at his studio. “As the album took shape and sounded great, it was evident both parties really worked well

together, so we signed to his label for an album deal. We were made up.” Whilst The Strays have released singles and EPs in the past, their new album – ‘Drop Out Zone’ – is their first fulllength record. Stella says the process of

writing and recording the record took around six months, and the overriding theme of the album is to celebrate individuality. “The album is based upon themes of being outside of mainstream society and doing things your own way. In essence ‘The Drop Out Zone’ is a place for those weird and wonderful people who don’t quite fit in with convention.” With the release of a new album of course comes a tour, with The Strays set to embark on their biggest yet in the coming months. “It’s a big one! 22 dates between September and November,” said Stella. “We are excited about them all, we’ve never really played up north or in the east of the UK before so really hoping to get some people to those shows.” Full story online.

Patel makes his film and singing debut as Jack Malik, and offers up a refreshing performance as a character with real soul, despite being stuck in many moral dilemmas. Writers Jack Barth and Richard Curtis ace the pace of the story, and the film is rife with intimate, heartfelt moments, which restore some joy in a world where The Beatles don’t exist. Eustace is an only child, brought up in an old people’s home in Weston-super-Mare. He escapes from his solitary existence by taking up the cello. His teacher, Carla Gold, introduces him to a new world of music, art and above all, friendships. Eustace’s parents, who have difficulties with their own relationship, have very little understanding of their son’s personality or his musical ability. Now in his fifties, Eustace tells this story whilst receiving radioactive iodine therapy for cancer of the thyroid. Patrick Gale perfectly describes the angst of an adolescent growing up and discovering his sexuality. The descriptions of cello playing are fascinating. Throughout her career she covered national and international stories, including the 2004 Olympics and the Asian Tsunami. Nowadays she is still working on TV – as a presenter for QVC – but has also taken to creating her own stories, as a novelist. “I’ve always been a big reader and at school I enjoyed writing really long essays, but I never really thought about writing a book until I was in my 40s,” she explained. Jackie made her writing debut with the first of her ‘Cora Baxter mysteries’ in 2015, with ‘The Dead Dog Day’, which tells the story of a news reporter solving crimes. Originally from Coventry, Jackie’s career took her all over

“The main character lives in Montpellier, because I’m too lazy to research any other locations,” she laughed. “I work in London and drive there four times a week – I get a lot of story ideas in the car. “I thought of the plot of ‘Am I Guilty?’ at 1am driving home one night. When I got in at 3am I spent another two hours writing it down!” ‘Am I Guilty?’ was released in April 2019. A psychological thriller, the themes in the book are, she explains, much darker than those of the Cora Baxter stories. “It was a big leap for me to go from the lighter side of crime writing to darker, psychological thrillers. “But the response has been incredible, and it’s done really well in the Amazon crime charts.” Full story online.

R Red ed Hot Hot Riot Riot are are making making waves waves For most bands, performing at the hallowed grounds of Glastonbury is the peak of their career. For Gloucestershire based rockabilly group Red Hot Riot however, it’s just the beginning. “Glastonbury was insane,” said lead singer and guitarist Ricky Delaney. “It’s certainly one I never thought I’d get to do, but I’m very grateful we have.” The band is made up of Ricky, Scott McParland on doghouse bass and Kane Radnor on drums. The trio all hail from the Forest of Dean originally, but regularly play gigs throughout the county and beyond. Ricky continued: “Me and Scott met through other bands,

Kane joined when we advertised online. “We’ve been a band since about February, so around five months. We set up the band as a bit of fun.” And despite being together for a comparatively short time, the

boys have already racked up some impressive performances, including their sets at Glastonbury and shows at the Cheltenham Jazz Festival and Gloucester Tall Ships. When it comes to genre, Red Hot Riot have a unique sound, as Ricky explains. “For anyone who hasn’t heard us,” he said, “I’d say we’re neo-rockabilly – more influenced by the 80s scene rather than the traditional 50s rockabilly. “Me and Kane both grew up with rockabilly and rock ‘n’ roll, Scott has discovered it himself.” The band will be finishing a busy and successful summer with the launch of their debut EP at The Frog and Fiddle on Saturday 31st August. S Save ave the the red red squirrel squirrel Red squirrels are native to Britain, but the Victorians introduced the grey squirrel to the UK from North America. There are around 130,000 red squirrels left in areas of Wales, Northern England, the Isle of Wight and Scotland. It is a common misconception that grey squirrels kill the reds; in truth, the reds are more aggressive. The decline in red squirrels is partly due to the greys because they carry squirrel pox. This pox virus is often fatal to reds, but most greys that carry the virus are not affected by it.

The T he rred ed ssquirrel quirrel With a chestnut red coat that sheds twice per year, adult reds are about 20cm tall with an 18cm tail. During the autumn they gain about 12% of their body weight to prepare for winter. They have a white underbelly, and during the winter they have very pointed tufty ears. The Local Answer

They enjoy insects, seeds, bark, nuts, fruits, mushrooms and pine seeds or cones. Red squirrels love green acorns but so do the greys who often scoop up all the young acorns, so the reds don’t even get a look in.

They breed between January and April but can often have a second litter in the summer, just like reds having 3-4 kits at a time.

The T he b black lack ssquirrel quirrel There are about 25,000 black squirrels in the UK. They were first spotted over here about 90 years ago. Black squirrels are just a genetic mutation of grey squirrels.

Feeding areas must be high up, especially if you have cats and dogs. In summer, food is much scarcer for squirrels, as the spring shoots have disappeared and autumn berries have not yet arrived. You can put out hazelnuts in the shell, sunflower seeds, pine nuts, apples and carrots. The most important thing is not to put food out if you also have grey squirrels visiting your garden. This is because they may spread the pox virus, which is fatal to the reds so you will be doing more harm than good. Also, if a road lies between your garden and a red squirrel nesting site, then please don’t put out food as they will have to cross to get to you, which is very dangerous. You can also plant raspberry, wild cherry, dog rose and crab apple in your garden to attract squirrels. Growing thorny plants will also deter any predators from attacking feeding squirrels. Page 4

Just back from my annual trip to Paris, one of my favourite cities, I have to agree. I have returned with a different perspective on my home and am bursting with new ideas. Here are my thoughts on what French style means to me and how you can bring some ‘French chic’ to your home.

S Simple imple e effortless ffortless sstyle tyle The French approach to decorating their homes reflects the way they dress – simple, minimal and uncluttered. Subtle colours and carefully curated accessories are key components to looking chic. Think white or grey walls and simple curtain treatments, accessorised with a favourite decorative piece or a few wellchosen modern artworks (they don’t have to be originals!).

items of furniture with contemporary pieces – and the French do this so well. Spotting bargains in flea markets is a national sport and they are not afraid to mix eras and styles. One friend has modern white leather sofas in the same room as an old vintage desk inherited from her husband’s family – they look great together.

Wall colours in French homes h ave tra di tio na ll y be en whi te , but I’ve noticed other neutrals are also being used like everpopular grey, but offset with sage green or chalky pink. They are also not afraid to use strong colours, such as teal, ochre or terracotta. I saw some vintage chairs covered in a bright gold and red striped fabric material and they looked amazing. Using vibrant, contemporary fabrics to recover old chairs always works.

I have noticed that my French friends don’t necessary spend any more money overall on their homes – but they use quality, natural materials wherever possible. Items in a Parisian home, particularly the kitchen, are always useful but lovely to feel and look at too. Linen bedding was in all the shops in Paris – and it doesn’t even matter if it looks crumpled!

on a more contemporary feel – think old garden furniture mixed with plain linen napkins, or mismatched dining chairs painted in soft chalky colours. Items of vintage china, basketware (preferably old) and traditional kitchen utensils. Old glasses and vases filled with bunches of meadow flowers or grasses complete the look. Furniture with a history is key, it really doesn’t have to be new or expensive. Secondhand or reclaimed is good – and, of course, very much in tune with the current approach to saving the environment. I am already planning to rummage around my local antiques market and second hand shops for bargains to upcycle! Wherever you are this summer, come home from your break with a new and fresh perspective on your living space. It may even lead to a new hobby. Page 51

A Are re you you being being misled misled byy packaging? b packaging? I recently discovered that there was an enormous issue with the green entwined arrows or three arrow outline recycling symbols (the Green Dot and the Mobius Loop if you would like to look them up) that you see on packaging on the shelves of most of our shops in the UK. The two arrows in different shades of green, green and white or black and white, and the three arrows in a circle are synonymous with recycling. I’ve always believed it to mean that the item of packaging can be recycled, however a recent video I saw exposed the truth and really shocked me.

produces the product has put money behind recycling initiatives in other European countries, and in the case of the outline arrows, that the packaging is capable of being recycled, but maybe not in your local recycling plant, or even in our country. In fact, the Green Dot symbol is basically meaningless in the UK and yet you see it all the time. The main problem is that people see the symbol and automatically assume that you can put those items into the recycling boxes – I’ve done it myself on many occasions. Then they go off to the plants and cause havoc, as they actually can’t be recycled at all and someone has to remove them all.

vowed to take it off to prevent further confusion, but how long will it be until they are gone, and what about the companies that don’t remove them? This mislabelling is actually adding to the problem by jamming up the plants that are already overwhelmed with the scale of our waste. So next time you see this symbol, don’t be fooled into thinking that the packaging is automatically suitable for the recycling bins, as the chances are that they aren’t. Equally, don’t assume that they can’t go in – it’s probably best to just ignore it and check on your local council’s website to see.

There are so many different types of packaging available now and so many different councils with different policies that it can seem overwhelming to even try. Luckily, a lot of the packaging we see on the supermarket shelves nowadays is clearly marked with a single line circle with an arrow at the end, and usually tells you in plain text as well. Hopefully the rest of the food producers that sell their products in this country will take note and follow suit to make it easier for us all to do our bit. Page 5

B Business usiness cconfidence onfidence The ‘B-word’ has divided the country and, at a macro-level, has created division and debate within communities, businesses and even families. It’s become synonymous with having no idea what the future holds. Any business that is stuck in such uncertain times, and there is an argument that all businesses are directly affected, struggles to deliver its business plan with any confidence. I have some sympathies for them, although I’ve met a few business owners who are simply blaming the ‘B-word’ for what are essentially their own management failings. When you’re running a business, the best thing to do is to manage those things that are within your control and contingency plan for those things that are outside it. Far too many business owners are blaming circumstances over which they can never have control for their own failings of business planning and/or management. For some it’s a crisis of personal confidence in an uncertain world, over which they feel they have no control. They are missing the point; they need to go back to the reasons why they set up in business in the first place and start backing themselves to delivering their original plan.

I remember from cricketing days, if a bowler dropped a catch off his own bowling, how could he expect his colleagues to catch if it came their way. The same applies in business – take that catch off your own bowling and believe in yourself as a business leader, and those around will show support by taking their catches too. Of course, the B-word isn’t the only uncertainty that faces small businesses in the UK today. Concern over the impact of, and compliance with, new digital reporting rules to HMRC, increasing legislation (despite promises from successive governments to reduce red tape) and the ability to recruit skilled staff can all hold back a business entrepreneur who does not either have the expertise or experience to manage a situation. The message is clear – don’t stop believing in yourself and your ability to drive your company forward, whatever the outcome of those matters outside of your control.
