Salmon Salmon Wellington Wellington Take T ake your your dinner dinner party party to to the the next next llevel evel a and nd iimpress mpress y your our g guests uests w with ith tthis his a alternative lternative W Wellington ellington recipe! recipe! IIngredients: ngredients: 300g puff pastry; olive oil; 1 finely chopped shallot; 100g baby spinach (remove the thick central stalks); 100g watercress (only use the leaves); 40g cream cheese; 2 tsp chopped dill (put the rest in the freezer to use next time); 1-2 tbsp creamed horseradish, depending on your taste; extra flour for rolling out; 2 salmon fillets at about 250g each, or as I used, a pack of 4 from the supermarket (490g) – remove the skins; 1 beaten egg; salt and pepper. M Method: ethod: 1 Wash the spinach and watercress leaves and tip onto a clean tea towel to dry. 2 Heat a drop of oil in a frying pan. Add the spinach, watercress and salt, and toss until the greens have just wilted. Tip into a sieve and squeeze out the water, transfer to a bowl. 3 Add another drop of oil and gently sauté the shallot, then add this to the spinach and watercress, leaving it all to cool. Then add the cream cheese, horseradish and dill and stir until it’s nicely mixed together. 4 Pop a sheet of greaseproof paper onto a baking tray then roll out the puff pastry on a lightly floured surface into a 30cm square.
5 Pat your salmon fillets dry with kitchen towel then season with salt and pepper. Place your one or two fillets in the middle, then top with the spinach mixture. Pop the other one or two fillets on top. 6 Use both hands and lift the pastry to meet at the top so it just overlaps, trimming off any excess. Brush the edges with beaten egg and press firmly to make a seal. Brush both short ends and press together, cutting off any excess. There should just be a small gap between the salmon and the pastry seals. 7 Pop the parcel of salmon onto the baking tray with the seal on the bottom. Brush all over with the beaten egg and chill in the fridge for at least 30 minutes. 8 Preheat the oven to 220°C (200°C fan/gas mark 7). Put the Wellington in the oven for around 35 minutes until golden brown. Leave to rest for a few minutes before slicing. I served mine with salad leaves and plum tomatoes.

S Switzerland, witzerland, Bond-style Bond-style The latest James Bond movie, the twenty-fifth, will be in cinemas in April 2020, with locations including Jamaica, Norway and mountainside Matera in southern Italy. But for me, with Ian Fleming and Bond’s Swiss connections, and so many Bond missions visiting Switzerland over the decades, it’s a shame ‘Bond 25’ won’t. So let’s put that right with a tour of three classic Bond-movie locations in my favourite Alpine republic. Wherever you enter Switzerland, it’s not far to the eagle’s nest eerie of Piz Gloria, high in the Bernese Oberland that featured so spectacularly in ‘On Her Majesty’s Secret Service’. To reach the heavily 007themed attraction, head south of Interlaken and ride the Schilthornbahn cableway to the heights. Check in at the Hotel Eiger in car-free Mürren for Bond-style luxury overlooking the Eiger, Mönch and Jungfrau. Then continue up to the Schilthorn’s 2,970m-high peak as George Lazenby and the late Telly Savalas did in 1969.

What was once a poster child for Swiss Alpine villages, a small rail junction and a strategic military centre is now Samih Sawiris’s Andermatt Swiss Alps resort – dominated by the uber-luxurious Hotel Chedi and a new golf

Prom Prom perfection perfection A few months ago, my niece asked if I could review something that would also work for me to take her and some friends to their high school prom. Thinking cap on, we quickly agreed on the refined luxury of a Jaguar XJ. While the long-wheel base version would have offered more leg room, the shortwheel base version is still massive, so room for three prom-bound girls and their dresses in the back without issue. The ride was perfect – refined, elegant, luxurious, wafting along the roads with only a barely detectable rumble from the twin exhausts to bely the power that was on tap, should it be needed. Not that you would have heard the exhaust with the 825 watt stereo (complete with subwoofer) at the hands of my niece, whose music taste is actually very good as it turns out. I’ve kept the playlist she had prepared, but I listen at a slightly lower volume!
E Exquisite xquisite lleather eather a and nd iimpeccable mpeccable d design esign Back to the car itself, it was everything you would expect from a luxurious Jaguar – exquisite leather, impeccable design, well laid out controls, responsive and, when you do put your foot down, incredibly powerful. While the car may be quite heavy, the three-litre V6 copes a d m i r a b l y a n d i t r e a l ly m o v e s when you drop your foot. It’s easy to see why this is the car of choice for the British PM – comfort, space, luxury, but boy can it move if it needs to! The Local Answer
As far as gadgets go, it has plenty (including a TV tuner in the touchscreen display). Adaptive speed limiter with road sign recognition, 360 degree parking cameras and cross-traffic warnings for blind junctions – necessary with such a long car, in my opinion – and a really quite relaxing seat massager system. But that’s not what really grabbed my attention.

Scrolling through the menu of settings with the steeringwheel mounted buttons (very well laid out, by the way), I found some settings for the headlights. While auto-high beam assist is not that g r o u n d b r e a k i n g a n d I’ v e see n it on a number of other cars, one feature I don’t recall seeing is the option to switch the high beams for driving on the right – perfect if you wanted to cruise down to the French Riviera! If you did take this beast on that journey, you can be assured you’d get there relaxed, in comfort and with plenty of luggage thanks to the spacious boot.

With this Jag though, I fear I may be beaten. It’s comfortable for both drivers and passengers, has plenty of space and all the refinement and technical know-how you would expect from the brand, and it goes like stink, should you need it to, as well. Yes, the price is a bit steep at just south of £75k, but it really is a master of many different tasks and in reality, the only complaint I have on that price tag is that I can’t afford it, but that’s not really something I can criticise the car for, is it? S Save ave the the red red squirrel squirrel Red squirrels are native to Britain, but the Victorians introduced the grey squirrel to the UK from North America. There are around 130,000 red squirrels left in areas of Wales, Northern England, the Isle of Wight and Scotland. It is a common misconception that grey squirrels kill the reds; in truth, the reds are more aggressive. The decline in red squirrels is partly due to the greys because they carry squirrel pox. This pox virus is often fatal to reds, but most greys that carry the virus are not affected by it.
The T he rred ed ssquirrel quirrel With a chestnut red coat that sheds twice per year, adult reds are about 20cm tall with an 18cm tail. During the autumn they gain about 12% of their body weight to prepare for winter. They have a white underbelly, and during the winter they have very pointed tufty ears. The Local Answer
They enjoy insects, seeds, bark, nuts, fruits, mushrooms and pine seeds or cones. Red squirrels love green acorns but so do the greys who often scoop up all the young acorns, so the reds don’t even get a look in.

They breed between January and April but can often have a second litter in the summer, just like reds having 3-4 kits at a time.
The T he b black lack ssquirrel quirrel There are about 25,000 black squirrels in the UK. They were first spotted over here about 90 years ago. Black squirrels are just a genetic mutation of grey squirrels.

Feeding areas must be high up, especially if you have cats and dogs. In summer, food is much scarcer for squirrels, as the spring shoots have disappeared and autumn berries have not yet arrived. You can put out hazelnuts in the shell, sunflower seeds, pine nuts, apples and carrots. The most important thing is not to put food out if you also have grey squirrels visiting your garden. This is because they may spread the pox virus, which is fatal to the reds so you will be doing more harm than good. Also, if a road lies between your garden and a red squirrel nesting site, then please don’t put out food as they will have to cross to get to you, which is very dangerous. You can also plant raspberry, wild cherry, dog rose and crab apple in your garden to attract squirrels. Growing thorny plants will also deter any predators from attacking feeding squirrels. Page 21

Ag greener reener G Gloucester loucester At its meeting in July, the Full Council of Gloucester City debated a motion about climate change. The Council joined others in Gloucestershire (and Parliament) in declaring a climate emergency. It also committed itself to becoming a zero carbon council by 2030 and a carbon neutral city by 2050. The debate was described as being the most important ever to be held in the Chamber and it’s true that environmental issues top the list of public concern at the moment, aside from the hopefully temporary number one issue of Brexit. Indeed, the public gallery was unusually full for the debate including some largely wellbehaved Extinction Rebellion activists. Although there was some debate around the date for targets and the means by which to achieve them, the principle was supported unanimously across the Chamber. What we need to do now is to draw up an action plan to help us deliver those goals. We will do so jointly with the other councils in Gloucestershire, as to do so on our own would seem inappropriate given the scale of the challenge.
W We e want want to to do do better better In a sense, the Council having a plan to combat our impact on the environment is nothing new. We adopted a Climate Change Strategy in 2010 and have delivered many environmental improvement projects. Recycling rates have risen from single figures to around 45% over the last 15 years, but we want to do better. We have replaced lighting in our offices and car parks with energy efficient LEDs. We installed a combined heat and power unit at GL1 Leisure Centre – one of our biggest energy users. And our new buildings, like the new bus station, are designed with sustainability at the heart, with features such as solar panels. But perhaps those are the easy steps to take. To avoid future catastrophe, we need to take bold decisions collectively as a city and individually in our lifestyle choices. Transport and energy are two areas in which we can make a big difference. Planting trees, albeit it needs to be in huge numbers, can also have a dramatic impact. But what other steps can we take? Nowadays she is busy writing and starring in films alongside esteemed Hollywood actors. “I have always been into performing, singing and dancing, musical theatre, things like that,” she said. Growing up in Gloucestershire, Elizabeth pursued her love of performing and attended The Hampstead Factory theatre and arts school. After earning her ATCL diploma Elizabeth went on to study just around the corner from her home, at the University of Gloucestershire. She graduated in 2011 and, like many students leaving university, wasn’t sure on what the next step was.

Eustace is an only child, brought up in an old people’s home in Weston-super-Mare. He escapes from his solitary existence by taking up the cello. His teacher, Carla Gold, introduces him to a new world of music, art and above all, friendships. Eustace’s parents, who have difficulties with their own relationship, have very little understanding of their son’s personality or his musical ability. Now in his fifties, Eustace tells this story whilst receiving radioactive iodine therapy for cancer of the thyroid. Patrick Gale perfectly describes the angst of an adolescent growing up and discovering his sexuality. The descriptions of cello playing are fascinating. G Gloucester loucester g goes oes rretro etro tthis his August August Gloucester city centre is set to be transported back in time this month, as the Classic and Retro Festival returns for its fifth year. The event was first held in 2015 after being founded by the now Mayor of the city, Colin Organ. He said: “It was designed to increase tourism, footfall and maximise longevity of visitor time spent in the city to support its businesses, charities and its residents, helping to raise its historic and cultural profile.” The festival sees hundreds of classic twentieth century vehicles converge upon the city, which is split into four different time zones. Westgate Street will be the home of the first half of the century, 1900-1949. North and East will be the 50s and 60s

respectively and Southgate will be the 1970s to the modern day. “They are being arranged to reflect our recent living history,” continued Colin, “with each Gate Street representing a different era of time and each having a nostalgic theme through music, fashion, song, dance and food. “The event will also see the original cast members of the
famous sitcom ‘Allo Allo’ adding to the nostalgia.” Kings Square will be turned into an arena bringing together all the different eras featuring singing, dancing a n d ot h e r li v e e n te r t a in m e nt , including a fashion competition. The Soldiers of Gloucester Museum will play host to a military exhibition, featuring a full-size military Tank and supporting vehicles of the time, to compliment a specially built WW1 set featuring in Westgate Street. K King’s ing’s Jam Jam Festival Festival iiss b back ack in in Gloucester Gloucester The King’s Jam Festival returns to Gloucester this month, bringing performers from all over the country whilst also providing a platform for local up and coming artists. A celebration of hip hop and urban culture, this will be the festival’s third consecutive year and organiser Malaki Patterson hopes to build on the success of previous years. He said: “There has been so much talk about this year’s lineup already, and everyone is excited to see the performers. “I think this year will be our biggest turn out yet!” King’s Jam is organised by local group The Music Works in collaboration with Your Next Move, and is a community run event, supported by other local organisations including Arts

Council England, Gloucester City Council, Heritage Lottery Fund, and the Paul Hamlyn Foundation. Malaki continued: “Headliners this year include WSTRN, Young T & Bugsey, Stylo G and Nadia Rose. Plus we have local acts
such as Griz-O, Naides and Caviar Crew, with many more artists and dance acts throughout the weekend.” Giving local performers the chance to get on stage is an important part of King’s Jam says Malaki, especially for the black, Asian and ethnic minority (BAME) communities in the city. He said: “Gloucester is a cultural cold spot and has a huge demographic of young people with a large BAME community. “We work with emerging talented Gloucestershire artists of varied art forms and provide a platform for them to perform.” The festival is free to enter, although tickets need to be booked in advance to avoid disappointment. B Bring ring F French rench chic chic to to your your h home ome Whenever interior designers are asked about their sources of inspiration, they invariably say travel. Just back from my annual trip to Paris, one of my favourite cities, I have to agree. I have returned with a different perspective on my home and am bursting with new ideas. Here are my thoughts on what French style means to me and how you can bring some ‘French chic’ to your home.
S Simple imple e effortless ffortless sstyle tyle The French approach to decorating their homes reflects the way they dress – simple, minimal and uncluttered. Subtle colours and carefully curated accessories are key components to looking chic. Think white or grey walls and simple curtain treatments, accessorised with a favourite decorative piece or a few wellchosen modern artworks (they don’t have to be originals!).

items of furniture with contemporary pieces – and the French do this so well. Spotting bargains in flea markets is a national sport and they are not afraid to mix eras and styles. One friend has modern white leather sofas in the same room as an old vintage desk inherited from her husband’s family – they look great together.
Wall colours in French homes h ave tra di tio na ll y be en whi te , but I’ve noticed other neutrals are also being used like everpopular grey, but offset with sage green or chalky pink. They are also not afraid to use strong colours, such as teal, ochre or terracotta. I saw some vintage chairs covered in a bright gold and red striped fabric material and they looked amazing. Using vibrant, contemporary fabrics to recover old chairs always works.
I have noticed that my French friends don’t necessary spend any more money overall on their homes – but they use quality, natural materials wherever possible. Items in a Parisian home, particularly the kitchen, are always useful but lovely to feel and look at too. Linen bedding was in all the shops in Paris – and it doesn’t even matter if it looks crumpled!

on a more contemporary feel – think old garden furniture mixed with plain linen napkins, or mismatched dining chairs painted in soft chalky colours. Items of vintage china, basketware (preferably old) and traditional kitchen utensils. Old glasses and vases filled with bunches of meadow flowers or grasses complete the look. Furniture with a history is key, it really doesn’t have to be new or expensive. Secondhand or reclaimed is good – and, of course, very much in tune with the current approach to saving the environment. I am already planning to rummage around my local antiques market and second hand shops for bargains to upcycle! B Business usiness cconfidence onfidence The ‘B-word’ has divided the country and, at a macro-level, has created division and debate within communities, businesses and even families. It’s become synonymous with having no idea what the future holds. Any business that is stuck in such uncertain times, and there is an argument that all businesses are directly affected, struggles to deliver its business plan with any confidence. I have some sympathies for them, although I’ve met a few business owners who are simply blaming the ‘B-word’ for what are essentially their own management failings. When you’re running a business, the best thing to do is to manage those things that are within your control and contingency plan for those things that are outside it. Far too many business owners are blaming circumstances over which they can never have control for their own failings of business planning and/or management. For some it’s a crisis of personal confidence in an uncertain world, over which they feel they have no control. They are missing the point; they need to go back to the reasons why they set up in business in the first place and start backing themselves to delivering their original plan.

I remember from cricketing days, if a bowler dropped a catch off his own bowling, how could he expect his colleagues to catch if it came their way. The same applies in business – take that catch off your own bowling and believe in yourself as a business leader, and those around will show support by taking their catches too. Of course, the B-word isn’t the only uncertainty that faces small businesses in the UK today. Concern over the impact of, and compliance with, new digital reporting rules to HMRC, increasing legislation (despite promises from successive governments to reduce red tape) and the ability to recruit skilled staff can all hold back a business entrepreneur who does not either have the expertise or experience to manage a situation. The message is clear – don’t stop believing in yourself and your ability to drive your company forward, whatever the outcome of those matters outside of your control.

Tuffley T uffley are are a club club with with lots lots of of ambition ambition Neil Spiller is a huge football fan. He’s passionate about the sport and one of his driving forces is to make the great game accessible to anyone and everyone who wants to play it. Fortunately, his position as both football chairman and football secretary of Tuffley Rovers Football Club gives him the chance to make that happen, certainly in and around Tuffley where he has lived pretty much all his life. Spiller, who works in information management, reckons he spends 20 to 30 hours on Tuffley Rovers business every week “and that’s not including all the games I attend,” he adds. He didn’t miss a first-team game last season – watching 45 games, home or away – and including the club’s other teams he says he watched 75 games in total.

And there are quite a few teams at Tuffley, a club that are celebrating their 90th year this year. They run five adult Saturday teams – the flagship team play in the Premier Division of the his country after making his debut in Italy last year. “They played the national anthem before that first game and I pumped out my chest a bit,” recalled Hammonds. “It was a very proud moment, absolutely, we had the Three Lions on the shirt.”

That’s a claim that very few people can make and while the 61-year-old admits it’s a “bit surreal”, he says it also makes him “very proud”. And Hammonds, who lives in Tuffley, has just helped his country become over-60s European walking football champions. That tournament was played at Chesterfield and the goalkeeper has now played five times for

He’s not the only one who has done so much good for the sport over the years, of course, but the current chairman of Gloucestershire Table Tennis Association has certainly played his part in making sure that the game remains readily accessible to anyone who wants to play it in this part of the world. Harvey, now 70, has played and coached to a very good

They also have an under-18s’ team and this year for the first time they will run a ladies’ team who will compete in Division Three of the Gloucestershire County Women’s League. They will be managed by Billy Walker and Spiller said: “I’m really pleased about it. It’s something I’ve wanted to do for a while. “We try to offer football for anyone who wants to play it, we want as many people to participate as possible. “We want to run as many teams as we can, subject to affordability.” Tuffley’s reserves play in Division One of the Northern Senior League and their other three Saturday teams play in the Stroud League so there’s quality as well as quantity. It’s a role that the 58-year-old took on at the start of the season, having become eligible to play seniors golf three years ago. And Stephens, who plays for Minchinhampton Golf Club, thoroughly enjoys playing at the level. “There are some very good players,” he said. M Mike ike Cook Cook excited excited b byy n new ew season season Gloucester City’s supporters will be b hoping the clu l b can continue to move forwards at a fast pace, even though they will be taking a sideways move in terms of which division they will be competing in in 2019/20. They produced play-off form in the final four months of the last campaign to pull well clear of the drop zone in National League South and will be looking to maintain that momentum when they kick-off the new season in National League North – they have been switched for geographical reasons – on Saturday 3rd August. Their huge upturn in fortunes coincided with the appointment of Mike Cook as manager in January and there is understandably a new mood of optimism around the club as they look forward to the new season. And it’s not just the team who have got the supporters walking around with smiles on their faces, because it also appears that this really will be the season when the club will return home to their Meadow Park ground afftter being in exile for more than 12 years following the floods of 2007. Yet when 50-year-old Cook took charge of the club some seven months ago, things certainly weren’t looking so rosy with the club near certainties for relegation in many people’s eyes. They were on a wretched run and had pretty much forgotten how to score a goal. But by the end of the campaign things had turned around to such an extent that they finished three places and eight points clear of the drop zone, including winning their final game 2-1 at second-placed Woking. “It was really pleasing to get those rewards because we only had four months,” said Cook as he reflected on last season.

“We had a bit of luck in a couple of games but we made the most of it. “We played really well at times and to go to Woking who were proper up for it and win was a great result.” Indeed it was and it was richly deserved after all the hard work that Cook and current coaches Mike Green and Andy Hoskins had put in. Cook, who also works very closely with co-chairmen Eamonn McGurk and Alex Petheram, has got history with Gloucester because he was assistant manager to Chris Burns in the early noughties, one of the more successful periods in the club’s near 140-year history. These days Cook has a top job working for the Professional Footballers’ Association – he’s a regional coach educator for the South West – and it’s a role that takes him all over the world. When he spoke to The Local Answer he was in Nice working at the Women’s World Cup, and his job has taken him to the last three men’s World Cups in South Africa, Brazil and Russia. But although he is something of a globetrotter – he was also in
France for Euro 2016 – he remains very much a Stroud man, and the one-time Archway School pupil still lives in the town of his birth. And while he has to juggle his full-time job with managing Gloucester, he is proud that he has not missed a game since becoming the main man. “Obviously the club were aware that I may miss the odd Saturday or Tuesday because I’m out of the country quite a lot,” he said, “but it hasn’t happened yet.“ So what made him take the job? “The more people said that Gloucester couldn’t be saved from relegation the more I wanted to take it,” he said, “I wanted to prove it could be done. “I knew that if we prepared right, were organised and the players were well coached, we had a chance. “Fortunately after a couple of weeks the players got it.” Much of that work on the training ground – Cook called it “schooling exercises” – involved finding ways to score more goals. That’s easier said than done, of course, but Cook has learned a lot in his role with the PFA – he’s been lucky enough to watch some of the greatest players perform on the biggest stages – and he’s keen to use that knowledge to good effect. “I want to get the ball down and play a bit of football, I want to play out from the back when we can,” he said. “I don’t want my team to be gung-ho, I want to be a bit more switched on. “In England we kick it and run around a bit like headless chickens. “In Germany and Brazil they think we’re nuts! “If you’re 2-0 up, pass the ball about, look after it, think how you can affect the match.” Full story online.
