HO LY SM OKE S! Muddle ½ fresh Evita fig and a sprig of thyme in a shaker. Add 40ml Musgrave Copper Black Honey, 20ml pale dry sherry-style wine, 10ml Chambord raspberry liqueur and 2 dashes salt solution (blend 2 parts coarse salt and 1 part boiling water until the salt is dissolved). Add lots of ice and shake (to create a smoky effect, add a small piece of dry ice to the shaker). Pour the cocktail into a tumbler and top up with Stoney Extra Kwetsa ginger beer, and garnish with ½ fresh fig and a bundle of thyme.

Does putting a metal teaspoon in an opened bottle of bubbly help keep it fizzy? No. The only thing that really works is a proper Champagne stopper, which clamps underneath the lip of the bottle. I’ve been spotting a couple of non-alcoholic wines on shelf recently. Are they any good? Technology has come up with a brilliant way of removing alcohol without extracting flavours. It’s called a spinning cone and is used for all the best de-alcoholised wines such as Almost Zero by Van Loveren and the Natura range by Leopard's Leap. Your favourite wines still taste like wine but won’t give you a hangover, and you can safely drive after a few glasses.

Mojito ice lollies

Combine ¾ -1 cup (180-250ml) PnP white sugar, 1 cup (250ml) water, ½ cup (120ml) lime or lemon juice, ½ punnet (10g) PnP basil, a handful of fresh PnP mint and ¼ cup (60ml) Bacardi Carta Blanca in a saucepan and stir until the sugar has dissolved. Heat for 3 minutes, then turn off the heat and infuse for 10 minutes. Discard basil and mint and pour the cooled syrup into lolly moulds. Divide 2 sliced limes, 4 sprigs PnP mint and ½ punnet (100g) PnP berries between moulds, and insert lolly sticks, securing with sticky tape on either side to keep them upright. Freeze overnight. To unmould, dunk sides of mould in lukewarm water and wiggle the stick until the lolly slides out. Serve immediately. Makes 4-6 lollies.

Dry July, Sober October… cutting down on drinking is a fast-growing trend and the industry is cashing in by introducing everything from alcohol-free beer to de-alcoholised wines to the appreciative masses

H

ave you ever found yourself at a braai and, upon telling the host that you weren’t drinking alcohol, were first given the third degree (“Are your sick? Are you pregnant?”), and then begrudgingly handed Coke after Coke? You’ll be heartened by the fact that, globally, it’s becoming more and

more socially acceptable to sip on something that won’t get you three sheets to the wind by the end of the evening. The annual beer festival, Oktoberfest, might be an institution in Germany, but it’s now estimated that one out of every 15 beers sipped there per year is non-alcoholic.

In New York, birthplace of the Martini, Club SÖDA (Sober Or Debating Abstinence) offers teetotallers, and those who want to drink less, access to a host of alcohol-free social gatherings, while on home soil, the inaugural Mindful Drinking Festival opened in Cape Town in October. It's all rather sobering…

“We are meeting more and more people who say something like, ‘I do drink, but I mostly don’t drink’.”– Barry Tyson, co-founder of Mindful Drinking SA

WHY GO DRY? According to Barry Tyson, who, along with Sean O’Connor put together SA’s first ever Mindful Drinking Festival, there is a definite cultural shift happening around alcohol consumption. “People are becoming more aware of their health – both mental and physical – and are more mindful of what they put into their bodies,” he says. “At the same time, the younger generation, inspired by social media, is rejecting the social pressure of drinking to fit in.” It’s not just a trend relegated to Millennials, however. Some people are simply tired of spending one too many hungover Saturdays curled up on the couch and wondering what their social lives

would look like without alcohol. There’s even a hashtag for this emerging demographic: #sobercurious. First coined by journalist Ruby Warrington, who went on to write a bestseller of the same name and co-founded Club SÖDA, being sober curious is about rethinking your relationship with alcohol instead of ending it.

“WHY DON’T YOU JUST DRINK WATER?” As Julia Momose, an award-winning bartender from the

USA and a trailblazer in the “spirit-free” arena puts it, non-alcoholic alternatives should feel like “a choice, not a compromise”. Indeed, just because you’ve decided not to drink at a social function – whatever your reasons may be – it doesn’t mean that your taste buds have suddenly regressed and can appreciate only either excessively sweet or depressingly bland alternatives. “Most people have been drinking alcohol in social situations for a large part of their

adult lives, and they associate the taste of alcohol with enjoyable times,” says Barry. “Ideally, any substitute would taste similar.” In addition to the obvious mood-altering effects of alcohol, it has a specific mouthfeel, body and complexity – attributes that, until recently, had been largely lacking in nonalcoholic beverages.

TIDES ARE TURNING Last year, world-wide alcohol consumption fell by 1.6%, according to the International Wine and Spirits Record. It makes sense, then, that multinational alcohol companies and craft producers alike are bottling non-boozy alternatives. In the past 18 months, big South African brands

Castle and Savanna came to the market with Castle Free lager and Savanna NonAlcoholic Lemon; wine estates Van Loveren and Leopard’s Leap introduced low-alcohol and de-alcoholised ranges; and Abstinence, a distilled non-alcoholic spirit, debuted. “New technologies are making these drinks taste better and better,”says Barry. One of the most appealing aspects of mindful drinking is that it’s not an all-ornothing game. “The biggest shift in society has been from people being absolute teetotallers to being sober curious,” says Barry. “We are meeting more and more people who say something like, ‘I do drink, but I mostly don’t drink’.”

THE LONG, LAZY LUNCH A fresh seafood feast washed down with a glass or two of chilled Sauvignon Blanc… What better way to spend a summer’s day?

CREAMY GARLIC AND CHILLI MUSSELS Heat 2 Tbsp (30ml) butter in a pot and fry 1 diced onion, 4 chopped garlic cloves and 2 deseeded and chopped red chillis for 3-5 minutes. Add 1 cup (250ml) Nederburg The Winemasters Sauvignon Blanc and simmer for 5 minutes before adding 2 cups (500ml) fresh cream. Cook over a low heat for 5 minutes. Add 2 packets (1kg) cleaned and scrubbed PnP fresh mussels, cover with a lid and steam until mussels are cooked through, about 8-10 minutes. Stir through 2 Tbsp (30ml) chopped coriander and the grated peel of 2 limes, and season with salt and milled pepper. Serve while hot with crusty bread from PnP. SERVES 4

PORK LETTUCE CUPS Heat 2 Tbsp (30ml) sesame oil in a pan and fry 1 diced onion, 2 chopped garlic cloves and 1 tsp (5ml) grated ginger for 2 minutes. Add 500g PnP pork mince and brown for 5-8 minutes. Add ½ cup (125ml) soy sauce, 2 Tbsp (30ml) Dijon mustard, 3 Tbsp (45ml) brown sugar and 2 Tbsp (30ml) chopped coriander, and cook for 10-12 minutes. Cool. Serve spoonfuls of pork mixture in baby gem lettuce leaves and garnish

with toasted sesame seeds and sliced radishes. SERVES 4-6

KINGKLIP CEVICHE Combine 500g skinned and cubed PnP kingklip fillets, ½ diced red onion, ½ chopped PnP Mediterranean cucumber, 2 chopped salad tomatoes, 1 peeled, chopped avocado, the juice (120ml) and grated peel of 2 lemons, 2 Tbsp (30ml) sesame oil, salt and milled pepper, 2 Tbsp (30ml) chopped coriander

and 1 deseeded and chopped red chilli. Chill mixture for 15 minutes. Char mini tortillas in a dry pan for 30 seconds per side or over an open flame for 5-10 seconds per side. Serve ceviche with tortillas and extra lemon wedges. SERVES 4-6

THE SIDECAR Combine ¼ cup (60ml) Musgrave Copper Pot Still Black Honey brandy, 2 Tbsp (30ml) Cointreau and the juice (60ml) of 1 lemon. Pour into ice-filled serving glasses and garnish

with orange peel or slices. SERVES 2

RASPBERRY AND LIME MARGARITA Blitz together 1 punnet (160g) fresh PnP raspberries, the juice (60ml) of 2 limes, 2 Tbsp

(30ml) honey, ¼ cup (60ml) Bumbu The Original rum, ½ cup (125ml) coconut water and 2 cups ice. Pour into serving glasses and garnish with extra lime slices and raspberries. SERVES 6 Look out for PnP’s selection of cut-fruit pots that are perfect to have on hand when you’re garnishing drinks as no chopping is required.

SPINACH & FETA PARCELS Squeeze the excess liquid from 1 bunch (200g) shredded, cooked spinach. Combine PnP spinach with 2 discs (50g each) crumbled feta and 2 Tbsp (30ml) Dijon mustard. Cut 4 PnP phyllo pastry sheets into 12 squares, each 14cm wide. Place a dollop of the mixture on each square and scrunch the tops closed to create a parcel. Brush with 1 whisked egg and place on a lined baking tray. Bake at 180ºC for 15 minutes or until golden. MAKES 12

Combine ½ cup (125ml) each of coarse salt and sugar, 4 grated beetroots, the grated peel of 3 oranges, 3 Tbsp (45ml) Tanqueray Flor de Sevilla gin and ½ punnet (10g) chopped, fresh dill. Place 2 (about 200-300g each) PnP skinned salmon fillets onto a baking tray, top with beetroot mixture and wrap in clingfilm. Place a cutting board on top of the fish and weigh down with something heavy (we used a bowl of fruit). Chill overnight. Remove mixture from salmon and slice thinly. CRUNCHY SLAW Combine 1 packet (300g) PnP coleslaw mix, 4-5 thinly sliced radishes, 1 deseeded and chopped red chilli, ½ cup (125ml) sour cream, ¼ cup (60ml) PnP plain yoghurt, 2 Tbsp (30ml) chopped, fresh coriander and the juice (30ml) of ½ lemon. Season and garnish with 2 Tbsp (30ml) toasted sesame seeds. SERVES 4

STICKY ASIAN RIBS Combine 2 Tbsp (30ml) each of canola oil and chopped coriander, 3 Tbsp (45ml) each of Chinese five spice and apple cider vinegar, ½ cup (125ml) soy sauce and ¼ cup (60ml) brown sugar. Marinate about 800g uncooked smoked pork ribs in the mixture overnight. Cook over medium

coals for 15-20 minutes, turning regularly and basting with the reserved marinade. Slice and serve with fresh rocket and slaw. SERVES 4

SALTED CARAMEL 0.0% BEER FLOAT Fill 2 glasses with 2 scoops PnP vanilla ice cream each and top with 2 Tbsp (30ml) caramel treat. Top up

LIME BEER-GARITA Combine 2 shots (60ml) El Jimador Reposado tequila, 1 Tbsp (30ml) honey, 2 cups (500ml) Corona Extra and juice (30ml) of 1 lime in a cocktail

shaker and shake well. Serve in ice-filled glasses with extra lime wedges. SERVES 2

GOOD IDEA Take your beergaritas to the next level by running a lime wedge along the rims of the glasses and dipping them into salt. Olé!

BUTTERMILK, BEER AND SRIRACHA CHICKEN Combine 2 cups (500ml) buttermilk, 1 bottle (300ml) Devil’s Peak King’s Blockhouse beer, ¼ cup (60ml) sriracha or chilli sauce and 3 Tbsp (45ml) chopped parsley. Pour over 1 seasoned PnP spatchcock chicken and marinate for at least 1 hour. Cook over medium coals for 30-40 minutes, rotating regularly and basting with reserved marinade. Beyerskloof One of my favourite Pinotages to suggest to family and friends is the Beyerskloof Pinotage Reserve (R165) – and, most recently, the 2017 vintage in particular. It showcases rich, dark fruit such as plums and blackberries that arouse the palate but also lead into a harmonious finish along with hints of cedarwood and subtle tobacco. The hint of sweet spice and silky tannins make the wine even more alluring.

Kanonkop Home to winemaker extraordinaire Abrie Beeslaar, the production of this vineyard has been most consistent over the years. The Paul Sauer 2015 received a 100-point score by British Master of Wine Tim Atkin last year. It’s subsequently sold out at PnP but you can still get your hands on the equally superb Paul Sauer 2016* (R675). The quality of the Kanonkop Estate Pinotage has also always been highly regarded. Some people just have all of the luck. For example, those who have a doctor in the family say it’s great, because you score free medical advice when you need it. There are others who may boast a lawyer in the family and often get very valuable, free legal advice. Not enough people, however, talk about the pressure felt by those who write about wine and beverages, and who are constantly consulted by family and friends for free wine advice.

Because this is the second issue of Glass Act I feel as if I’m in a good place to start sharing my innermost secrets with you. The first confession (there pnp.co.za

will be many) is that being the friend or family member who’s given the wine menu at restaurants to “choose for the table” is daunting work. Phew. Can you hear

that? That’s the sound of my shoulders being unburdened of the sheer weight of expectation at every dinner, brunch and boozy lunch I’ve attended.

I’d like to start at the beginning of my wine story. I moved from the Eastern Cape to Cape Town eight years ago. I love the Eastern Cape but we’re known for harvesting very good rugby players, not very good wine. When I moved to the Western Cape my whole world changed. I dumped the box wine that I’d clutched throughout varsity and stepped into the magical world of good wine. I visited wine farms and sipped everything on offer. I began to have real favourites, all while enjoying the story behind every bottle. I then collaborated with Pick n Pay to produce Glass Act – the YouTube wine series that would eventually spawn this real-life magazine-baby you’re holding right now. Because of all of this wonderful wine success, my friends and family now look to me for anything and everything associated with wine on Planet Earth and they trust me to make the correct decision every time. I cannot count the number of occasions

a wine list has been tossed my way before I’ve even sat down at a table. I’m now confronted with something much more stressful than the moment the action hero has to disable the bomb in the climactic part of the movie: I have to choose a wine that must satisfy a table full of people with varying tastes. Oh, yes, of course I know that specific Chardonnay from Tulbagh, because I’ve tasted all of the wines, ever. What do I think of that Pinot Noir from Stellenbosch? Loooove! Oh, that red blend from the Napa Valley in the United States of America? I haven’t been there, nor have I tasted it, but sure, it’s delicious! It’s both a blessing and a curse, but also a wonderful compliment. Let me give you some advice if you are the wine expert in your group. When choosing the wine for the table, stand up and give a formal speech outlining why you’re choosing said bottle. Ask the waiter to bring it to the table and proceed to present your selection formally. Lift the bottle up for the whole table to see as if you’re Rafiki and your wine is Simba. This way, the Pride Lands will understand the gravitas of the moment and the responsibility they’ve bestowed upon you. Plus it’s tons of fun, and makes drinking wine a special occasion.

Before I head to the island… I’ll pack lots of water, sunblock, a diary and a guitar. In case I get lonely, I’ll pack my Barbie* to keep me company. In the heat of the day, I’ll drink… rum and ginger ale. Whenever I’m on an island I like to try the local rum, so hopefully I’ll be able to find some! That said, my preferred drink of choice is actually Champagne but, on a tropical island, it’ll probably just get warm. As the sun sets, I’ll be sipping on… a glass of oaked, buttery Chardonnay. If I get hungry, I’ll whip up… something vegetarian, such as fruit or a salad, and I love fish, so I might as well start fishing while I’m there. My standard outfit will be… a vest and shorts. I’m not there to look pretty! For my island soundtrack, I’ll listen to… a playlist I compiled on iTunes, which I listen to in the car, on tour and when I’m travelling. It has an eclectic mix of chilled-out tracks by people such as Jamie Woon, Amy Winehouse, Maleh and even yours truly! I’ll pass the time by… jamming on my guitar. I actually have a new album coming out at the end of the year but I can’t say anything more than that. If it turns out there are other inhabitants on the island… I’ll invite them over for G&Ts. Everybody loves gin! I like mine topped with a flavoured tonic and garnished with fresh rosemary or mint. Hopefully there’s a herb garden on the island. If I’m still on the island by Christmas… I’ll be having fish instead of turkey and sipping on some coconut water – with rum, of course.
