Choose wholewheat spaghetti for a low GI option, it’ll keep you fuller for longer.
VEGETARIAN PASTA
RECIPE Halve 2 small butternuts (about 250g each), scoop out seeds and slice into 16 wedges. Place on a baking tray with 1 packet (500g) diced sweet potato, drizzle with oil and season. Bake at 200°C for 20-25 minutes or until soft and golden. Heat 2 tbsp (30ml) each olive oil and butter in a pan. Add sage and cook for a minute until bubbling. Add 400g cooked spaghetti and toss to coat. Add vegetables and toss well. Serve pasta sprinkled with 1 packet (100g) roasted and chopped walnuts. SERVES 4

GREEN MINESTRONE SOUP
RECIPE
Heat 2 tbsp (30ml) olive oil in a pot and sauté 2 chopped onions and 4 chopped celery sticks for 8 minutes. Add 2 crushed garlic cloves and fry for a minute. Add 1 punnet (400g) sliced baby marrows, 2 cups (500ml) frozen peas and 1 packet (500g) broccoli florets. Top up with 4-5 cups (1–1.25 Litres) vegetable or chicken stock. Season and simmer for 10 minutes. Stir in ½ packet (150g) baby spinach, allow to wilt, then blitz soup until smooth. Add 1 can (400g) drained cannellini beans, 2 cups (500ml) cooked macaroni and remaining baby spinach. Simmer for 5 more minutes. Serve soup with a dollop of basil pesto and Grana Padano or Parmesan shavings. SERVES 4

MEATBALL & TOMATO PENNE PASTA
RECIPE
Combine 700g beef mince, 1 tbsp (15ml) each ground coriander and Worcestershire sauce, 1 tsp (5ml) fine salt, milled black pepper and a handful of chopped parsley. Mix well and roll mixture into little balls. Heat 2 tbsp (30ml) olive oil in a pan and fry meatballs in batches. Set aside. SautĂŠ 2 chopped onions and 2 chopped garlic cloves for 5 minutes. Stir in tomato paste, cook for a minute and add 2 cans (400g each) chopped tomatoes. Cover and simmer for 15 minutes. Return meatballs to pan and cook for a further 5-10 minutes. Season and serve meatballs on 400g cooked penne pasta, topped with fresh basil and a grating of Pecorino Romano. SERVES 4
KEEP IT HEALTHY Remember that a healthy portion of pasta is about 100g for a main meal.

HAM, OLIVE AND FETA PIZZA
RECIPE
Spread 1 PnP ready-made pizza base with 2-3 tbsp (30-45ml) tomato sauce. Sprinkle with 1 cup (125g) grated mozzarella. Top with 2 or 3 slices each parma ham and coppa ham. Sprinkle with ½ disc (50g) crumbled feta, ¼ sliced red onion and a handful of PnP Pick Local olives. Bake at 180°C for 12-15 minutes. Remove from oven and top with a few baby spinach leaves.
