Whole Turkeys and Chicken Breasts A few weeks ago I wrote about the great deal on whole turkey’s ($ .58/lb) my wife Yenni and I had gotten at Sam’s Club. Prior to that Yenni had gotten lots of chicken breasts for ($1.97/lb). We stored them in the freezer and pulled them out to thaw once we planned on using them. This little bit of planning helped us to save some extra money going through the Holidays! We would eat the turkey and chicken for lunches and dinners very often. Sometimes they were just a quick snack on their own if I was running out the door. We usually use basic foods and fresh, canned, or frozen ingredients when preparing meals and snacks for ourselves and for our son Dylan. With the economy the way it is right now it helps to buy from the big club stores to save extra money. Sometimes we can get some good deals on food with the MVP card at Food Lion. With a little planning and food preparation we save money and eat healthy meats, fruits, and veggies regularly.
Here are just a few different ways we used the Turkey and Chicken for lunches and dinners:
Make your #1 Resolution: Get in shape in 2009
Turkey Sandwiches Two slices of whole grain bread loaded with turkey, mustard, and low fat cheese (Add tomato slices, lettuce, or onion if you’d like). Turkey Quesadillas Corn tortilla with low fat cheese, warmed shredded turkey, with another corn tortilla on top and grilled on a flat skillet, then sliced avocado, onions, and tomatoes are added to the inside. Turkey Enchiladas Warm corn tortillas, warm shredded turkey, place the turkey on corn tortilla, roll it up, pour tomato based enchilada sauce on top, sprinkled with low fat shredded cheese and bake for 10-15 minutes or until cheese is melted thoroughly. Pour more enchilada sauce if desired. Garnish w/lettuce and tomato on top. Turkey on Green Salad Warm-up some little Turkey chunks and set on top of a green salad (Spinach or Garden Salad in a Bag) and add some low fat shredded cheese, sunflowers, pecan pieces, diced tomatoes, onion, celery, and lightly pour some Extra Virgin Olive Oil with Balsamic Vinegar dressing all over. Chicken Breast with Veggies Sprinkled with Extra virgin olive oil, seasoned w/ poultry seasoning to taste and bake, broil or grill. We had a frozen medley of broccoli, cauliflower, carrots and green beans. You can have a Green Vegetable of your choice – Broccoli, Spinach (cold or cooked), Turnip or Collard Greens, Green Beans, Asparagus, etc. Chicken Fajitas Chicken breasts cut into strips, sliced bell peppers (green, yellow or red), sliced onions, and sliced tomatoes. Cook chicken on a skillet or griddle for about 5 minutes, add bell peppers and onions, cook an additional 3-4 minutes, add tomatoes and season to taste (poultry seasoning – low sodium if possible). Accompany with corn tortillas and shredded lettuce. Chicken Breast on Green Salad Using the Spinach Salad from a Bag we shredded chicken and placed on top of the green salad and added cucumbers, slivered almonds, low fat cheese, diced tomatoes, onions, and an Olive Oil and Vinaigrette dressing. NASCAR NEWS... Jeff Gordon fires his entire pit crew.. This announcement followed Gordon’s decision to take advantage of the government’s scheme to employ inter-city youngsters. The decision to hire them was brought about by a recent documentary on how unemployed youths from Harlem were able to remove a set of wheels in less than 6 seconds without proper equipment, whereas Gordon’s existing crew could only do it in 8 seconds with millions of dollars worth of high tech equipment. It was thought to be an excellent and bold move by Gordon’s management team as most races are won or lost in the pits. However, Gordon got more than he bargained for! At the crew’s first practice session, not only was the inexperienced crew able to change all 4 wheels in under 6 seconds, but within 12 seconds they had changed the paint scheme, altered the Vin number, and sold the car to Dale Jr. for 10 cases of Bud, a bag of weed, and some photos of Jeff Gordon’s wife in the shower.
