Medicaid Expansion Extends Coverage to 600,000 North Carolinians

Learn more about Medicaid, expansion initiatives, and what these changes entail. North Carolina is the largest state since Pennsylvania in 2015 to expand Medicaid.

Medicaid expansion in North Carolina, as facilitated by the Affordable Care Act (ACA), now extends coverage to an estimated 600,000 individuals aged 19 to 64. Effective from December 1, 2023, this expansion provides essential health services, including primary and preventive care, mental health and substance user disorder treatment, emergency care, and prescription drugs, to individuals earning below $20,120 annually.

Established in 1965, Medicaid operates as a joint federal and state program, offering healthcare coverage to vulnerable populations such as low-income individuals, pregnant women, children, and people with disabilities. Its funding and administration are shared between the federal government and individual states, allowing for flexibility in program design within federal guidelines. The Affordable Care Act (ACA) of 2010 significantly impacted Medicaid by offering states the option to expand coverage to low-income adults up to 138% of the federal poverty level. While the ACA provided federal funding incentives for states to expand Medicaid, the decision to expand remained voluntary, resulting in variations in coverage across states. To date, 40 states and Washington, DC, have adopted the Medicaid expansion, while 10 states have not adopted the expansion.

Fresh & Flavorful Spring Recipes to Welcome the New Season

As winter finally gives way to warmer days, consider trying out one of these spring-inspired recipes! Light, bright, and packed with peak seasonal ingredients, these dishes taste fresh and delicious!

Directions:

French Onion Potatoes

Prep/Total Time: 1 Hour

Serves: 4

Ingredients:

• 2 cups dry white wine

• 2-3 tablespoons olive oil

• 2 white onions, sliced

• 1/2 teaspoon Kosher salt

• Freshly ground black pepper, to taste

• 6 medium yellow or red potatoes, sliced in 1/2-inch. rounds

• 2 teaspoons beef bouillon paste

• 1 tablespoon kosher salt

• 1 tablespoon fresh thyme

• 1 tablespoon fresh rosemary, roughly chopped

• 1-1/2 cups Gruyere cheese, shredded

• Fresh chives, chopped

• Flaky salt, to taste

1. Caramelize the onions by cooking them with wine until the liquid evaporates, then add oil, salt, and pepper and cook on low for an hour.

2. Preheat oven to 450°F. Heat oil on a sheet pan, cook potatoes in water with bouillon paste and salt until soft but not falling apart.

3. Roast potatoes on the preheated sheet pan with salt, thyme, and rosemary until golden brown.

4. Top potatoes with caramelized onions and cheese and bake until cheese melts. Garnish with chives and flaky salt.

5. Bake at 275°F for 8 minutes.

For The Cake:

• 1 1/2 cups all-purpose flour

• 2 teaspoons baking powder

• 3/4 teaspoon sea salt

• 1/2 cup sugar

• 1 tablespoon lemon zest

• 3/4 cup whole milk Greek yogurt

• 1/2 cup extra-virgin olive oil

• 2 large eggs

Directions:

• 1 teaspoon vanilla extract

• 1 1/2 cups blueberries, fresh or frozen

For The Glaze:

• 3/4 cup confectioners’ sugar

• 1/4 teaspoon lemon zest

• 1 1/2 tablespoons fresh lemon juice

1. Preheat oven to 350°F, grease a 9x5-inch pan.

2. Whisk flour, baking powder, and salt. Mix sugar and lemon zest, and add yogurt, oil, eggs, and vanilla. Combine wet and dry ingredients, and fold in blueberries.

3. Bake for 40-50 minutes. Cool completely.

Green Goddess Salad

Prep/Total Time: 1 Hour

Serves: 6

Chicken Crust Pizza

Prep/Total Time: 1 Hour

Serves: 2-3

Ingredients:

• 2 large eggs

• 1 lb. ground chicken

For The Dressing:

• Juice of 2 lemons

• 1/4 cup extra-virgin olive oil

• 1/4 cup tahini

• 2 tablespoons red wine vinegar

• 2 cloves garlic, roughly chopped

• 2 small shallots, roughly chopped

• 2 scallions, roughly chopped

• 1 cup baby spinach

• 1/2 cup fresh dill

• 1/4 cup nutritional yeast

• 1 teaspoon dried oregano

• Kosher salt

• Freshly ground black pepper

Directions:

For The Salad:

• 1 small green cabbage, diced

• 2 Persian cucumbers, diced

• 3 scallions, thinly sliced

• 4 oz. feta (vegan or regular), crumbled

• Fresh dill, for garnish

• Toasted sesame seeds, for garnish

• Pita chips or toasted pita for serving

1. Blend dressing ingredients until smooth, and season to taste.

2. Toss cabbage, cucumbers, scallions, and feta with dressing. Garnish with dill and sesame seeds. Serve with pita.

• 1 teaspoon Italian seasonings

• 1/2 garlic powder

• Salt and pepper

Directions:

• 1/2 cup Parmesan cheese, shredded

• 1/2 cup barbecue sauce

• 1 1/2 cups shredded

mozzarella cheese

• 1/4 cup thinly sliced red onion

1. Preheat oven to 400°F and line a baking sheet with parchment paper.

2. Mix chicken, eggs, Parmesan, seasoning, and garlic powder. Shape into a crust on parchment paper.

3. Bake crust for 30 minutes, remove and add barbecue sauce, mozzarella, and onion. Bake for 5-10 minutes more.

4. Serve slices of pizza. Enjoy!

PGB is proudly sponsoring this year’s Fostering Footsteps for Bright Futures fundraising event. Join us by running, walking, or volunteering. Proceeds support Fostering Bright Futures at Wake Technical Community College, aiding youth transitioning from foster care to college. Secure your spot by April 18 at 9:00 pm!

Volunteer Schedule: 8:00 am - 12:00 pm

Tasks: Registration, water distribution, and cheering on runners.

Task assignments will be emailed to volunteers the week before the race.

7:30 - 8:30 am: Race Day Registration

9:00 am: 5K & 10K Group Start

Janean’s extensive experience is a testament to her commitment to excellence and her continuous pursuit of professional growth. Moreover, she deeply values the impact of her role and treasures the collaborative relationships she shares with her manager and colleagues. Beyond her professional role, Janean values spending quality time with her family and friends. Robin Craver, a Senior Service Specialist at PGB, boasts an impressive 25 years of experience in the insurance industry. With an Associate of Science degree in Occupational Therapy, Robin has a passion for helping others, and her dedication earned her recognition as the Outstanding Student Graduate in college. Outside of work, Robin enjoys competing in BBQ competitions with her husband; her culinary skills shine through her first-place win in a Kansas City BBQ dessert competition. Additionally, Robin enjoys indulging in DIY home projects like furniture refinishing and updates, reading, fishing, and spending quality time with her family. Her ideal day off involves a beach outing and entertaining friends.
