welcome About The Cover: A bronze sculpture of the Cape Clawless Otter (Aonyx Capensis) in the Otter Pond at Kirstenbosch. It was sculpted by Llewellyn Davies and donated to Kirstenbosch by the Taeuber Family in September 1994. It is inscribed with these words: "Our quality of life will depend on the ability of mankind to live in harmony with nature."

IF YOU WANT THE HONEST TRUTH — ASK A DOG

Of all the animals, domestic or wild, a dog is the most transparent in showing its emotion. There is no mistaking when a dog is happy — he wants you, and the whole world, to know it and he wants you to be just as happy and demonstrative as him. Similarly, when your dog sees you eating that lekker piece of biltong he will show you exactly what the picture of pure greed and envy looks like. He has no shame in saying that he really wants what you have. It's not at all embarrassing to drool profusely or pace in tight circles, and who says that it's rude to stare a hole into someone. He doesn't care who sees him like that — he just wants to get the message across, loud and clear. So why do we find it amusing (or annoying) to watch? It's because we instantly recognise the same emotions we have in similar circumstances. We have just learned to dampen them down a little and are very good at concealing our ugly (to us) feelings from others. Your dog keeps you honest and reminds you that you are not so very different from him when it comes to suffering from the seven mortal sins, you just hide it better. We encourage our children and each other not to be afraid, we try to make each other feel better about it by means of denial. A dog however at the sound of a firecracker will give the most pitiful portrayal of impending Armageddon. It's important to him to do this to warn everyone that the world is about to end — if he has to shiver like a jelly to get it across, well that's fine with him. It goes the other way too. Dogs learn to read our every expression and unconscious movement. They know we are about to tell them that it's time for a walk, before we even know it ourselves. Yes, it's a really one-sided communication deal we give our dogs. They make it simple enough for a four year old to understand them. With us a dog needs a diploma in humanology to read what we really feel, and they do it so well, don't they. Enjoy the issue and keep warm.

Birds in Pinelands

Their fluty, whistled calls are a frequent sound in the car parks of Howard Centre where the birds forage during the day. Food scraps including bread and fruit bits are fought over and consumed as well as dead insects gleaned from car grills. They occur mostly in pairs, a bond which is thought to be formed for life and the male is all dark bluish black with the females showing grey heads. I’ve seen pairs breeding in crevices in the roof canopy of BP and Engen stations, a substitute for their traditional cliff nesting cavities. This bird’s usual haunts are mountain ranges with towering cliffs but have adapted well to our suburb. In South Africa there are very few companies that provide the full service and it is usually given to two or three service providers. These inspections cost around R2000 plus any repairs. So let’s consider some of these certificates. The Electrical Certificate is valid for two years and is freely transferable provided no alterations have been made during that period. The Beetle Certificate is the next most common one. It is not a requirement in terms of the law but is usually included in the sale agreement as the financial institutions require it before they grant a loan. This certificate is only valid for three months. It should not be requested until the sale has been concluded and all conditions have been met.

Recently Sold

A Plumbing Certificate is required by the City of Cape Town who passed a by-law in April 2011 by which they are entitled to withhold rates clearance as a result of non-compliance. A new certificate must be obtained for each transfer and does not have an expiry date.

Pinelands R2.450m

In some of the American States they require a “home inspection” which is usually done by a single provider and can cost anything up to R5000 ($500). A standard inspection checklist includes electrical, plumbing, heating and cooling systems, roof evaluations and damp checks.

A Gas System Certificate. In July 2009 a new regulation was published in terms of which there is now a duty to do an external inspection and leak test after installation and before commissioning a gas system. This certificate is transferable but one should have an annual check done by an authorized dealer.

An Electric Fence Certificate is the most recent requirement. It has to be issued for all electric fences which have been installed or modified after the 1st December 2012. Electric fences are often shared by owners and it is the responsibility of the owner on whose property the energiser is located to provide such a certificate. This certificate is transferable.

It is now compulsory for every seller to obtain up to 5 compliance certificates before transfer of ownership can take place in the Deeds Office.

Thirteen Grade 7 learners from Hanover Park, Cape Town, enjoyed a therapeutic clay workshop at Art in the Forest in Constantia during the July school holiday. This was part of the Mhani Gingi Social Entrepreneurial Network’s social responsibility programme, which targets vulnerable groups — especially children. The workshop, from 1-5 July 2013 was presented by the Light from Africa Foundation, whose core value is that "every child deserves love, respect and hope in their lives. The clay programmes offer the participants a unique artistic voice, tools they need to heal and to develop, and knowledge to build self-esteem,” said Lissa Claassens, Regional Programme Manager of the Light from Africa Foundation. There was a clay process, games in the garden, role-playing and art processes

using crayons, koki’s and collaging with sound and music. Each child received their own ‘Visual Journal’ that they filled with drawings, exercises, reminders and quotations. The days were interspersed with singing and laughter! At the end of the week, the children reflected and presented on what they had learned. Each child shared their artwork, beginning with a self-portrait that included hopes and aspirations for their future. Some spoke about how their mind sometimes plays tricks on them, and how they can listen to their heart to believe in themselves and find their voice. The programme was a great success and it is expected that these children have greater clarity for their futures, will achieve better at school and handle their own lives in a circumspect and thoughtful way. Mhani Gingi has formed a number of collaborative partnerships both locally and internationally since its formation in 2006. A recent partnership formed with Chamber Trade Sweden (CTS), a linkage financed mainly by the Swedish International Development Agency (Sida) resulted in the Women’s Innovation Trade Fair (WITF) 2014. The goal of the WITF, taking place 6-8 March, 2014 is to ignite the economic possibilities for women and showcase the tremendous work currently in progress from South African women. For further information on Mhani Gingi or the WITF, please contact Joan Wright, Trustee of Mhani Gingi Social Entrepreneurial Network. Call 021 531 1797 or 072 040 3169, or see www.mhanigingi.co.za. Facilitated by Bronwyn LankersByrne and Lissa Claassens, the curriculum covered: • Thinking and feeling positively about oneself • Knowing, accepting, controlling and verbalizing ones feelings • Communicating meaningfully with others • Resolving conflict with others constructively • Seeing changes in life as important and exciting challenges • Motivating oneself, setting realistic goals and enjoying life to the fullest Left: Participants of the holiday workshop displaying their artwork.

Building a dream house is exciting!. Granting of a building loan on vacant property however requires many different compliance issues, making the registration of the transaction somewhat more lengthy. Banks require long lists of documentation to ensure that there is adequate value in the home to be constructed to cover the loan, and also that all legalities are complied with so that the bank can sell the property in execution without unnecessary complication, should the purchaser default. This could cause delays in registration if not complied with BEFORE registration and even lodgement. Jenny Peters, the chairperson of the entertainment committee at Thornton Place, decided to run a knitting competition among the residents in an effort to help Betty, of Little Lambs, an NPO working to improve the lives of disadvantaged children. When Betty was invited for lunch, and asked to judge the dolls, she was 6:24 PM surprised to find 80 small colourful dolls, lovingly made. All the residents were given the same pattern, and the result showed a huge amount of creativity from dolls depicting Noddy and Big Ears to Laurel and Hardy. "It was a problem to judge the best but I decided to look at them all through the eyes of a child and pick one as a child would select one, that is, for brightness, funny face etc." said Betty. The winning doll was a clown which coincidentally was made by Jenny Peters. For more information see www.littlelambsnpo.co.za

Crafts, home and Garden

Create PeacE in your Home Life can be such a hurry scurry these days, that it pays to put some thought into making our homes a place of refuge, a place where we can re-energise and relax. Here are some tips to make your home a haven of peace, and some lifestyle suggestions to help the process.

decorate with your favourite chair, furnishings, books, candles, anything that makes you feel good, including a soothing aromatherapy candle. Gardening — not always possible in winter, but this is a wonderful time to get those home vegetable planters going with crisp lettuce and herbs. There is a certain feeling of achievement at being able to grow and eat home grown produce that you know is free of pesticides and is truly fresh. Get rid of the clutter — this will help you to keep the house clean and this is a huge boost to self esteem, and naturally to the safety of children.

Put on some music while you have a healthy breakfast. It will help give you a soothing start to the day or give you that party feeling if you are going out. You can play music as you go for a morning walk or during your yoga exercises.

Keep a 'Pamper Stash', either some luxurious bath goodies or skin creams; or a few of the most decadent bars of chocolate you can find. Remember to take time out and to spoil yourself — you are worth it!

Create a peaceful room which you can

Crafting with felt Felt is an ideal crafting fabric for quick, fun projects for children (and adults). The most one would need is a pair of scissors and some glue, or perhaps some sewing accessories for decorating. Felt is an unusual fabric as it is unwoven and although it has been made and used by man for a long tome (BC), it is not known how it was first discovered. Possibly men put wool into the lining of their boots. The pressure and moisture flattened the wool into a matted fabric resembling felt.

A simple square

In the examples above, one can cut squares of felt, decorate with buttons or different colours of felt. Join two squares together and make small cushions filled with lavender. The simple square is used in so many patterns - for knitting beautiful colourful blankets; cotton fabric is also used to create complex patterned quilts. But coming back to the felt squares, these are the quickest and easiest to use for a craft project, and have the advantage that the edges do not fray.

A friend of ours learned another lesson — don't drop the can of expanding foam from the top of a ladder — the spray nozzle will pop off releasing the contents of the can all over the lawn, and the emptying is unstoppable. This leads to the question — how much expanding foam is there in a can? Well, there's a LOT! — enough to create a very large artificial rock. We would like to suggest this form of prevention as a safer way of keeping unwanted visitors out of the ceiling. Rat traps are difficult to handle and not very pleasant to empty. Rat poison is a sure fire way to poison the raptors in our area (and we suspect that our dog ate a poison infected bird with dire consequences), let alone the danger to children if they get hold of it.

Money Matters

By Sue Torr Director at Crue Consulting

Succession planning is an immensely powerful, universal tool that can be employed by any business owner to ensure that the baton of his precious business is handed to an amply able and impressively qualified person who shares his passion and vision.

Dropping the baton Handing over the brightly-lit and well-fuelled corporate torch to the next generation is more difficult than simply passing on the baton of a good business. The saying “the first generation starts the business, the second generation runs it, the third generation ruins it” is sadly more often the case than not when entrusting the next generation with one's business.

not forget that there remains a fiduciary responsibility on the owner to prepare and implement an adequate succession plan for the company — a responsibility that is in effect owed more to the employees, clients and stakeholders of the business than to his offspring, who may or may not have any desire, passion or interest in the business whatsoever.

Many entrepreneurs who have literally invested their hearts and souls into forming, growing and running immensely successful businesses, fail to take that one small but vital step of developing a workable succession plan. Family business survival statistics show an estimated 30% of businesses surviving into the second generation, with a 13% chance of not being completely ruined by the third generation.

The prospect for family feuding increases as the younger generation expands and extends to a third generation. With more children, grandchildren, in-laws and cousins to consider, the unspoken generosity of ‘there’ll always be a place for you in the business’ becomes more of a curse than a blessing.

Research shows that the dismal and welldocumented failure of second and third generation companies have generally less to do with market downturns and macro-environmental issues, and more to do with family feuds and downright bad management by inexperienced leaders. In fact, in 2003 twenty of Turkey’s largest and most successful family-owned companies folded — with 43% blaming fraternal feuds as the main cause of collapse. One of the key causes of failure begins with the exit of the founding member or owner, who often leaves the role of business leader, visionary, strategist, thinker and mentor vacuously and precariously unfilled. Whilst much of the failure of a business to thrive in the ensuing generations can be blamed on the dispassionate children and grandchildren of the founding owner, let’s

August 2013 | the muse | 13

The result is that a once-profitable and well-run business ends up being managed by a whole brood of interrelated individuals who couldn’t find their own personal success, who aren’t necessarily qualified to perform the job which was inevitably created specifically to accommodate them and who probably have no real passion for the business at all. The inevitable tension, feuding and frustration that is bound to ensue can be further aggravated if the founding owner relies on the business for a continued income during his retirement. Understanding effective succession planning and implementing it is the first and most critical step to ensuring that your business outsmarts the “shirtsleeves to shirtsleeves in just three generations” blight and that the baton of your business remains firmly in the grip of a like-minded visionary, regardless of your familial ties. 

A

little over three years ago I decided that having lived in Cape Town most of my life I should participate in one of the big Cape Town events. As I do not own a bike and really do not enjoy cycling, the Argus Cycle Tour seemed like a bad option for me! I did however own a pair of takkies and had been told that anyone could learn to run, so the Two Oceans Marathon seemed like a by Alison Smith good choice. Above: After a successful Two Oceans marathon earlier this year. From left: Alison Smith, co founder of Camp Sonshine, her sister Hayley Coetzer and Hayley's husband Roger from Australia.

I

definitely did not want to be too over confident and as I had never run more than the length of a hockey field the half marathon seemed like the answer! I clearly remember going onto the website and registering for the race wondering what on earth I was doing! Once I have set my mind to something I have fairly good self-motivation so I set about training (without telling anyone, just in case I failed)! The big day drew closer and I was VERY nervous! This would be my first race ever. I did not expect to enjoy the race, I was going to endure it and then proudly tick it off my list!

Alison Smith Toward the end of last year my sister, brother in law and baby nephew, who live in Perth, Australia announced that they would be coming to Cape Town over Easter! My first thought, literally, was “Great, they can run the Two Oceans with me”! My sister’s first thought was “absolutely NOT!” Through my persuasive nature I got her round to the idea and she and her husband both entered the race. Then an idea began

Through the INCREDIBLE generosity of family, friends and complete strangers we managed to raise R25 374.22! This will cover the fees in 2014 for two very special girls, that Camp Sonshine Africa currently sponsor, to attend Pinelands North Primary. We believe that there is no better education that they could possibly receive. We are so proud of their achievements to date and we know that by receiving this quality education they are able to change the course of their lives and that of their families.

RUNNING TO EDUCATE

To my surprise I loved every minute of the race and before finishing I was wondering what other half marathons I could run, working out in which year I could obtain my blue number (a permanent number that you receive after running 10 Two Oceans) and that I should probably join a running club! Shortly after my first Two Oceans half marathon I joined Pinelands Athletic Club, where I have met some of the friendliest people around. Come and run with us and see for yourself!

www.pinelandsdirectory.co.za

brewing and I wanted to be able to run for more than just myself. I looked on some websites and through Back-A-Buddy decided to raise money for the Camp Sonshine Africa scholarship fund. Camp Sonshine Africa is an organization that I helped to start over 10 years ago. Camp Sonshine Africa works with disadvantaged children in the Cape Town area – running an after school enrichment program, a teen leadership program, an annual camp and a scholarship fund which helps to provide a great education for children whose families could not otherwise afford it.

It was the most meaningful race that I have ever run (and incidentally ran my personal best time)! It is the most fun way that I have ever raised money — combining two things that I love and believe in — running and education. Thanks so much to all my running buddies at Pinelands Athletic Club for your support and encouragement, to many amazingly generous people who sponsored us and to Pinelands North Primary for providing a top quality education! Who knows, maybe next year I will attempt the Two Oceans ULTRA! 

David Klop David has a passion for all things natural, leading to his research of numerous viruses, bacteria, insects and animals for a book he has produced, entitled "LIFE". David has Asperger's syndrome. His mother, Gail, discusses life with David and how he channels his energy into his fascination for the natural world.

David's interest in nature and evolution started off with dinosaurs, which fascinated him for many years. He would borrow only dinosaur books from the library for ages. As he got older, he became increasingly interested in evolution, and Charles Darwin became his hero. Thereafter, his interest branched out into various life forms. He can name hundreds of species of insect, and knows the Latin name for each. His fascination extends to hundreds of species of plants. On David’s twelfth birthday, he started writing a book that he would entitle ‘Life’. The introduction dealt with the most basic life forms such as viruses and bacteria, and continued with a huge variety of living creatures. The content deals with all the details of each of these organisms, such as habitat, behaviour and appearance. David completed his book at the end of his primary school career, after devoting over an hour a day over 18 months to the 309 page finished product. Only the photos in the book were cut and pasted; the script is entirely original. During a hike on Table Mountain, David took his pencil and clipboard, stopping every so often to name and sketch a plant or insect. He had four pages full by the time the hike was completed! Does this sound like your average fourteen year old teenager? Hardly! What makes David different, is that he has Asperger’s

August 2013 | the muse | 15

Above: David Klop holding the book he wrote. He is now researching for his second book covering animals and plants on different continents. Syndrome, which is often referred to as ‘a touch of autism’. It was only when David was five, that we became aware that he did not show great interest in other kids at play school, and preferred to be on his own. Children with Asperger’s syndrome are very often so consumed In their field of interest that they show little interest in anything other than their overriding passion. David is not on the same wavelength as his peers. The theory exists that people with Asperger’s cannot read the non-verbal cues expressed by others, and therefore cannot engage with them in the way that we neurotypical people do. They are also unable to empathise with others, or see anything from another’s point of view. All of this leads to socialisation difficulties. These skills need to be taught to people with Asperger's; neurotypical people pick them up automatically. David is highly intelligent, as are many people with Asperger's syndrome, but he lacks executive skills. For this reason, we employed a facilitator for David at Pinehurst Primary, to help him to organise himself and keep his attention focused on the lesson. David says that his thoughts about his personal interests interfere with his ability to concentrate on his lessons at school! At present, David is a pupil at Oakley House Independent School where he no longer has a facilitator, and is doing well. Small classes make all the difference.

So what is David like at home? He is never bored , and is constantly occupied with his intellectual pursuits. He has started his next book, which is entitled ‘Planet Life’. He and his laptop are inseparable! His ambition Is to become an evolutionary biologist. He is not completely unlike other boys of his age. He plays PC and Play station games, likes taking photos of plants and insects, enjoys his pets, and likes art. He is not, however, willing to entertain the idea of playing any sport, riding a bicycle, or engaging in any physical pursuit which most boys of his age enjoy. He loves routine and enjoys being at home. He will not go near a shopping mall or a movie theatre. He has no interest in cell phones or name brand clothing or social networking. David enjoys theoretical and intellectual pursuits far more than he does practical pursuits. Life in the world out there has not been plain sailing for David. And neither is it for us. After all, it would have been so much simpler if David had been a typical fourteen year old. On the other hand, David seems quite happy to be different! And we are quite happy to have a son who is anything but run-of–the-mill! Should anyone wish to contact Gail, she would be pleased to hear from you and compare notes. Call 084 665 3049. 

Travellers

South America

T

here are generally two types of travellers: those who have time and those who have money, and those with one, don’t normally have the other!

CHris Duncan

South America is one of those places that happily accepts both, which is fortunate for me as it has allowed me to backpack around a few of its beautiful countries, over five months, on a very tight budget.

The Shoestring Golfer in Chile, Peru, Argentina and more...

The hardest part of travelling to South America, whether for two weeks or two months, is not trying to learn some Spanish before you go, spending hours on crammed buses with screaming children or dealing with dodgy street food. The hardest part is deciding what to leave out while there.

For those on a quick trip, the best idea is to join an organised tour that will arrange a good selection of attractions and activities in a short space of time, or if that’s not your idea of fun, choose a couple of places you want to see and really enjoy your time there, without rushing it. I could easily write a page or more on each of the many highlights I have experienced in South America. From Ushaia, the southern-most city in the World, through Patagonia to the Perito Moreno Glacier and all the way up to the dizzying altitude of Lake Titicaca. From hiking through the snowcapped Andes and to Machu Picchu, to cycling down the World’s Most Dangerous Road in Bolivia. Whether getting drenched from the spray of the mighty Iguazu Falls, swimming with piranhas in the Pantanal or chilling on Brazil’s beautiful beaches, they all hold a very special place in my heart.

Top: The Pucon Golf Club in Chile, with the active Villarrica volcano in the background. Although closed for the winter, I walked the 9-hole course and took photos. Above: Much like Victoria Falls, Iguazu Falls lies on the border of Argentina and Brazil. Visit from both sides and over two days to really get a feel for these immense falls. Below left: Machu Picchu (The Lost City of the Incas) in Peru — voted as the one of the New Seven Wonders of the World. You can access Machu Picchu by the popular 4-Day Inca Trail, by bus or by hiking up from the town of Aguas Calientes, as I did.

It is always hard when someone asks “Which is your favourite, out of all the places you have been to?”, as they are all so different. One that does stand out though, is Easter Island. This tiny island, smaller than the Cape Peninsula and stuck in the middle of the Pacific Ocean, two thousand kilometres from its nearest inhabited neighbour is home to the giant carved heads, or Moai. The exact origin of these heads, and their creators, still remains a mystery and adds to the emotion invoked when travelling there. A common theme throughout my travels has been that of trying to play golf wherever I go. With my backpack on, golf bag in hand and a pretty tight budget, I have been able to travel around the World and play golf on six of the seven continents. I guess Antarctica will have to wait! Check out my golf travel blog, www.shoestringgolfer.com, for reviews of some of the courses I have played and the story of how I got there.  Below right: Easter Island, a special territory of Chile. On the slopes of Rano Raraku, known as "the birth place of the moai" as this is where the moai were carved from the side of the volcano, before being transported to their ceremonial site. Almost 400 moai remain at this site in various states of completion.

Ask the Principal By Carol Booth Principal of Cannons Creek Independent School

Respect for other people’s property is an important quality, and one needs to look at the concept that property belonging to somebody else is not yours, and therefore you may not take it, without asking.

Teaching children respect for property Ownership and Privacy

Start when children are very young and build on the concept all the time, giving them boundaries and teaching respect for other people’s belongings. For example, all the things that Dad and Mum purchase belongs to them and it is their right to decide who is allowed to use them and when. This includes food that they have been given. Remember, Dad and Mum’s bedroom cupboards are their private space and children should not be able to delve into them whenever they wish. The same applies to a parent’s bedside tables. But this works two ways, one can give your young children a special box where they can put their ‘secret’ items and where you will not look. The rest of their space in their rooms, mums have to keep an eye on as one does not wish their rooms to become messy areas.

Respect at home

When Mum has been given chocolates as a gift, they are hers. It is important for mums to teach their children that they can’t have everything in the house and it is such a simple thing to teach. Items in the fridge can be eaten by children but it is a case of simple respect and assisting Mum with regard to what can be eaten in the fridge and what cannot. Imagine your child diving in and helping themselves to anything they see — when you come to make supper you find your dinner items gone!

August 2013 | the muse | 17

Honesty

If your child does take something that does not belong to them, deal with it seriously. Honesty is important — explain to them what the correct behaviour is and give them a consequence for taking property that belongs to someone else. They should have this taught to them before they even enter the schooling system, as this is the first place where they will encounter lots of other people’s property which is in plain sight and there for anybody to take.

Respect at school

Something that is harder to teach is the respect for other people’s property. Children need to learn that all items have an owner, and if you are not the owner, then you cannot do what you wish to the item. Teachers do try hard to get children to look after all the games and activities in the class. Somebody has had to pay for them, and many are made by the teacher themselves. Once, for example, a puzzle piece has been lost, the puzzle is no longer worth building. I am amazed at our young children appropriating other children’s property. Respect is something that we need to instil in our children. If they find something, it needs to be handed in at the office or even police station. Schools request parents to label all their children’s property so that when it is found it can be returned to them.

The risk of borrowing

The same applies to expensive items. It is good to teach children that if one borrows an item it has been lent to you and you alone. It is not your right to lend it on to another person. Another good thing is to teach them that they should return it in a better state than they received it and if they break it then it is their responsibility to replace it. Mind you, a good saying is “Never a borrower or a lender be”. I know of many friendships that have broken down because of damaging or losing an item borrowed and not replacing it.

Property value

Another thing that one sees often is disrespect for cars. It is amazing to see children being allowed to scramble/climb over cars. Once a dent has been made in the bonnet, it is very expensive to fix or replace. And, when your child goes visiting, how are they to know that their host would not allow such behaviour and that they have taught their children respect for somebody else’s property? You think you may be doing your child a favour but they are the one to suffer by feeling embarrassed.

It is a gift for the future

By teaching your child honesty and respect, you will have given them yet another gift in life that will always stand them in good stead. 

food from the heart By Heleen Meyer Pinelands resident, foodie and author of Food from the heart.

Something sweet and chocolaty

Saucy chocolate and nut pudding Recipe from Food from the heart Portrait: Cornel de Kock Food shot: Glynnis Schutte

Serves 6 − 8

Sauce

500 ml (2 cups) boiling water 250 ml (1 cup) soft brown sugar 30 ml (2 tbsp) cocoa

Batter

50-75 g hazelnuts or almonds 60 ml (¼ cup) butter 125 ml (½ cup) sugar 1 extra large egg 7,5 ml (½ tbsp) vanilla essence 250 ml (1 cup) cake flour 15 ml (1 tbsp) baking powder 25 ml (5 tsp) cocoa 150 ml milk 50 g dark chocolate, coarsely chopped 1. 2.

Preheat the oven to 180°C. Lightly grease a 2.5 litre round, deep, ovenproof dish with butter. Sauce: Place the ingredients in a small saucepan and heat over a medium temperature, while stirring until the sugar dissolves. Keep sauce warm. Batter: Place nuts on a baking tray and roast in the oven for 8-10 minutes or just until the skins begin to burst open. Place in a clean dish towel and rub to remove most of the skins. Coarsely chop nuts and set aside. Beat butter and sugar together until creamy. Beat in egg and vanilla until smooth. Sieve dry ingredients in a separate mixing bowl. Beat into the butter mixture alternating with the milk until well mixed. Stir in chocolate and nuts. Pour the warm sauce into the greased dish, spoon batter over and bake for 40-45 minutes or until a toothpick comes out clean. Serve immediately with a dollop of ice cream if you prefer.

then the warm, rich sauce, is enough to make you want more and really warms you from the inside. But be warned, don’t burn your tongue on the hot sauce in the dish.

From working on my first recipe book, Onthoukos/Food from the heart and in other projects, I know that South Africans love sweet treats – be it dessert, baked puddings, cakes or other bakes. The combination of a spongy pudding with some gooey bits, and crunchy nuts and

It may seem a bit strange to prepare a large amount of sauce and then a relatively small batter, but that’s what gives this pudding its unique texture. Use a good quality cocoa and chocolate with that real dark chocolate flavour. The batter spreads into the sauce and bakes on top, while absorbing some of the sauce. Very little can go wrong with this dessert, but make sure you bake it in a big enough dish, otherwise the precious sauce spills too much. So go on, spoil yourself and enjoy digging a spoon through this pudding’s crust into the gooey chocolate sauce – it’s heavenly.

e had a tradition when we were kids that you could decide on the menu for the Sunday lunch closest to your birthday. This winter pudding was always on my list of favourites and even as a grown-up, there is something comforting about this self-saucing chocolate delight. Various recipes for this pudding exist and some interesting variations have been made, but it remains an all-time winner and just right for a cold day.
