African Spoonbill in flight
WATER, WATER EVERYWHERE, NOR ANY DROP TO DRINK These lines from The Rime of the Ancient Mariner, by Samuel Taylor Coleridge are cruelly appropriate for Cape Town. The speaker, a sailor on a becalmed ship, is surrounded by salt water that he cannot drink, much like our own threatened city. Although we may be tired of hearing it, “water” is a word we will all be saying a lot in the coming months. Day Zero, when our household taps would have to be turned off, was seen as a remote possibilty a few months ago, but it now looks highly probable. As it stands, that day is now estimated to be sometime in April. There is a chance that we can still avoid it, but only with some strict conditions: • ALL Capetonians must immediately bring their usage down to 50 litres or less per day. At present, only 40% of us are using less than our current 87 litres per day ration; • We need to have at least a ‘normal’ rainy season which needs to start earlier than usual, something we have not had for the previous three rainy seasons. How likely is this to happen? You decide for yourself... I don’t want to be a scaremonger, and I don’t claim to be an expert in these matters. I am just trying to understand what is happening and what I need to do about it. I am sure that no-one will die of thirst, but Day Zero or not, the serious water shortage will have a marked effect on our way of life. The effects on the local economy are also uncertain... how will business, industry and agriculture cope without adequate water supply? We don’t yet know. We will each have to do what we can to help and deal with whatever the situation is. It is serious but it’s not Armageddon. Be of good cheer and be prepared to apply some African grit and determination and maak ‘n plan to get through this thing... it’s going to be sitting on our shoulders for quite a while. I hope the year’s challenges bring us closer and make us a wiser and stronger society. We would also do well to take the lesson with us into the future that, as our population grows and our climate becomes less predictable, we need to always #RespectOurWater and use it wisely and sparingly, not as an unlimited commodity to be bought at will. It's a blessing from nature on her own terms.

African Spoonbill The African Spoonbill is a long-legged wading bird, white with a red face and legs, and pale blue eyes which cannot be confused with any other heron-like bird because of the unmistakeable pinkish grey spoon-shaped bill. Even when flying it is easily identified by its overall whiteness and outstretched neck and legs. (Herons fly with their necks tucked in.) African Spoonbills are seen in ones and twos standing in shallow water on the banks of rivers, shallow pans or water bodies. Good places to see African Spoonbills are at the Two Rivers Urban Park, Rondevlei Nature Reserve and Strandfontein Water Works. It is fascinating to watch an African Spoonbill hunting for fish, crustaceans, insects or larvae. It walks through the shallow water with its long spoon-shaped bill open, sweeping it from side to side in the water. Sensitive receptors inside the bill sense the prey and the bill snaps shut, catching it. Text supplied by Priscilla Beeton, of the Cape Bird Club. See www.capebirdclub.org.za.

HOME IS OUR STORY
Welcome to 2018
As we embark on a New Year, just how the political and economic landscape and the events of 2017 are going to affect the market is anyone’s guess. What is certain is that prices have softened. This is evident by the length of time that homes have been on the market before they sell. The first Sunday of this year also brought the largest number of show-houses that we have seen for some time.
Pricing has become the most important factor in selling your home. Hold on to your hats. I think we are in for interesting times!

Home taps turned off - City of Cape Town water collection points for a maximum of 25 litres per day!
The dams didn't dry up overnight - years of lower rainfall have taken their toll - and it will take years of good rainfall to fill the dams again. In the meantime we have to change the way we use our precious resource... and we ALL have to make the effort. Those not reducing their water usage are speeding up the approach of day zero, which will affect the whole community. Level 6B water restrictions come into force on 1 February. Day Zero at the time of going to print is 12 April. Helen Zille said that Day Zero can be prevented, only if all Capetonians reduce their water use to below 50 litres per person per day. When the taps go off, there will be 200 collection points spread out across Cape Town. They will operate 24/7 and allow each person to collect 25 litres of water per day. This will be used for washing, cooking and personal hygiene.
Thank you to those residents making the efffort!

OUT AND ABOUT
The Upper Liesbeek River Garden Parking in the cul-de-sac at the end of Upper Noreen Avenue we found the entrance to this lovely peaceful garden on the banks of the Liesbeek River. The local Bishopscourt Residents Association, City Council and estate agents teamed up to provide a public area that can be enjoyed by families and their dogs. Coming off the eastern slopes of Table Mountain the Liesbeek River runs a 9km course through the suburbs and into the sea at Paarden Eiland. Much of the river has been canalised, but in Bishopscourt it can be enjoyed as a beautiful clear stream gently flowing over stones - giving much pleasure to children who wish to paddle or catch tadpoles.
Alien vegetation has been removed and replaced with indigenous plants. There is a wheelchair friendly boardwalk, and a few wooden 'tables' and chairs, and benches where one can rest, enjoy the scenery or have a picnic. Dogs are allowed on leads (Please take a poop bag!) Children will be able to discover the "bug hotel", a frog sculpture and the play train. What a wonderful initiative, where the residents have made it their responsibility to uplift their area. Access to Upper Noreen Avenue is quite tricky because there is no access from Edinburgh Drive. Turn right off Edinburgh Drive into Robinson Avenue, and right into Upper Noreen Avenue - look for the River Garden signage.

This is an extract from a letter written by one of our 2017 matriculants to his teacher after he received his results in January. The young man did very well in the subject, but his letter expressed so much more than gratitude for good teaching. His thanks went to the heart of the teacherstudent relationship: that of respect and mentorship.

PRINCIPAL'S ARTICLE (Continued) continues to remain at the centre of the process. It is the teacher’s value system which is subconsciously absorbed by the student. It is the teacher who carries the power to influence for good, or to uphold a moral standard.
DEVELOPING VALUE SYSTEMS
Good teachers have a natural bent towards mentorship. They see their role as so much more than curriculum delivery. They see the classroom and beyond as opportunities to influence young lives positively so that their students can leave their care stronger, more resilient, with deep values and beliefs and with their academic potential having been reached.

A TEACHER'S INFLUENCE
We all need mentor figures in our lives. We all need a person or people to look up to, who can provide guidance and who can help to set a path for us. It falls naturally to teachers to fulfil this role with their students. And at the heart of this Dr Louise Wigens relationship is respect. Mentorship can only happen when the teacher respects the student and others around him, and MEDICAL AID RATES when, in return, the student respects the teacher. Phone for an Despite the wizardry of the information age appointment and the power that social media exerts over Mutual Park, Pinelands HOURS people (young and old!) it is remarkable to West End Medical Suite Mon - Fri discover, again and again, that the teacher First Floor - in the mall 08:30 - 17:00 continues to wield significant influence over young people. Many teachers will drsreception@telkomsa.net tell of meeting a student years later www.westendmedicalsuite.co.za and how that student will talk about incidents, teachings and behaviours which influenced her; often the teacher is quite surprised to discover that what he thought was a normal teacher-student relationship DrWigens-M5-076.indd 1 2017/07/23 was in fact so much more meaningful to the young person.

THE POWER OF MENTORSHIP
Teachers hold enormous power in their hands. They need always to be the adult in the relationship and to appreciate the influence that they have over young minds. The power of mentorship is simultaneously the most exciting and daunting role which teachers have, and they need to accept the responsibility, and to use this power wisely. Our young Maths student who now is beginning to make his way in the postschool world had a wonderful role model and mentor in his teacher. He ends his letter with these words:

Tracy, a born and bred Capetonian, has always wanted to be a teacher, and as a little girl she organised all her dolls and other children into a “school”, and then taught them! Tracy’s basic teacher training was done at the Cape Town College of Education in the Foundation Phase. This was followed by an HDE in Pre-Primary Education at Barkly House. Living out her passion for teaching, Tracy started her career at Table View Primary School in 1987. During the 13 years that 12:02 PM Tracy taught in the Foundation Phase there, she met her husband Llewellyn, who was also a teacher at Table View Primary School at the time. Happily married for 30 years they have two sons. Llewellyn a former Deputy Principal, is now retired from teaching. In 2000 Tracy joined the staff of Parklands College as a Foundation Phase teacher, and was promoted to HOD of the Foundation Phase in 2006. After her promotion to Deputy Principal in 2010 she taught Afrikaans FAL in Grades 4, 5 and 6 and a was also a full-time Grade 5 and 6 class teacher. Tracy joined the staff of Cannons Creek in 2014 as Deputy Principal and Grade 6 class teacher. She feels that the four-year “learnership” under Founder Principal of Cannons Creek, Carol Booth, was invaluable, smoothing the transition to becoming Principal.
Tracy’s interests are centred on sport and the outdoors. As a keen sportswoman she has completed several half-marathons, and played netball competitively, until her mid-forties. Tracy is a qualified swimming, athletics and netball coach and has been involved in these disciplines at all the schools where she has taught. Tracy established netball as a sports code at Cannons Creek. Tracy and Llewellyn enjoy camping and travelling. In her spare time Tracy enjoys reading and staying abreast of the latest developments in education. Tracy’s vision for Cannons Creek Primary is very much in keeping with the ethos and vision put in place by Carol Booth. Tracy’s focus for this year is developing a Growth mindset in the staff; moving away from a Fixed mindset, enabling teachers to develop each child's optimal ability. Tracy pays tribute to Carol Booth and feels privileged to be taking over the mantle as Carol’s successor. Best wishes go to Tracy Wahl on her journey as Principal of Cannons Creek Primary School.

Financial Planning for Millennials
FIERCELY INDEPENDENT, FEE-BASED ADVICE FROM A TEAM OF FINANCIAL & LEGAL EXPERTS MEET OUR PROFESSIONAL TEAM CRAIG TORR, CFP® Craig holds a B.Comm degree from NMMU, and is a founding director of Crue Invest. He is passionate about retirement planning and multi-generational financial planning.
By Sue Torr Director Crue Invest
MILLENNIALS - AN APP FOR EVERYTHING
Millennials are digital natives, having been born in the age of convenience with an app for everything. Being 2.5 times more likely to be early adopters of technology than any other generation, they are entrepreneurial to the core and value products that can enhance their lives while allowing them to spend more time on experiences.
TRAVEL AND ADVENTURE
Delaying milestones in favour of travel and adventure has made Millennials the fuel that fires the rapidly growing experience economy. They are able to combine work and play using apps such as Uber and Airbnb to ensure seamless integration of their lifestyle. Their jobs centre around STEM – Science, Technology, Engineering and Maths – with their careers being littered with job changes, business ventures, career about-turns and entrepreneurial undertakings. Holding down formal employment while dabbling with start-up initiatives is considered the norm. Their global mindset drives them to be both socially and environmentally responsible.
LONG TERM INVESTMENT
By their very nature, financial plans for this generation need to be fully customised and completely adaptable. The indebtedness of Millennials in terms of student loans is counter-balanced by the fact that they have the longest investment timeline of any generation that has ever lived. Many Millennials begin their careers conflicted between settling their student loans and funding for their retirement, and their concept of retirement is wildly different from that of the Baby Boomer generation.
A NEW VISION OF RETIREMENT
A formal, planned retirement is an anathema to Millennials who identify more favourably with the end-goal of financial freedom at whatever age they set for themselves. The greatest challenge to their wealth accumulation is the temptation to withdraw their retirement fund benefits when moving between jobs, careers and start-up initiatives. Uniquely tailored financial, tax and legal advice is essential for navigating the intricacies of setting
February 2018 | the muse | 13
up business ventures, understanding group benefits, structuring benefits when moving jobs, and weighing up the benefits of preserving accumulated funds versus injecting capital into a viable start-up. While planning for retirement remains essential, financial planners need to consider that Millennials have a different vision of retirement which involves passive income generated by business ventures, extensive travel and financial freedom that allows them to exercise one of their greatest fundamentals – choice.
MULTIPLE INCOME STREAMS
Financial planning for this generation involves making allowance for variable income, multiple income sources and creative structuring of benefits. There is a generational delay in key milestones such as marriage, having children and purchasing homes, and these factors need to be taken into consideration when developing the financial plan. In fact, while previous generations have chased the dream of home ownership, Millennials are more content to rent smaller premises in favour of spending money on travel and adventure – a break from the Baby Boomer mould of work, purchase home, save and then travel.
GENUINE CONCERN FOR THE WORLD
Millennials are driven by causes close to their hearts, wanting to make a genuine impact on the world. According to research, 37% of Millennials are willing to purchase a product that supports a cause they believe in, even if it costs slightly more. From an investment perspective, Millennials want to agree with the ethics of companies they invest in and require full exposure when investing in shares. With online apps available for budgeting, saving, spending and debt management at their fingertips, the relationship with their financial planner needs to be one of professional substance.
ERIC JORDAAN, CFP® Eric read for his BA, LLB and LLM degrees, specialising in tax. He holds an Advanced Graduate Diploma in Financial planning, with special interest in estate planning and structuring. He is an admitted attorney.
Adv. SUE TORR Sue read for her BA LLB at Rhodes University and is an advocate of the high court. She is passionate about financial compliance, behaviour finance and practice management. Sue is currently doing research into the unique financial planning needs of women.
GARETH COLLIER, CFP® Gareth holds a B.Comm degree and is a Certified Financial Planning® professional. He is passionate about personal financial planning and structuring of tailor-made employee benefits for small to medium sized companies.
DEVON CARD, CFP® Devon read for his B.Comm degree at the University of Cape Town. He has a keen interest in investment planning and building sustained wealth over time. He is also a member of the SA Men’s Water Polo team.
CORLENE BOTHA Corlene is our healthcare specialist in all aspects of medical aid and gap cover. She holds a National Certificate in Wealth Management, specialising in healthcare.
Come and have coffee with us. We’d love to help you plan.
MILLENNIALS - UNBRIDLED CHOICE
There is no doubt that Millennials are setting the stage for an exciting era of financial planning that meets their demand for unbridled choice, extensive pliability and the ability to cater for an unpredictably exciting future.

RENIER COETZEE
Pinelander Renier Coetzee was honoured as the LeadSA Hero for 2017, for the work he is doing to uplift the community through his NGO Trinity Children's Centre in Mitchell's Plain. Renier describes his journey from a path leading to actuarial science to one of education, and striving to develop the potential in children who live in difficult circumstances.
LEAD SA HERO AWARD
Renier appreciates the LeadSA recognition of the work done by Trinity Children's Centre, and was especially happy with the monetary donation to the school, from MySchool MyVillage MyPlanet, which came at a perfect time when the school was outgrowing its home in two residential houses - and planning a move to a larger
www.pinelandsdirectory.co.za
community centre. "Every year we add a class, and therefore need all the supplies and educational equipment for that class. Funding is a constant struggle, and we are very grateful to those who sponsor a child through their education."
YOUR PERSONAL JOURNEY
"I came to Cape Town from Johannesburg to study for a business degree at UCT, intending to do actuarial science. My honours degree project researched AIDS orphans and the lack of facilities for these children. It made me rethink my life values and question how I could give back to the community. Part way through my Masters degree I decided to take a break and do some work with my local church. Between a friend that I met at UCT, Alexa van Wyk, who had studied social work, we came up with the idea to start a school. We felt the need to invest in children who lived in an area where the odds were stacked against the them. Alexa and I travelled to various NGO's locally and nationally to gather information on how best to achieve our goals.
PERSEVERANCE AND HARD WORK
From our first class in a church in Beacon Valley, we bought a house in Mitchell's Plain in 2012. The advice was to start small and develop our idea from there. We raised funds from friends, family and our church for the basics. We experienced 20 burglaries in our first year, not surprising in a community where ordinary people are often forced to live next door to gang members and drug dealers. It was essential that our school provided a place of safety for the children
where, with good nutrition and love, they could free themselves to learn. As well as the normal school curriculum Trinity Children's Centre offers extramural activities such as music, dance and chess - and with the new community centre property that we have managed to buy, we hope to establish a 5-a-side soccer field. Last year we began integrating technology and brought tablets into grades 2 and 3.
ADVICE FOR RUNNING AN NGO
Establishing and running an NGO is not easy. Funding is an ongoing challenge, and this kind of work often requires personal sacrifices. Research your field and study what others have done before you. Alexa and I were lucky in that, between us, we had the training of a social worker who could work with the community and with the authorities for grants and health care; whereas I had the financial training to make sure the funds came in and covered the necessary expenses. I now have a Masters degree in Education, so I am able to ensure the educational integrity of the school.
HOME LIFE
In 2013 I married Helen, who works at Old Mutual. We live in Pinelands and have a beautiful six month old daughter called Zoe. We love Pinelands for its convenient location. My hope is that the school will continue to serve the Mitchell's Plain Community, encouraging children to develop their potential and become the super heroes they can be. TRINITY CHILDREN'S CENTRE
This year Trinity Children's Centre opens with 90 children in six classes from Grade RR to Grade 4. Many of the children in Grade 4 have been at the school since its inception in 2012. Renier and co-founder of the school Alexa van Wyk believe in the potential of the children on the Cape Flats. Now registered as a primary school with an integrated Early Childhood Development Centre, the school aims for an holistic approach to education, providing meals for the children, counselling to parents, grandparents and children, extramural activities and health checks. From one classroom with 15 children and one teacher, the school now has six qualified teachers for the six classes, five teaching assistants, two cooks, a grounds keeper, PA to Renier and a part time fund raiser. Parents who cannot afford the school fees are invited to work at the school in return for their children's education. This had led to a couple of the parents getting further education and qualifying as ECD teachers. Two thirds of the staff compliment now comes from the local area and only one third commute into Mitchell’s Plain.

ALEXA VAN WYK
Teaming up with Renier Coetzee in 2012 to start the Trinity Children's Centre, Pinelander Alexa is happy today that the growth and progress of the school was acknowledged at the 3rd Annual Changemakers Conference in Johannesburg last year when Renier received the LeadSA Hero of the year award. Alexa shares her experience with this project and her dreams for the future.
UNDERSTANDING MITCHELL'S PLAIN
Our first 'school house' was bought in Mitchell's Plain. We spoke to key people in the community including people at churches, police community forums and schools, in an attempt to understand the people we would be working with and to get a feeling for their needs.
Families cope with drug and gang violence on a daily basis - sometimes we could hear gunfire from the classroom. Our school provided a safe learning environment for the children, plus nutrition to supplement their diet.
MY ROLE AT THE SCHOOL
Initially I coped with vast amounts of administration required to get registration as an Early Childhood Development Centre with the Department of Social Development. If there was any intervention other than schooling needed on the children's home-front I would see to counselling for parents, their children and siblings; grant applications and healthcare issues, including arranging glasses for children from an optometrist.
IN IT FOR THE LONG TERM
We had decided early on that it was better to help a few people for a longer term than
to try and help many people over a short term. We also took the view that prevention is better than cure, and so we strived to instil in the young minds that each and every one of us has value in society and a potential to do good.
DREAMS FOR THE FUTURE
I have been a stay at home mum since my son John was born three and half years ago. I also have a lovely daughter, Lisa. My husband and I moved to Pinelands in 2014 - we had been looking for a place with a big garden and we are very happy here. I enjoy reading or walking and then relaxing with a good cup of coffee. I hope one day to rejoin Renier at the Trinity Children's Centre. My dream for the school is that there would be an intervention team that could work alongside the family, as well as with the children - a team that could also offer services to the wider community. 

LAYING THE GROUNDWORK
After getting advice and our first school room through Andrew Barnes in Beacon Valley, we established the criteria for enrolling children at the school. It is important that the children live close by the school, and we hope for as much contact with parents and siblings as possible. Our aim is to empower the parents - not take over their roles; and we are not exclusive in any way. Paying school fees is important and gives parents ownership in their children's education.

Christmas in Europe
CHRISTMAS IN EUROPE
Main image left: Christmas market in Luxembourg. Inset from left: Pam and Helene Steenfeldt-Kristensen (sisters in law).
By Helene Steenfeldt-Kristensen For my 60th birthday my son Regan and daughter-in-law Alison generously gave me a return airfare ticket to England and booked a comfortable home in Bremm, a village in Germany for the Christmas week for us all. The plan was to visit the famed German Christmas markets. Prior to meeting my family in Germany, I flew to Vienna for a few days with Austrian Airlines the cabin was spotless, the coffee excellent and we listened to Strauss waltzes.
VIENNA
From my Airbnb in Hernals, it was an easy commute by tram to the city. I started off with a visit to a Christmas Market outside the elegant town hall – the Rathaus. Here I sampled delicious white gluhwein with mandarin segments in it and bought some chocolate-coated handmade marzipan. European marzipan is simply the best. The stalls at most Christmas markets sell traditional “street-food”, hot chocolate, pastries, candies and beautiful Christmas ornaments, also scarves and hats – much needed in the bitter cold. On one of my days there it was -4 oC. I then visited the Kunsthistoriches Museum housing a large collection of antiquities and an extensive exhibition of the works of Flemish painter Peter Rubens. The marbled entrance hall is breath-taking. My next outing was to the Belvedere museum, a summer palace of Prince Eugene of Savoy (1663–1736), where I saw works by Gustav Klimt (including The Kiss), Egon Schiele, Albrecht Dürer and Pieter Bruegel – all a feast for the art-lover’s eyes and heart. On my way home I went to St Stephens Cathedral in the Centre of Vienna where I was fortunate to hear a rehearsal by a
www.pinelandsdirectory.co.za
nearby high school’s music department and choir. A teacher told me that they were to perform both English and German hymns in the cathedral on the following evening. On my last day in Vienna I visited the beautiful Schönbrunn Palace, a Baroque complex that had been in the Habsburg family from 1569. They were the monarchs who reigned over much of Europe until 1918. The state rooms are gloriously sumptuous but slightly overwhelming. I particularly liked the Mirror Room where the young Mozart aged 6, played for the Empress Maria Theresa. The story goes that he ran up to her after the performance, climbed onto her lap and gave her a kiss! After an interesting tour I went to the Residentz, the palace coffee shop for the most delicious apfelstrudel and “milk coffee” (cappuccino).
LUXEMBOURG
My ex brother and sister-in-law Niels and Pam Steenfeldt-Kristensen have lived in Luxembourg for 10 happy years. They kindly showed me around the city. After starting off our tour at the Mudam Museum of Modern Art, we spent some time at the Christmas markets partaking of the goods on offer - potato cakes, flammkuchen , a thin based pizza of sorts and absolutely moreish, and of course the Luxembourgish version of gluhwein. We walked past the Grand Duke’s residence (Luxembourg is the world’s only Grand Duchy), after which we went into the Notre Dame Cathedral to light a candle for the loved ones who are no longer with us. Luxembourg City is a financial and business hub. The working population increases by approx 200,000 people per day when commuters arrive from Belgium, France or Germany.
GERMANY
I set off by train from Luxembourg to Trier in Germany where I changed trains to go to the village of Neef (a station nearest Bremm). No station there, just a siding really, and the entire village - every coffee shop, restaurant, wine bar had closed for the winter, so no taxis. Luckily a friendly Speech Therapist gave me a lift to Bremm on the other side of the Mosel River where I arrived just before my family did. Not wanting to miss out on the Christmas markets that were still open we set out early the next day for Bernkastel-Kues a picturesque town on the Mosel River. The Mosel Valley is well known for its fine Rieslings and many of the vineyards are planted on the steep slopes. After Bernkastel-Kues we visited the Traben Trarbach Christmas markets that are held in the town’s underground wine cellars along the river. Wonderful fare on sale: cheese, meats (lots of German sausage), waffles, pancakes, smoked salmon on rolls, and lots to drink. Cochem is another charming town on the river and well worth a visit, as is the beautiful medieval town of Trier. Over the New Year weekend, once my family had returned to England, I travelled to Cologne (the home of 4711 Eau-deCologne) by train. Nearly everything was closed over the Public Holidays but I managed to see a wonderful modern jazz concert at the Philharmonie and a special exhibition of the Pop artist James Rosenquist’s work at the Museum Ludwig which also houses the largest collection of Picassos in Europe. Near both these super modern buildings and dominating the entire city is the Cologne Cathedral. It

After travelling to several countries in Europe over December and hardly ever seeing the sun or hearing English spoken (my schoolgirl German was stretched to the limit), it is lovely to be back in sunny South Africa. On my return flight from Heathrow there were hundreds of Europeans fleeing the cold and grey. FOOD FROM THE HEART By Heleen Meyer
Pinelands resident, foodie and author of Food from the Heart, and Make five/Maak vyf.
Bobotie muffins 30 ml (2 tbsp) olive or avocado oil 1 kg lean beef or lamb mince 2 thick slices wholewheat bread or 125 ml (½ cup) uncooked oats 250 ml (1 cup) boiling water or Rooibos tea 2 medium onions, finely chopped 2 cloves of garlic, crushed 20 ml (4 tsp) mild curry powder 15 ml (1 tbsp) each dried mixed herbs, ground cumin and coriander 5 ml (1 tsp) each turmeric and ground ginger 20 ml (4 tsp) smooth apricot jam 125 ml (½ cup) raisins or sultanas (optional) 40 ml (8 tsp) red wine vinegar or lemon juice salt and ground black pepper to taste 8 large or extra large eggs, beaten 1. Heat half the oil over a medium heat in a large frying pan and brown some of the meat. Break up any lumps with a wooden spoon or fork. Spoon out, set aside and repeat with the remaining meat and oil. 2. Meanwhile soak bread in the water or Rooibos in a mixing bowl. If using oats, just add to the browned mince, no soaking needed. 3. Sauté the onions in the same pan until soft and add the garlic, curry, herbs and spices and sauté for another 1-2 minutes. Add bread or oats and meat with the liquid to the onions and mix well. 4. Reduce heat and simmer with a lid for 20 minutes. Stir in the jam, raisins or sultanas and vinegar or lemon juice and season. Simmer for another few minutes and then allow to cool slightly. 5. Preheat oven to 180 °C and grease a muffin pan or place sturdy paper cups on a baking tray. Line the muffin pan with muffin cups for ease of packing later, if preferred. 6. Stir eggs into the mince mixture and divide between the muffin pan or paper cups. Bake for 20-25 minutes or until set. 7. Allow to cool and refrigerate or freeze until needed. Pack into a lunch box with salad ingredients and fresh fruit.

Makes 20 - 22 muffins
Fun idea for lunch boxes Packing lunch boxes can be a daunting task, but with a bit of planning you can make things so much easier. Maybe you can recall many a cheese and jam sarmie from your school years, but that’s definitely not the only option on the lunch box menu these days. Different elements from supper can become part of a colourful and balanced lunch box, so be creative with meat portions, cooked veggies, salad ingredients and seasonal fruit. Some time ago fellow Pinelander, Hilton Turner, shared his brilliant and delicious idea with me, to turn a bobotie mixture into individual muffins. It was an instant hit with my family and the kids feel quite spoilt when they have some of these in their lunch boxes. I’ve even used this method
with a basic tomato mince mixture. I use my favourite bobotie recipe, but feel free to use what your family enjoys. Instead of baking it with the egg custard on top, beaten eggs are stirred into the mince and baked like muffins. They taste great at room temperature and could even be enjoyed at a picnic. They are quite filling, so a batch goes a long way. They also freeze very well, and will help as a standby for those days when you don’t have something ready for lunch boxes. Remember that packed lunches are not only for the kids and if you need something to keep everyone full throughout the day, these bobotie muffins are just the answer. Pack them with some lightly cooked green beans or broccoli and fresh fruit or salad ingredients… lunch is sorted, and anything but boring!
