HUNTING ALPINE CHAMOIS
Lucas Micallef, one of the Pinewood international hunting ambassadors and based on the wonderful island of Malta, spends months on hunting trips each year. This time Lucas spent adventurous days in the Slovenian alps hunting Chamois. Take part in his story!
W
e arrived late at night, and climbed to an altitude of 1,100 meters on the Julian Alps, in Slovenia bordering with Italy. We then were told that we need to walk around 400 meters to reach our lodge, a small cabin erected to provide shelter for hunters and guests from all the extreme weather conditions that one could imagine. We immediately ignited some fire, to warm up the inside of the cabin, where the current temperature was around 1 degrees centigrade. Pitch dark outside, we only could see white snow summits on adjacent mountains, reflecting the light contrast by the moon’s first quarter. Anxiety and emotions were high, and in the morning at about 4:30, we woke up and I cooked some bacon and fried eggs on the low-emitting heat generated by the stove, for the team to sustain the energy needed for the day ahead.

Got the rifles, my crew loaded the filming equipment and met our local guides. Upon greeting, we moved to lower ground and checked zeroing of our rifles. The rifle acompanying myself was chambered in 6,5 Creedmoor, while geared up with a 1.8-14×50 riflescope.
Finding the prey
The local guide said all seems good with an overwhelming smile. My friend that was accompanying me also checked his sighting, and we were ready to hit the tracks to go up the steep mountains. A northerly force 7 wind was blast freezing our faces, thankfully the continuous movement and tracking helped our bodies to warm up comfortably. After approximately one hour, one of the guides stopped while glassing with his binoculars the ridge just above where the snow H U N T I N G AU T U M N / W I N T E R 2 0 1 9 -2 0 2 0
was at approximately 700 meters of distance. He said there are two Chamois, while we were also glassing the ridge, it was indeed an exciting moment seeing the first chamois, and a herd of another eight chamois was observed laying down while taking shelter under rocks from the cold, windy conditions. After deliberating, the idea was that we would split up and hunt two different part of the mountain. We could not take any chamois, but only mature 6-year old or older male chamois could be taken. From the respective concession, the local hunting association carefully selects 28 chamois as part of their sustainable management plan. We reached an elevation of 1,800 meters, and a drastic decision had to be taken. We could not get any closer than 360 meters from the herd. While was laying down, I was assessing the ballistic calculations and corrections needed. Time was passing by, the guide was

assessing the herd, and at one point, just beyond the peak, we have seen a small avalanche that moved downward were the herd was. The Chamois got spooked and started moving fast further away from our position, and at that point I said… ‘we lost our chance, and we have to start again from the beginning.’ ”Mirko” the guide said, look two are turning back, and we have seen two chamois moving down the ridge to a rocky spot just were the chamois were taking shelter from the wind. We waited for approximately 20 minutes, just to get a glance of them, and at one point one
got on the top of an alpine rock and instantly the other also. Both Chamois were evaluated, and both could be taken in respect to the careful management of the concession. I range found twice to be sure that I am addressing the correct distance. My rangefinder calculated the distance of 189 meters. I corrected to 11 clicks due to the shot going to have a positive inclination degree. I asked my cameraman if he’s ok, and he said that all is ok. The Chamois was positioned frontal, and with the wind, I was hoping that the animal will turn to its broadside, while continuously rubbing my index finger to my thumb to keep blood circulating and my fingertip warm. As we were laying down for some time, I started losing the feel of the index finger. At one point, the Chamois turned, I asked my cameraman again if he was ok, my guide said ‘take it,’ took a deep breath, exhaled, and concluded the shot. The moment when time literally freezes, thinking of the journey, organization, and the stalk we did, it was up to me to conclude the whole scenario., An ethical and effective shot was thankfully taken. Rel-ieved I turned on the guide and smiled while trembling with emotions and adrenaline.
A unique experience
The hunt was not yet over, we walked further up the summit to retrieve the carcass. Traditional last-bite traditional ritual was celebrated. At that point we got a call from the other
party, confirming that successfully they also had taken another chamois. We started our ways back down the mountain, with a great smile and emotions that fortunately only us hunters can experience, but cannot explain to others. We met the other party while going down, and stopped for a light snack prepared locally by the guides, mainly game salami, and local alpine milk cheese while recounting the whole event. From a very young age, I was always inspired about the conditions were and how Alpine Chamois live at. The experience was incredible, which emerged memories to cherish throughout my lifetime.

FROM SUNDAY DINNER IN VÄRNAMO TO FINALIST IN CHEF OF THE YEAR 2018 Finalist in Chef of the Year 2018, Battle of the Chefs winner and Olympic Master Chef. Peter J Skogström is one of Sweden's most qualified chefs. Here he tells us about recording his new wild game programme in South Africa, the first rain for three years and the art of competition cooking – against his wife. text:
W
orking with his hands using fantastic raw materials and all the people he meets on the way. These are what drive Peter J Skogström from success to success. His interest in cooking was kindled early on and his choice of profession came naturally. His inspiration and interest were born in his grandmother's kitchen in the southern Swedish village of Bor near Värnamo. "I am one of the few lucky ones who knew early in life that I wanted to be a chef. Sunday dinners with my grandmother triggered my interest. Later I went to a culinary arts boarding school in Ryssby. This led to trainee positions and weekend work, and of course after that I stayed in the industry – working with food was absolutely fantastic.
First rain for three years

new programme concept for the Mat och vin [Food and wine] website. The surroundings are hilly, rocky and thorny. It's below freezing in the morning when the film team wakes up, but during the day it gets hotter than a high summer day in Sweden. What's more, they managed to pick the same time as the first rain in three years. "The changeability of the weather was crazy. It hadn't rained in Sweden for three months, but here this was the first rain for three years and people were in absolute rapture. We were placed at a remote farm two hours from the nearest town, so we needed to plan our cooking well.”

From the farm, they had access to 125,000 hectares of hunting land. The films from the trip show South Africa's beautiful vistas and Peter J Skogström informs the viewers how to butcher a fallow dear, make sausages H U N T I N G AU T U M N / W I N T E R 2 0 1 9 -2 0 2 0
and prepare them in the best way. No actual hunting is shown on film as many feel the subject to be controversial. However, Peter J Skogström tells us the hunt was well-thoughtthrough and planned. "We studied the flock for quite some time in order to find the right animal. We were hunting bontebok, ibex and impala. The pictures from the journey have met with a fabulous response. The panoramas and the light – it was truly magical. But the trip was also about gaining inspiration for more films and recipes."
Competition cooking
Just like his competition instinct, Peter J Skogström's interest in hunting has been around a long time. Over the years Peter has participated in and won a variety of cooking competitions. But is it really possible to compete in cooking? "Well I certainly think so! It's no different from a song contest, dressage, dancing or

It encourages the chef to do better and move onto the next step. The downside is extreme preparation and humongous stress, but for me it's a way to develop.”
How do you feel about your successes?
"I can look back and be really proud, but I also know that none of it came easy. Just like any other athlete, I've had to sacrifice other things. For a while, I did nothing else but work and complete; 300 hours a month was nothing unusual. This was fine all the while I didn't have a family, but even today I can still tell I didn't prioritize my social life for many years. The people I have around me today are proper true friends.”
Competes against his wife
Peter J Skogström met his wife Marie in the middle of the most intensive competition period. Marie is also a prominent chef and baker and her awards include the Dessert
Master title in 2013. Over the years, Peter and Marie have been competitors many times including Chef of the Year. "There are few people crazy enough to enjoy competing against each other. It's a bit surreal, but we egg each other on and bounce ideas off one another. Sharing situations creates understanding on both sides," thinks Peter J Skogström.
Balance and harmony
Today, Marie and Peter J Skogström live together in southern Sweden with their two children, Buster and Filippa. Peter devotes his time to hunting, fishing, training his dog - and running seven restaurants. In between he tries to find balance and harmony. "I'm a doer and always spot opportunities. But the most important thing in life is the harmony between work, leisure, children and doing things you enjoy. We have fun together and I love my job. Everything in life is more fun if you really do the things you like and enjoy.”

Preparation: Make a coarse mince using the lard, game, anchovies, spices and pieces of bacon. Steam the sausages for around 2 min and cool them before grilling or frying and serving. Chop the cabbage and the onion, both finely. Shred the lemon zest and press the juice. Sauté the cabbage in a saucepan with the butter together with the lemon zest and onion; pour over the lemon juice, sugar and wine. When the cabbage is soft, add salt and pepper. Chop the bacon into small cubes and sauté until crisp. Shred the parsley and toss it with the bacon just before serving. Serve with delicious mashed potatoes or in a bread.

TIPS FOR FISHING EXPEDITIONS
• Predator fishing is on the increase. Perch, pike and zander are just three of the fish growing in popularity. This has not gone unnoticed in an industry that is always improving and developing new tackle specially adapted for the species. Lures, reels, rods and jigs – the choices get more interesting every day.
• The Internet makes fishing international. It’s a fantastic medium where hundreds of thousands of videos help anglers the world over share their experiences. Being inspired and learning how people do things in other parts of the world makes us better anglers.
• One fun trend that has sprung up in Europe is city fishing, also known as street fishing. The phenomenon brings fishing home to many more people and raises interest, especially in the young. They can take their rods and stroll down to the city canal after school or work and fish for an hour or so. It's surprisingly good fishing that can be enjoyed any weekday at times not usually associated with the sport.
• Functional clothes specific for their task are great. There's watertight pockets for the wallet or mobile, and easily accessible storage for pliers and knives – details that make any trip easier and more convenient. And well-chosen fabrics let the body breathe and make the garments easy to move around in. During the autumn and winter when the weather turns grim, good clothes are extra important.
• Fishing competitions are getting more popular. The so-called fishing tournaments are influenced by the USA, where many black bass competitions are held. The first perch series in Sweden was started by Gunky perch tournament. The third season, beginning in the spring of 2020, will comprise five tournaments stages, following which the winning team will be selected.
• Winter fishing, especially for that giant perch lurking under the winter ice, has become ever more popular in recent years. Anyone with an ice rod, a line, jig lure and an auger can make their way out and try their luck at ice fishing. But never cut corners on safety. Ice prods and preferably a life jacket or vest are a must throughout the winter season.

The product contains Sentz® UV-Abzorber making treated hunting clothing not “glowing” in the eyes of animals (they can see reflections in the UV spectrum, humans don’t ) and thereby less detectable by vigilant eyes of prey resulting in shorter distance shots and better luck of the chase.
