Sustainability is an important part of the Plaza Premium Group ethos, and the group has put in place a number of programmes to encourage environmental-friendly behaviour. REINVENTING THE GLOBAL AIRPORT DINING LANDSCAPE We speak to Shane Wilkins, Culinary Director of Plaza Premium Group, about revamping the airport food experience at international airports around the world.

With travellers looking to explore the local food scene, how do you ensure that you’re showcasing a destination’s culinary culture? Food is, and always will be, a key element when it comes to having an authentic cultural experience. Our global team ensures consistent quality across our network while our local teams bring their cultural knowledge. By pairing carefully selected food and beverage offerings with considered design elements, we’re able to showcase local elements across our international network to create a true sense of place within the airport experience. How do you incorporate the concept of “glocal” across the Group’s network? We offer a range of global and local cuisines at every Plaza Premium Lounge. Laksa in Singapore; fresh stone oven pizza in Rome; and dosa and traditional masala chai in India are just some of the examples of dishes that bring local cuisine into our global lounges. Aside from food, we believe a complete glocal experience also means having the right ambiance. For example, at Plaza Premium Lounge Brazil, we feature Brazilian street art and murals of waves along with the traditional caipirinhas to convey the “Carioca” ambiance, which is appreciated by both Brazilian and foreign travellers.

PLAZA PREMIUM GROUP INSIGHTS

Can you describe how the Group enhances the airport hospitality for travellers? It’s very important to create an element of surprise through innovative food and beverage experiences. We want to present the idea of a food theatre where we engage all the five senses. At our live cooking stations, our chefs can interact with guests while preparing their favourite dish; the open kitchens create a variety of aromas which entice our guests to try different cuisines. To complete the experience, our teams are happy to share their knowledge of local culture and dishes with guests, creating a human touch that’s rare in busy airport terminals. How do you strike a balance between serving international cuisines and engaging in local cultures and festivities? It’s all about the small details when taking care of a mix of local and international travellers. We have to ensure that we provide the best experience for all. A good example would be how we handle Ramadan in locations that celebrate the occasion. During Eid al-Fatir – the fasting festival after Ramadan – we are mindful of our buffet options and create a simpler setup. After the fast, we serve a larger selection of nutritious food to help our guests recharge. As another example, we do a tailgate party theme after football season, and we also mark important dates that are celebrated in different locations, like Labour Day, Christmas and Thanksgiving. As a global network, how are you supporting sustainability efforts? As a global network, it’s difficult to implement sustainable measures all at once. Nevertheless, to minimise our impact on the environment we source ingredients locally wherever possible to reduce our carbon footprint and support the local economy.

Reducing waste like single-use plastics is also crucial. Earlier this year, we introduced paper straws and wooden stirrers at Plaza Premium Lounge Langkawi to kick-start our commitment to sustainable travel. Since there are so many travellers visiting our lounges every day, we’re looking to implement a scheme to monitor and reduce food waste, since this is not only cost-effective, but also a good step towards reducing our environmental impact. We are continuously working to be an environmentally responsible corporation. There is a huge demand for healthy, organic and plant-based food options these days. How is Plaza Premium Group meeting these demands? Travellers today have many special requirements – many of them are vegetarians, vegans, or have food allergies, for example. In response to travellers’ demands, we have partnered with Green Monday to introduce plant-based meal options like the Beyond Meat Burger and the use of Omnipork in some of the dishes at our Plaza Premium First in Hong Kong. Food labelling is also crucial – we need to be able to indicate potential allergens such as nuts and gluten. Another element of our efforts is a selection of cold-pressed juices to combat jetlag and help travellers stay energised while travelling; we also have fresh salad bars across our lounges. We have also introduced hydration stations where we serve superfood-infused water in London, Toronto, and Helsinki; this will soon be implemented across all our lounges. Plaza Premium First partners with a number of other brands. Why is this important? Offering extraordinary dining experiences requires strong partnerships with premium brands. At Plaza Premium First in Hong Kong, our AeroBar offers an all-inclusive beverage experience, from artesian coffees and premium whiskies to craft cocktails. We also forged a partnership with Singaporean tea brand TWG to offer a wide selection of tea, which is also used to create tea-infused mocktails and cocktails. We also work with alcohol company Pernod Ricard to introduce an array of Scotch whiskies, and special gins in unique barrels that are tailored exclusively for Plaza Premium First guests. Bringing renowned brands from around the world into our lounges sets us apart and reinforces our level of service. How will Plaza Premium Group continue to reinvent the global airport dining landscape? While we’re focused on innovation, we must not forget that this is a people business. Training is key to ensuring our service teams are knowledgeable about our food, drinks and services. In order to go the extra mile, we’re looking into creating themed bars – like gin bars, whisky bars or even coffee bars – for our lounge network. Also, when we work with partners, we ask them to come in and train our staff because it’s important to show our commitment to our partners to foster longterm relationships. Our lounges and portfolio of airport dining concepts strive to change the way travellers eat and dine while on the go.

laza Premium Lounge Helsinki opens its doors and creates a sanctuary for global travellers and families to relax and unwind before embarking on their next journeys. Situated between gates 34 and 40 on the third floor of International Departures Terminal 2, the non-Schengen terminal of Helsinki Airport, Plaza Premium Lounge Helsinki houses the brand’s new family-friendly feature – Playroom in collaboration with Masterkidz, an international toy designer and manufacturer. Spanning across 445 square metres with a capacity of 140 guests, the latest lounge addition features comfortable seats and lounge chairs for travellers to anticipate their upcoming trips while overlooking the runways through the floor to ceiling windows. Guests can also choose to take a shower before a long-haul flight or stay connected with complimentary WiFi service and charging stations for their gadgets. Individual workstations are available as well as printing service upon request for business travellers.

With already a number of locations across Indira Gandhi International Airport, the latest Plaza Premium Lounge addition is located at the Mezzanine Level (Food court level) of Terminal 3 departures. The new lounge features live kitchen counters with a dedicated tea station serving freshly brewed tea for travellers to enjoy. Adding cultural elements to the contemporary design, a specially curated “sense of wall” encompasses imagery of the rich heritage of Delhi. Spanning 355 square metres the space also includes seated massage and shower facilities for guests to unwind and refresh, signature honeycomb workstations to ensure utmost privacy and charging stations to uplift every travellers’ pre-flight experience.

ALLWAYS LANDS DALLAS FORT WORTH INTERNATIONAL AIRPORT Offering end-to-end airport experience that is secure, seamless and efficient whether travelling for business or with family and friends is at the heart of Allways. Allways Dallas Fort Worth provides personal escort, porter service, and meet and greet. The launch is one of the group’s key milestones to establishing footprint in the US market, followed by the opening of Plaza Premium Lounge in Dallas Fort Worth (DFW) international Airport in 2020. DFW Airport is among the busiest airports not only in the US but the world; it is also an internationally renowned transport hub with nonstop international and domestic services to almost 250 destinations.

T

his year’s ACI WAGA was held at AsiaWorld Expo in Hong Kong and Plaza Premium Group is delighted to meet with many industry friends in addition to forging relationships with new potential partners. Thanks to ACI – Brand Director Mei Mei Song was honoured to moderate a panel of like-minded airport specialists, including Muna Al-Ghanim of Abu Dhabi Airports, Chapman Fong of Airport Authority Hong Kong, Carlos Criado of Corporacion Quiport, Karen Ellis of San Antonio International Airport and Claire Donnellan of Sydney Airport, to delve into the subject matter of the “Customer Experience Revolution.” The discussion was fruitful and the group has reached a consensus that change is definitely taking flight with all airports being onboard. In addition to digitalisation and the ever-growing popularity of social media, airports must constantly listen and observe to ensure services and facilities are enhanced to meet with travellers’ expectations. Also importantly, every partner within the airport eco-system needs to nurture a culture that customer experience is embedded in every team member’s DNA – from top to bottom. Ultimately, airports and partners like Plaza Premium Group must go beyond to innovate ideas and stay ahead of the game. Plaza Premium Group has also staged an entertaining dinner at its Airport World Trade Centre Club (AWTCC) to gather airport and airline partners to enjoy a night full of laughter with award-winning Chinese cuisine prepared by the Group’s global culinary team.

ITB CHINA ITB China, a travel exhibition exclusively focused on the Chinese markets brings together industry professionals from all over the world. PTE LONDON Jonathan Song, our Business Development Director discussed “Airport Hospitality: One Size Does Not Fit All” at this year’s Passenger Terminal Expo in London, echoing our Group’s mission in creating a seamless and holistic airport hospitality journey and ultimately making travel better for global travellers. Jonathan further delved into travel habits of different kinds of travellers such as the different needs of a business traveller, the importance of taking demographic into consideration in order to personalise airport experience. The Passenger Terminal Expo and Conference has firmly established itself as the most highly regarded airport conference in the world.

GLOBAL FOOD SERVICE SUMMIT ASIA Plaza Premium Group’s Director of Culinary Shane Wilkins spoke about “The Future of Travellers and Airport Dining” at the Global Food Service Summit Asia 2019 in Shanghai. Shane not only emphasised the company’s global culinary team and glocal concept but also our initiative to meet and exceed travellers’ concerns regarding sustainability and innovation through our partnerships and collaboration with environmental friendly organisations.

FAB 2019 The Group’s Founder & CEO Song Hoi-see joined the annual Food and Beverage (FAB) 2019 Conference & Awards at Dallas Fort Worth International Airport to discuss about “Walking the Walk on Innovation in Airport Dining” in June. Together with industry leaders, Geoff Alexander, President of Wow Bao and Regynald G. Washington, President, Paradies Lagardere Dining Division, Song shared our visions of food and beverage innovation. Song emphasised the importance of going glocal, curating food and beverage offerings, mindful eating and sustainable travel and the importance of establishing partnerships when serving international travellers from around the world.
