It gets its yellow colouring from the saffron added to the rice which also enhances the unique flavour. Many chefs have specialty versions and will often cook paella in huge pans in front of customers. oIbiza Town by Night The walled city of Dalt Vila is one of the most enchanting experiences of Ibiza holidays. as it is lit up like a fairytale town at night. Market stalls and shops will stay open well into the early hours, with plenty of bars and cafes to choose from for refreshments. The sights sounds and smells of this area will stay with you long after you return home, but probably the most memorable sight is when the club parade begins.
