As the holiday season approaches, I find myself reflecting on what matters most and what makes our work so fulfilling. I am incredibly grateful for the team behind our wines and for you, our loyal supporters, who inspire us daily to create the wines we ’ re so proud of To us, it’s not just about making wine, it's about being part of something larger, something shared.
Next year, PlumpJack Estate Winery will celebrate its 30th anniversary. It's hard to believe how much has changed since I joined in 1997 Back then, we were a small team with a single vineyard. Since then, we've built two LEED Gold Certified wineries CADE Estate on Howell Mountain and Odette Estate in the Stags Leap District and acquired the historic CADE 13th Estate and, most recently, Oso Vineyard. What started as a team of five has grown into a community of passionate people, including our three Winemakers: Aaron Miller of PlumpJack Estate Winery, Danielle Cyrot of CADE Estate Winery and CADE 13th, and Andrew Haugen of Odette Estate Winery and Adaptation I feel lucky to work with these three incredible individuals and to have such wonderful people like you to share our wines with.

What does “sense of place” mean to you?
Aaron Miller (AM): Each vineyard site has unique qualities – daytime and nighttime temperature ranges, seasonal rainfall, humidity, soil composition, elevation, and terrain, to name a few That, in concert, impacts the character and quality of grapes and the wines that are crafted from these grapes A wine with a “sense of place” has its own personality that reflects the distinctive characteristics of the vineyard in which it was grown.
In your opinion, what’s the most misunderstood aspect of “terroir”?
AM: Many people define terroir as the sum of environmental and geological factors that influence the vines and grapes However, this often overlooks the crucial role of human intervention I believe that human involvement plays a key role in shaping the unique character of a vineyard It’s people who make critical decisions such as which grape varieties to plant, how to orient the rows, the choice of trellising, whether to till or mow, irrigation practices, harvest timing, and methods, and many other essential factors that influence the wine’s personality
How do you express terroir in your wines?
AM: Capturing the terroir or “sense of place” of a vineyard requires conscious farming practices, precise harvest timing, meticulous and thoughtful fermentation strategies, and aging techniques One must be intentional at each step –maintaining vineyard balance, harvesting at optimal ripeness, ensuring clean, healthy fermentations, and applying fermentation techniques appropriate for the varietal Finally, if aging in oak, using the style and quantity of barrels that will add nuance and complexity while allowing the fruit to shine
What
makes the Oakville AVA so special,
and how does it challenge or inspire
you?
AM: While we understand many conditions within a vineyard affect terroir, we often don’t understand just how they affect the wines We don’t know all the conditions that affect our wines, so it goes with the Oakville AVA I understand that the deep, rocky soils on the east side of the PlumpJack Estate add stress to our vines and give us darker fruit flavors with more tannin and concentration, while the loamy soils on the west side grow more vigorous vines that have a redder fruit expression with more elegance and brightness.
There is something special about the renowned Oakville estate that gives our Cabernet Sauvignon its distinctively velvety, fine, supple, yet firm tannins While I can't pinpoint exactly what it is in these vineyards that impart this quality, it’s a characteristic that sets Oakville apart from the neighboring grape-growing regions
What
sets the PlumpJack Reserve Cabernet Sauvignon apart and makes it a standout wine year after year?
AM: The PlumpJack Reserve Cabernet Sauvignon is made with grapes grown in the rocky soils on the east side of the PlumpJack Estate These vines suffer from some stress due to the rocky nature of these soils This stress leads to less shoot growth, smaller clusters, and fewer and smaller grapes The smaller grapes mean more skins and less juice Since the color, tannin, and some of the flavor is locked in the skins, these smaller grapes make wines with greater structure, concentration, and depth
How
do you choose the blocks and barrels for the PlumpJack Reserve Cabernet Sauvignon?
AM: We have several blocks on the east side of the estate which have some differences in soil structure and composition Planted within these blocks, we have several clones of Cabernet Sauvignon that each have their own personalities Together, these give us wines with a range of characteristics to use to craft our Reserve Cabernet Sauvignon
To blend our Reserve Cabernet, we taste each of these lots blind Then, over the course of several weeks, we taste our favorite lots blended in a zillion combinations and permutations until we find THE blend We may like the K Block Clone 4 for the black fruit and depth it lends to the blend, and a little I Block Clone 169 for the layer of redder fruits it adds to the wine, possibly some Clone 191 from the same block for the savory, earth tones it might add Each vintage is different and the blend is never the same Once we find our favorite blend, we taste each barrel in the selected lots and choose our favorite barrels to use for the Reserve blend.
One of the most important events in the geological history of this property, as it relates to wine, was a massive landslide from the Vaca Mountain range that fanned out as it impacted the valley floor. The heavier debris, such as rock, stayed closest to the mountain, while the lightest debris, such as clay, traveled the furthest. The PlumpJack Estate vineyard happens to rest on the edge of this landslide.
So, we benefit from rocky soils in the east, loamy soils in the center, and loamy clay soils in the west. This diversity of soils results in a diversity of expression of the Cabernet Sauvignon grape. And this diversity in expression allows me to blend a wine of great depth and complexity that is distinct from the wines of our closest neighbors simply because they have a different blend of soil structures. This is the “ sense of place” .

Beef Bourguignon
My favorite meal is New Year’s Eve We have no tradition to hold to, so we can do something a little different
I like to make a dish that will keep a large group cozy and warm against those chilly California nights – Julia Child’s Beef Bourguignon (stove top edition) paired with PlumpJack Estate Cabernet Sauvignon.
ingredients
1 tbsp extra-virgin olive oil
6 oz bacon, roughly chopped
3 lbs beef brisket, trimmed of fat, cut into 2" chunks
1 large carrot, sliced 1/2" thick
1 large white onion, diced
6 cloves garlic, minced & divided
1 pinch coarse salt & freshly ground pepper
2 tbsps flour
12 small pearl onion, optional
instructions
3 cups red wine, like Merlot, Pinot Noir or Chianti
2 cups beef stock
2 tbsps tomato paste
1 beef bullion cube, crushed
1 tsp fresh thyme, finely chopped
2 tbsps fresh parsley, finely chopped & divided
2 bay leaves
1 lb fresh small white or brown mushrooms, quartered
2 tbsps butter
1. Pat dry beef with paper towel; sear in batches in the hot oil/bacon fat until browned on all sides. Remove to the dish with the bacon.
In a large dutch oven or heavy based pot, sauté the bacon over medium heat in 1 tablespoon of oil for about 3 minutes, until crisp and browned. Transfer with a slotted spoon to a large dish and set aside.
2. In the remaining oil/bacon fat, sauté the carrots and diced onions until softened, (about 3 minutes), then add 4 cloves minced garlic and cook for 1 minute. Drain excess fat and return the bacon and beef back into the pot; season with 1/2 teaspoon coarse salt and 1/4 teaspoon ground pepper. Sprinkle with flour, toss well and cook for 4-5 minutes to brown.
3. Add the pearl onions, wine and enough stock so that the meat is barely covered. Then add the tomato paste, bullion and herbs. Cover and bring to a boil, then reduce heat to low and simmer for 1 1/2 to 2 hours, stirring occasionally, until the meat is falling apart.
4. In the last 5 minutes of cooking time, prepare your mushrooms: Heat the butter in a medium-sized skillet/pan over heat. When the foam subsides, add the remaining 2 cloves garlic and cook until fragrant (about 30 seconds), then add in the mushrooms. Cook for about 5 minutes, while shaking the pan occasionally to coat with the butter. Season with salt and pepper, if desired.
5. Add browned mushrooms to the pot, let simmer for an additional 3 to 5 minutes, stirring occasionally, to combine. 6. Garnish with parsley and serve with mashed potatoes, rice or noodles. 7.

What does “sense of place” mean to you?
Danielle Cyrot (DC): A strong sense of place means that the wine reflects its origin, allowing consumers to experience the distinctiveness of that environment in each bottle For example, the sun exposure, elevation, mineral content of the soil, and the microclimate of a vineyard all play crucial roles in shaping the grapes grown there By embracing and expressing this sense of place, I aim to create wines that tell a story of their origins, celebrating the unique personality of each vintage and vineyard site
In your opinion, what’s the most misunderstood aspect of “terroir”?
DC: Some might think that terroir refers to the soils/land where the vines are growing But terroir, to me, means the soil, the microclimate, the elevation, the row direction, and everything that the vine experiences while growing in one specific place
What characteristics of the CADE Estate vineyard are reflected in your wines?
DC: I find Howell Mountain Cabernet Sauvignon to be very red fruit-driven and I mean all the red fruits When I smell and taste our Estate Cabernet Sauvignon, I get cherry, raspberry, cranberry, apple, strawberry, red currant, pomegranate, blood orange, plum, red pear, fig, watermelon well you get the idea
Can you recall the moment you realized how special this vineyard is?
DC: My first harvest at CADE in 2012 was when I realized I was working with some truly amazing fruit Harvest was on the later side, so I spent a lot of time walking the vineyard rows, not only to get to know its topography but also to determine the perfect time to pick the grapes When you taste a perfectly ripe grape, then make amazing wine out of it well, that is something special
How does the expression of terroir differ between your Napa Valley and Howell Mountain Cabernet Sauvignons?
DC: Our Napa Valley Cabernet Sauvignon is sourced from valley floor vineyards, whereas our Estate and Reserve Cabernet Sauvignons are from our 102 planted acres of vineyard on Howell Mountain So that alone, where the grapes are grown valley floor versus Howell Mountain is reflected in what you smell and taste in the wine and most definitely in the tannin structure
My philosophy as a winemaker is if the vineyard’s grapes taste like cherry, then make a great cherry pie. You will never be able to make those grapes taste like a lemon meringue pie. Take what you have and elevate it. Make sure the grapes reach their full potential.

CADE 13th
The Howell Mountain AVA is the oldest sub-appellation in Napa Valley, established in 1983. It is an AVA rich in history. The first grapes were planted on Howell Mountain in 1877 by Jean Adolph Brun and Jean V. Chaix. The two winemakers planted 20 acres of grapes from seven different varieties sourced from the Medoc in Bordeaux. By 1884, there were at least 30 growers and over 500 acres planted on Howell Mountain.
In 1886, Brun and Chaix built a beautiful, gravity-fed stone winery, which the PlumpJack Collection of Wineries purchased in 2016. It was the 13th bonded winery in California, hence CADE 13th.
Can you share a fun fact about CADE 13th's history?
DC: Jean Brun and Jean Chaix planted vineyards in 1877 at what is now CADE 13th They had started a winery in Oakville (now Napa Wine Company and the ninth bonded winery) adjacent to the railroad tracks and, therefore, San Francisco, a hub of wine sales The grapes from the vineyard were transported by horse and carriage from Howell Mountain, down a very steep winding road, to Oakville They developed an ingenious way to signal that the wagons were on their way down the mountain with grapes
You can see CADE 13th from Oakville since it is 1,730 feet in elevation at its highest point A semaphore, or “Signal,” was raised, which can be viewed with the naked eye Both CADE Estate and CADE 13th are on what is now called Sentinel Hill, or Lookout/Signal Hill
What excites you about the ture of this property?
C: We are replanting several blocks, allowing me bring new clones of Cabernet Sauvignon into the x This is a once-in-a-lifetime kind of opportunity a winemaker to choose what rootstock/clone mbination to use in a vineyard
grapevine can live for 50 to 100 years or more th proper care, but they typically reach the end their productive lifespan around 25 to 30 years y choices now will have long-lasting effects, hich I find fascinating and a bit scary, too!
WHAT SETS CADE RESERVE AND 13TH VINEYARD RESERVE APART FROM YOUR OTHER WINES?
The Reserve wines are a selection of the best of the best of the vintage. I take my favorite picks, favorite blocks, and favorite barrels and blend them together into what I think is the best wine we can make from that year. They tend to have more blue and black fruit flavors and more intensity, verve, and persistence on the palate something unique and different that we don’t see in all of our picks on Howell Mountain.

Pumpkin-Cheesecake Pie with Gingersnap Crust
Spicy gingersnaps stand in for the more traditional graham crackers in the crust of this Pumpkin-Cheesecake Pie, and make an excellent foil for the rich pumpkin-cream cheese filling. A border of meringue piped into leaves and bruleed with a kitchen torch takes the pie to the next level.

¾ c. sugar
¾ c. canned pumpkin puree (not pie filling)
1 large whole egg, plus 1 large egg yolk
1 tbsp plus 1 ½ tsp all-purpose flour
½ tsp coarse salt
¾ tsp ground cinnamon
½ tsp ground ginger

6 oz gingersnaps (about 23), broken into small pieces
3 tbsp sugar
4 tbsp unsalted butter, melted
meringue
¾ cup sugar
3 large egg whites, room temperature

Crust: Preheat oven to 350 degrees Pulse gingersnaps and sugar in a food processor until fine crumbs form Add butter and pulse to combine Press mixture evenly into bottom and up sides of a 9-inch pie
dish Freeze until firm, about 30 minutes

Bake crust until golden in spots, about 15 minutes With the bottom of a measuring cup, gently flatten bottom and sides of crust Let cool completely on a wire rack. Reduce oven temperature to 325 degrees

Filling: Pulse cream cheese in food processor until smooth. Add sugar and pumpkin and process until smooth, occasionally scraping down sides of bowl Add egg and yolk, flour, salt, cinnamon, ginger, and cloves; process until incorporated

Pour filling into cooled shell and bake until custard is just set, about 33 minutes Let cool completely on a wire rack, then refrigerate until cold and firm, at least 4 hours and up to overnight
Meringue: Combine sugar and egg whites in a heatproof mixing bowl. Set bowl over (not in) a pan of simmering water, whisking until sugar dissolves and whites are warm. Remove from heat. Beat on high speed until thick, glossy stiff peaks form, about 6 minutes 5

Transfer meringue to a pastry bag fitted with a large leaf tip (such as Ateco #115). Pipe leaves around border of chilled pie, releasing pressure to create tips Holding a small kitchen torch at a 90-degree angle, 3 inches from surface of meringue, move flame back and forth over meringue until it starts to brown. (Or broil 6 to 8 inches from heat source, about 1 minute ) Serve immediately

What does “sense of place” mean to you?
Andrew Haugen (AH): Sense of place describes how a region or single vineyard carries an aromatic/flavor/textural expression unique to that location that generally presents across all vintages Nature’s fingerprint
In your opinion, what’s the most misunderstood aspect of “terroir”?
AH: Like most things winemaking, there are many opinions on exactly what “terroir” is! Surprise, Cabernet Sauvignon isn’t native to Napa, and it sure didn’t root itself in perfectly linear N/S oriented 4’X8’ rows In my opinion, terroir goes beyond geomorphology and climate and treads well into tradition and human influence
What subtle characteristics of the Odette Estate vineyard are captured in your wines?
AH: The invisible (unless you read the vineyard end post signs!) mix of 40-year-old vines of historic origin and new, genetically diverse plantings The creation of a complex wine begins at the root!

AH: I’ve come to find that the topic of aging wine is entirely subjective Certainly, the Odette Reserve Cabernet Sauvignon, in any vintage, has the greatest potential for long-term aging
The volume of tannin, which acts as a preservative, paired with balanced acidity, lends the molecular constituents necessary to evolve for 20+ years When blending the Reserve, I’m looking for precision in flavor and aroma Like an unblemished vinyl, I think those clear notes are built to last
How do you decide which blocks and barrels are destined for the Odette Reserve Cabernet Sauvignon?
AH: There are nooks and crannies of the Odette Estate vineyard that always overdeliver We carve these out in small picks, ferment them separately, and then pair with France’s finest oak barrels After about a year, we evaluate every individual barrel and, over the course of a few weeks, develop a blend that we feel is the greatest expression of the vintage It’s not enough to just whack together our favorite barrels There must be harmony We’re trying to craft something greater than the sum of its parts

Oso Vineyard get to know
Acquired by the PlumpJack Collection of Wineries in 2022, Oso Vineyard provides the backbone of Adaptation Cabernet Sauvignon. It delivers an abundance of rich fruit flavor, color and tannin, providing the framework and structure to carry this wine.
What’s the story behind the name “Oso”?
AH: The name "Oso" isn’t based on a fun story from the far-flung past Rather, it is the Spanish word for "bear," referring to the black bears that climb trees and scale the fence to eat the ripe grapes from our 36-year-old Cabernet Sauvignon grapevines They are like my consultants, letting me know when the fruit is ready to be picked
What’s the history of this site?
AH: Oso Vineyard was originally developed by Michael Mondavi. There are some very cool old plantings at Oso that came from cuttings taken from other Mondavi family vineyards. A notable darling is the gnarly, head-trained I Block Sauvignon Blanc, which traces its origins to the famous To Kalon vineyard.
Can you recall the moment you realized how unique it is?
AH: I have about a dozen pictures of Block L from my first visit in 2019 The old vines look almost tortured, clinging desperately to the steep terraces, laden with perfect clusters of Cabernet Sauvignon
How do you express the vineyard’s terroir in your wines?
AH: Letting Oso shine is all about timing timing irrigation to balance the arid climate of northeast Napa Valley and timing when to pick the fruit A late-season heat wave can change the harvest timetable by weeks in the blink of an eye
What excites you about the future of Adaptation and Oso Vineyard?
AH: We’re all in on developing Oso to its maximum potential This means fine tuning our water management, being judicious with planting decisions, and devoting lots of time to walking each block during the entire growing season There is so much diversity that we’re taking advantage of and expanding on As of 2023, the Adaptation Petite Sirah is a true Estate wine It’s our hope to make Oso the definitive home of Adaptation in the near future
