Introduction
Inspiration As a Taiwanese, I always enjoy delicious food, and I like cooking in my spare time. Taiwan is a famous place where you can have delicious food. Taiwanese night markets is a place which provides various foods. You can try the traditional Taiwanese food or food from different countries. I choose Taiwanese night markets to be my thesis topic because I have a passion for this project and it is a strong connection to me.

Night market s are street market s that operate at night where people can go for a leisurely stroll, to shop, and eat. Most of them are t ypically open-air market s and have spread throughout Asia, but recently they have appeared in America, Europe, and other countries.

History of Night Market
Night markets are inherited and pass on historical culture. The first-night market was dated back to the Tang Dynasty. During the Tang Dynasty, their urban planning separated the commercial and living areas, and markets had open hours. People couldn’t go outside at night. In the beginning, the Tang Dynasty government put strict sanctions on night markets, but economic expansion led to less state regulation and restrictions being lifted on night markets. During the Song Dynasty, Night Markets played a central role in Chinese nightlife. The city didn’t separate the living areas and commercial areas. These markets were found in corners of the major cities, and some stayed open for twenty-four hours. The Song Dynasty still influences people’s lives today in Taiwan.

Mission Statement Taiwan continues to be a changing country, but it attempts and aspires to be an advanced country. Night markets are one interesting example of this unique development clash. Taiwanese night markets represent a valuable part of its historical culture, reflect culinary artistry, and are a mainstay of economic stability for many. However, night markets also create multiple issues including environmental problems, transportation congestion, and development conflicts. As Taiwan grows and develops, the new challenges are to keep its culture distinct, create more benefits, and reduce problems.

Taiwanese Night Market
In Taiwan, night market s have changed from small local gatherings to noisy street s lined with vendors. They are street market s that operate in urban or suburban areas. Only a few night market s use one par ticular place. Most of them occupy sidewalks adjacent to street s or entire street s that are normally thoroughfares by day, and some vendors open in smaller side street s or lanes featuring retrac table roofs. Night market s operate daily or a few days a week in Taiwan. There is a mix ture of individual stalls hawking clothing, consumer goods, street foods, and specialt y drinks. The atmosphere is usually crowded and noisy with hawkers shouting and music playing over loudspeakers.

What’s different in Taiwanese Night Market
Taiwan has many arcade buildings because the weather is too hot and ten rainy and arcades provide a shelter for people in the harsh weather. The arcade building expanded from the Japanese colonial period which is a unique cit yscape in Taiwan. In general, people have shops and restaurant s in the arcade, so most of the Taiwanese night market s will open the area with an arcade. The most impressive things in Taiwanese night market s are street foods; there are various and delicious.

In Taiwan, Vendors use food car t s and simple tables. Ever y vendor has a dif ferent signboard. They want their signboards to be unique and shining to at trac t visitors, but they also look messy. Vendors use food trucks and the same booths in the U.S. A . Although, the food trucks have a dif ferent appearance, it makes the area look clean and tidy, not like in Taiwan where the vendors’ equipment occupies the road space, which makes market s feel messy and cramped. Also, people use food trucks to break down their equipment in the U.S., which is more ef ficient than Taiwanese vendors.

In the U.S, most of the food event s use open and free space, and it is easy to plan in the area, so it looks even cleaner and tidy. In Taiwan, most vendors occupy sidewalks adjacent to street s or entire street s, so it ’s hard to control and organize.

Most Taiwanese night market s are open on the street, and it is hard to find a place to enjoy their delicious food. People stroll and eat at the same time. Even though vendors provide seat s for people, it doesn’t give you time to enjoy dining because there will be someone waiting for your seat s.

Possible Direction
After deciding to redesign new food cart for Taiwanese night market, I started exploring my ideation. My first ideation has two parts. The first part focused on food cart’s function. How to improve vendors’ work, save their time, energy, and make cleaning and storage very easy and straightforward. The other part is how to make a food cart looks different or be an installation, so vendors don’t need to hide the food cart or illegally occupy public space. Also, customer will have a new experience in the night market. The city will have a new tourist attraction.

In my obser vation, vendors put their car t in the alley or the street. Some vendors rent a neighbor ’s parking lot or lobby to store their equipment. If food car t s had bet ter design and smoother assembly, vendors would save time, money, and energy. The product call loop because the primary function of this product is rotating each part such as rotating table and rotating stove. And I wish this product can be cyclic utilization. It can use for different vendors so when user don’t need this food cart anymore, they can sell it to other vendors. The concept of logo “L” comes from the food cart open the shape looks like “ L.” Two “O” represents my most important function part two bearing. One used in rotating table; another one used on turning stove. “P” represents people symbolize it has a secure connection with users.

Function Explanation
- The LED light is adjustable. The vendor can change different angle with need. - The groove can hold the container when the overhead is going down. - This track can let the user quickly to the right position. - The vendor can put their equipment on the top when they move the food cart. - The rotating table provides more seats to the customers. - The overhead can go down to minimize the food cart volume. HSS is available in circular, square, or rectangular sections, although other shapes are available, such as elliptical or oval. Shape preference for food carts Most manufacturers will choose rectangular, square and circular HSS used in food cart building. They also exhibit excellent resistance to torsion. Rectangular sections are commonly used in welded steel frames where members experience loading in multiple directions. Square and circular HSS have very efficient shapes for multiple-axis loading as they have a uniform geometry and thus showcase uniform strength characteristics.
