Introduction

Inspiration As a Taiwanese, I always enjoy delicious food, and I like cooking in my spare time. Taiwan is a famous place where you can have delicious food. Taiwanese night markets is a place which provides various foods. You can try the traditional Taiwanese food or food from different countries. I choose Taiwanese night markets to be my thesis topic because I have a passion for this project and it is a strong connection to me.

04

What is Night Market

Night market s are street market s that operate at night where people can go for a leisurely stroll, to shop, and eat. Most of them are t ypically open-air market s and have spread throughout Asia, but recently they have appeared in America, Europe, and other countries.

History of Night Market

Night markets are inherited and pass on historical culture. The first-night market was dated back to the Tang Dynasty. During the Tang Dynasty, their urban planning separated the commercial and living areas, and markets had open hours. People couldn’t go outside at night. In the beginning, the Tang Dynasty government put strict sanctions on night markets, but economic expansion led to less state regulation and restrictions being lifted on night markets. During the Song Dynasty, Night Markets played a central role in Chinese nightlife. The city didn’t separate the living areas and commercial areas. These markets were found in corners of the major cities, and some stayed open for twenty-four hours. The Song Dynasty still influences people’s lives today in Taiwan.

07

During the Tang Dynast y, the capital Chang’an only had t wo market s, “the West market” and the “East market.” This cit y planning was easy to manage, and the cit y was orderly and clean.

Mission Statement Taiwan continues to be a changing country, but it attempts and aspires to be an advanced country. Night markets are one interesting example of this unique development clash. Taiwanese night markets represent a valuable part of its historical culture, reflect culinary artistry, and are a mainstay of economic stability for many. However, night markets also create multiple issues including environmental problems, transportation congestion, and development conflicts. As Taiwan grows and develops, the new challenges are to keep its culture distinct, create more benefits, and reduce problems.

Taiwanese Night Market

Taiwanese Night Market

In Taiwan, night market s have changed from small local gatherings to noisy street s lined with vendors. They are street market s that operate in urban or suburban areas. Only a few night market s use one par ticular place. Most of them occupy sidewalks adjacent to street s or entire street s that are normally thoroughfares by day, and some vendors open in smaller side street s or lanes featuring retrac table roofs. Night market s operate daily or a few days a week in Taiwan. There is a mix ture of individual stalls hawking clothing, consumer goods, street foods, and specialt y drinks. The atmosphere is usually crowded and noisy with hawkers shouting and music playing over loudspeakers.

13

What’s different in Taiwanese Night Market

Taiwan has many arcade buildings because the weather is too hot and ten rainy and arcades provide a shelter for people in the harsh weather. The arcade building expanded from the Japanese colonial period which is a unique cit yscape in Taiwan. In general, people have shops and restaurant s in the arcade, so most of the Taiwanese night market s will open the area with an arcade. The most impressive things in Taiwanese night market s are street foods; there are various and delicious.

So there might be an oppor tunit y that makes the night market s more friendly for people over 40.

Boot hs

In Taiwan, Vendors use food car t s and simple tables. Ever y vendor has a dif ferent signboard. They want their signboards to be unique and shining to at trac t visitors, but they also look messy. Vendors use food trucks and the same booths in the U.S. A . Although, the food trucks have a dif ferent appearance, it makes the area look clean and tidy, not like in Taiwan where the vendors’ equipment occupies the road space, which makes market s feel messy and cramped. Also, people use food trucks to break down their equipment in the U.S., which is more ef ficient than Taiwanese vendors.

Environment

In the U.S, most of the food event s use open and free space, and it is easy to plan in the area, so it looks even cleaner and tidy. In Taiwan, most vendors occupy sidewalks adjacent to street s or entire street s, so it ’s hard to control and organize.

Eating Ambiance

Most Taiwanese night market s are open on the street, and it is hard to find a place to enjoy their delicious food. People stroll and eat at the same time. Even though vendors provide seat s for people, it doesn’t give you time to enjoy dining because there will be someone waiting for your seat s.

50

Trash Bins

It is rare to find a trash bin, and most of them don’t have garbage classifications. Even though there are rec ycling bins, no one manages them, so it is still dir t y.

Cuisine

Some street foods need t wo or three dif ferent ways to cuisine. Because cooking ways are complex, vendors need to carr y a lot of equipment which reduces their mobilit y.

51

55

City

Environment is chaotic To save the preparation time, some vendors illegally occupy the arcade or public space. At the same time, the garbage and food residue will at trac t rat s and cockroaches.

Environmental pollution

Summary Night market s are composed of vendors and their food car t s. The food car t is a key point for the night market. It af fec t s the cit y environment, customer experience, and vendors’ requirement s. So I star ted to research the existing food car t in marketing.

56

Problem Statement

Vendor s’ food c ar t s illegally occupied public spaces bec ause food c ar t s are not easily s tored and t ake time to set up and break dow n. It makes the cit y environment chaotic and also makes cus tomer s feel wor r ied about their food s afet y.

Goal

Design a food cart to help vendors store equipment and save perparation time.

58

Possible Direction

After deciding to redesign new food cart for Taiwanese night market, I started exploring my ideation. My first ideation has two parts. The first part focused on food cart’s function. How to improve vendors’ work, save their time, energy, and make cleaning and storage very easy and straightforward. The other part is how to make a food cart looks different or be an installation, so vendors don’t need to hide the food cart or illegally occupy public space. Also, customer will have a new experience in the night market. The city will have a new tourist attraction.

About Function

1. Integrate the chair and table and create a storage space

Inspiration

According to my obser vation, the vendors put their equipment on their food car t to reduce their deliver y times. Some vendors make their food car t inform of a wood to store their stuf f, and need not to deliver their equipment when the night market is open and close.

2. Rising and Lowering Overhead The lif ting roof can minimize the food car t volume let the vendor storage and move their food car t easier.

3. New Cuisine System There are various machines for dif ferent street food, but there is no food car t can that do several street foods. Most of the cuisines need a stove, and the idea for new cuisine system is to change the top plate to make dif ferent street food.

64

4. Easily Control Af ter Inter view and protot ype test. The food car t ’s wheel needs to have t wo rotated table wheels and t wo un-rotatable wheels. When you want to move the food car t, you need to push the car t, but when drivers want to adjust the position in the right place, drivers need to pull the car t. So this design raises flexibilit y of food car t for the operator to control the car t.

5. Rotated Small Table The rotating table can provide more space for vendor working or customer dining.

65

About Installation

In my obser vation, vendors put their car t in the alley or the street. Some vendors rent a neighbor ’s parking lot or lobby to store their equipment. If food car t s had bet ter design and smoother assembly, vendors would save time, money, and energy. Visitors would have a dif ferent experience in the night market, and the environment would be cleaner and more beautiful.

Our government want s to elevate the night market. They want to raise the night market ’s image, so they have built a building for the night market s, but there are still problems like air pollution, hygiene and losing the night market ambiance.

70

Food Cart Garage

The tourist night market managed by the government. This place takes money and space. They spend money on the building and maintenance fee. If there is a mechanical garage for the food car t s, the environment would be cleaner, vendors would save time and money, and the government could reduce the budget.

71

Food Cart Trucks

The big trucks for a food car t. Deliver food car t s to the night market when night market open and close. Some area has mobile night market and vendor need to move their food car t to dif ferent places each day. This big trucks save their time and easily control the night market.

I disassembled food cart to be three parts as top, center, and base.

Each food cart has a different size, function, and feature. The manufacturer will follow customers need to design each food cart. To deeply understand the food cart and then help me with my design my project. I started to find the basic shape and classify the details.

Summary In my Inter view, vendors care more about the food car t mobilit y. They spent the time to deliver their stuf f and assemble their equipment, so the challenge is how to reduce their preparation time and increase work ef ficienc y. On the other hand, the job of night market needs a lot of energy. Most of the vendors are male, and it is an oppor tunit y to help the elder and save the young women of their energy. The preparation process is quick and straight for ward. Don’t use many times to transfer equipment and raise the food car t controllabilit y.

1. Grill 2. Saute 3. Deep Fry / Boil

Different street foods requires different cooking methods. The adjustable stove can serve various street foods. Vendors only need to change stove height and place different top.

124

The rotating table and stove adjust for different spaces and arrangements.

125

Summary

If the axis is in the middle, it will occupy more space than axis on two sides. To give more room for working and dining space, move the pole to the side.

126

03

Scale Model

Summary If the rotating table axis is to the side, it will be too large when the food cart is set up. If it is too wide, it might block the street and road. It will be good to move the pivot to the middle.

127

After making the scale model 3 I made a fullsize food cart to understand the functioning system of rotation and the size of the food cart.

Summary

After finishing the full-size mock-up, the size was unexpected. It was too big and too high. So, I have listed what I need to improve. - Decrease the size of a food cart. - The table needs a better solution to make it stable when it is rotated out. - How to raise and lower overhead? - Think about the function to make the stove stable when it is rotated out. - Design the aesthetic of the food cart.

Scale Model

Summary Redesign and decrease the size and think about the function of a rotating table. They have two different functions. The first one extended the table length with two legs and the second one use a triangular shape to support the table.

Scale Model

Summary It will be good to decide on the triangular table functions because it won’t extend the food cart length and start to make a second full-size mock-up.

The product call loop because the primary function of this product is rotating each part such as rotating table and rotating stove. And I wish this product can be cyclic utilization. It can use for different vendors so when user don’t need this food cart anymore, they can sell it to other vendors. The concept of logo “L” comes from the food cart open the shape looks like “ L.” Two “O” represents my most important function part two bearing. One used in rotating table; another one used on turning stove. “P” represents people symbolize it has a secure connection with users.

Function Explanation

- The LED light is adjustable. The vendor can change different angle with need. - The groove can hold the container when the overhead is going down. - This track can let the user quickly to the right position. - The vendor can put their equipment on the top when they move the food cart. - The rotating table provides more seats to the customers. - The overhead can go down to minimize the food cart volume. Allows easy storage. - The mesh case reduces the weight with well circulating, which help the user to pull out the stove. - The stove is adjustable. The vendor can change the different height for different cuisine so that this food cart can serve different cuisine.

156

This part can hold the handle when vendor pulls the food cart. Rotates it to 90 degrees and then put down the handle be a rotating table’s leg.

Materials

Stainless Steel Most manufactory will choice 304s.s, or 316 s.s be a material for the food cart. 316 s.s has better corrosion resistance than 304 s.s but the price also expensive than 304 s.s. Manufactory will use TIG arc welding for Stainless steel welding in carts .

304 s.s.

316 s.s.

304 stainless steel: 18 - 20% chromium and 8 – 10.5% nickel

316 stainless steel: 16% chromium, 8 % nickel and 2% molybdenum

304 Stainless steel – is one of the most desired and widely used grades

316 s.s is durable, easy-to-fabricate, clean, weld and finish. It is considerably

of S.S by the market, because of its durability and finish quality. It is

316 stainless steel is commonly used in many industrial applications involving processing chemicals, as well as high-saline environments such as coastal regions and outdoor areas where de-icing salts are common. Due to its non-reactive qualities, 316 stainless steel is also used in the manufacture of medical surgical instruments.

SUPPORT FRAME

Metal tubes are usually use in structural frame construction of a cart. Metal offers rigidity, strength, and ease for manufacturing. Hollow structural section (HSS) is a type of metal profile with tubular cross section. HSS is available in circular, square, or rectangular sections, although other shapes are available, such as elliptical or oval. Shape preference for food carts Most manufacturers will choose rectangular, square and circular HSS used in food cart building. They also exhibit excellent resistance to torsion. Rectangular sections are commonly used in welded steel frames where members experience loading in multiple directions. Square and circular HSS have very efficient shapes for multiple-axis loading as they have a uniform geometry and thus showcase uniform strength characteristics. This makes them suitable choices ices for columns. Commonly, HSS material will be Stainless steel and aluminum because they have well corrosion resistant and ease for welding. Thickness: 18 gauge thicknesses which are commonly used by cart manufacturers

F.R.P (Fibre-Reinforced Plastic)

Fibre-Reinforced Plastic (FRP), also called fibre-reinforced polymer, or fibrereinforced plastic FRP is a composite material made of a polymer matrix reinforced with fibers. These fibers are usually glass, carbon, aramid, or basalt. The polymer is made of epoxy, polyester thermosetting plastic, and phenol formaldehyde resins. Fibre-reinforced plastics are suitable for any design program that demands weight savings, precision engineering, finite tolerances and for simplification of parts in both production and operation. An object is cheaper, faster and easier to manufacture in FRP polymer than metals like steel or cast aluminum and maintains similar and sometimes better tolerances and material strengths. Applications The applications of FRP applied in the aerospace, automotive, marine and construction industries. FRP is also widely used material in building golf carts, food carts, and garden carts.

Knee Brace: Speed Skating x Braun

Speed Skating Speed skating is a competitive game. The competitor’s race each other traveling a certain distance on skates. When the players turn the corner, they need to cross their legs so the knee brace needs to be thin and can’t block their legs. Design Directions L ightweight Easier to wear and take off Reduces the friction when users turn a corner

Braun Braun is a German consumer products company. “Strength of Pure” is the basis and standard of Braun's design language. Design Directions Geometrical Simple Symmetrical Functional

Knee Brace Sketches

Braun’s design language is simple and functional. In their products were “Form follows function,” so the first step was to design the knee brace frame to follow the leg shape and to use simple curves or lines to design it.

I found out that their products appear symmetrical and geometric. I used current products’ features to design the knee brace frame.
