dear friends Welcome to another issue of Accents, our in-house magazine that was conceived to help you make the most of your Kanika holiday. By providing information about our hotels, as well as local culture and cuisine, our aim is to add memorable ‘accents’ to your stay in Cyprus. As a leading family of hotels in Cyprus, Kanika has decades of experience in the hospitality industry and the tourism sector as a whole. Of all the lessons we’ve learned and applied over the years, one is particularly important, and might even sound like a contradiction: to maintain a good reputation, you have to embrace systematic change. That is why we invest in regular renovation works and expansions that will offer our repeat guests welcome and wonderful surprises every time they return to their favourite Kanika destination. As you will read in ‘Setting New Standards’ (p. 6), Alexander the Great has not merely been renovated, but remodelled altogether. All-new guest rooms, public areas and facilities prove, now more than ever before, that despite our superior 4-star classification, our guests see and consider this hotel among the top establishments in Cyprus. On the other hand, the popularity and market response to our recently re-created Olympic Lagoon Resort has surpassed all projections, which is why we are considering opportunities to repeat the Olympic ‘model’ in our plans for the future. What we have also observed is the growing appeal of all-inclusive holidays – but also the common misperceptions related to the term. Our hotels focus on delivering complete packages that allow our guests to enjoy hospitality with minimum restraints and budgetary considerations. However, as you will certainly see for yourself, Kanika’s packages are in a class of their own, giving every guest a series of privileges and gastronomic variety that by far exceed the common perception of all-inclusive terms. Needless to say, today’s travellers are very different from the holidaymakers of our early years. The internet – from websites to portals and social media – gives holiday planners easy and instant access to unlimited information. Even from a distance, you can now read ‘official’ information and compare it with voluntary and independent reviews, comments

and discussions. The combination of all sources will ultimately determine the decisions that individual travellers make, depending on their priorities and preferences. While information regarding specific hotels is readily available, access to more general developments in Cyprus is limited and therefore often misleading. Despite the challenges of the current economy, a number of infrastructure projects are underway and attracting investor interest. The coast, especially in Limassol, is being upgraded with amazing results. In other locations, licenses are being granted for new golf courses, theme parks and casino. From urban parks to historical sites, the overall image of our island is being polished, with visible results. Setting new standards at Alexander the Great Beach Hotel

Kanika Hotels’ flagship, Alexander the Great Beach Hotel in Pafos, first opened its doors in 1987. Periodical upgrades recently culminated in a fundamental review and full-scale renovation of the hotel – with vibrant results that look and feel way beyond expectations.

I

t’s no secret that reaching the top is difficult, but staying there is the real challenge. Alexander the Great Beach Hotel, known among the public simply as ‘the Alexander’, was conceived as a superior 4-star hotel – and managed to maintain that reputation since 1987. But now, since its recent, full-scale renovation over the winter of 2012-13, it reopened in March 2013 with an all-new look and spirit. One that easily competes with its 5-star relatives.

What’s the buzz? In line with Kanika Hotels’ corporate policy, the cornerstones of Kanika hospitality have been redefined. Business Development Manager Spyros Michaelides explains: “In addition to high standard accommodation, the Kanika experience promises – and delivers – a holiday bursting with the pleasures of gastronomy, recreational activities and live entertainment.” Best of all, the Alexander is an ‘equal opportunity’ holiday destination, where no age group is neglected.

Room features, beyond the fact sheet When you’re ready to book your accommodation, the website or brochure will describe the options: superior room for a couple or a family, with inland or sea view; the adults-only garden cabana with private pool; or the stunning presidential suite. The amenities are also listed, but the real beauty lies in the details that no fact sheet can adequately express. The first thing you will notice is the double-bed reminiscent of Victorian proportions – plus Kanika’s choice of pillows. Simply touch them, and any anxiety you may have had about the first night away from home will vanish in an instant. Then, one by one, the details catch your eye. The room floor combines plush carpets for a soft and quiet step, surrounded by marble for a hint of elegance. The Ottoman invites you to relax and put up your feet, while you snack on the fruits on your coffee table. That bathroom alone proves that Kanika’s interior designers have good taste, but also put themselves in your shoes: the blue nightlight is a perfect solution for many, while the rain shower, the built-in vanity unit, cosmetic mirror, bathrobes and slippers all make personal hygiene enjoyable. And you won’t have to panic if you’ve forgotten your make-up pads or cotton buds at home. Sooner or later you will be drawn to the TV. And although you will have

been ‘warned’ about the Smartup TV system, you won’t realize how convenient – not to mention how much fun – it can be, till the remote control/keyboard is actually in your hands. TV, sound system and computer all in one, this is the kind of technology that the avid TV viewer and internet user will react to like a child to chocolate. Dozens of free channels, movies on demand, information pages, and of course the whole internet are yours to enjoy. Plug in your smartphone and you can play your favourite stored music.

The Food+ Factor Guests who booked accommodation on B&B terms will reconsider; because the Alexander’s HB+ and FB+ offer is simply too delicious to resist. Contrary to anything you may have heard about half-board and full-board options, the Alexander variety does not confine you to a single restaurant. In fact, HB+ entitles you not only to a 14-day rotation of buffet meals in Roxane’s restaurant, but also to three speciality dinners per week of stay: one in the intimate Garibaldi Italian Restaurant, one al fresco at KIKU Japanese Dining with authentic live cooking, and one in the Greek Taverna, the must-have of any holiday in Cyprus. For a full 3-meals-a-day, FB+ adds a lunch buffet to the mix, while breakfast is included for everyone. Indeed, breakfast is an experience in itself, served in the extended indoor-outdoor Café Royale that is never overcrowded. The variety of live cooking and buffet stations will seriously challenge weight watchers. That said, health conscious guests will find no shortage of fresh fruits, nuts and all the favourite local produce. This is certainly one area of the hotel that bridges the generation – and taste – gap.

The value of the Alexander’s gastronomic formula is beyond dispute, both in monetary terms, as well as in the pure pleasure of fine dining. Every restaurant is completely different. Operations Manager Yiannis Mavrokordatos confirms: “Garibaldi’s Italian cuisine has been a winner right from the start. But now our guests are absolutely delighted with the way teppanyaki and sushi are served at KIKU, and the full meze in the Taverna.” Repeat guests will also notice several changes at the Alexander Bar. First and foremost: the Wine Library. This premium version of the hotel’s wine list includes 25 exclusive Cyprus, French and Italian wines. The area itself has evolved into a multifunctional venue, with an entertainment stage at the far end for indoor shows during the cooler months. In the TV/computer room adjacent to the bar, a large screen TV is perfect for broadcasting special sports events. On other occasions, this area can be reserved for private functions.

Infinite Poolside Fun The highlight of the Alexander that was redesigned and reconstructed from scratch is the pool area – actually, several pool areas – where every guest can enjoy bathing and relaxation in and around inviting pools for every age and in any weather. Welcoming everyone is the main Infinity pool, with a jacuzzi pool and individual whirlpools on one end, waterfalls and a swim-up bar at the other. By day, it’s the perfect place to cool off and chill out; by night it is a beautifully illuminated, crystal clear gem. If you prefer your poolside refreshments, cocktails and snacks on dry land, the pool bar is perfectly aligned with a direct view of the Pafos harbour.


At the edge of the premises you will discover the garden cabanas facing the Serenity pool. Reserved for adults, the Serenity pool is a water mosaic of rain shower pool, individual jacuzzi pools and water jets. In the center of it all is a temperature-controlled plunge pool that maintains its crisp coolness even on the hottest of days. Just like the adults, toddlers have their own bathing territory: a paddling pool with a small rain shower for splashing fun. The indoor pool completes the collection. Heated in winter and flooded with daylight it makes swimming a form of exercise you can enjoy all year round. Yiannis is happy to confirm that “Every guest is assured of a sunbed, either on the generous pool deck or on the vast lawns along the beach. And with our sunbed allocation system, guests choose their preferred sunbeds – according to availability – as soon as they check in. These spots are then reserved for them for the duration of their stay.”

From Wellbeing to Entertainment Kanika’s emphasis on recreation and entertainment is revealed in a set of Kanika branded facilities that are available in all Kanika hotels. Particularly popular is the Serenity Spa. Offering face and body treatments for men and women, Serenity is open all year round. (see article on p. 17)

Entertainment for all ages is centered around all-new facilities, mainly the Havana Venue. This outdoor stage with serviced terrace area near the Infinity pool comes alive every evening with exciting music, dance and cabaret shows that are tailored to the audience.

Within moments, the professional in-house entertainment team builds a rapport with the hotel guests, so everyone participates in the fun. Daytime activities and entertainment for kids are organized by the ‘Little Monsters’ club, created especially for younger children by adults who clearly understand them. Lucy, the NVQ qualified supervisor, points out: “We follow strict safety procedures to ensure that the Little Monsters is a paradise for children and a blessing for their parents.” (see article on p. 29)

Alexander Weddings Last but not least, the Alexander offers couples planning a wedding the ultimate proposal: a seafront celebration that is surrounded by all the romance that Cyprus, the island of love, can deliver. Although several venues are available, the Unity Terrace overlooking the sea ranks as the perfect location. Indeed, the complete concept of ‘Kanika Weddings’ recognizes the tender nature of this special day. (see article on p. 13)

Clearly, the ‘new’ Alexander reflects an understanding of both the general trends in the travel market, as well as the individual wishes of guests with high expectations. But the real proof can be found among the guests. One couple says: “We booked a 5-week holiday, and wish we could stay even longer! We will definitely be coming back.” Another guest has already visited 65 times since the Alexander opened in 1987. And now, more than ever before, the Alexander is definitely a great beach hotel.

The Young Ones For families with 2 to 12-year-old children, a new and exciting kids club is open in a separate and secure area of the Hotel. It features extensive indoor facilities that are designed to invite our young guests into a fantasy land of entertainment. Experienced, well trained, and family-focused supervisors offer your youngsters an all-day programme of indoor and outdoor activities that are tailored to the skills and preferences of different age groups, supported by the level of supervision required to keep everyone happy and safe. The children love what they see as (albeit supervised) freedom away from theie parents – and their parents get the chance to relax. Now that has to be a ‘win-win’ situation.

RECENT Awards Alexander the Great received the Trip Advisor Certificate of Excellence 2012 and 2013, and its Travellers’ Choice Award in 2013. Gratifying as those Awards are – and of course we feel proud when we read the positive reviews, but spurred on to greater things on the few occasions when missed opportunities are pointed out. The easternmost of all Kanika hotels, the all-inclusive Olympic Lagoon Resort in Agia Napa caters for up to three weddings per day, five days a week, between April and October. The wedding department of the hotel has three co-ordinators, headed up by Sally Payne of the UK.

Perfect Weddings “We want to exceed the expectations and needs of every individual bride, every time,” Sally says, smiling. Her office wall is covered with cards that read “Thank you for such a perfect wedding!” or similar, so it’s fairly evident she is accomplishing her goal. But Sally is not alone. There is an entire team comprising the wait staff, chefs, and her own colleagues, who work behind-the-scenes to ensure everything runs smoothly. In 2014 a specialist patissier will join the team to make wedding cakes in-house, to allow for a greater degree of customisation.

Winning Combination The magical Olympian Gardens - a romantic sunken garden complete with charming cave, small lakes, and ornate waterfalls - and The Aphrodite, a gazebo nestled amongst tropical flora and aromatic blossoms, are stunning venue options. There are also two adults only options in the Fisherman’s Village and Olympic Bay for an added element of privacy.

The all-inclusive beachfront Elias Beach Hotel in Limassol makes an ideal choice if you wish to explore the island, and has a policy of maximum one wedding per day. Wedding couples have the delightful option of holding their ceremony, cocktail party and/or banquet on the magical private pier. You can even order a fireworks display for a more memorable night!

Versatility in all Seasons Particularly appealing is the sheer size of the hotel with an array of both indoor and outdoor venues to choose from. In addition to the pier, there are expansive terraces, cosy bars, two ballrooms, and for those trying to stick to a budget, even the possibility of cordoning off a section of the main restaurant to have a seated dinner without the additional cost of a banquet. There is even a small chapel, which even if not used, is particularly endearing for wedding photos. Operating all-year round, means that budget-conscious couples can take advantage of low rates in the off-season for a “winter sun” wedding.

Romance Viki Koufari, the civil wedding co-ordinator, explains the little things they try to do to make every wedding memorable. “For the complimentary candlelit dinner, we put couples up here,” she gestures towards a small plateau tucked between the main restaurant and the pool, “which gives them a candlelit dinner by themselves so is special and romantic.”

Mioara believes that everyone needs a spa treatment every now and again, not just for the body, but for the soul as well. “We treat everyone as a VIP,” she says in a way that makes it impossible not to like her immediately. At the Olympic Lagoon Resort in Agia Napa, soft-spoken Spa Manager Beth Hughes expresses it in a different way: “After a treatment, we want our guests to feel ‘that was a great experience’, not just a great massage.” Rebecca Dawson is responsible for the Serenity Spa at the Alexander the Great Beach Hotel in Pafos. She believes that “every spa visitor wants something different and we can tailor our treatments to match their needs,” she explains. What all three women share is an apparent and unwavering desire to ensure that together with their teams they provide an absolutely amazing experience, whatever the treatment. Discovering one delicacy after another, a ‘meze’ feast can best acquaint you with Cypriot cuisine and at Kanika’s luxury hotels, their ‘Taverna’ experience offers authentic dining mastered to perfection.

espite being a small island, Cyprus is a crossroads of Mediterranean and Middle Eastern gastronomy and therefore boasts a vast cuisine rich in different ingredients. There are countless traditional dishes worth sampling, and at Kanika hotels, each taverna is a culinary journey to true Cypriot cooking. Their carefully crafted ‘meze’, a collection of twenty ‘small plates’, is deliberately generous to introduce you to many dishes within one sitting amongst beautiful surroundings. At Olympic Lagoon Resort, the Captain’s Deck is a cosy outdoor terrace restaurant flaunting panoramic views of the lake and lush tropical gardens of Fisherman’s Village. Blue Paradise with its allwhite décor adds a Grecian feel to Elias Beach as you dine al fresco beside crystal Mediterranean waters and at Alexander the Great’s Limanaki Tavern, the spacious, open setting means every table has a seaview, and is embellished with beautiful stone columns and towering palm trees. ‘When visiting a country, it’s natural to want to explore the cuisine; and given our passion for Cypriot food, we felt it a responsibility to display our own take on meze within our resorts,’ explains Antonis Nicolaou, Executive Chef at Olympic Lagoon Resort.

Working up an appetite

Zivania is a traditional aperitif, usually served with dried fruits and nuts, both in restaurants and in every Cyprus home.

At each Kanika taverna, you are greeted with a traditional aperitif, accompanied by dried fruit and nuts, commonly served as snacks to visitors at home. Choose from zivania, a potent colourless drink distilled only in Cyprus, traditionally extracted from wine using the grape pomace, or Commandaria, an amber-coloured sweet wine

originating from the foothills of the Troodos mountains made from sun-dried grapes. The skill behind making these delicacies constitutes a long-standing tradition passed through generations in Cypriot villages. ‘Commandaria – the oldest named wine in the world still in production – and zivania with its unique taste and making process are both elements of Cypriot culture embedded in our history,’ says Antonis. Waiters are dressed in traditional pleated trousers called a ‘vraka’ tucked into boots and teamed with a white shirt and a ‘yilekko’ or waistcoat, while the girls sport 19th century ‘saya,’ an outfit of the Karpass region, consisting of a burgundy embroidered dress covering a white chemise and pantaloons and a lace headscarf. They will guide you through the meze, introducing and describing each dish. “Androulla, the head cook, often steps out of the kitchen to reveal insider tips on her signature dishes,” says Ele Papapetrou, Guest Relations Manager at Olympic Lagoon Resort.

Odyssey of Taste Within seconds, the table is transformed into a collage of terracotta ceramic plates bursting with colours and aromas. You first tuck into avgolemoni soup (meaning ‘egg and lemon’), a mixture of chicken broth and rice infused with lemon juice and combined with eggs to make it extra creamy. This is accompanied by bread straight out the oven, including koulouri, a traditional sesame-crusted bread with a hint of sugar, prepared from scratch at each hotel. The dips and appetizers include tahini – an unusual and moorish sesameseed paste loved across the Middle East – and elies tsakistes, green olives marinated in olive oil, garlic and coriander seeds. The salad is a medley of the freshest tangy rocket and sweet coriander sprinkled with oregano and mint – some of the many herbs grown on site in the chef’s special kitchen garden. Local delicacies are then served straight from the charcoalgrill, including the tastiest halloumi, smokey lounza ham and the Cyprus sausage, loukaniko, marinated in wine and mixed

with slightly bitter juniper berries for a distinctive flavour. Meat dominates the menu and Antonis recommends the kleftiko: a Cypriot roast of tender lamb and potatoes, cooked in the oven for hours, typically served at village festivals and weddings. However, there are also stews and baked dishes with the very best seasonal vegetables. The summer sun brings okra to the table, slow-cooked on the stove together with fresh tomatoes, and the mousakka, with its thick base of roasted aubergine.

Personalised Eating At the end of the meze you will enjoy the freshest fruits in season as well as Cypriot doughnuts called lokmades, drizzled in village honey. Throughout the meal, the waiters attend to your glass with more Cypriot wine, presented in a traditional jug, the kouza, to keep it cool. “The house wine is exquisite; however we have an extensive list of Cypriot and Greek labels should our guests prefer something slightly different,” says Antonis. With a meze meal lasting at least a couple of hours, it captures the essence of Cypriot hospitality. “As dishes are passed around, shared and discussed at the table, the food establishes strong connections between people in a relaxed and fun atmosphere,” explains Ele. The nature of the meal makes it a wonderfully intimate activity for all occasions, whether it’s a couple wanting a leisurely evening under the stars or a family looking to entertain the little ones. One experience of Cypriot cuisine will demonstrate why it is loved by everyone, especially the Kanika team, who have created a meze experience that they can be proud of.

Memories A pleasant surprise for many first-time guests at Kanika Hotels is the high standard of entertainment for both kids and adults alike which extends from morning until night....It is also one of the reasons so many of them return again and again.

W

hat most people don’t know is that the entertainment team have been sourced internationally, to be employed by Kanika on a full-time basis, all year round following a rigorous interview process conducted in the UK by Claire Morris, the Entertainment Manager for Kanika Hotels.

Trained Staff The positions attract experienced qualified professionals. “Sometimes there are 50-60 people applying for each position,” says Claire, herself a trained dancer, responsible for the animation staff islandwide. She handpicks the best from all over the UK in the quest to find the ‘right’ people for the job. But persistence has paid off and Claire is rapt with the team she has for this year, all 35 of them. Each one has been chosen based on enthusiasm, versatility, energy and experience as the starting point of a month of gruelling training and rehearsals for the various shows and activities in one of Kanika’s three coastal hotels. Together, they are known as the Kanika All Stars Animation Team, and their job is to ensure the animation programme is varied, interesting, and most importantly, fun for all age groups.

Constantly Updated Programmes Kanika places a great deal of importance on the contribution their animators make towards each guest’s holiday experience. The entertainment team are encouraged by Kanika to put

forward new ideas and concepts based on guest feedback in order to keep the programme – which changes every half hour and is tailored to each property individually – fresh and updated. Not an easy task, considering the staggering mix of indoor and outdoor activities including sports (darts, table tennis, zumba, beach volleyball, shuffleboard, football, archery), water activities (aqua aerobics, pool mini disco, water polo), demonstrations (cocktails, cookery, scuba diving), games and quizzes, live shows and dancing, movie nights, and competitions. Although the adult and children’s’entertainment programmes differ, the emphasis is on families, so many of the activities actually cater to all members of the family. At the end of September each year, the team gets together to brainstorm ideas for the following year. It is a system that works, evident in the genuine smiles of a team who, due to the extensive animation programme set up, work long hours as a rule.

Best Hotel Ever “This is by far the best hotel I’ve ever worked in,” enthuses Paris Selley. With seven years’ experience, she is in charge of the half-dozen girls that make up the animation team at the Elias Beach Hotel in Limassol. Her challenge is to produce the nightly entertainment in the purpose-built Havana Venue. That covers eight choreographed shows every fortnight in addition to games, interactive shows and special events during holiday times.

Claire, herself a trained dancer, handpicks the best from all over the UK in the quest to find the ‘right’ people for the job.

During the daytime, Paris and her team spend most of their time round the main pool and a relaxed outdoor kids play area allowing children to come and go fairly freely. Lucy, Tasha, and Stacy have a different focus at the Alexandra the Great Hotel in Pafos, where a newly-created indoor Kids Club facility caters for 3-12 year olds with vibrant colour, technology (restricted access online games, Nintendo Wii and huge 3D TV screen), fun and games.

Maximum Safety Safety is paramount at Kanika Hotels, which is why each child is required to be signed in and out of ‘The Little Monsters’ kids club facilities by their carer, guardian, or parent. For additional reassurance, pagers are available to parents. This is especially helpful at the Olympic Lagoon Resort, in Agia Napa, the only Kanika Hotel to offer a creche facility for babies and toddlers 6-36 months old, in addition to their kids club for 3 to 12-year-olds. Notably, every toy, item, or piece of furniture that has been touched by children is sterilised daily.

Awesome Fun Sisters Agnes and Anna who are seven and six years old squeal with delight as they play in the pirate ship water feature on their fourth visit to Olympic Lagoon Resort in Agia Napa in as many years. They love Agia Napa. The truth is, however, they have never even seen Agia Napa. To them, the Olympic Lagoon Resort IS Agia Napa. “They never want to leave the hotel,” their mother explains with a smile, as her daughters wave to her excitedly from behind a canon squirting water. “Even though the white sandy beach is on our doorstep, they don’t want to miss out on all the action here. Our entire day is based around the activities offered by the Kids’ Club.” And what child aged 3-12 wouldn’t be enthralled by the prospect of spending some time during the day with messy

play time, dancing at a disco, singing, performing in their own show, and going on a treasure hunt while searching for the infamous Captain Blood? These are just a few of the exciting activities available before face painting at dinner, a magic show, pyjama party, or a movie. And not to forget the four furry mascots that appear to delight the kids: Zorba the Zebra, Bella Ballerina the Elephant, Lucas the Lion, and Gigi the Giraffe. The Little Monsters Kids Club’s tagline of “A Kid’s Paradise!” couldn’t be truer.

Technology for Teens For older kids who want a bit more independence, the fully-supervised Teenz Club at the Olympic Lagoon Resort in Agia Napa is a haven of technology and games with multiple internet stations (restricted access), a hi-tech Arcade Room with Playstations and Xbox Kinnects (movement games), and includes a dedicated bar serving non-alcoholic drinks which transforms into a disco at night complete with roboscan lights. There is a separate animation programme for kids in this age group, with activities such as Soccer School where professional soccer players are brought in to train and teach new skills and techniques. Essentially, it’s the little things that make all the difference: remembering guests’ names, a constant smile, boundless energy and the patience of a saint make the talented Kanika All Stars a team that can transform a simple holiday into a truly wonderful memory... and making such memories was never so much fun!

Timeless trees

In many ways, trees are an investment. Nurture them and they will reward your efforts. But some are more giving than others; and in return for their generosity, nature has granted them longevity. Meet the carob and the olive trees – two timeless trees that epitomize the Cyprus landscape.

V

isit the Cyprus countryside and you will encounter orchards at every turn. Pink-white blossoms are the tender label of the abundant almond trees. Lush and shiny foliage are the giveaway of the citruses. Many others will tease your curiosity or challenge your knowledge. Whatever you do, make sure you identify two trees that are inseparable from the Cyprus countryside; two trees that have – in their own way – shaped the island’s trade and traditions for centuries: the olive tree on the one hand, the carob tree on the other. Though it seems impossible to find visual similarities between the two, they do have one thing in common. Both grow and mature slowly, but can live for hundreds of years. Both have high tolerance levels and won’t give in to the heat and drought of Cyprus summers.

Olive: Growth and Glory Friends of Greek mythology will tell you that the olive was a gift to mankind from the goddess of wisdom and courage, Athena. The tree’s branches were deemed suitable for crowns; its oil has anointed kings and its leaves serve as incense. Even today the olive branch is a powerful symbol of peace and glory. Perhaps that is linked to the olive oil’s reputation as an ‘elixir’ in the past and a ‘health food’ of the present. Full of vitamins and antioxidants, it is a natural anti-ageing potion that simultaneously fights high cholesterol, high blood pressure, and various chronic diseases. To preserve these qualities (including taste!), organic cultivation is key, which is why it

is popular in Cyprus and subsidized by the European Union. Grown anywhere and everywhere in Cyprus, the evergreen olive tree can be found in dense country orchards as well as on urban pavements. Its silvery green leaves are unmistakable, even when mixed with the dainty and fragrant white blossoms. Depending on whether the fruit will be picked green or black, the harvest season is longer than any – from October to March. Most of the Cyprus olive oil is consumed locally. In fact, only a fraction of the olive harvest actually reaches an industrial facility, as many people grow, harvest, pickle and press their own olives – or buy a whole year’s supply directly from a cousin, neighbour or friend. If the supermarket is your source, make sure to read the label for quality differences, and note the colour, aiming for the deepest green you can find.

Carob: Pods of Pure Health The carob has its own story, with chapters in various civilizations. The ancient Egyptians experimented with the gum, using it in various ways from sweet drinks to embalming. Also known as St. John’s bread, the pods of the carob tree are said to have sustained St John the Baptist during his time in the desert. By far the most glittering era of the carob’s history was in ancient times when gold merchants used the seeds as a measure of weight, believing that all seeds were of equal mass. Although this was later proved untrue, the now accurately defined gold ‘carat’ has its etymological roots in the modest ‘carob’. If you have not quite identified the tree, look out for a relatively low-growing tree with umbrella-shaped, dense and dark green yet matt foliage. The hand-length blackish leathery pods are the ultimate proof of identity. Crack them open and you will find the flat round seeds loosely resting in the pod in a neat row. After the November harvest, the carob pods deliver carob powder, gum and flour. Rich in protein and free of starch,

the flour is used in products for diabetics, while the powder is a healthy substitute for cocoa. The most delicious and consumer-oriented product is carob syrup, also called carob honey. The long list of minerals and vitamins it contains, plus the benefits to digestion and vitality, puts it on many health food shelves in large supermarkets. But visit a smaller grocery and you will find it everywhere, proving that it is first and foremost a delicious product. For the pure and authentic taste, choose a brand that clearly states ‘no added sugar’ – a good carob syrup will be thickened enough to be naturally as sweet as any other honey.

From Tree to Table Nutritious as well as tasty, olives and their oil are rarely absent in Mediterranean cuisine in general, and on the Cyprus table in particular. The oil is mixed into or drizzled over everything from dips and salads to fish platters and meat casseroles. The olives themselves come in several variations. On the one end of the spectrum you have the green olives, cracked and seasoned with lemon, garlic and coriander. At the other end are the deep purpleblack delights, either plump and juicy or lean (somewhat wrinkled) and more intense. Equally widespread are olive breads, crescents and pies that make the most popular snack, whether homemade or from your corner bakery. Carob syrup can be mixed with tahini for a traditional and unique sandwich spread. Some consider this combination an acquired taste; but once acquired, it lasts for life. Many use carob syrup as a perfect sweetener for breakfast cereals, oats, or any dessert where you might otherwise use honey or maple syrup. The local version of peanut brittle is called ‘pastellaki’, which binds carob syrup with one or several kinds of nuts, from almonds to peanuts and pistachios. With so much goodness tucked in their fruit, it makes sense that man and nature are working together – for once – to preserve the beauty and value of these timeless trees.

A City of Culture Centuries of artistic civilisation in Cyprus are now reaching their peak in today’s cultural scene of opera, music and fine art; in fact, Pafos now offers every element for a visiting culture vulture to enjoy.

F

rom ancient times, Pafos has always been the epicentre of Cyprus culture when theatre, music, art and literature featured in the daily lives of Paphians. Many of these delights survive today with theatre at Kourion, mosaics at the Archaeological Park and fresco paintings in the beautiful churches. Inspired by this historical precedent, the city is presently experiencing a surge of cultural activities, where locals and visitors alike enjoy international performances and music of the highest calibre with the annual Opera and the Kypria Festival amongst others. Now Pafos looks to the future to build on and celebrate its past by taking its place on the world stage as European Capital of Culture 2017.

Pafos Aphrodite Festival It has become an institution that everyone looks forward to: the Pafos Opera staged in the magnificent Medieval Castle on the harbour walls. The backdrop of the ancient stone keep is awe inspiring, but add to this a performance from a renowned operatic company and you have an event like no other. This year, the organisers of the 15th Pafos Aphrodite Festival welcome the Opera Futura Verona, accompanied by the Cyprus Symphony Orchestra, to perform Italian composer Gaetano Donizetti’s comic opera, L’Elisir D’Amore. Full of romance and humour, this vivacious work tells the tale of a love triangle, with Nemorino, a poor villager falling for the coquettish charms of wealthy Adina, whilst she in turn flirts with captain Belcore. Cue love potions, wedding vows, inheritance and jealousy and the story unfolds in comical altercations – with a cheerful outcome.

Staging a comic opera is a first for the organisers who would normally bring lyrical drama to Pafos. Mrs Stella Shepi, manager of Pafos Aphrodite Festival, explains, “L’Elisir d’Amore was chosen for this year’s Festival because it is one of the most charming and melodic operas of the international repertoire and an old-time favourite worldwide. Opera lovers will experience a magical evening at the enchanting area of the Medieval Castle, which is dressed to serve as an integral part of the set. This year’s staging of L’Elisir d’Amore is entrusted to the experienced director Paolo Panizza who promises to offer audiences a wonderful evening at the opera!”

Kypria International Festival Throughout its 20-year history, the Kypria Festival has presented Cypriot as well as foreign artists and ensembles of worldwide acclaim, giving a full international feel. Over two months, starting in September, performances in the fields of dance, theatre, music, visual arts and cinema are staged in venues around the island. In dance, the Festival has hosted the Rhine Ballet, the National Ballet of Cuba and the Batsheva Dance Company; in theatre, one of the Festival’s most recent highlights was John Malkovich’s outstanding performance in the ‘Infernal Comedy: Confessions of a Serial Killer’. Celebrated music ensembles, such as the English National Symphony Orchestra, the Madrigalisti di Venezia and the European Union Baroque Orchestra have graced the Festival arenas. For 2013, the Cultural Services of the Cyprus Ministry of Education and Culture have appointed Artistic Director, Andy Bargilly. He says, “With the mandate not only to improve the already high standards of the Festival, but also to refresh its image and bring forward a new approach and concept, we will concentrate on the theme of Mythology,

European Capital of Culture 2017 In 1985, the EU Council of Ministers launched The European Capital of Culture initiative to bring the people of the European communities closer; in 2017 Pafos will take its place on the list of outstanding cities that have achieved this cultural renaissance. Mr George Georgiades, member


of the Board of Directors of Pafos 2017, explains, “The city will be transformed into a centre of activity with events, workshops and exhibitions, all designed to bring communities of every creed, colour and race together. These could be learning each other’s songs, tales and heritage, nurturing the environment, exploring the area, and creating art, theatre, and dance that will break down any cultural boundaries or historic prejudice. Pafos will be a playground for visitors and citizens, and new construction will put the city firmly on the cultural map.” Though the planning committee is still sifting through ideas, some projects are already underway: a stunning mosaic is being created by Sharen Taylor, archaeologist, artist and master mosaic maker. Sharen was inspired by the logo of the Pafos Capital of Culture and started a voluntary project where the public bought individual tiles and each was placed in a section of the Mosaic. Over €3.000 was collected for the local hospice, and the artwork will stand proudly as a testament to the dedicated voluntary spirit that impressed the jury so much. So what can visitors expect to see over the next few years? Travelling troubadours, photographers, dancers and actors will drive, sail, walk and bus to entertain thousands against backdrops as diverse as wind farms, rooftops, pontoons, churches and courtyards. New projects will start to emerge; a new theatre, piers and the Akamas boardwalks, restoration of the old Khan, the defunct Othello cinema, the ‘Pizari’ square and municipal gardens. The Medieval Castle

The Farmhouse is an old traditional house that reveals how Cypriots used to live and work in bygone times. Upon entering, you will be transported back to olden Cyprus through the different rooms that are set up as they were back then – complete with traditional furniture, utensils and costumes – including hand-embroidered bedspreads, ornamental plates and national dress.

Richard the Lionheart celebrated his marriage to Berengaria of Navarre in this 13th century castle, which the Venetians later modified for the town’s defence. Later on, under British rule, it served as a prison. It now houses a medieval museum with exhibits from the era of 4001870 AD including cannons, tombstones, statues and suits of armour.

Kolossi Castle Kolossi Castle was built in 1210 by the Frankish military. It served initially as the Grand Commanderie of the Knights Templar then as the headquarters of the Knights of the Order of St. John of Jerusalem. Pafos Medieval Fort Limassol Marina The stunning new marina is set to become one of the most prestigious marinas in the Mediterranean thanks to its state-of-the-art facilities, luxury seafront residences, shops and high-end boutiques, and exclusive waterfront bars and dining. The restaurants range from traditional tavernas to stylish international restaurants – all complete with a backdrop of bobbing boats.

The focal point of Kato Pafos is the picturesque harbour with its medieval fort surrounded by cafés and restaurants. The Byzantines firstly erected the castle to protect the harbour, and the Lusignans rebuilt it in the 13th century. It was dismantled by the Venetians in 1570 and then rebuilt once again by the Ottomans. It has also served as a prison and a salt warehouse.

Pafos District Petra Tou Romiou (Aphrodite’s Rock) Cyprus is called ‘the island of love’ thanks to the ancient Greek goddess Aphrodite and her birthplace, marked by a large rock in the sea just off the coast about 25 km east of Pafos. Legend tells that she was born from sea foam at this spot and took her first steps on the island. The area is also known to offer some of the most beautiful sunsets on the island.

Pafos Aphrodite Festival – Gaetano Donizetti: L’ELISIR d’Amore

September 6, 7, 8 The annual festival brings over an international premier opera to be performed for three nights at an open-air amphitheatre by the Medieval Castle at the old harbour of Pafos. This year’s performance is by the Italian composer Gaetano Donizetti, written in 1832. More information can be found on the festival

Christmas is an important season in the Greek Orthodox religious calendar, second only to Easter. On Christmas Eve, women bake special breads (‘koulouria’), butter/nut pastries sprinkled with icing sugar (‘kourapiedes’) and honey-drizzled sweet bites (‘melomakarona’). The day of the Epiphany (the Twelfth Day) is an important Greek Orthodox holiday. According to local folk tales, mischievous spirits were said to live on the rooftops where they would prey on people and play tricks on them during the twelve days of Christmas. This
