WELCOME FROM THE CEO
GROWING & DEVELOPING It is always a pleasure to address our guests and readers, and welcome them to the world of Kanika Hotels & Resorts.
SPYROS TH. KARAOLIS Group Executive Chairman
This year, 2017, is an exciting but also challenging bridge between the past and the future. Last year’s success was overwhelming, not just for our Group but for Cyprus tourism as a whole. The industry registered an alltime record number of arrivals, which triggered important developments in our sector. On the one hand, this positive trend has stimulated investments, allowing existing hotels to expand and new ones to open in 2017, with more to follow in 2018. On the other hand, the holiday season is now starting earlier in spring, and stretching well into the autumn. As hoteliers, we are delighted with this upswing and are determined to work hard to convert first-time Cyprus visitors into loyal friends.
For Kanika Hotels & Resorts, 2018 is set to be another milestone in our history, as we eagerly anticipate the opening of our new hotel in Paphos. The new destination is a response to market trends and is based on a pioneering holiday concept tailored to the expectations of IT IS ALWAYS A PLEASURE TO ADDRESS OUR discerning couples. At the other end of the island, our GUESTS AND READERS, AND WELCOME THEM Olympic Lagoon Resort in TO THE WORLD OF KANIKA HOTELS & RESORTS. Agia Napa will be closed for renovations this winter. Visit us next year and you will be delighted with the many upgrades and additions to both our accommodation and dining options. It goes without saying that our hotels and all their facilities are only as good as the people who operate them – the Kanika team that welcome and serve you day by day, as well as the equally valuable departments working behind the scenes. In a service industry such as ours, the human factor is paramount, which is why we invest regularly and generously in training and developing our staff, but also acknowledge and reward their performance. However, the ultimate indicator, and the compass that shows us we are on the right track, is the feedback we receive from you, our guests. In the form of personal comments and letters, as well as via your online reviews and tour operator questionnaires, you have rewarded us with your vote of confidence. For the latest series of industry awards that our hotels have earned, we sincerely thank all our guests who took the time to share their opinion. On behalf of everyone at Kanika Hotels & Resorts, I would like to wish you a wonderful stay at your chosen hotel, and a memorable holiday on our island. Enjoy every moment!

KANIKA NEWS UPDATE
IT’S BEEN A BUSY AND EXCITING YEAR AT KANIKA
KANIKA NEWS
HOTELS & RESORTS AS THE GROUP CONTINUES TO INNOVATE, EXCEL, DEVELOP AND CONTRIBUTE. WE PROUDLY PRESENT A SELECTION OF RECENT NEWS AND HIGHLIGHTS.
WE DID IT AGAIN! Kanika has done it again! We are proud to announce that Kanika Hotels & Resorts has received the Cyprus Export Award for the third time, winning in the ‘Tourist Services’ category. Our group is one of just nine Cypriot enterprises to have successfully passed the complex selection process to receive the prestigious award across five different sectors. The awards are given by the Commerce, Industry and Tourism Ministry and are a prominent hallmark of quality and service on the island. The official award ceremony took place at the end of February 2017, attended by the island’s most distinguished personalities and presented by His Excellency, the President of the Republic, Mr Nicos Anastasiades.
IT IS A GREAT HONOUR FOR
Adding this honour to our long list of awards and accolades once again proves how determined and dedicated Kanika is to ensuring that guests enjoy the highest level of services, facilities and amenities across the board, both as a group and as individual hotels and resorts. And it is certainly a great feeling to be able to say ‘we did it again!’
KANIKA to win at the Cyprus Export Awards for the third time.
As always, the thanks go to you - our guests. For it is you who inspire us to constantly strive to be the best, to keep building and innovating in the hospitality sector… And we have no intention of ever letting you down!
FULFILLING WISHES In February, the Olympic Lagoon Resort Paphos was lit with the happy smiles of 100 children and their families who holidayed there through the ‘Ena Oniro Mia Evhi’ Foundation (‘One Dream, One Wish’); the Pancyprian Association for Children with Cancer and Related Diseases. The guests were welcomed by hotel manger Mr Andreas Antoniou in February 2017 for a three-day, all-inclusive stay. Given the Kanika star treatment, our visitors delighted in all that the resort has to offer families including fun entertainment and play facilities. THE OLYMPIC LAGOON PAPHOS was thrilled to welcome 100 children and their families to the resort in February.
The charitable foundation fulfils the ‘wishes’ of children suffering from childhood diseases by organising trips and activities that will offer them a joyful experience. Social contribution is a significant part of the Kanika ethos of giving, and seeing the children’s elation during their stay was a fitting reminder of why we believe our hearts should always be as big as our hospitality.

AWARDS IN ABUNDANCE We are having to make more room on our shelves and walls for all the awards we are winning thanks to the faith you - our valued guests show in our services and staff. We are in the delightful position to say that we simply cannot list every award, certification or recognition we have received, but most notably, Kanika Hotels has topped travel website TripAdvisor’s rankings for 2017, which place the group in the top 1% of all hotels on their platform. All four hotels in Agia Napa, Paphos and Limassol have earned ‘Travelers’ Choice 2017’ awards, which are granted to the Top 25 Hotels in various categories, with all Kanika Hotels also ranking among the Top 25 hotels in Cyprus. Additional awards (from a long list) include Travelife Gold certification 2015-2017 for all four hotels, the Recommended award on Holiday Check 2016 and the Booking.com Guest Review Award for 2016, and Saga awards for Alexander the Great in Paphos and the Elias Beach Hotel in Limassol. A special mention goes to the Olympic Lagoon Resort Paphos for garnering awards in its first year of operation, including a nomination for Cyprus’ Best Golf Hotel 2016 and for being voted among the Top Ten hotels in the category of ‘Best Family Hotels Worldwide’ (Travel Weekly). Kanika Hotels is very grateful for the positive reviews which have led to these awards, and we thank you for contributing to our success.

CULINARY GOLD There is no doubt that Kanika chefs are amongst the best on the island, and this calibre is confirmed in our Group Executive Chef, Antonis Nicolaou. Not only is Antonis leading our own chefs, but he has also held the role of Junior Team Manager for the Cyprus Junior National Culinary Team for the last four years. Antonis says that his own experience with Kanika - and the group’s stringent training standards - have helped him to transfer important skills to the young chefs who represent Cyprus abroad.
ANTONIS HAS LED THE TEAM to victory at worldwide competitions.
And this expertise is reaping rewards. The team won two silver medals at the World Championships in Korea in 2012, Gold and Overall Winner at the 2014 World Cup in Luxembourg, and two silver medals at the IKA Culinary Olympics in Germany in 2016. We wish the team continued success under the exceptional guidance of Antonis!

A NATURAL CHOICE Herb gardens, beach clean-ups, recycling, charitable donations, environmental-awareness campaigns and energy-saving measures. These are just a small sample of Kanika Hotel & Resort’s actions this past year as part of our Sustainability Statement. It is a simple philosophy: we believe that as a group, we have a responsibility towards our local environment, our community and the people who make us great; both our staff and our valued guests. In particular, the Elias Beach Hotel in Limassol, the Alexander the Great in Paphos, and the Olympic Lagoon Resort Ayia Napa are proud recipients of the Travelife Gold Certification; recognition that cements their status for operating ethically and sustainably to the highest of levels. And as we know that our guests truly appreciate the effort we put into operating in this way, we always love to involve you too! If you are visiting the Elias Beach Hotel or the Olympic Lagoon Resort Ayia Napa, you will no doubt have noticed the boards which introduce the local flora and fauna, as well as Blue Flag beaches and other areas of natural beauty and interest. And we are always told that you enjoy seeing the chefs and waiters picking fresh herbs directly from the hotels’ herb gardens to use in the food and drink we serve. Fresh local mint makes its way into your Mojito, whilst oregano, thyme and rosemary add a touch of autehntic Cyprus flavour to the dishes. Sustainability in cuisine continues with our participation in the Cyprus Breakfast. This initiative focuses on serving local, traditional Cypriot food items as part of the breakfast buffet, including Halloumi cheese and carob syrup. And as we believe that values of respect and love for the environment should be instilled from an early age, this year we have introduced some wonderful educational activities at all of our Little Monsters Kids Clubs. Children build a Wish Tree out of cardboard, papier mâché and other materials as they discover the importance of caring for nature. This theme also extends to learning about animals and our planet, through a range of specialised projects and activities.

GUESTS CONTRIBUTE TO ITHAKI through a fun day of entertainment and activities.
ITHAKI As part of Kanika’s Social Contribution, we founded the Ithaki non-profit charity for people with dementia and Alzheimer’s in 2011, and continue to be its main benefactor – along with your generous support. We raised a fantastic €4,166 in 2016, with part of our fundraising coming from special events and activities held across our four hotels. As every year, the Kanika Entertainment Team organised a great programme for all the family, which included lots of sporting events and activities – including matches of ‘staff versus guests’, children’s fun, bingo, prize auction, spa treatments, water walking, discos and danceathons… and more! As always, it was touching to see how enthusiastically guests embraced the chance to enjoy something for a good cause. Aside from our events, we also raise money through the donation boxes at each reception, and wholeheartedly thank you for contributing to the essential work Ithaki achieves for dementia and Alzheimer’s sufferers on the island.
PILLARS OF STRENGTH Quality standards and certifications are not mere pieces of paper or fancy initials that we bandy about, they are an around-the-clock effort which never ends, and a way of operating upon which we continually build. To further reinforce the two pillars of our company, Kanika Hotels & Resorts expanded its Human Talent and Quality Assurance departments towards the end of 2016, taking our investment in people and quality to a whole new level. We hold a firm belief that people are not mass-produced; that each and every member of staff deserves respect, a professional work environment, and the tools to succeed in their respective position. And the level of service and care our staff offers guests is testament to how fulfilled and passionate they are within their roles. Kanika was also one of the first companies on the island to achieve ISO certification – an audited hallmark of quality. But this does not mean that our Quality Assurance department can pause for breath! The team works diligently to ensure that the ISO Management Systems for Quality, Food, and Environment - as well as OHSAS Occupational Health & Safety - are implemented and maintained through ongoing training programmes, inspections and the introduction of new initiatives which help elevate these sectors.

TEMPTATIONS
FOR TWO
In its most basic form, the spectrum of holiday expectations has two obvious extremes: on the one hand, families with young children need to know that their bundles of joy will be welcome and safely entertained; on the other, child-free holidaymakers (even those who are parents themselves) value undisturbed peace and quiet, and may sometimes be sensitive to even an occasional squeal. Delighting families for years, Kanika Hotels & Resorts is now preparing to launch a new hotel, with a concept that takes a page from the travellers’ book of holiday dreams for two.
IT’S ALL ABOUT BEING TOGETHER
Currently under construction and scheduled to open in the second half of 2018, Kanika’s new luxury hotel has a ‘you & me’ concept built into its foundations and is appropriately located in Paphos – the playground of Aphrodite, the ancient Greek goddess of love. Indeed, the youngest member of the Kanika family is an implementation of the contemporary adage ‘Couples who play together, stay together’. This is a hotel that acknowledges and respects your appetite for leisure and pleasure in a tranquil setting, with a CURRENTLY UNDER CONSTRUCTION AND SCHEDULED generous serving of exclusivity, privacy TO OPEN IN TIME FOR THE SUMMER SEASON OF 2018, and pampering.
KANIKA’S NEW, ADULT-CENTRED LUXURY HOTEL IS
The new project is classified as a fivestar hotel with 155 luxurious sea view APPROPRIATELY LOCATED IN PAPHOS rooms and suites, and a medley of striking bars and restaurants, including two concept dining rooms. Your booking will automatically be on Half-Board Premium terms of stay, promising you an exceptional and international dine-around experience, with a wonderful selection of wines and beverages included.
ADULT RETREAT
Take note: this is not merely ‘Kanika for Couples’; it is also the ultimate go-to address for a mother-and-daughter retreat or a ladies escape. What everyone can look forward to is a holiday with a new, fresh and exciting dimension; a world of built-in serenity, elegance, style and relaxation. That being the case, it won’t be long before Kanika’s newest creation attracts two types of selective holidaymakers. Golfers will quickly discover this magnet in Paphos – the golfing

centre of Cyprus – while wedding couples and planners will be rushing to secure a booking at this jewel in the heartland of Aphrodite’s island of love.
IN SYNC WITH NATURE
The property’s setting and surroundings meet their match in the hotel’s architectural lines and interior language. It’s as if the wonders of the natural landscape have been invited, not just as guests, but as permanent residents. Daylight is abundant, water gurgles and glitters in the sun. In the landscaped gardens and open public areas, the sea breeze rushes among trees and bushes. Such features are not random: they are calculated steps on the path that will make this the first hotel in Cyprus to receive the enviable EU Ecolable, which certifies environmental excellence, innovative facilities and personalised service. As the new hotel’s opening day approaches, we’re set for the dawn of a new era of Kanika hospitality. Will you be there to welcome it?

SPECIAL FEATURE
If you have never stayed at the Olympic Lagoon Resort in Paphos or Agia Napa, you cannot quite imagine what sets them apart and why they are in a class of their own. On the other hand, if you are familiar with only one or the other, you’re bound to wonder how the two resorts compare. Besides the name, what else do they have in common? And how do they differ?
THE MAKING OF A BRAND
Conceived and developed by Kanika Hotels & Resorts, both Olympic Lagoon Resorts are based on the same concept, the same philosophy. It is a philosophy that is rooted in two principles: one, life is beautiful; two, holidays are precious. These principles meet at the doorway of every Olympic Lagoon Resort, where management and staff are determined to create a happy environment, so you can enjoy making memories with your partner or your family. But take note, this is not a cookie-cutter hotel chain. Cross the threshold and the actual facilities will vary to match the particular qualities of each location. There are, of course, common denominators: the emphasis on gastronomy and entertainment, in addition to the variety of room types which accommodate the different holiday expectations of
families or adults on their own. All facilities are held together by a framework of guest services following detailed procedures to ensure consistently high standards. In short, both resorts have the same DNA, but each is embedded in its natural geographic environment.
LUXURY ALL-INCLUSIVE, A NEW CREATION
At the core of the Olympic Lagoon Resorts concept is the Luxury All-Inclusive hospitality feature – Kanika Hotels’ ‘baby’, which has meanwhile grown and matured. When it was first conceived, this signature package claimed virgin territory in the Cyprus holiday market. It was the expert answer to holidaymakers’ desire for a destination at the crossroads of the familiar all-inclusive hotels and the classic five-star establishments. The luxury aspect spans your whole Olympic Lagoon experience, from guest services to the amenities in your chosen room type, where little indulgences range from bathrobes and slippers to branded soft drinks in the mini-fridge. Gastronomy, however, is where the Olympic Lagoon Resorts break the all-inclusive mould. Not only do the buffet menus change daily, but your all-inclusive privileges allow you to rotate among a series of speciality restaurants serving cuisine from around the world. Drinks are unlimited and include a number of international brands. In-house entertainment is acknowledged as the most professional and sophisticated in Cyprus.

AUTHENTIC LOCAL AND SPECIALITY CUISINE is served in indoor and outdoor restaurants including the Captain’s Deck Tavern, 7 Orchids Pan Asian Restaurant, and Rock’n’Roll Diner, and included in the Luxury All-Inclusive terms.
Most importantly, ongoing upgrades are baked into the Luxury All-Inclusive recipe, under the guidance of a celebrity UK Chef holding consultant executive chef. Group Executive Chef Andonis Nicolaou says: “Gastronomy in our hotels is a dynamic work in progress. Season by season we take our lead from guest comments as well as international trends, and realise there is always room for improvement.”
FROM AGIA NAPA TO PAPHOS AND BACK
If you are among the long-standing friends and followers of Kanika Hotels, you may well remember the grand opening of the first Olympic Lagoon Resort in Agia Napa in 2010. Although the resort’s overwhelming success propelled its name to the top of the all-inclusive category, the follow-up sister hotel in Paphos gave Kanika Hotels the opportunity to raise the bar even higher. This demonstrated yet another dimension of the Olympic Lagoon Resorts’ philosophy: constant innovation. While others might see success as a reward for their efforts, at Kanika Hotels, success merely powers the group’s determination to sweep you off your feet. In fact, the ball is now back in Agia Napa’s court, where extensive upgrades over the winter of 2017/18 will reset the standards. Come April 2018, the resort in Agia Napa will be ready to unveil upgraded accommodation and allnew rooms, and a new indoor entertainment venue in step with the Xperience Arena in the Paphos resort. The outdoor Blue Lagoon Bar will be converted into a stylish openair cocktail bar, and the number of restaurants which you

can pick and choose will increase from four to six. Across the hotel, public areas will be refurbished, and – not quite as visible but equally important – new guest services, inroom technology and other amenities will offer you several pleasant surprises. As Kanika Hotels’ Group Operations Manager, Mr Spyros Michaelides says: “Having reached the top of the luxury allinclusive market, we now have to double our efforts to stay ahead of the curve and continue breaking new ground in a competitive but very positive tourist environment.”
CHANCE OR SKILL?
Such was the almost instant success of the Olympic Lagoon Resort as a brand – whether in Agia Napa or Paphos – that one might wonder if the hotel industry is a game of chance or skill, Chess or Candyland. The answer is… somewhere in between. For starters, Kanika Hotels’ decades of experience clearly provided a solidlaunch pad for any new venture in the field of hospitality. Extensive market research was used to map out a promising trajectory. Ultimately, however, as Kanika Hotels Group Executive Chairman, Mr Spyros Karaolis, says: “Research and analysis will deliver a clear image of the current state of the market, what guests like or dislike. But there is no surefire formula, no straight line to success. The key to success is vision.” And this is where it gets tricky, because ‘vision’ is a big word that is part experience, part intuition; part reason, part instinct. Although it might start in the gut, the successful implementation of even the brightest vision requires the efforts, the skills and the commitment of professionals in the field; professionals who are always open to new ideas, who keep their ears to the ground and their eyes on our hotel guests. These are the people who make the Olympic Lagoon Resorts the same amazing experience, in Agia Napa, in Paphos, … And in any new locations to come.

AGIA NAPA COMBINES
Two historical monuments worth seeing are Agia Napa’s monastery and the old aqueduct. The existing Mediaeval monastery, built around 1500AD, was established as a nunnery and dedicated to ‘Our Lady of the Forests’. The well-preserved aqueduct is a complicated Roman structure with Frankish alterations that used to deliver water to the monastery and the surrounding region from a source near Protaras. CULTURE
OF FOOD FOUR CHEFS, FOUR INNOVATIVE FOOD CONCEPTS AND A DEDICATED KANIKA FOOD DEVELOPMENT COMMITTEE WELCOME US TO THE MAGICAL WORLD OF THE KANIKA KITCHENS, WHERE BUBBLING PANS, MOUTHWATERING TASTES AND HEAVENLY AROMAS UNDERLINE THE PASSION FOR WORLD-INCLUSIVE DINING. Food is more than just food, it’s an entire culture, renowned culinary historian Massimo Montanari once suggested. And that delectable transformation of natural, edible materials into what we refer to as ‘cuisine’ is certainly a cultural journey: distinctive ingredients, individual techniques and unique dishes instantly characterising the essence of a culture. At Kanika Hotels, this notion is borne out by four innovative concept restaurants – the Pan Asian cuisine of Seven Orchids, the Italian menu at Garibaldi, homespun American at Rock n’ Roll Diner and local fare at Cypriot taverns – all of which showcase the finest of recipes, foods, service and ambience that engender a truly authentic cultural experience. “Many people now travel not just to savour the country, luxury hotel or the beautiful weather, but also to take home memories of exceptional food experiences,” reveals Group Executive Chef Antonis Nicolaou. “In order to achieve this goal, our food philosophy allows us to offer high standards, discover new, inventive ideas, and to constantly update techniques and authentic ingredients.” Thus, with passion and determination, the Committee, 250 Kanika Chefs and UK Consultant Executive Chef Peter Gorton (TV celebrity chef and former holder of a Michelin Star) discuss, explore and travel the globe – on a tireless search for new local flavours and recipes to offer Kanika guests the ultimate in world dining.

GINGER AND SPICE
A skip across the sea takes us to the Seven Orchids (Pan Asian Cuisine in all hotels) where age-old and contemporary unite in the taste of the Orient. Each of the chefs brings years of experience to the rich melting pot of flavour, with recipes selected from all over Asia – including Japan, Malaysia, Thailand and China – to create a unique gastronomic journey. Many of the chefs hail from Asia, bringing with them both original recipes and an understanding of authentic cultural cuisine. “We have a strong team,” explains Antonis. “This is why, when we choose our recipes for this concept, we work on them together; each of us is familiar with the tastes which make our fare more authentic. We believe that Asian cuisine is one of the richest cuisines,” he adds. “It’s healthy, colourful, and tasteful; one of the most popular cuisines in the world.”

Offering original Teppanyaki show cooking (oriental style live cooking on a hot surface) for guests to enjoy whilst eating, salmon and chicken Teppanyaki are amongst the favourites at the Seven Orchids. Another highly popular selection is sushi: the prawn tempura and avocado roll a particular favourite with the guests. Nepalese Sushi Chef Sanu Babu is a specialist in sushi, with over 10 years of training under a professional Japanese Sushi Chef. “Japanese food, unlike Nepalese food, is not very spicy. They work mainly with sweet, sour, salt and vinegar. If, however, any customer would prefer more spices, then I’m happy to make something inspired by my native Nepal – with chili,” Sanu grins. Sanu has introduced sushi and maki rolls to the à la carte restaurant: each piece of raw tuna and salmon requiring careful preparation and cut into 14-16g bite sizes. “It’s important in Japanese cuisine that sushi and sashimi are small enough to be eaten in one bite; every time we eat sushi, we drop each piece individually into the sauce, then straight into our mouths; this precision is vital to keep the authenticity.”

THAT’S AMORE
Why Italian cuisine? Because, in the words of Antonis, “who doesn’t love pasta?!” Offering classic Italian cuisine magically merged with Mediterranean flavours, guests at Garibaldi – Ristorante Italiano (Olympic Lagoon Resorts and Alexander the Great in Paphos) are treated to fresh, home-grown ingredients combined with pasta, cheeses and antipasti flown in on a regular basis from Italy: a truly titillating experience for the tastebuds. Hailing from Perugia in the heart of Umbria, Garibaldi chef Luca Roscini has been – like his father and uncle before him – in the business for 25 years. “Our food here is a journey around Italy, full of Italian flavours,” says the man who helped open the restaurant three seasons ago. “Being Italian, I transfer the passion of the Italian kitchen to every dish,” he adds. But the Italian atmosphere doesn’t end at the plate: it extends to the intimacy of the restaurant, the friendly customer service and traditional music, while the à la carte menu bursts with both new and familiar Italian flavours – including mushroom and minestrone soups, dreamy pasta dishes, succulent meats, and fresh seafood risotto.
ITALIAN CHEF’S FAVOURITES such as creamy polenta with lamb feature at Garibaldi Ristorante Italiano.
While the menus are chosen by the team and head chefs of Kanika, Luca and his assistant pour love into the very heart of Garibaldi. With the typical generosity of Italian spirit, all guests are invited to enjoy the antipasti counter lined with flavoursome cured meats, cheeses and occasionally griddled polenta with parmesan flakes and sun dried tomatoes. “The Italian cuisine is extremely simple and I believe it to be one of the best because of its simplicity and the passion we bring to it. That, I believe, is the secret ingredient of every Italian chef: passion!” laughs Luca. Like all food enthusiasts, Luca has his personal favourites; “I love Polenta, it reminds me of home. It’s my city; where I was born is in the mountains and the winters were bitterly cold, so I grew up eating my grandmother’s polenta.” Perhaps, then, it’s no coincidence that one of the most popular dishes at the Garibaldi is the succulent lamb shank and polenta dish, imbued with the delectable fragrance and juice of orange, butter and parmesan.

HAPPY DAYS
Take a trip down nostalgia lane at the Rock n’ Roll American style 50s Diner (Olympic Lagoon Paphos and Ayia Napa). The colourful retro decor will transport you back to the era of rockabilly, with its black-and-white chequered floors, jukeboxes, food booths and half a Cadillac! This is just the place to kick back and soak up one of the most popular cuisines in the world, and boasts recipes collected from all over the USA, from down in the deep South, to Philadelphia and sunny California. “The concept of these 1950s American foods is very well-loved; high quality burgers, fresh salads, wraps, steaks, chili con carne, chili cheese fries, spare ribs,” says Antonis. “It’s cosy and familiar; people love this kind of food,” he adds.

Antonis Pallourtis, Cook B, is responsible for the diner. The most popular dish is the Classic Burger; a standard recipe – which boasts its very own preparation protocol! – created by the Committee, with Cheddar cheese, tomato, pickled gherkins, purple fresh onion rings and purple lettuce. Each of the recipes has been similarly wellthought out in order to discover the best combination of authenticity and taste. “We use purple onion in the burgers, because it’s slightly sweeter and we believe it complements the whole burger experience, for example,” Antonis reveals. “It gives a unique taste; the quality of the meat and herbs that go in, as well as each chef’s cooking technique makes these burgers special,” agrees Antonis Pallourtis. He reveals a chef’s secret: a way to cook a burger so it retains moisture whilst allowing it to simmer in its own juices, releasing optimum taste. It involves cooking the meat very slowly on a low heat, and using the corners of the grill where the temperatures are lower than in the centre. “We try to cook it there; it makes a much tastier burger.” But the main trick, he reveals, is “you need to get excited about each and every order that comes to you, wanting to cook it as perfectly as possible; every dish needs to be fit for a king!”

SUNKISSED CUISINE
One of Antonis Nicolaou’s particular passions are the traditional Cypriot taverns (The Captains Deck - Olympic Lagoon Paphos and Ayia Napa, Limanaki – Alexander the Great Paphos and Blue Paradise Elias Beach Hotel Limassol). With fresh produce arriving daily from nearby areas, and recipes passed down from local village women, this is the pinnacle of authenticity! The meze is a traditional Cypriot feast of 15 or more dishes; a delightful assortment of the classics, including moussaka, keftedes (fried meatballs), traditionally-cooked fresh green beans, and grilled village halloumi. “Our hotels are in Cyprus, and I believe it is a necessity that we offer our guests the opportunity to explore the best, most traditional tastes of the country. By mirroring the Cypriot cuisine, guests can enjoy the culinary heritage of the island they are visiting; the foods we grew up with,” Antonis enthuses, referencing the many delicious tastes and textures: an experiential culinary journey of cooking styles and flavours. The preparation of such a feast demands that Savvas Kyriacou – chef at the Blue Paradise Cypriot tavern – and his assistant spend a minimum of six hours preparing the evening’s delicacies. Mezes begin with bread, Cyprus salad and luscious dips, continuing through grilled meats and stews to cheese courgette fritters and souvla – chicken, pork or lamb cooked over hot charcoal. One of the most popular dishes at the taverns is the aromatic lamb kleftiko baked with herbs and potatoes in a clay kiln for a minimum of four hours. Truly food that will melt in the mouth, even if you choose the vegetarian meze option (for which notice is required)!
TRADITIONAL CYPRIOT kebabs at the tavernas embody Mediterranean flavours.
Cypriot born Savvas delights, especially, in the pourgouri dish of bulgur wheat, tomatoes, onion and spices. “It’s the exact same recipe my grandmother uses, and it’s the best,” he beams. “I love to cook authentic food; it makes me happy, especially when the guests ask to meet us and applaud as we exit the kitchen!”

Limassol’s winemaking villages on the southern slopes of the Troodos mountain range, collectively known as ‘Krasochoria’, have a reputation for excellent local wines born from an ancient history of viticulture. The Cyprus Tourism Organisation’s ‘Krasochoria of Lemesos Wine Route’ takes in 20 charming villages and 16 wineries, with plenty of traditional architecture and glorious landscape to see along the way.
Located in Kolossi village, the original Castle was constructed in 1210 by Frankish military; the present structure - built in 1454 - endures as a fine example of military architecture. The remains of a neighbouring 14th century sugar mill are also an interesting site to visit.

WINE
JOURNEY FROM THE ANCIENT VINEYARDS DOTTED THROUGHOUT THE RAMBLING TROODOS FOOTHILLS TO THE EXQUISITE BOUTIQUE WINERIES OF THE COASTAL COUNTRYSIDE, CYPRUS IS THE ISLAND OF WINE… For an island, Cyprus features an abundance of traditional and boutique wineries, and boasts seven official wine routes, many of which are easily accessible from the coastal regions. Nestled into the green foothills, sheltered in sun-kissed valleys, and tucked amongst the silvered olive groves, these routes are a seasonal treasure trove: the vines shifting from jade to gold, crimson to jet with the ageing of the year and the changing of the weather. Blessed with rich soils, sharp light and sea breezes, Cyprus enjoys a climate that’s paradisiacal – both for its vines and its visitors! According to legend, King Richard the Lionheart of England was so taken with Commandaria (an ancient and local wine variety still in production today) that he pronounced it “the wine of kings and the king of wines”. Today, royal recommendation has evolved into oenological accolades in the form of global awards. Over 30 local wines were recently commended at the International Decanter Awards and many of the island’s grape varieties have garnered global recognition. And while the island is distinguished as one of the old world in terms of wine-producing countries, the industry has undergone more recent changes which place it on par with the new world. As an influx of modern vintners couple their skills with the timeless expertise of the older generations, Cyprus is becoming more and more of a global oenological contender…
A VOYAGE OF DISCOVERY THROUGH THE ORIGINAL WINE COUNTRY allows any visitor to drink in the true Mediterranean experience
From the most ageless of grape varieties, such as the Mavro (an indigenous and much-planted red, dense in colour yet soft in taste) and the Xynisteri (the white grape of Cyprus; fresh, fruity and pleasantly warm), to the modern Chardonnays and Sauvignon Blancs and the aromatic Maratheftiko (an indigenous variety recently rediscovered), Cyprus wines are a delight to palates all over the world. A voyage of discovery through the original wine country allows any visitor to drink in the true Mediterranean experience: traversing a land of softly sun-washed soils to uncover the vintages of kings. Jewelled reds and bright whites on golden afternoons – Accents’ pick of the best wine routes will satisfy your taste for adventure! Let the journey begin…

DIARIZOS ROUTE
Guests at the Alexander the Great Beach Hotel and the Olympic Lagoon Resort in Paphos are a stone’s throw from the ancient vales of the Diarizos wine route. A delightful trail which sees Cyprus at its most captivatingly unspoilt, this route takes in honeyed stone villages dotted along fertile valleys, 18 different types of vine and two particularly welcoming wineries.

VASA ARSOS
Onward and upward, with ancient vineyards lining the road, the route passes the Lagria Winery of Salamiou village. Falling within a protected nature area, this convivial family-owned winery is known for its state-of-the-art technology and its four wine labels – three of which are based on the local Mavro (or ‘black’ grape) and the spicy, nutty indigenous white Xynisteri grape. Towards the apex of the route stands the Tzelefos Bridge, constructed by the Venetians and located deep in the heart of the Paphos forest. Following the river back to the coast the route passes the villages of Ayios Nikolaos and Filousa, and enters Praitori, home of the Nelion Winery. Tours and tastings take place here seven days a week, with the quality of grapes a key factor in the delightful sweet wines for which this boutique winery is renowned. Focused on the production of limited quantities of superior vintages, Nelion uses the rare Moschato grape in a number of its wines, producing fewer than 25 000 bottles a year… Perhaps it’s worth snapping up a bottle or two to evoke the Mediterranean mood when you’re back at home?

Taking in winding trails and tiny hamlets as it heads towards the pine-clad peaks, the trail begins in Erimi with the Cyprus Museum of Wine. From the ancient drinking horns to the museum’s own exclusive wine line it’s the perfect stop to prep your palate… Route Four takes in 16 distinctive wineries. Between the villages of Vouni (one of the oldest wine-making settlements on the island) and Koilani, drop into the Vlassides Winery, known both for its breath-taking modern architecture and wines which encapsulate the rich soils and sun-washed slopes of the area. The award-winning Cabernet Sauvignons, Merlots, and Sauvignon Blancs are well worth a taste, and their experimental vineyards bode well for the island’s oenological future. Just a few kilometres further lies the Ayia Mavri Winery, in the very heart of wine country. So it’s no surprise that it boasts an impressive selection of award-winning vintages, replete with the flavours and aromas of the Mediterranean terroir. An afternoon glass of the Ayia Mavri Moschato, a deliciously golden semi-sweet dessert wine, is top of every connoisseur’s to-do list! Up into the shaded forests, the Krasochoria Route passes through the village of Platres: blessed with cool mountain breezes and rushing streams; home to the soaring Caledonian Falls. Back down the parallel valley, stop into the Argyrides Winery in Vasa. Home to four generations of winemakers, this winery is noted for its premium single vinyard wines, especially the Chardonnay and Maratheftiko varieties, and is considered one of the most beautiful wineries on the island with its bleached stone walls and impressive cellar.

COMMANDARIA ROUTE
Wine Route Five is a journey through history, and a must for guests of the Elias Beach Hotel. Circling through Limassol town and taking in four notable wineries en route, it incorporates both the Sanctuary of Apollo and the Kourion Amphitheatre: captivating pit stops on the roads of yesteryear. Ages old, and with a flavour as rich as history itself, Commandaria is unique to the island of Cyprus. This sweet dessert wine is believed to have won the first ever winetasting competition; evidence of its production dates back to 5000 BC! Its current name, however, came a little later, bestowed by Knights of St John who planned their crusades from a ‘command’ centre at Kolossi in the Limassol region… The route officially begins at the imposing Kolossi Castle, set amongst the valley vineyards and built in 1454 by the Knights Hospitaller. Running through the protected wetlands of the Kouris Dam, the route first takes in the Menargos Winery in Monagri (offering a variety of excellent table wines in addition to its traditional Commandaria) and the village of Doros, site of the community-run Panayiotis Karseras Winery. Set amongst the sun-bleached stones of Ayias Mamas is the Revecca Traditional Winery, whose restored farmhouse boasts a wine museum. Known for its excellent Commandaria, the village also produces an exquisite zivania. Heading east, the route passes through Zoopigi (home of the award-winning Anama Concept Commandaria and the Commandaria Historical Museum), before making its penultimate stop in Kalo Chorio (or the ‘good village’) at the Co-operative Vinegrowers Company. Situated between the ancient cities of Amathus and Kourion, Limassol’s past is inextricably linked with the nectar of the gods. The island’s major wine companies are based in the city, and each September sees the town host one of the most sensational wine festivals in the world!

Route Seven, the Mountainous Larnaca-Lefkosia Route, crosses the hilltops before plunging into the hotter, drier central plains; a short hop for guests of Ayia Napa’s Olympic Lagoon Resort and Olympic Bay. Starting at Skarinou, the first stop is Lefkara known worldwide for its intricate lace and exquisite silverware. The village is also home to the Ktima Dafermou Winery, which joins new and old world aesthetics in a blend of oaky reds and bright whites and hosts an enchanting visitor centre. Heading up into the hills, the Ktima Christoudia Winery is situated just outside the village of Vavla. Offering vineyard tours, a peek at the wine cellar and wine tastings throughout the year, the winery is lauded for its excellent Maratheftiko rosé, and also produces its own sujuko a must-try local dessert made from grape juice and almonds. Still climbing, the road travels through a host of charmingly timeworn villages, including Fikardou: a medieval settlement which is now a protected World Heritage Site. Route Seven often mimics the network of ancient Roman roads in the area: Odou village takes its name from the word for road, and is a picturesque break in the itinerary. Just a few miles on lies Kalo Chorio Orinis, site of the Aes Ambelis Winery, which may lie beyond the borders of traditional wine country but nonetheless produces a wide variety of unique quality blends. Ending in Nicosia (beware the spelling: the city is also referred to as Lefkosia), Route Seven traverses the sun-soaked sedimentary plains to end in the capital. And while the city has been far less involved in the wine trade than its coastal cousins, it does feature a plethora of well-known wine bars. The perfect place to taste the fruits of your journey!

Weddings are sacred and magical: the day when you and your partner make promises to embark on your life journey together. It’s the one day you will remember for the rest of your lives and so, naturally, it deserves to be perfect. NOTHING LESS THAN PERFECT Olympic Lagoon Resort (Paphos) ‘Angel’ Elena Kaourou works out of an elegant wedding office which she shares with fellow planners Gina Vassiliades and Christala Nicolaou. It’s a place where excited couples can see their vision come to life: cakes, sashes and table runners decorate the room, and a table packed with thank you cards stands proudly in the corner. The appreciation emails, cards, and bouquets bring smiles to the coordinators’ faces! “It’s important that our team has respect and loves what they do, it’s a job that you need to love. You need to really feel it, that’s what makes the difference between a good wedding and a wedding memory that will last for the rest of your lives,” Elena explains. A walk around the vast grounds showcases the wedding venues for which the hotel is renowned. From the beguiling Olympian Sunset to Captain’s Deck (a private romantic setting located above its own small lake, overlooking the gardens); to the Seven Orchids (a serene venue next to the waterfalls, where guests can enjoy the evening to sounds of falling water) or the Blue Lagoon Pool Bar – under the stars and with stunning views, romance is always in the air.

TENDER LOVING CARE Meet Chrystalla Savva and Elisa Kasiouli from Alexander the Great in Paphos, experienced professionals who believe that a little human warmth, love and sunshine makes this special day unforgettable. The hotel’s dedicated wedding venue is the ‘Unity Terrace’ - a private lounge in a secluded part of the hotel with spectacular sea views. Every coordinator’s day begins with emails, with most of the contact online or via phone. Whilst some couples start to plan their wedding three years in advance, others leave themselves just three days. But once the date has been set, the fun begins: choosing music, flowers, decorations, food menus, colours, schemes and themes! Often the couple arrives brimming with their own ideas. “The great thing is; every wedding is different,” Chrystalla enthuses, adding that requests have ranged from the romantic and traditional, to the elaborate and dramatic, including full-on film themes, character costumes, and even surprise dance routines. Couples are often a little anxious initially, but once they’ve had the pre-wedding meeting, they tend to relax. They can then lie by the pool and soak in luxury without needing to worry about calling the florist; Chrystalla takes care of everything. “Sometimes, I’ll perform a wedding rehearsal on the day for the more nervous guests; I walk them through everything step by step; after this they’re happy. I’ll even start the music, grab the bride by the hand and walk her down the aisle,” she laughs. AN UNFORGETTABLE WEDDING DAY at the Alexander the Great in Paphos is guaranteed with Chrystalla and Elisa.

Chrystalla smiles as she recalls one of her favourite weddings. “One particular couple made me feel like a friend. After the wedding we actually became friends. We exchange messages all the time. When they told me that they’d had the best day of their lives, I felt special to have been able to be part of it…” A unique rapport between ‘Angels’ and couples which is commonplace at Kanika.
PRECISION PLANNING IN HARMONY is all part of the job for Sally, Charlotte, Konstantina and Tyler at the Olympic Lagoon Resort Agia Napa.
SEAMLESS SOPHISTICATION Olympic Lagoon Resort is one of largest hotels in Ayia Napa and amongst the most diversified resorts in Cyprus, with four wedding planners and a team of executive chefs, banqueting staff, florists, photographers, musicians and beauticians working tirelessly to arrange their beautiful weddings. Sally Payne has been coordinating weddings for seven years and sees her role as a privilege. “I love organising and planning, as well as working with each couple to help them realise their dreams. We’ve got one chance; the pressure of the job really is that we have to get it right,” she says. The team – which also includes Charlotte Clancy, Konstantina Katsantoni, and Tyler Christy – work seamlessly together to ensure that every detail is covered. “We act as one, and each of us is involved in the execution and the planning prior to the couple’s arrival.” It all begins with an outline: a detailed brochure is sent to couples, giving them a choice of options of banqueting menus, venues, table decorations, floral arrangements, wedding cakes, beauty packages, entertainment, transport (from vintage cars to open-air buses), firework displays, and even caricature
artists. Then the team will tailor all of these elements to each individual couple. The hotel has two stunning, licensed outdoor venues for the ceremony: The Aphrodite (a small intimate venue with pretty thatched-style roof, located near the adult’s only pool) and the Olympian Gardens, which is an extremely private venue. “It has wow factor,” Sally explains. “it’s special. We’ve hosted hundreds of weddings in this venue, and yet we still feel its unique atmosphere each time we step down into it…like a peaceful, sunken secret garden.” With a variety of cocktail receptions, banquet and party areas for the special day, as well as adult-only accommodation, pools and bars, and mixed areas, it all makes for a perfect wedding and exclusive holiday for all! Sally recalls a particular memory with delight: “One couple brought sunglasses for the wedding group. Men wore one colour, women another, and the bride and groom wore black and white. The photos were amazing!”

COMPASSION IS PASSION Lydia Melinioti is the coordinator for international weddings at Elias Beach Hotel (Limassol), which offers one wedding a day and a gorgeous little blue and white on-site ChapelSt. Elias for Anglican weddings. As with the other hotels, the Elias celebrates Civil Weddings, Symbolic Weddings and Renewals of Vows. With six venues available for ceremonies, including the breathtaking Sunset Pier – a unique al fresco setting on the sea with enchanting sights and sounds; simply perfect at sunset! – along with five cocktail receptions, six dining venues and two for parties, guests are spoilt for choice. “There’s a lot of hard work in this job, but I absolutely love what I do,” says Lydia. “I’ve always wanted to be a wedding planner. Ultimately, you’re planning the best day in somebody’s life; it’s a very positive experience.” She explains that coordinators need to possess patience, flexibility of mind and the ability to keep calm – which Lydia often achieves by relating to the couple’s experiences: “I’m always telling the brides that I know exactly how they feel because I’ve been through it at my own wedding, and this helps them relax.” The food is also an essential aspect of the day, and each hotel has its own banqueting team specifically for weddings. With many options available – from Cypriot Meze to vegan to special barbeques – guests are assured of the perfect taste. “We’ll take any food ideas and discuss with the chef what’s possible, we’ll find a way wherever we can,” Lydia ensures. WEDDINGS AT ELIAS BEACH in Limassol are carefully coordinated by Lydia.
With so many couples returning, the hotels offer a wedding anniversary package for the first anniversary. The couple receives a complimentary candlelit dinner on their anniversary night, and at times, an upgrade and gifts. “It reflects how happy they were that they wanted to come back and reconnect with such a positive experience in their lives, something that the hotel and the staff helped to create,” Lydia discloses. She smiles as she recounts her most memorable wedding. “A couple of years ago, we had a ‘Mamma Mia’ themed wedding. We even arranged for a donkey to take the bride down the pier. All the décor was whites and blues, with a Greek island theme. It was gorgeous!”

THE LITTLE MONSTERS Kids’ Club gang make every day an adventure.
By the end of your stay, your child will be able to tell you all about their new friends: how Bella loves ballet, Zorba is the ‘cool guy’, and Murray is the leader! Environmental day, dressing-up, toys, board games, party games, films, and child-suitable computer games are just some of the wonderful activities on offer from 10am – 11pm in three time slots. Parents may wonder why the club is split into three sessions with breaks in between. As part of our strict Child Protection Policy, we completely sterilise and sanitise the premises during this time, and wipe the kids’ computers clean of all data. A TEEN DREAM
The Olympic Lagoons are pioneering in their realisation that teenagers are too old for the kids’ clubs, and too young (or cool) to join in with the other activities. As such, we have created a funky place for them to call their own at both resorts in Ayia Napa and Paphos. The purpose-built Teenz Club fulfils all the leisure demands of today’s teenager, with its neon lights, lounge areas and gaming sections. They won’t believe their eyes when they see the latest in gaming technology, soda machines, computers and beanbags. And with makeover and cheerleading sessions, discos and other fab activities, there is ample opportunity to interact and socialise with other teens. So what’s new this year? As well as all the latest games for PlayStation and Xbox, which are updated every year to include those that are hot off the press, your teen will be thrilled to find the PlayStation VR (Virtual Reality Headset for PS4) in the club! The club is open from 10am – 11pm each day, and all computers are thoroughly wiped of all data after closing, whilst adult websites are permanently blocked. And as much as the youngsters may protest that they don’t need supervision, our Teenz Club staff are always on-hand, making sure they are indeed supervising, but as friends who are part of the gang!

OUTDOOR ACTIVITIES are an opportunity to try something new.
A RECIPE FOR STARDUST!
As the lights dim, the music starts and you feel the expectation in the air, you could be forgiven for thinking you were watching a West End musical production. This is Thriller… Kanika style! Guests at all Kanika hotels will enjoy watching an adaptation of the hit Michael Jackson ‘Thriller’ musical this year, and will soon realise just how high the calibre of the Allstars is.
HIGH OCTANE PERFORMANCES
keep the audience captivated!
Whilst based on the original musical, the production has been given a sprinkling of Kanika stardust to make it a unique show you won’t experience anywhere else, complete with elaborate costumes, lighting and special effects… and the impressive vocal and dance talents of a polished Allstars cast. In addition to the evening show itself, your experience begins with a pre-show of comedy or music, ranging from rock numbers to excerpts from other beloved musicals. And when the show has concluded, you’ll no doubt wish to linger for a dance, or soak in the electric atmosphere the performance leaves behind. For those who enjoy a more relaxed vibe, each hotel has an adults-only bar where the entertainment is more acoustic, rooted in the singer/live musician concept. This includes vocalists, jazz music and classical instrumentalists. Whilst each hotel has its own venue with a unique, elegant character, the entertainment quality at all is of a standard for which you would expect to pay premium ticket prices to experience in a cultural setting. Simply put, this is hotel entertainment redefined!
OUTSIDE & POOLSIDE
Whilst the Kanika Allstars certainly know how to give their all on stage, they are equally active when it comes to the hotel’s outdoor activities and entertainment, bringing their larger-than-life personalities to a varied programme. Entertainment outdoors is split between activities that can be enjoyed in teams and with gusto, and those that are more laid back and less interactive, varying in options depending on which hotel you are staying at. The activities take place every 30 minutes so you can never miss out – just look for the bright pink t-shirts of your Allstars team, who are adept at making guests feel confident and welcome enough to take part in something new. If you have never tried Zumba, Yoga, water walking, aqua aerobics, Killer Darts, water polo, water volleyball, table tennis, quizzes or archery before, a stay at Kanika Hotels may be the perfect opportunity to give them a go. And if you need a little bit of easing in, the Allstars are always happy to sit and have a chat with you, assist you as a beginner, or partner up with you for a game. New this year at the two Olympic Lagoon Resorts is the Olympics Soccer Academy (OSA), operated by UK FA-qualified instructors, with training for three different age groups taking place five days a week.

PAINTING PICTURES OF CULTURE, LANDSCAPE, HISTORY AND TRADITION, ART CAN OPEN WINDOWS TO OTHER DIMENSIONS, AND OFTEN THE CREATIVE MINDS BEHIND THESE WORKS ARE EQUALLY FASCINATING.
BEHIND THE CANVAS
At Kanika Hotels & Resorts, we enhance the guest experience in a variety of ways, aiming to provide a comfortable haven where our guests can rest and relax. We tantalise the taste buds with a well-rounded selection of Food and Beverage options, and we ensure our interior spaces are both beautiful and visually stimulating, adorning our walls with unique works of local Cypriot art. We take great pride in curating these stunning pieces, created especially for our hotels by some of the island’s most renowned and respected artists, including Andreas and Michalis Charalambides, John Corbridge and George Skotinos. Not only do these bespoke pieces help to further beautify the inside of the properties, they also serve to open a window onto the many intricate and subtle cultural, historical and environmental elements that shape this island.
WORLD-RENOWNED LOCAL ARTIST ANDREAS CHARALAMBIDES, in front of his ‘Aphrodite’s Birth’ painting at the Alexander the Great Beach Hotel.
Whether or not you’ve yet had the time to admire the artwork around the hotels, taking a moment to glance at the walls around you will present a unique opportunity to both indulge your inner art aficionado and also gain a deeper understanding of the creative background of Cyprus. But sometimes simply appreciating a painting or a work of art by looking at it isn’t enough. Sometimes you need to hear the story behind the painting from the artists themselves, and even learn a little about the person who dreamt the work into reality… So, in order to encourage a spot of art appreciation we’ve interviewed a number of local artists whose work decorates your home-away-fromhome, to give a bit of extra insight into the personal history, influences and experiences behind these creative masterpieces.

MEET THE ARTISTS
MYTHOLOGICAL INSPIRATIONS
Despite his reputation as one of Cyprus’ most highly-respected artists with a prolific career both on the island and internationally, Andreas Charalambides’ start in the art world was not exactly as one would expect. Born in a small village outside Paphos, Charalambides wasn’t introduced to the wonderful world of art until the age of seven, when his family moved down to the centre of town. Recounting the story of his first art lesson, a noticeable twinkle comes to his eye, betraying the deeply emotional relationship he has with his craft. “I remember the first time I was introduced to art. I was in my new school and they took us to the art studio. I had no idea what to do. When I started working, the students around me were staring at my painting and at me, until the teacher came and asked ‘Are you sure you’ve never done a painting before?’ From that day, I was hooked!” Today Charalambides is known for his figurative interpretations of historical Hellenic art and symbolism. Inspired by the Greek myths, his pieces are easily recognisable for their signature dreamy female figures, painted with an intoxicating freedom in which brush strokes dance liberally across the canvas. One work which perfectly embodies this unique postmodernist style is the ‘Aphrodite’s Birth’ painting – an impressive large-scale oil painting in the lobby of the Alexander the Great Hotel in Paphos. “I decided I wanted to make a mural about the greatest Paphos myth, the birth of Aphrodite. According to the myth, when Unlike his famous artist father, Michalis Charalambides Aphrodite was born and came out of the waves, 12 Olympians was born into an artistic family which supported and encovered her with a red and gold cloak, and took her to Olymcouraged the growth and development of his unique artispus, to the home of the Gods.” tic talents from a very young age. Andreas has a long history of creating unique artwork for the Initially following a career in interior design, in 1996 Kanika Hotels & Resorts; the founding father of the company, Michalis surrendered to his inner artist and began workMr. Theodosis Karaolis, being both an ardent admirer of his ing closely with his father. The practice paid off, and in work and a close personal friend. “The ‘Aphrodite’s Birth’ 2001 Michalis was chosen to represent Cyprus at the 8th piece was commissioned especially by my friend Theodosis international Biennale in Cairo. Since then he’s risen Karaolis, who passed away last year. He used to buy a lot of through the ranks, emerging today as one of the island’s my paintings,” Andreas recalls. most respected and accomplished artists in his own right, with a unique modern expressionist style and a focus on colour and shapes in space, rather than on imitating reality.
SEEING IN SHAPES & COLOURS
His main Kanika Hotels & Resorts pieces are on display at Olympic Lagoon Paphos and showcase his talent for landscape painting. Describing these two works, Michalis explains: “They are Mediterranean landscapes, painted in a kind of expressionistic way. They are not realistic, but rather like a fantasy.” Michalis uses shapes and painted palm trees naively to hint at the ‘Mediterranean spirit’ of the paintings. The round churches suggest the presence of people; however both landscapes are painted without figures – a signature of Michalis’ style. Preferring to paint more mysterious works which encourage the viewer to use their imagination, Michalis’ landscapes aim to inspire a personal journey. This concept of creative freedom and liberal imagination is something that Michalis lives by. “When I paint, I want to be free. I paint what I like in the hopes that the audience will like it. That’s it. I don’t paint to please an audience,” he told us. Michalis also expresses his freedom through his use of colour and composition, adding that he “sees and expresses in shapes and colours and space” and then bases his composition around a carefully curated combination of these elements.

COLOURFUL ABSTRACTION
Well known for his unique style, which seamlessly merges realism with a more abstract surrealist aesthetic, George Kotsonis endures as one of the leading painters of nudes and erotic works amongst Cypriot artists. His highly original pieces can also be seen in the Olympic Lagoon Resort Paphos, where they shed a unique light on the more intricate details of Cypriot culture and topography. Born in Palechori, Nicosia, Kotsonis studied art in London (UK), Beijing, (China), and Prague (Czech Republic), forging a career as a respected painter that led to the honour of receiving the ‘Tefkros Anthias - Theodosis Pierides’ award for artistic contribution in 1993. Take a stroll down to the spa at Olympic Lagoon Paphos and you will find a magical painting of the iconic Paphian landmark Petra Tou Romiou (or Aphrodite’s Rock) where, according to mythology, the Goddess of Love, Aphrodite, was born. Although the work is wistfully simple in its depiction of the infamous coastline, his soft, almost surrealist use of light and colour lends itself to the element of fantasy, serenity and other-worldly mythology of the area. Without portraying any figures in the painting, the artist encourages viewers to use their imagination, telling a story of revered mythology through symbolism and suggestion rather than direct fact.
CONTEMPORARY SYMBOLISM
Cyprus has long been an inspiring destination for foreign artists who find their creativity flows freely when stimulated by the unique light, spectacular natural beauty and vivid colours of the island. One such artist who has adopted Cyprus as his muse was Sheffield-born John Corbridge, who passed away in 2003, leaving an undeniable legacy of wonderfully bright, dynamic, and lyrical artwork. First travelling to Cyprus in the early sixties in search of a climate warmer than Sheffield, Corbridge quickly acclimatised to island life. Those who knew him spoke with admiration of his fluent grasp of the Cypriot dialect and his fluid integration into the local community. And indeed, the influence of Hellenic culture, history and tradition is immediately obvious in his work.
RECOGNISED AS ONE OF THE MOST ORIGINAL ARTISTS OF HIS TIME, John Corbridge created a collection of impressive works for Olympic Lagoon Paphos.
Today, most of Corbridge’s Kanika Hotels & Resorts commissioned pieces can be found in the public spaces at Olympic Lagoon Paphos and at the Elias Beach Hotel in Limassol. These vibrant works are indicative of his characteristic use of bright colours and unique compositions, and show just how strongly his work was shaped and guided by the aesthetic of the Mediterranean. Iconic ancient Hellenic artefacts are depicted against vivid backgrounds, distorted into quasi-abstraction, yet still giving away subtle hints and references to a culture deeply rooted in spirituality, religion and the sacred. Refreshingly dynamic and full of a positivity that bursts from the canvas, there is a distinct feeling of freedom in these works, unbound, unrestricted and full of a poetic licence which flows across the canvas with ease and grace.

EUROPEAN CULTURE CAPITAL
TEXT BY ALEXIA EMILY EVRIPIDOU MILLETT
Each year the European Union awards the title of European Capital of Culture to two European cities, who then assume the responsibility of celebrating arts and culture through a yearlong programme of events with a strong European dimension. In Cyprus, that unique programme of events has been given the title ‘Open Air Factory’, highlighting both the historic Paphian tradition of hosting events in the great outdoors, and also celebrating the spirit of openness that encapsulates the programme and the whole year. According to Communications and Marketing Officer, European Capital of Culture - Pafos2017, Anastazia Anastasiou, Paphos won the title because it used its disadvantages – such as the fact that the city doesn’t have theatres or halls to host big events. Instead, this year the city will be transformed into a real life open-air factory, with events at a selection of extraordinary locations. “The concept of the Open Air Factory is that everywhere you go in Paphos and every event you attend, you’ll have the opportunity of experiencing something totally unique at a unique location,” explains Anastazia. Who she believes that even for those who don’t make it to any of the fantastic events, just soaking in the atmosphere of Paphos itself and experiencing its rich culture and creative buzz first-hand provides a unique souvenir or memory of the city to take back home. As one of the key hospitality sponsors of Pafos2017 European Capital of Culture, Kanika Hotels & Resorts is both proud and honoured to help the organisation in its mission to offer unique experiences, leave a mark on the city, promote local and international culture in Paphos and bring the region to the fore as a creative hub on the island. In a bid to help you, our guests, make the most of the exciting year of events and activities planned under the auspices of Pafos2017 European Capital of Culture, we have put together a list of six not-to-be-missed festivals, concerts and events which we believe offer an immersive experience both Cypriot and international culture.

HIGHLIGHT OF THE SUMMER
If you happen to be in Paphos on July 1, make sure you get down to the Paphos Harbour to experience the Pafos2017 Summer Highlight event, ‘Eternal Voyages’. The event will see the harbour transformed for the evening into an impressive outdoor stage for a line-up of one-of-a-kind spectacles uniting music, technology and the performing arts. “Sea, Earth and Sky will come together in this multi-spectacle of events around the whole area of the harbour,” says Anastazia. “With boats coming in from the sea to participate in the entertainment, and a display of special effects and visual projections will light up the harbour.” The theme of the event is the narration of the history of travellers – from conquerors to refugees and pilgrims to migrants – since ancient times all the way up until the present day. According to Anastazia, the event will be visible all across Paphos, so instead of hearing the music and seeing the lights from afar, why not head down to the castle area and the harbour and soak up some of the high-octane energy at what promises to be the event of the Pafos2017 summer calendar.
RURAL FESTIVITIES
Another event that already has a firmly established place on Cyprus’ annual cultural calendar is the popular Animafest – a four-day celebration of cutting-edge animation and the visual arts, which takes place in the picturesque village of Kouklia. “The annual countryside Animafest is so relevant to celebrating art and culture in Cyprus,” explained Anastazia. “It offers a variety of animations from different countries and takes place in Kouklia, which is a very interesting place to visit.” Now in its 16th year of operation, Animafest offers a full itinerary of workshops, screenings, live music performances and on-site food and drinks. This year, the festival will be held under the theme ‘Views of the World’, and will unite the Mediteranean animation scene with the unique animation art of Japan, partnering with EU-Japan Fest to present screenings of Japanese animations and an exhibition of Japanese engravings. And although the festival promises to bring audiences some of the best contemporary animation films from around the world today, it is the unique location that makes this event so special and different. The traditional village of Kouklia is a stunning example of authentic, rustic Cyprus. Visitors to Animafest, will also have the unique opportunity of experiencing the village and soaking up its natural beauty, scenic views and unpretentious rural atmosphere. The festival will take place between June 24 and July 1. For more information or tickets visit the festival’s website at www.animafest.com.cy.

MAGICAL ATMOSPHERE
One of the great things about Paphos being awarded the European Capital of Culture title, is that it offers up the perfect excuse to invite world-renowned international acts to Cyprus. One of these acts is the Yamato Taiko Drum Ensemble, who will travel to Cyprus all the way from Japan to perform a once-in-a-lifetime spectacle of traditional drum music and dynamic dance routines. Described as a magical atmosphere by those who have already experienced the explosive energy of the Yamato Taiko Drum Ensemble, the group use a range of different traditional Japanese drums to create a pulsating beat that – like a heartbeat – represents the very pulse of life. Combined with perfectly coordinated, high-energy choreography, the show promises to thrill audiences, with its passion, soul, vibrancy and physical strength. Organised in collaboration with the EU-Japan Fest committee, the free event takes place on June 30 from 7pm until 9pm in the 28th of October Square.
EUROPEAN CULTURE CAPITAL
MUSIC WITH APHRODITE
This year, the Paphos Capital of Culture 2017 is presenting Petra tou Romiou as its never been seen before, with the first ever musical concerts taking place on a stage built in the water surrounding the rock, on August 4 and 5. “One of the main reasons the Moon and Stars event is so attractive, is that it is the first time an event of this type has taken place at Aphrodite’s Rock,” said Anastazia. “It’s very atmospheric. It’s a place with a long history and I’m sure many people will come, not only because of the amazing musicians, but because they want to experience the event at that specific location.” On August 4, from 8.30pm, the stage will be graced by well-known Acordes Guitar Ensemble, playing music from the Mediterranean, Levant, Egypt, Latin America and Cyprus, followed by famous Greek folk singer, Eleftheria Arvanitaki, who will play her unique lyrical adaptations of ancient and modern Greek poetry from 10pm. On August 5, the night will kick off at 8.30pm with popular local band The Amalgamation Project borrowing sounds from traditional Balkan songs and Mediterranean melodies. World- famous musician and composer, Goran Bregovic will take the limelight at 10pm, with his Weddings and Funerals band, fusing the traditional brassy sounds of the Balkans, with Bulgarian polyphonies, and influences from Orthodox, Roman Catholic and Muslim hymns and prayers.
Tickets can be bought for either day at a cost of €20-€25 for August 4 and €20-€30 for August 5. Tickets for both days cost €50.
MOVIES UNDER THE STARS
We’ve all heard of outdoor cinemas, but have you ever watched a film on the beach? Seefest festival offers an outdoor cinema experience, right on the beach, with the sand under your feet and the sound of the waves lapping gently on the shore. “Seefest has attracted many visitors to Paphos, both from Cyprus and abroad, since it first started in 2015,” says Anastazia. “You can see why. Its next to the sea, you can bring your swimsuit, and you have the opportunity to watch a movie right by the water, on a sunbed. You are under the stars, it is summer and it’s a beautiful atmosphere.” Each year the festival follows a unique theme, such as music, gastronomy, people and cities. This year, the films all shine a positive and non-discriminatory light on cultural diversity, multiculturalism and human relations. The festival takes place on Paphos Municipal Beach from August 1-30. All screenings start at 8.30pm and are free of charge. Don’t forget your swimwear and beach towels.
EPICUREAN ADVENTURES
What better way to really immerse yourself in the local culture of Cyprus, than through the island’s rich gastronomic heritage and contemporary foodie philosophies. In Cyprus, epicurean traditions are taken very seriously, with many of the island’s national celebrations and holidays revolving around the preparing and sharing of specific local delicacies. In honour of the veritable smorgasbord of local produce both grown and made in the Paphos district, the European Capital of Culture 2017 has organised a special line up of gastronomic events for guests and locals, under the theme ‘Paphos Garden of Taste’. “This project falls under the community involvement programme,” explains Anastazia. “So we will have the participation of local wineries, gift shops and companies or individuals who make traditional Paphos delicacies such as loukoumia and soujouko.” These local producers will be invited to participate in a variety of activities, culminating in the Menu of the European Capital of Culture Pafos2017 festival, an open-tasting event, which is set to take audiences on an epicurean journey around Paphos, discovering local flavours, drinks, sweets, wines and spirits. Although the dates are yet to be confirmed, interested guests can find out more about the event by visiting the Pafos Capital of Culture website at www.pafos2017.eu.
