This year we earned the European Hospitality Award for ‘Green Hotel of the Year’, and rose in the TripAdvisor rankings all the way to the top of the list of Luxury Hotels Cyprus and Top Hotels for Service in Cyprus, among other awards. We are proud to host celebrities, dignitaries and high profile meetings, including the 2016 General Assembly of the European Hotel Managers Association (EHMA) which is being held in Cyprus for the first time. It is both a pleasure and an honour to welcome EHMA and to have the opportunity to demonstrate the beauty of Cyprus and all that the Amathus has to offer. In this issue we are glad to announce a series of renovations. This year, a number of personnel members attended training courses at the famous culinary school LeNotre in France, while the Amathus is participating in the international event “Gout de France”, which is the first actual demonstration of French cuisine’s recent listing among UNESCO’s “Intangible Cultural Heritage of Humanity”. M e d G r o u p meeting o f min d s In line with its role as the southeastern frontier of the European Union, Cyprus served as an appropriate meeting point for the 3rd informal Ministerial Meeting of the ‘Med Group’, which was held on 25-26 February 2106. The meeting was hosted by the Amathus Hotel and brought together the Ministers of Foreign Affairs of Cyprus, Greece, Italy, Malta, Portugal, Spain and the Minister of State of France. Other officials who were invited to attend were the Secretary General of the Union for the Mediterranean, Fathallah Similmassi, the EU’s High Representative of the Union of Foreign affairs and Security Police in the EU, Federica Mogherini, and EAS Deputy Secretary General for CSDP and Crisis Response, Pedro Serrano. The purpose of the meeting was to exchange views on critical issues affecting the European Union and its citizens, both in the Mediterranean region and beyond.

As the number of Amathus Health Club & Spa members continues to grow, the hotel once again held its annual
cocktail reception to thank members for their loyalty. The event took place in the recently renovated and glamorous Demetra Ballroom on 21 October 2015 and was attended by approximately 250 guests, offering them the opportunity to meet the management team, to mix, mingle and enjoy fine Amathus hospitality.

A mathus shines again Regardless of how many awards line the Amathus walls and shelves, every one is special; and the most recent industry awards included some particularly impressive honours. The Cyprus TimeOut Eating Awards, now in their 11th year, offer recognition in 15 different categories, from ‘Best Creative Cuisine’ to ‘Readers’ Choice’ and ‘Chef of the Year’. The fine award of ‘Best Wine Cellar 2015’ was granted to the Grill Room at the Amathus, the ‘territory’ of Cyprus champion sommelier, Alicia Tosoudis (see article on p.32). From a very different perspective, the European ‘Green Hotel of the Year 2015’ award recognised Amathus Hotel’s contribution to sustainable tourism (see article on p. 50). In the eyes of the international community, Amathus performed equally well, with a series of extraordinary accolades from the biggest online travel site, TripAdvisor. The hotel ranked 2nd among the ‘Top Hotels Cyprus’, and surpassed all others by ranking first in two categories: the ‘Top 25 Luxury Hotels Cyprus’ and the ‘Top Hotels for Service Cyprus’. Sincere thanks to guests who contributed to these results by sharing their positive comments, and congratulations to the Amathus team for their excellent work!

In response to guest requests for both low-calorie and vegetarian dishes, the Amathus has diversified Kalypso Restaurant’s à la carte menu during its last review, to offer clearly designated ‘healthy options’.
To make the most of the fresh and local produce, the newly added dishes are primarily inspired by Mediterranean cuisine. Healthy, tasty and simple, they are based on lean fish such as salmon and sea bass, grains in the form of crushed wheat and couscous, as well as legumes like beans and lentils, and fine touches of sunflower, pumpkin and sesame seeds. Fresh herbs like thyme and rosemary – among other favourites in the Mediterranean kitchen – are key flavour enhancers, while olive oil, known for its delicious taste and health benefits, is the only fat used in these recipes.
Executive Chef Savvas Savva shares his thoughts: “By nature, Cyprus provides al l the other healthy living factors: good weather, the sea, a comfortable lifestyle and the conditions for delicious fresh local produce. By adding a healthy menu, we hope to give our guests an overall body and mind health boost. That’s what we want them to take back home.”

B eating the cu l inar y c o m p etiti o n HORECA, the annual exhibition organised by the Cyprus Chefs Association, was held this year at the Cyprus International Fair premises in Nicosia on 26 to 28 February 2016. The three-day event is a showcase for all things related to the food and drinks industry, from raw materials to food products and all equipment for the hospitality industry. Running alongside the exhibition every year is the largest Pancyprian culinary competition. It’s an opportunity for Cyprus chefs to demonstrate their skills, and for exhibition guests to admire them. A number of Amathus chefs were among this year’s winners, bringing home the following awards:

With a finger on the pulse of culinary trends, every year the Chefs take a step back to objectively assess all restaurants, bars and their respective menus. What they ask themselves is: How could your dining experience be upgraded? At the Kalypso, the hotel’s main dining room, new live cooking stations have been introduced to the buffet to increase the number of hot dishes that can be cooked and served on the spot. Less visible but with very noticeable results was the investment in sound insulation to make dining indoors quieter and more relaxing.

During the main holiday season – June, July and August – the Pelican Family Restaurant will occupy a corner section of the Kalypso terrace. Colourful furniture, fun décor, and a specially designed child-friendly buffet are what parents on holiday dream of. Not only do children under the age of 12 enjoy free meals here, but they can also count on a member of the Pelican Kids Club to be around to help serve them, if necessary, so parents can enjoy their meal without interruption. And in case you were wondering, the buffet includes kids favourites, of course, as well as healthy options to help put them on the right track for the future.

Bearing Fruit Known for its distinctive perfumed aroma, Viognier is a French white-grape import that has long been cultivated in Kannaviou village in the district of Paphos. It is here that Ezousa winery, at an altitude of 400 metres, takes advantage of the lower temperatures and higher solar radiation that result in more concentrated flavours. Their 2014 vintage holds a complex scent of apricots, peaches, violets and orange blossom which is carried through upon sipping. It magically combines the qualities of a fruity character and a round, creamy texture, making it ideal for dishes with sauces. Alicia says: “Due to its low acidity, Viognier best accompanies lightly spiced curries and tomato-based pasta dishes. At the same time, its full-bodied nature works well with the rich shellfish or salty-crust fish fillet served at our Limanaki restaurant.�

Nature’s Nectar Incorporating different varieties is common practice in the world of wine-making, but many producers remain loyal to the indigenous varieties that took root in Cypriot soil approximately 4000 years ago. Xynisteri is the most widespread white grape variety of the island with over 50% of such vines located in the Paphos region. It is blended with the red mavro grape to produce the dessert wine Commandaria and is the base of the local spirit zivania. “The dry limestone terrain provides suitable conditions for its cultivation, and many wineries partly age the wine in oak for greater body,” says Alicia. The ‘Expressions’ wine range produced by the Vassiliades winery includes their take on Xynisteri, a light to medium-body wine where 20% of the wine passes through the oak barrel. Its soft acidity together with aromas of green apple and nectarine best accompanies strong cheeses or seafood dishes such as seabass and shellfish.

At First Blush Although rosé was once dismissed by aficionados as a lesser wine, in recent years it has evolved into a summer favourite for every occasion. In particular, the respected Syrah (Shiraz) red grape of southeastern France produces a powerfully flavoured rosé with an intense pink-coral colour. ‘Mystis’ is the brainchild of an up-and-coming Paphos winery named ‘Oinou Logos’, and its collection includes an elegant ‘off-dry’ Syrah rosé. This translates into a slight sweetness in every sip that complements the salty flavours of sushi and a full body that envelops the lightness of seafood or fresh salads. Both Syrah and Viognier are among the several grape varieties that originate in France’s Rhone Valley – a region with a Mediterranean influence on culture and climate – and are now embedded in Cypriot agriculture. “With its long and warm summers and relatively low rainfall, Rhone’s grape types are now fundamental to wine production in southeastern Europe,” says Alicia.

Lady in Red The grape has long been labelled the queen of fruit in general, but in terms of the red types, Mourvèdre arguably reigns supreme. Thanks to its potent aroma and full body, it is often blended in rosé and fortified wines such as port, but is best appreciated as a standalone libation. “Argyrides Winery in Vasa, a village north of Limassol, was the winery that initiated its cultivation on the island, and several labels have followed suit,” says Alicia. Their 2011 vintage is worth savouring for its smooth tannins and fruit-forward bouquet of blackberry and blueberry aromas. Its overtones of mint and black pepper create a rustic taste that suits earthy vegetables like mushrooms, or dark meat dishes such as steak, game or cured delicacies.

Craft in Crimson Maratheftiko is the name of Cyprus’s traditional red grape since the 19th century. Its production is a tricky endeavour due to the stubbornness of the vine. But when well understood, it can produce a range of medium- to well-bodied wines that do not require the influence of oak maturation. “It occupies only 3% of the island’s vineyards, but the planting of spourtiko white grapes next to the Maratheftiko cultivar has helped with cross-pollination and maintained its longevity,” explains Alicia. One winery that has succeeded in the challenge is award-winning Zambartas just outside Ayios Amvrosios. “It boasts an inviting aroma of pomegranate and violet, and when it meets the palate, flavours of chocolate and forest fruit linger profoundly,” says Alicia. In keeping with custom, any dish of spring lamb – whether grilled, slowcooked or braised – marries beautifully with this Cyprus classic.

Planning a short getaway used to be a quick, easy and simple process. My wife and I would aim for a hotel with positive reviews and best valuefor-money, while also ensuring luxury comforts were included – great view, comfortable bed, good WiFi, quality dining and leisure options. Nowadays it’s not that simple. Why? Well, in early November last year we welcomed our son, Alexander, into the world. While we still included the above criteria into our most recent hotel search, we realised there were what seemed to be an infinite number of other things we needed to look out for – all under the banner of “Is the hotel family-friendly?” It may seem like a simple Yes/No question, but the reality is quite different, and that one question triggered several others. What in-room facilities for children are, or can be, included? Is there a Kids Club? Are there any family swimming pools? What about child-friendly food and drinks? Is it easy to get around the hotel with a stroller? The investigation began, and it led to the Amathus. M OD E R N C O N V E N I E N C E What really stood out about Amathus Limassol was its genuine willingness to ensure parents, families, really do enjoy their holiday and are as comfortable as any other guest would be. On their website I spotted the ‘select your customised amenities’

button which provides an option for parents to select a whole host of items. After filling in a simple form requesting details like arrival date, child’s name and date of birth, I could then choose from a big selection of items that are most definitely needed for any family visiting a hotel. There was also an option to choose the quantity and indicate what day during my stay these items would be needed. Items like baby formula, a steriliser, bottle warmer, nappies and changing facilities, a bathtub, shampoo and highchair were among the items I requested. This service is definitely a lifesaver for families, as we would otherwise have needed to bring our own items which would have taken up so much luggage space. On top of that the hotel ensured that the products and brands we personally prefer for our child were provided. “When somebody goes on holiday they want to have a stressfree holiday,” commented Marinos Shaxiates, Sales and Marketing Manager at Amathus Beach Hotel Limassol. “We know that parents travelling with children feel like they have to take the whole house with them. The idea behind the ‘customised amenities’ form was to provide the everyday basics. We want our guests to truly feel like they are on holiday from the moment they arrive.”
LOOK I N G T O T H E F U T U R E Perhaps with my protective father instinct kicking into full drive, shortly after checking in and settling into our spacious seaview suite, I decided to take Alexander for a spin in his stroller to see the child-friendly facilities around the hotel firsthand. We quickly came across the Pelican Kids Club which is Worldwide Kids Company (WWKC) approved. WWKC is a professional resort childcare training specialist and a leader in hotel childcare management globally. “With their expertise we created a programme with fun and educational activities,” Marinos said. “All our Kids Club staff have been trained by WWKC.” Designed in compliance with the highest safety regulations, there is a colourful and fun indoor playground with soft play area. Outside the Kids Club the family pool has a special touch: a transparent glass wall so parents and kids can keep an eye on each other and feel more comfortable and secure. Two water slides and a fun slide in the water for toddlers are all kids need
to have fun and stay cool in the summer sun – and a lifeguard is on duty, for added peace of mind. Next to the family pool we discovered the outdoor playground and a beach section especially for families. It felt like a mini family heaven to me! U N FO R G E T TA B L E M O M E N T S Approaching the beach to get a closer look at it, I soon realised that it was the very first time my son and I together would see the waves, the sand, children building sand castles and people swimming. “The water is really shallow up to a point so it’s a safe beach for kids, with child-friendly beach toys and big umbrellas to protect them from the sun. Plus, the area is fully supervised from the morning until sunset,” Marinos explained. Soaking in the moment, I looked around and saw other fathers with their children and how happy they were in their surroundings. I knew at that moment, if it wasn’t already obvious, that this place, this hotel, provides an ideal setting to create lasting unforgettable memories, together, as a family.

Like most luxuries, the green ones also come at a cost, payable in either time or money. But it’s an investment that pays off, both in hard and environmental currency. Sotiris Ioannou, the hotel’s Chief Engineer, is proud of his precious baby: the central geo-exchange and heat recovery system in the basement engine room. Installed in 2009 at a cost of €740.000, it is an underground wilderness of water tanks, pumps, pipes and chillers. Although the laws of physics behind them are no secret, and Sotiris is happy to explain them, the bottom line is what’s really remarkable. With the help of sea water that passes through the system and flows back into the sea, this feat of engineering significantly reduces the energy required for air-conditioning and heating, as well as heating pools and running water. Savings in electricity and heating oil correspond to an annual reduction of CO2 emissions in excess of 1200 tons, making a significant contribution to environmental protection and sustainability. Energy conservation is only half of the story. Given the water scarcity in Cyprus, the hotel’s on-site seawater desalination plant secures the needs of guests and allows the hotel to

maintain the beauty of the lush gardens. Also operating since 2009 and with a price tag of €280.000, it has a capacity of 250 tons of water a day. Sotiris did the math: the plant covers 80% of the hotel’s annual water consumption. He says: “We do not compromise the high standards our guests expect. In fact, the desalination plant ensures a consistently high quality of water. We are the only hotel in Cyprus and one of the very few in Southern Europe that have such systems.” Green luxury indeed. To keep an eye on current eco-friendly measures and new opportunities, the Amathus appointed an ‘Environment Committee’, with Duty Manager Antonis Kyriacou as its Project Manager. He says: “There is so much we can do without any major investments, but simply by introducing a different way of doing things, new procedures.” And recycling is the classic example. This is where all members of staff join forces, from the offices to housekeeping and the kitchens. Waste separation, low consumption lighting, eco-friendly detergents – every department does its bit. Antonis pulls out a list and says: “Last year we recycled a total of almost 80 tons of glass, over 35 tons of paper, and just over 33 tons of plastic. Cooking oil, batteries and ink cartridges are also recycled, and we’re always looking for new measures that will help us achieve higher levels of sustainability. We’re currently working towards Travelife accreditation, which is much more than just recycling, and we expect to receive it soon.” S etting an exam p l e
The real beauty – and value – of a hotel with a green conscience is not only the reduced negative impact on the environment but also the increased positive impact on society, which is increasingly engaged in green initiatives. Limassol has a fascinating nautical past – this is where Richard the Lionheart landed his crusaders in 1191 – and a vibrant present: it’s the place where kids learn to sail and professionals hone their moves. In fact, Olympic medallist Pavlos Kontides started his career just 10 minutes from here. OUT TO SEA You can hardly put out to sea without coming across a host of wakeboarders, windsurfers and divers. Further west an incredible new sport, kitesurfing, is taking over the beach at Paramali... Also known as kiteboarding, it may be classified as an ‘extreme sport’, but that doesn’t mean it’s not easy to learn. An aficionado for over a decade, Antonis Anthimiades has kited the oceans from the Atlantic to the Indian, but it’s Limassol he always returns to. Known locally as ‘The King of Kite’, he is frequently seen at Kiteboarding Cyprus School teaching residents and visitors. He says: “It feels as if you’re riding a wild animal. It’s both peaceful and powerful: there’s a freedom and an energy to it that you don’t find in other sports – you take your thoughts out into the ocean and you’re free. This, I think, is what draws people: the individuality, the speed, the pure energy. You can learn in as few as eight hours, and it’s a rush from day one. It’s as close as you can get to flying.” For those who prefer to remain on the surface, sailing is the big draw. With three major sailing clubs and the stunning new marina, Limassol boasts everything for the nautically minded. On any given weekend, you’ll see yachts heading for the horizon and flotillas of tiny boats bobbing in the shallower seas. Barely 10 minutes to the west of the Amathus Beach Hotel lies the Limassol Nautical Club, a founding member of the Cyprus Sailing Federation. It also hosts some of the best sailors on the island, thanks to its Sailing School and its Offshore Sailboat Racing division, both of which organise year-round classes. B AC K O N D RY L A N D Nicely nautical it may be, but Limassol isn’t all about the extreme marine. On an island offering such a wealth of flora and fauna, the Cyprus Tourist Organisation’s annual Walking Festival is open to anyone with a passion for nature and a love of the trail. Running from mid-March to the end of May, the Festival sees scores of people taking (very quietly!) to the surrounding nature trails, led by official guides who are able to point out indigenous species, historical sites and points of interest. Prefer coastal to cross country? Then take a look at the endless beach paths and specially constructed coastal walkways. The seaside walking path starts literally outside your door and extends almost continuously along the seafront. From young
families with pushchairs to dedicated athletes training for the Limassol Marathon, the path is always a hive of activity. Beginning at the ancient city of Amathus, the route meanders through Dasoudi Forest, past the old harbour and the 13th century castle, (stop for a Greek coffee, catch your breath!) before ending at Limassol Marina: probably the world’s most scenic journey through history. If life on wheels appeals, you can also bike the coastal paths. While the public bike-sharing system – which affords several pick-up points along the coastal walk – caters to families and day-trippers, more dedicated cyclists can rent road, mountain, hybrid, or e-bikes and have them dropped off at the hotel. “You can take a pleasant trip along the seafront towards Limassol Marina, stopping for a drink in the Old City or visiting the archaeological sites on your way,” says Mike Hadjioannou, founder of Bikin’Cyprus Adventures and a former member of the Cyprus national team. But it’s the nearby hills, he suggests, that are the best place for cycling: “There’s such a variety of terrain, especially around Limassol; something for everyone. I’ve been biking the area for over 30 years, and now I take my children out most weekends. There’s a fantastic network of routes, tracks and trails. The great thing about cycling is that you get to see a lot more of the town on two wheels,” he adds. “Plus it’s healthy and accessible to any age.” F I T N E S S FO R A LL While cycling caters to every age, crossfit is the sport for every level of fitness. An exciting new craze, this activity combines the best aspects of sports such as gymnastics, weightlifting, running and rowing. The idea is to use your own bodyweight to deliver an intense workout, and taking it at your own pace means this is an activity which can be pursued anywhere. Sprint along the waterfront (throwing in a few push-ups and squats) and finish up at Molos Park: there you’ll find a variety of specialised metal bars, designed with the sporting individual in mind. Everyone from the complete novice (practising, perhaps, a gentle stretch or two) to the fighting fit (endless pull-ups) can be found at Molos, making the park a blur of perpetual motion. Wherever you look, this town more than any other in Cyprus is bursting with activity. From the down-to-earth to those who prefer the glamour of the high seas, Limassol never fails to infect both residents and visitors with sporting enthusiasm. What are you waiting for?

Rugged snow-capped peaks in winter… colourful blooms peppering a lush blanket of greenery in spring and summer… crimson hues in autumn: Troodos is a year-round paradise that oozes captivating charm. “In the Troodos mountains, every season is so very unique, each beautiful in its own right. It’s a journey of endless discovery,” says Troodos Tourism Officer Constantinos Constantinou. The towering Troodos peaks, rising 1,952 metres above sea level, are accessible in less than hour from most spots around the island, making them perfect for an escape to the countryside, as breathtaking views and the fresh pinescented mountain air flatters the senses. Home to an expanse of forestland known as the Troodos National Forest Park covering 9,147 hectares around Mount Olympus, this area – often hailed as the ‘green heart’ of Cyprus – was formed 92 million years ago. The National Park itself sprawls across a significant part of one of the best studied ophiolites in the world, the Troodos Geopark
W i l d l i f e W o n d ers With rich flora at every turn, the Troodos National Forest Park is home to some 750 plant species. Among them, 72 are endemic to Cyprus, while 12 are indigenous to the Park which constitutes the main habitat on the island for a variety of hardy plant species like the foetid juniper, cotoneaster, barberry and wild service tree. To get better acquainted with the island’s many endemic species of plants and herbs, there’s nothing like a few hours spent exploring the Troodos Botanical Garden. Be sure to also keep your eyes peeled for the golden oak, the Cyprus national tree, an evergreen that grows on the rocky mountain slopes. The Cyprus cyclamen, the national plant of Cyprus characterized by pretty pink heart-shaped leaves, also grows on the steep mountainsides. Find out more by popping into the Visitor Centre of the Troodos National Forest Park, just a stone’s throw from Troodos Square. But it’s not just the flora that attracts attention in the area. Birdwatchers also flock to Troodos to catch a glimpse of rare and protected species soaring across the open skies, such as the Cyprus warbler, Bonelli’s eagle, the griffon vulture and the treecreeper. Without a doubt, visitors to Cyprus will at some point come across images of the Cyprus mouflon – an endemic subspecies of the wild mountain sheep that is widely regarded as the four-legged Cyprus flag-bearer. Although not quite at home in the Troodos forests, it might do you the random courtesy of wandering off track. Constantinou points out: “If you’re lucky, you may also spot a Cyprus mouflon at points closer to the Paphos Forest, especially near Kykkos Monastery.”

S cenic C o untr y R amb l es The best way to discover the area’s secrets is to follow the designated nature trails – classified from easy to expert level – to match the pace and stamina of avid hikers, keen walkers, and families. “The feeling of elation and wellbeing when you’re walking along the Troodos trails is almost indescribable,” saya Lygia Dermatis, Senior Tourism Officer at the Cyprus Tourism Organisation (CTO). “It’s that magic combination of fresh air, panoramic views, intense scents, the sound of the wind whistling through the trees, and an all-round feeling of peace.” With nine signposted nature trails within the Park periphery, you can take a brilliant journey into the past on the Artemis Trail (7km, 2-3 hours), boasting ruins of rough fortifications built during the final year of the Venetian occupation of Cyprus (1571 AD). The cicular route goes around the Olympus mountain peak (Chionistra) at an altitude of 1850 metres and provides spectacular views across the unspoiled landscape. The Atalanti Trail (14km, 4-5 hours) will also get your heart racing, starting at Troodos Square at an altitude of 1700-1750 metres. In this area filled with dense thickets of magnificent black pine, the oldest Cyprus juniper (800+ years old) stands proud in the vicinity. Cyclists have also been quick to note the satisfaction of a mountain bike tour, especially during the summer months when the coast is sizzling. The CTO has mapped out a 57km cycling path around the Troodos National Forest Park, complete with surface marking, signage and area maps. Although the route’s three

parts are classified as low-medium-low difficulty level, you should expect stretches of dirt track or gradients up to 10%. So be prepared for something more than easy pedalling, but rest assured that the views will be worth the effort. Before heading back to the coast, stop at one of nine picnic sites in the area for the rest and energy top-up you have earned. T he M ight y S p l ash Most of the largest streams of Cyprus (including Kourris, Kryos, Chapotami, Dhiarizos, Karkotis and Marathasa River) spring from the Troodos Forest; but a lesser known fact is that this park is home to a number of dreamy waterfalls, from the more popular Caledonia, to the somewhat underrated Millomeris, Chantara and Mesa Potamos falls. Hidden just north of Pano Platres and with water falling from a height of 13 metres, Caledonia is revered as the most beautiful of all. The 2km route towards the falls is rather special as you make your way through dense forest vegetation and clamber over slippery stepping stones across the Kryos Potamos (‘Cold River’). But it’s the Millomeris Falls – southeast of Pano Platres at an altitude of 980 metres – that are actually the highest and perhaps the most impressive on the island, cascading from a height of 20 metres.
Whether you spend a few hours or a few days exploring the Troodos National Forest Park, with or without a camera, the vibrant images etched in your mind will be among the most authentic impressions of Cyprus you take back home.
