Imagine Bonfire of the Vanities with a Maine plot and setting. Carolyn Chute’s new novel, Treat Us Like Dogs and We Will Become Wolves, is that kind of brilliant–full of mischief and a great holiday gift for readers who dare to scratch the surface of ‘the way life should be.’ While exposing the cult of fictional St. Onge, a debased settlement run by charismatic Gordon St. Onge and camouflaged by home schooling, it holds a mirror to each and every special one of us. As Kirkus Reviews writes, “In the scornful eyes of Gordon and other settlement members given voice in this polyphonic novel (which also includes the comments of extraterrestrial ‘grays’…), Ivy is a media lackey of the ruling class, alternately dishing out human-interest pabulum and scary crime stories to keep the masses frightened and passive. In a country that prefers to ignore the existence of social classes, Chute’s contempt for such air-brushing is bracing, as is her refusal to neaten up her decidedly flawed male protagonist’s opinions and actions. ‘There is only left or right down here among us crawling grubs,’ Gordon sneers. ‘[A]t the top…there is the unity of ideology.’” We caught up with Chute at press time with a few questions. As usual, she’s quicker with a quip than Oscar Levant. If you could go back in time and tell the author of The Beans of Egypt, Maine one secret you’ve learned about writing since, what would that be?

Don’t talk with the media. Do you like working with multiple points of view?

I certainly wouldn’t do it if I hated it. : ) Mainers report more UFO sightings than almost any other state. Why do you think that is?

Maine also has the most reports of bodies buried in cellars. I guess we’re special. Maine is so off the grid and on the fringe that we’re all fringe, aren’t we? Who among us is still normal enough to lay the keel on the boat?

Maybe fringers are normal, and obedience and “good” behavior are caused by a wicked virus. Maine specializes in dark comedy. How would you describe yours?

“I’ve been with this bookstore about 40 years,” says Susan Porter, owner of Maine Coast Book Shop & Cafe on Damariscotta’s Main Street, on the occasion of the shop’s 50th anniversary. “I’ve owned it since 1986, but I worked for the original owner for a dozen years before that. A shimmering example: The Virginian-Pilot, of Norfolk, Virginia, recently discovered this holiday tidbit with the caption 100 Years Ago: “A four-masted schooner, Edith H. Symington, arrives in Norfolk from Maine with more than 1,000 Christmas trees. The trees will be placed in cold storage at the Anheuser-Busch plant before going on sale.” It’s one thing to deliver lumber. But who knew Maine had its own Polar Express under sail?

Because even magic ships drop anchor in both the past and future, we decided to study her to the keel. The Edith H. Symington was launched in Newburyport in 1900. Five years after delivering the Christmas trees to Virginia, she was lost at sea off the coast of Algeria. According to a post by Jan Lettens on wrecksite.eu, “On December 14th, 1919, the American wooden schooner Edith H. s with any city, those who live in the midst of it all often disregard surrounding areas as after-dark prospects. We choose the bar that feels like home, the cafe with the biggest brunch, and we all know you’re either going to Brian Boru or Bull Feeney’s on Saturday night, don’t lie. But after a while things can get a little monotonous. Like plain potato chips–they taste really good and you’re not stopping anytime soon, but you wouldn’t have minded a little French onion dip. Well, lately, I’ve been craving a new

bag of chips or some of that dip. Elsmere Elsmere BBQ and Wood Grill has been on Fil’s radar since we moved here. “It’s a barbecue joint. And they cook everything on wood. You could get a salad.” His descriptions of such divine decadence never persuaded me, but being as his “boys” are visiting, it’s decided that we’re headed for barbecue. and the guys are immediately gaga for the giant neon sign behind the bar that reads “Ray’s Auto Radiator and Body Shop.” I’ll admit, it’s a cool touch, but I’m starting to feel like Betty to Elsmere’s Veronica. We take a booth and order up a round of beers, brisket, and nachos. While we wait for the food, the guys are sucked into the two-player Mrs. Pac Man arcade game. It’s almost as if they’re in college again, and listening to three guys relaxed and reminiscing, I admit that Elsmere is the perfect choice and the grilled salmon salad isn’t half bad. Run of The Mill “You have Downeast Cider on tap? Keep ’em coming, my friend.” We’ve found ourselves at Run of the Mill Brewery in Saco after passing through the historic town on a Sunday cruise. The giant Mill bears a long wooden bar in front with plenty of tables and dining seating throughout. The manager, Rebecca, happens to be behind the bar when we arrive, and after posing for a photo with the taps, offers samples of Downeast Cider to the other patrons. Two ladies sit beside us and happily accept the ciders. “These would be perfect for a sunny day.” I assure them that Downeast is

perfect on any day. Farther down the bar, two friends in wide-frame glasses and band t-shirts order the Sample Paddle–a flight of seven 3-ounce brews on tap–and ask for a deck of cards. A minute later, two men in leather jackets and bandanas make their way to the bar and order shots of Patron. We’re a real mishmash of folks here, but oddly enough, it just works. Fil and I finish our ciders and I’m tempted to order a growler for home, but seeing it’s still early, I worry the stuff won’t make it back to Portland. We agree that Run of the Mill will now be a regular stop when family and friends are visiting, and we plan our next trip. On Thursdays and Saturdays there’s live music, and I can only imagine the giant bar must feel very small those nights. Leaving with a half of a burger and a happy buzz, I’m ready to explore Saco. If we stay long enough, maybe we can make it back to the Mill in time for happy hour. The Frog & TurTle: WesTbrook It’s drizzling, but the rain adds some ambiance to our night drive. We scan the FM for the perfect song, but after “Bette Davis Eyes” and a painful attempt to get through some pop-country, we settle for our go-to album, Fleetwood Mac’s Rumours. We can always rely on Rhiannon. What a gal. The Frog & Turtle isn’t packed by any means. There are tables and room at the bar, so we take two stools. The lights are low and cast a warm glow on vintage bar decor: beer posters, neon signs, and, yes, frogs. The bar’s

authentic, welcoming, familiar. It’s 50-cent wing night, so we order a dozen of the barbecue and tangy tangerine with a side of poutine and two Brooklyn Lagers. The musicians are setting up to start their ‘blues jam session’ at 8 p.m. More locals trickle in, and soon the bar is full, the tables are chatty, and the patchwork band starts the night with “Down Home Girl.” A sign-up sheet lies in front of the band for any musician in the crowd to join. It soon becomes clear we’re witnessing a weekly tradition as patrons call out one another’s names, hug as they pass tables, and jump up to join in on “The Weight.” A few babes take note of Fil snapping pictures and are quick to shimmy up in the hope of their 15 minutes. One woman dances her way around the stage all the way to the door and bids us farewell with a quick jiggle. By the end of our second round, we’re wishing we were only a walk away from State Street, but it’s time to head home after the first set. We need to leave before the band plays a Stones song or we never will. spring poinT Tavern: It’s among the ranks of all our dive-bar greats–Ruski’s, Sangillo’s, Mama’s, and Amigo’s–yet Spring Point Tavern (SPT) stands alone.

It stands alone in time, in manner…in South Portland. “We met on Tinder, and he’s in the band,” says a girlfriend. How often do I hear this? It seems nowadays all of my friends are meeting the night’s Prince Charming on Tinder, and these ‘meetings’ lead down many divebar rabbit holes. Five of us pile into the Subaru and are off on another Tinder adventure. Why so many along for a first date? It’s a quick decision for two Downeast Ciders, an anchovy Caesar salad to share, and the 14inch Buffalo Pizza. “Best one in town,” the bartender assures us. “My future son-inlaw is a buffalo connoisseur. He’s had everything buffalo everywhere and still says ours it the best.” The food arrives, and we start in on the main attraction. My first bite is glorious and I won’t blame mere hunger. This is the first specialty pizza I’ve eaten that isn’t a soggy glob of cheese and fancy toppings. It’s served on thin, crispy crust with gorgonzola cheese. Oh, my gahhh! It’s good, folks. We head back home with the leftovers in time for our Sunday night movie and a fight over the last piece. Samuel’S It’s 11:30 and there’s still time to make it to Samuel’s for the Sweet Thai Chili wings. We arrive to find Bill and the others sitting at two tables. It’s their weekly night out after the night shift at WGME. The news tonight? A hilarious mishap with a news truck and a skunk. Unfortunately, the skunk was not the victim. The bar is louder than most nights, but that’s expected for Samuel’s Wednesday wing night. It’s a cozy dive at the edge of town and the perfect stop before the drive home. It’s never packed like the Old Port bars, but you’re never drinking alone. There’s usually someone happy to strike up a conversation on sports, the weather, or the meaning of life, you know? With classic rock and country hits playing in the background, we share our events of the week and compare battle scars. It’s our favorite mid-week treat. You can never go wrong with friends, wings, and beers. At last call, we decide it’s time to leave. You never want to overstay your welcome at a bar like Samuel’s. Yes, that’s true! He’s been a lobsterman for over 35 years. Tell us about your connection to lobstering in Maine, and the Kennebunk River?

From a young age, I was always out on the boat with my dad, helping him haul traps. It’s always been part of my life and our main source of income for a while. Most of all, it helped us physically put food on the table. Have you worked at any restaurants in Maine?

I worked at a place called Seascapes (now Pier 77) from age 15 to 19, working my way up from dish washer/prep cook to line cook over time. My mother has worked at Arundel Wharf Restaurant for 30 years; she was a server and is now a manager. Which of your Hawaiian fusion lobster dishes most amazes your parents?

Tough work, but someone has to do it. Another graph seems to reveal that lobster rolls–loved by Mainers, diners in Manhattan, a spectacular exception in Paris, and a few food truck customers in San Francisco–are comparatively undiscovered elsewhere. Is this a huge marketing opportunity?

We have a great brand. We have the best stories about the people who catch the fish; where they do it; and the unique sustainability of the Maine Lobster fishery. I am very optimistic that a focused, data-driven marketing effort will have demonstrable results. You’ve met your marketing counterpart from the pork industry. What did he know that you don’t know?

There are more than 20 Federal “Check Off ” programs administered by the USDA that help market beef,

pork and other commodities. Several state boards do similar jobs but are sponsored at the state level, like Maine Lobster Marketing Collaborative. There are at least two take-aways here. First, we are starting from a position of strength: Maine lobster is loved all over the U.S. That is really good news as we try to extract more value for our industry. One of the things that is unique and special about our fishery is that every lobster is caught and inspected by hand. That sort of care and dedication of our lobstermen and women is unique and inspirational. Look for us to be telling their stories around the world in the near future. If you were to appear on Shark Tank in support of Maine lobster futures, how would you sell it?

I think the biggest macro trend that is important for us is the notion of sustainability and traceability. There is a powerful trend in food where people all over the world, and especially in the U.S., are interested in where their food comes from; how it is harvested, and by whom. And visitors want keepsakes.” Local food and wine writer Michael Sanders and photographer Russell French have a hit on top of a hit with the 2012 second edition of 2010’s Fresh From Maine. “We’re actually talking about a third edition at this point,” says Sanders. “It’s turned out to be something people like to give as a gift.” The second edition is a hefty hardcover structured like a meandering dream road trip from Kittery to MDI, with many chef interviews by Sanders. Kerry Altiero’s brand-new Adventures in Comfort Food (Page Street Publishing, $21.99, paper) sizzles because it’s a lot more fun than most cookbooks. If you’ve ever been to Cafe Miranda in Rockland you know his sense of humor extends to menu items named things like Sorta Kefta, Pol-

ish Hippie, and Lamb Shank Redemption. But the reason Miranda’s been there for 30 years is because the food’s delicious. “Kerry is rock and roll,” declares Primo restaurant’s superstarchef Melissa Kelly in the forward to Adventures. She hails him as “the pioneer chef of Maine.” As with the food at the cafe, these recipes have soul: pasta, sausages, heavy cream, heaps of local greens, and strong cheese share the pages with grits and shrimp, pierogies, a few Thai curry creations, and haddock enchiladas. “Do you know this book? It’s a big seller,” says Josh Christie at Sherman’s Books on Exchange Street, pointing to Eating In Maine–At Home, On The Town and On The Road by Jillian and Malcolm Bedell [Tilbury House, $22.95]. Do we ever. The Bedells are local food bloggers who use the online sobriquet “From Away,” and their reputation for curiosity and very tasty food photography precedes them. They love to cook as much as they enjoy dining out all over the state,

and it’s this enthusiasm that gives the book its personality. Malcolm provides a lively narrative to such mini-chapters as “Weekend Project: Eggs Benedict,” which starts with homemade English muffins. He leads a “Road Trip: The Curious Case of Authentic Latin American Cooking in Maine” that visits Portland’s Tu Casa and Zapoteca before heading north. Jillian brings the awe (she’s actually from away–Malcolm’s from Tenants Harbor) of first-time discovery of local dishes: “I learned its great and glorious name– haddock chowder!” And places: “We drove about 50 miles to have lunch in a barn [on]

a desolate-feeling peninsula,” which turns out to be El El Frijoles in Sargentville–“the middle of nowhere and the center of the universe.” Recipes are excellent and make good use of local bounty. “The Bedells and Michael Sanders have been big sellers from the summer onward. So were Harbor Fish and Standard Baking–people like the shops, and they like the cloth-bound spines,” says Sherman’s Josh Christie. “Kate McCarty’s book is popular, too.” McCarty teaches food canning classes and blogs as “The Blueberry Files;” her Portland Food: the Culinary Capital of Maine


Hu ngry Ey E [History Press, $15.95, paper] is a look at the restaurants, food trucks, farmers, producers, and purveyors that make the city a great place to eat. “But you know what the best-selling cookbook is, hands down, in all Sherman’s stores?” asks Christie. He hands over a cheery red hardcover, Maine Ingredients– Fresh & Fabulous Recipes from The Junior League of Portland, 2004 edition [Wimmer Cookbooks, $5.99]. Don’t write it off as just a quaint souvenir for cruise-shippers, either: recipes in the 300-plus pages–that open nice and flat thanks to the spiral binding–are more with-it than you might expect, for things like carrot soup with dill pesto, spinach and cheddar soufflé, lemon saffron swordfish, and Nubble Light nut bars. Christie himself is the author of the Maine Beer Brewing in Vacationland [The History Press, $19.99, paper], which has undeniable holiday gift appeal in this suds-crazy town.

Treasure HunTing

Some of the great Maine cookbooks are out of print but hardly out of sight in a

city and state with such a good usedbook network of stores and used sections within stores. “Saltwater Seasonings is one of the very few that really catches the spirit of Maine,” says Don Lindgren, owner of Rabelais Books in Biddeford, probably the center of the universe for vintage and rare cookbooks. Chef Jonathan Chase of Brooksville and his sister Sarah Leah Chase published Saltwater in 1992, but the recipes hold up–a very precise recipe for poached salmon with dill sauce still gets raves. Lindgren has a copy in stock; he also has several editions of John Thorne’s lovably subjective, all-over-the-place Simple Cooking, first published in 1980 and long out of print. “Thorne’s books are fabulous–simple, readable, with a sense of food history.” Open it anywhere and find him quoting everyone from Elizabeth David to Gunter Grass. Rabelais also has assorted old copies of the frugal-yankees he calls “the Marjories”–Standish and Mosser. Mosser was the niece and secretary of Kennebunk historical novelist Kenneth Roberts, who

provides the narrative that makes Good Maine Food a perpetual classic. Lindgren’s persnickety about his Maine cookbooks. When told that Sherman’s bookstores are selling the Junior League compilation like hotcakes, he rolls his eyes. “Most Maine cookbooks are created for the tourist industry; they’re just souvenirs. A good cookbook has to have a point of view.” So which ones does he like? “Kathy Gunst is good, and Kate Gooding’s Black Fly Stew game books are the real thing. Sandy Oliver’s the best, she’s a true food historian. I love Nancy Harmon Jenkins’s books, but I wish she’d write about Maine.” (Jenkins is a Camden native; her culinary turf is the Mediterranean.) Lindgren hands over Maine Mapmaker’s Kitchen [written and published by hand-drawn map aficionado Jane Crosen and available in bookstores and from mainemapmaker.com, $27.95, paper]. It includes recipes designed for “home, camp, and afloat” among how-to instruction on growing, harvesting, and preserving. “It’s a good one,” he says. Nothing like a book as a present for the future. n

West End Enchantment Portland’s stylish new dumpling palace has its own lucky dragon.

W

e rush through the spitting snow and gusty winds into Bao Bao. Inside this charming dumpling house, which is quickly winning fame for its specialty, we shift gears and try the Spicy Pigs Ears ($6.08) for reasons all our own. The ears are hot stuff–beware! The heat comes from arbol chili oil (also found in little pots on the table). Braised with kombu and black cardamom, they’re then pressed and shaved. Gelatinous in texture, they’re tucked in with napa cabbage, which gives the dish a good crunch. A slight sweetness derives from shanxi, a sorghum-based vinegar. Greens in Oyster Sauce ($7.08) mitigates the ears’ spicy bite. A flavorful sauce complements excellent steamed white rice ($1.08). On to the dumplings. Our first indulgence, Steamed Hake, Burdock ($8.08), is like nothing we’ve seen anywhere. “Threadcut” dumpling wrappers are ribboned layers enveloping the tender

fish. Happily devouring our six pieces, we accelerate into our next plate of dumplings: the absolutely essential Lamb, Black Bean, Chili, Peanut ($8.08). The lamb is good, like my Scottish grandmother’s. When lamb talks, it talks, and this dumpling says it all. Manager Chris Gilman tells us Bao Bao translates to “wrapped treasure.” Bite by bite, we share the discovery. I’m enjoying Lion Stout from Sri Lanka ($8). Rich and almost sweet, I learn it is a favorite of Bao Bao’s chef/owner, Cara Stadler. Next up, beef and yellow curry dumplings ($8.08), seared. The browned exterior works well with the intense, curried meat. We love the serious tea menu here and we slip into an excellent chai ($4), steeped for four minutes–perfect. We pair it with Pandan Leaf Panna Cotta ($6.08) for dessert. The coconut milk gives it a rich texture, and it’s topped with mango puree. H

e left his home at age 15 to go to sea. By 25 he was Captain of his own ship. November 1868, he has become the Captain of a new clipper ship in the China tea trade. Such a rare man, his heart open, baring his soul daily to the page. A thousand miles from home, delighted with a new kitten on board given to him by the ship’s owners, loving his wife, Emerald standing on the deck of his ship yet looking through the windows of his home in Gardiner, Maine, watching his family sitting by the hearth, his eldest daughter sewing, finishing and biting off the end of the thread…such rich detail. A humble, honest man sharing with us his hopes, fears, dreams, and desires. He takes his clipper ship 38,000 miles around the world from New York to San Francisco, on to Hawaii, Java, Burma, and China and brings a cargo of tea safely home. After seventeen months away he returns to his home in Gardiner, Maine to spend a few months with his family, then ships out again. He understands his obligations, his responsibilities... this is his life. We’ve all known sea captains from literature: Dana’s and Melville’s stern, distant, aloof, obsessed, unyielding men. This is a so very different Captain. We come to like him immediately. This clipper ship Captain writes about sharing with his crew, apples from home until they are all gone. He seems such an affable fellow. He would make a good neighbor, a good friend. We come to trust him and are assured of his strength and competency by the fact that he safely returns home again and again with ship, crew and cargo. We find clues to this man and his heart in the telling details of his journals. The Captain’s great-great-grandson, Keith, travels a similar journey to southeast Asia where he finds treasure: rubies, emeralds, and sapphires. Is this the 14th century? It’s as if you’ve been channel surfing and stumble suddenly upon an episode of International Househunters on HGTV. Tonight’s

Captain W hat? Are you on strike?” Jolene heard Walt’s questions roughly 10 seconds after she lifted her eyes from the tank full of dead herring before her on the deck. She’d heard a sooty shearwater’s beeps, so she’d stopped to watch a few of the sea birds bank and careen past the starboard side. After stuffing fish–stiff with rigor and cold–into bait bags for two hours, she’d welcomed the moment when the sky brightened enough to see anything beyond the gunwales of the Taurus, an overpowered 42-foot, open-transom lobster boat. Walt was Jolene’s boss and husband. After college and before Walt, she’d preferred lovers–complicated, creative men. Her marriage to Walt was more barnacled, comfortingly real. Both 40 and suddenly wanting children, they tacitly agreed being lovers was a luxury they could not afford. Months working on the stern of the Taurus had taught Jolene to tolerate the weather. Not quite a gale, the tops of the five-foot waves sprayed past the rails and penetrated the cuffs of her foul weather gear. Walt, impervious in the wheelhouse, steered the boat so the waves missed him as he stepped out to gaff his neon orange buoys, raise the traps, set them on the rail, and slide them to Jolene, where she culled the lobsters and replaced empty bait bags with full ones in one motion. At nine o’clock, Walt usually called lunch. While Jolene began to anticipate her cheese sandwich, he spun the wheel and gunned the engine so hard the deck lurched, surfboardlike, his eye on a red-and-white-striped lobster buoy. Quick as a minnow, he snagged another lobsterman’s property, looped the rope into the whining hauler, and set it on the rail in front of him. Jolene’s gloved hands, dripping with gurry, dropped to her side as Walt coiled the line, stuffed it and the buoy into the trap, hooked the doors shut, and knocked the trap back into the ocean. The forty-second crime complete, Jolene watched the trap disappear. Then she said, “Take me in.” Walt surveyed the shoreline behind Jolene. “You’re either with me or against me, you know.” “Take me in.” Walt slammed the throttle forward and headed out to sea. n
