ou’ve got to love birds who fly transoceanic or transcontinental to vacation with us in Maine. You never know who’s going to blow into town. Unlike hummingbirds, who routinely put in serious mileage (4,000 miles) from Mexico to join us every summer, the rare Steller’s sea eagle who flew all the way from Siberia to land on the Maine coast is a spectacular example of a “vagrant” or a “vagabond”— a bird roaming far from its usual migratory route. It’s kind of flattering, really. “Oh, yeah. Our hummingbirds go to Central America,” says Jeffrey V. Wells, Ph.D., a Fellow of the Cornell Lab of Ornithology. “There’s a whole suite of them.” Toward the beginning of their return to Maine, “They’ll fly across the Gulf of Mexico, a 12–24 hour flight from the Yucatán. Last summer we were coming back from Monhegan. From the deck of our ferry we saw a single hummingbird coming across” in formation with the boat for the final few miles to the shore. “Oddities,” Wells says, can draw big crowds. “The redwing thrush that showed up in Capisic Pond Park in January 2021 drew hundreds—probably thousands—of birdwatchers to see it. It could be a bird that got off track from Europe and made its way [west, then] south. My own theory is that it came from Greenland.” Two varieties of pelicans, the brown and the American white, have signed Maine’s guest book as visitors. The earHummingbird wingspan: 4 inches. liest record of a brown pelican stopping by is 1826, followed by 1914, then 1922. (We won’t talk about the pet pelican that escaped from Castine to Bar Harbor in 1900 only to end up as a taxidermy exhibit in the Maine State Museum.) Then the visits stopped. Eight decades later, a brown flew into Harpswell in 2007. Does “our” Steller’s sea eagle experience loneliness so far from his native Siberia? Does he shriek for his mate, or is this just a projection we humans are putting on him Steller’s sea eagle wingspan: over 8 feet. during COVID? “They don’t typically travel in pairs during migration,” Wells says. “This sea eagle isn’t unusual for being alone [right now]. Hormones will come into play and he’ll think of a mate in the coming months. He could look at the surrounding bald eagle population” for some beautiful music. Does he pause, or am I imagining it? “A hybrid between a Steller’s and a bald eagle has been reported near Vancouver.” Fascinating. A walk on the wild side?

orley Safer used to paint the hotel rooms he stayed in while he traveled on assignment for 60 Minutes. His canvases were essays on loneliness. Lobbies are far more fun places to touch down.

I also collect antechambers, lounges, grand tiers, private nooks, vestibules, sun parlors, colonnades, everything from peristyles to parterres. They’re intimate and wary, impressive and cozy—great places to haunt. Perched on a pink coral wall, I loved listening to the music of the waterfall in the Hamilton Princess Hotel in Bermuda. After martinis, I crossed the Waldorf Astoria’s mezzanine to Cole Porter’s piano to see if I could strike the right note. The Hotel Forum’s sweeping rooftop views of the lights of Rome at night have more than once beckoned me to stop and do absolutely nothing. I’ve never been a smoker, but I was tempted to join Mount Vesuvius for a few puffs on the terrace of Hotel Excelsior in Naples. At the Fontainebleau in Miami Beach, I sat in a club chair looking at the water for an entire afternoon, expecting Frank Sinatra to stroll by. I’ve stopped and devoured cream pie and coffee by the side entrance of the Omni Parker House in Boston before I’ve even registered. Any way you look at them, public sanctuaries in hotels are designed to take you from here to here in style. And Maine’s gracious resorts are at the top of the heap.

as Russell actually overheard guests telling others about the backstory of the lobby tree rings, because they feel a stake in the hotel’s legacy?

“Yes. A lot of them leave with dreams of having cross-cut tiles like that in their homes.” Surely they don’t return to the Samoset each year just because of the tiles? “It’s one of many reasons. s you drive along Ocean Avenue in Kennebunkport toward the Colony Hotel, turn left to see the future. “History is always important to us,”

tel with its curving driveway as a demilune table bordered by Colony Road. That semicircle embraces luxuriant lawns and flowerbeds, a shuffleboard court—the details that keep guests coming back year after year.

hich brings us to right now, with the first wave of new construction underway. “We’re really, really excited about this.”

Doubling the demilune on the other side of Colony Road to complete a full circle, the new North Campus deepens the gardens and opens up a symmetrical whirl of amenities. A trio of new guest quarters will give the resort a contemporary edge. “They’ll be interconnected by skywalks and walking paths along the creek and through the gardens.” Imagine dreamy views of Fairfield Creek “never seen before” by most visitors.

On the corner of Ocean Avenue and Colony Road (to the right of Mabel’s Lobster Claw), “we’re building a marketplace where guests will be able to stop in. Think Dean & DeLuca meets Starbucks. You can pick up a bottle of wine, fine cheese, cappuccino, espresso.” When will it open? “I’m hoping for July 4.” What if it’s not ready by then? “You can get your coffee in the main hotel.”

MARKET TESTING The design of the marketplace echoes (and updates) the long-gone Ocean Bluff Garage, with its gambrel roof and row of dormers. “Building 4 (as the marketplace is called just now) is ninety percent framed. It has parking for guests, and at the recommendation of a neighboring business, we’re putting green grass between the cars and the curb along Ocean Avenue. We’ve been very transparent with neighbors and asked for opinions.”

E

xample? “We’ve shown Tom Bradbury [Executive Director of the Kennebunkport Conservation Trust], who loves the Kennebunks so much, the plans” and asked for input. “We’ve consulted with many neighbors” in the nearby retail enclave that includes Dannah Gifts. “We care about how these improvements take place. We’ll move the construction fences and have no construction during the summer. We’ll go quiet until Fall 2022.” All the improvements on the North Campus will be finished “in the next two years,” Martin says, ready for the 2024 season. Power lines will move underground to complete the dream. “And that’s just the beginning.”

“NO, LET’S KEEP GOING.” The new buildings superseding the Colony’s parking lot and outbuildings are all the more astonishing to local observers for arising during COVID. What moved the Boughton family of hoteliers (who’ve owned the Colony since 1947) to choose this moment to seize the day? “Hilary [Roche] and Jestena [Boughton] and I started talking about this five to seven years ago, before COVID existed,” Martin says. As 2020 wore on, he was approached by a few concerned friends. Are you sure you want to launch into all of this despite the pandemic? Don’t you want to wait a while to see what happens? “No, it’s just the opposite. I want to build it right now!” Summer and beauty are on his side. “Sometimes we call the marketplace The Garage, after the building that inspired it. My cardiologist would probably say I should call it ‘My Next Heart Attack.’” APRIL 2022 25

Is it possible to add wow factor to a resort that’s already enchanting? We’re watching it happen. n

in Brooklyn, upstate New York, and Sedgwick, Maine. When we went north to Maine in September 2020 during lockdown to do maintenance and winterize, the whole DoubleWalker story had been living in a corner of my mind for a decade. The cove at the Sedgwick property was almost identical to the cove in my nightmare. It was a spooky watershed moment of reality and my psyche fusing together.

race Morgan, an aimless, twenty-something only child, returns to her girlhood summer home in Maine with her mother a decade after a family tragedy. The property has been sold, and time is up for Grace to mourn and amend the guilt she’s harbored. As the two check the grounds and reminisce, old ghosts take Grace back to that fateful summer she may have inherited a sinister family curse.

Did you encounter any filming challenges unique to Maine?

During my last semester in film school I was working thirty hours a week in a soul-sucking job at Whole Foods. My first love had just broken up with me, my favorite aunt had died of cancer, and I was fighting with my dad over a family identity crisis. One night I dreamt of a world in which everyone had a clone that was hunting for their “original,” intending to kill them and take their place. My clone had found me, and only when she was dead could I be whole again. I woke up sweating, and my death-of-self nightmare exploded onto the back of an envelope in as much detail as I could remember. It was a literal wake-up call that being stretched in so many different directions was not sustainable. I still have that envelope as a reminder to check in on how I’m doing with all the areas on the pie chart of my life.

Do you typically have such vivid dreams?

Lucid dreaming is when you realize you’re dreaming but don’t wake up and instead begin to control things within the dream. The first time it happened I was 14 or 15. I realized I was dreaming about Johnny Depp. I decided to kiss him in my dream and did. When Annie Proulx sold the film rights to The Shipping News, her only stipulation was that it be filmed in Newfoundland, where the novel is set. How did you come to shoot The Doublewalker at the Punch Bowl Cove in Sedgwick?

My partner Jonathan and I are both gardeners, and he’s the full-time groundskeeper for a family with multiple properties

It was a very nautical approach to filming. Being in a cove with a story shot entirely with exteriors and natural light, every day’s shooting had to be tightly scheduled around sunrise and sunset, high tide and low tide, battling the elements. So it was pivotal to hire actors well-versed in being on short-film, low-budget sets. Our two main characters sometimes got things in one take, and everyone behind the camera would look at each other and go, “Did that really happen?” The scenery was a character in itself. You can put an iPad on a tripod and point it at anything in Maine and it’ll look gorgeous. Do you have any personal Maine connection?

I grew up going camping in Acadia with my dad and brother. Acadia has that otherworldly quality of all the national parks out west, but it’s much closer to upstate New

You can put an iPad on a tripod and point it at anything in Maine and it’ll look gorgeous. York, where I grew up. What are your favorite spots in Acadia?

When I went as a kid, I don’t recall ever hiking any trails with significant elevation gain. In upstate New York you’re landlocked, so I think the sheer majesty of the craggy shorelines and bluffs kept us close to the ocean. My absolute favorite activity in Acadia is to drive along the coast at sunrise or sunset until you end up back where you started. It’s not very “granola” being in a car, but I don’t care! To what extent is The Doublewalker a homegrown product? Is there any local talent among the cast and crew?

e worked with Portland-based Dirigo Talent Agency to connect with our Maine actors Kristen Seavey, Sidney Howe, and Aidan Walton. Kristen Seavey does a truecrime podcast about Maine and New England cases called Murder She Told. Lilah Akins, our Cultural Educator and Production Assistant, is a Penobscot Jewish woman and filmmaker born in Maine who grew up in Hawaii and returned to Maine to renew her connection to the Penobscot people working for Wabanaki Public Health & Wellness.

Your crowdfunding page mentions that BIPOC crew members received reparations during filming. How deeply is The DoubleWalker rooted in the Dawnland?

On the surface it’s a film about a buried family tragedy with a subtext of how our colonial patriarchy taught us to suppress emotions throughout many generations. The mythology of this family centers around their lake house on land the Penobscot people have been stewards of for over 11,000 years, and this short is proofof-concept for a feature film exploring in greater depth European culture’s vs. indigenous culture’s relationship with the metaphysical, how colonialism has effected cultural erasure, and how that still affects the ways we’re taught to communicate within our families. I’m developing the script with Lilah as co-writer and guide, because it’s crucial that an indigenous person should write and/or direct this story. We’re hoping to complete it and start shopping it around to investors by the end of this year. If the world becomes a better place, will we eventually run out of plots?

I grew up with family members around me having mental illness. I don’t know what kind of writer I would be if I’d had a different childhood. Hopefully at some point in

C REAT I V E COA ST adulthood you gain insight and self-love so you don’t need friction and angst in your life to produce work. I hope our generation’s emotional intelligence and self-reflection will help us undo the emotional harm and avoid repeating the same mistakes that have been happening for centuries. Women get attacked for bringing up hard issues, but impatience for progress comes from a place of love and wanting to make things better. Martha Gellhorn’s most famous as Ernest Hemingway’s third wife, secondarily as a groundbreaking war correspondent, and hardly at all as the author of dozens of novellas. How does this kind of female invisibility play out in the film industry?

At forums, workshops, and cocktail hours you always get asked who your favorite filmmakers are: my list was almost all white men. Realizing I would have to sit down and think about female writers and directors to revise my list was a big red flag and a huge motivator for me to stick with this. Nepotism is insidious in the film industry, and lack of diversity behind and in front of the camera is the biggest problem next to abuses against worker’s rights. How does The DoubleWalker do on the Bechdel Test?

The DoubleWalker, I’m embarrassed to say, barely passes. There are several conversations about things other than a man, and I purposely have a female lead and female co-star out of a deep desire to focus on female stories. But the main plot is centered

CREATIVE COAST around the lead’s loss of her father when she was a child, so it’s hard to avoid talking about a man. How did you pull off such a big leap in the midst of a global pandemic?

First I was let go from a job I was totally unfit for at a recruitment agency that places nannies with high-profile families. Then John landed his full-time groundskeeping job, and I took over his freelance gardening list. The entire world was locked up inside while I was safely working alone outside to pay my bills. A lot of people would look at me emptying my savings to make art for the sake of art and think, “That lady is crazy!” But you can’t earn rewards when you don’t take risks. As long as I’m healthy and able-bodied, I want to gamble on myself. How does being a freelance gardener complement filmmaking?

The best thing for my nature is to be out in nature. I talk fast, I think fast, but nature is moving slowly—it’s meditative. Being a freelance gardener who sets my own hours

I try to do gardening and prep work on the same days, gardening 8 a.m.–4 p.m. four days a week, then doing a couple hours of pre-production in the evening, so I can spend one day a week writing and take two days off with no plans. If I had the money, I’d love to have an office outside my home where I have to put on an outfit and makeup that makes me feel powerful to go there and be accountable to that space to do my creative work, because it’ll know if I’m not there. How would you characterize yourself as a filmmaker?

T

he ethos of my writing is vulnerability, so I plant seeds of myself in each character for the story to grow from into its own being that speaks back to me

and leads me down the path it wants to follow. But to make a career as a screenwriter, it’s not all going to be deeply personal projects. You need to build up a thick skin to work with other writers on scripts you didn’t start, and to sell scripts you’ve started but don’t get to finish. I spent 2021 in a professional writer’s group sharing pages with an L.A. script doctor who encouraged us to bang out structurally sound, interesting scripts that we’re not necessarily attached to. My goal with my 10,000 hours of screenwriting, for every character I write, is to balance things happening to the character and the character happening to the environment as catalysts for the story. The difference between internal vulnerability and external struggles is the difference between a good film and a bad film.

What were your favorite things to eat and drink while filming in Maine?

I arrived forty-eight hours early for final prep work on the last weekend LDI [Little Deer Isle] Lobster was open for the season. I don’t ever eat lobster unless I’m that close to the source, so it was a real treat for me. Our budget only allowed for us to arrive, shoot, and depart, so we didn’t have time to check out local restaurants. We’ve all been that hungry crew member staring at the craft service table, not wanting another muffin or slice of pizza that jacks you up for filming, then makes you crash midday or near wrap time, but having no other options. We were so fortunate to have our craft coordinator, Katya Ekimoto, source all our groceries from Trade Winds in Blue Hill and Blue Hill Co-op down the road to prepare fresh, nutritious meals

for six days straight for our cast and crew of eighteen. Everything was satiating without being heavy or nap-inducing. If you live in upstate New York, you can clearly hack winter! Can you see yourself ever living in Maine full- or part-time in the future? If so, where?

I couldn’t do it year round, but I’d love to live in Maine a few months every year, maybe July–October to get a bit of the high season and a bit of the off season. Blue Hill has a nice balance of feeling far away but not totally off the grid, plus it’s next to the coast and close to Acadia. But I’m open to suggestions! If an incredible

In an era of ultra-hoppy IPAs, Oxbow mostly eschews these for Belgian-style saisons and other farmhouse-style beers. Oxbow’s flagship brew is the Farmhouse Pale Ale, a saison with a bit of a kick that features American hops and saison yeast. It’s thirst-quenching and extremely drinkable. Missing the taste of bread in a can since B&M left town? Oxbow’s flavorful Brown Bread dark farmhouse ale has hints of molasses and nuttiness like its namesake. The Space Cowboy, a bière du pays (French farmhouse ale) brewed with oats, is light, a bit fruity, and very drinkable. Seaworthy is a bit more full-bodied, and may be as close as Oxbow comes to the tang of an American IPA. Beyond their commitment to European-style farmhouse beers, Oxbow blends a wonderful range of beers running the gamut from sweets to sours, fruity or smoked, with stops along the way at savory and umami. In addition, they pour beer from other breweries, and offer wine, ciders, and canned cocktails. TO THE FRENCH, FRIES ARE BELGIAN here really is something for everyone, and Duckfat Frites Shack, overseen by James Beard Awardwinning chef Rob Evans, provides the perfect food pairings. The eponymous fries, poutine, and shakes are spectacular, and there are daily sandwich and salad specials with vegetarian options. On a recent winter night, a Mushroom Melt with cheddar and caramelized-onion mayo, and the Vermonter Sandwich—turkey, smoked cheddar, pickled apples, and maple mayo—really hit the spot. The downside to Oxbow’s near-perfect location? Parking can be a bit of a challenge at busy times. Once you find a spot, take a stroll to enjoy the world-class view from the Eastern Prom, or drop down to the East End Beach and put your toe in the water. If you end the adventure at Oxbow and Duckfat, you’ll get a sense of why Portland’s foodie and craft-beer scene is as acclaimed as it is. n

e c i o h C s ’ f e Ch “If I had time, I’d go out myself, but I don’t, so I can’t,” says chef Melissa Chaiken of The Fiddlehead Restaurant in Bangor, where she’ll “process and freeze or pickle” the eponymous ingredient to “use in drinks like a bloody Mary, or as a garnish, or sautéed in butter, salt, and pepper for an appetizer.” Chef T. Love Smith of Gaia’s Plant-Based Kitchen in Brunswick has “a couple of local foragers I buy ingredients from, but I also enjoy foraging myself. I rarely make the same dishes twice, in the way a painter rarely paints the same painting twice. My favorite dishes are improvised and inspired by what’s in season, so they’re wellbalanced with vibrant colors, varied textures, and fresh flavors that go well together: Wild Rice Chanterelle Risotto, Maitake Miso Soup, Tempura Day Lilies with a pineinfused maple sweet-and-sour sauce, Chicken of the Woods Tacos with strawberryrhubarb salsa, Nettles and Ramps Pesto Penne, and the “Wild One” foraged mushroom and wild rice soup.” As well as cooking with wild mushrooms supplied by Jenny Lord, Tony Napolitano of Maria’s Restaurant says, “We forage fiddleheads ourselves. We can pick up a bushel at a time along the water.” And in late winter/early spring “we go out with a local lobsterman and get scungilli (baby sea snails) from the ocean to mix with calamari in a salad with a seafood sauce, or with shrimp in a fra diavolo sauce over linguini.” Street Dining restaurants source their wild ingredients “from Rick Tibetts, our local certified forager,” says Chef Fred Eliot, who pairs black trumpets and hen of the woods with the whole branzino at Street & Co. and says they also accompany the wood-oven-roasted black sea bass at Fore Street. Black trumpets adorn the baked haddock at Scales, where hen of the woods appears “either in confit on the tuna tartare or with the pan-seared scallops.” Ramps star “in the Jonah crab fritters and ramp salsa verde

HU NGRY E YE at Scales,” while Fore Street uses “pickled ramps for charcuterie and stinging nettles for seasonal soups.” Elda’s focus on local, indigenous ingredients “often involves many steps of preservation and fermentation so they can be used year-round,” says Anna Brown, co-owner with chef (and husband) Bowman Brown of the Biddeford restaurant. “Sea rocket is a wild arugula that grows along the beach and has a peppery, horseradish taste, but also picks up some salinity from the sea. We grind it into a paste and use it almost like wasabi with raw tuna. In the summertime we make a spicy, floral harissa with beach roses and brush it on grilled lobster tails. Wild black cherry branches have an amaretto taste that we infuse into butter. In the fall we cook lobster in the cherrywood butter, then brush it with a glaze cooked down from the fruit of the tree to finish it. We gather wild acorns, roast them, and grind them into flour with a pleasant toffee flavor that we use to bake acorn cakes. In the winter we use white pine, balsam fir, hemlock spruce, and wintergreen to brew a ‘forest tea’ we sweeten with honey and serve as a welcome to our guests.”

About ten years ago my father and I developed a relationship with a couple in Freeport to forage fiddleheads on their property. They expect us every year, and if they aren’t at home, they leave us a note telling us to head down to our spot.”

Forever chemicals are a fast-growing enemy of safe foraging.” FIRST UP, FIDDLEHEADS oraging season starts with fiddleheads, ostrich ferns that grow along river and stream shoulders for just a few weeks following Mother’s Day. “It’s important to positively identify the fern before eating, as there are other ferns that can make you sick if you digest them,” Lord says. “The young frond will be smooth and have a U-shaped stem. Their mature dried frond resembles a feather. To be safe, you must positively identify all three traits. I always make sure the river source is not polluted, wash them thoroughly, and cook them well. “ What’s next? “Ramps, a species of wild onion a lot like leeks, are tender in early spring. They reproduce two ways: by a flower that turns into seeds, and by their roots. To properly harvest, it’s best to cut three-quarters of the ramp bulb and leave the root undisturbed. A well-managed patch can last a lifetime. You can transplant ramps by digging up the entire plant, including the root. I’ve successfully done this over the last few years, re-planting small portions of my wild ramp patch on my own property.” Lord says chanterelle mushrooms are found around trees—but never on them— from midsummer to early fall. “You’ll find them growing near each other, but never

his being Maine, of course there are lobster mushrooms, if you know where to look. From July through October, “these are one of the most colorful mushrooms,” says Lord. “They get their name from their color, texture, and seafood taste.” In fact, “these Lactarius or Russula mushrooms are inedibly bitter before the parasitic mold that coats them turns them their bright orange color. They come back in the same spots for years after heavy rains, 44 P O R T L A N D MAGAZINE

usually partly covered by dirt and leaves with only part of the mushroom exposed.” TASTES LIKE… If you’ve been contemplating going vegetarian, chicken of the woods—named for its taste and texture—can ease the transition from June to early fall. “They rely on wood to grow and are usually found on oak trees,” Lord says. “Once a chicken has shelved out, it will have a very tough and woody texture, so it’s best foraged when still very young.” Hen of the woods (maitake), on the other hand, “get their nickname because they resemble a ruffled-up hen. Found mostly

on old red oaks, they grow back in the same spots each year. From the beginning of September through late October, it’s one of the most common foraging mushrooms. There are no toxic look-alikes and it’s easy to identify, with health benefits from lowering blood sugar and boosting immune function to possibly killing cancer cells.” Not to worry if you don’t live near any red oaks. Lord says oyster mushrooms, which always grow on wood in clusters, “are prevalent in Maine in both spring and fall, and fall oysters can often be found on sugar maples.” Partial to warm fall days with cold nights, matsutake, one of the costliest

I also harvest teaberry (wintergreen) leaves on my property, making my own extract for handcrafted truffles, and a great homemade tea. The leaves have astringent and anti-inflammatory properties valued by Native Americans for relieving back pain, rheumatism, headache, fever, sore throats, and menstrual cramps.”

Their name means “pine mushroom,” and they’re found under pines, firs, and commonly under eastern hemlocks in Maine. “It’s easy to misidentify these mushrooms known for their health properties,” says Lord. “They grow close to the ground and sometimes just appear to be a mound of dirt. I rely on their funky cinnamon/dirty-sock smell to identify them.” WHAT’S FOR DESSERT? And for those who don’t like mushrooms, high-bush and low-bush wild blueberries abound from late July to the beginning

Lord is entirely self-taught, taking it slowly for the first few years while honing her skills at identification. She finds Facebook groups such as Maine Mushrooms, Maine Mushroom Hunting, and Maine Foragers “especially helpful in discovering the times that species are beginning to appear in different areas. I’ll see posts from folks finding oyster mushrooms, for example, and if they’re close geographically to where I generally find mine, I know it’s time to get out there.” SAFETY IN NUMBERS For those who wish to dip a toe in without going it alone, there are workshops, classes, and outings aplenty. Louis Giller of North Spore in Westbrook says his classes always fill up quickly via social media, so early spring is the best time to sign up. Giller partners with organizations such as Pineland Farms in New Gloucester, where on April 29 and May 6 he will conduct in-person outdoor classes on how to grow mushrooms at home in your own garden, followed by classes in late June on active foraging. “I took a class with David Spahr that was an inspiration to me,” Giller says. “He APRIL 2022 45

I mention this to a friend, who warns me that even experienced foragers can make mistakes. “It happened to my son, who’s been foraging for the last decade and building his knowledge of mushrooms for the past three years.” DANGEROUS DOPPELGÄNGER Asking to remain anonymous, her son, 32, a homesteader in Downeast Maine, tells his story: “I know my land and regularly forage it for Boletus, porcini, and coral mushrooms. I came home from a trip at dusk, picked from my usual spots, and cleaned and cooked them thoroughly at around 7 p.m. At 2 a.m. my wife and I woke with gas, vomiting, and stomach pain so excruciating we had to go to the ER. They treated us for nausea and dehydration, and we came home, but the next day was worse. Back in the ER, we were hospitalized for two days and put on a drip for toxic poisoning. Our liver levels were off the charts.” They returned home to treat themselves with acupuncture and herbal medicine, and after some weeks recovered with their liver levels returning to normal.

I

t’s not like there’s a classically trained French chef up here in the Maine woods creating five-star original cannabis confections for us to enjoy. Or is it? “I grew up in Bourges, in the Loire Valley—a very small town of under four hundred people,” says chef André Gamard. “In 1957 I went to the hospitality school of hotel management and cooking at Saint-Amand in the Department of Cher. We started with twenty in the class, and after three years only about ten people were still in it. Of all the class, only six of us stayed in the profession. After school I went to Paris, where I worked like a dog and got paid nothing.” Ah, the salad days. “But we were trained to be really good at what we were doing. I was one of the lucky ones able to take it, but after four years it was time to leave. “The five years I spent in Montréal were the most beautiful time in my life, when I was finally recognized for what I could do and paid accordingly. Then I moved to New York and worked for the most beautiful, elegant restaurant in the world, The Four Seasons (not the hotel—it did not exist then), with all the best ingredients we could ever dream of. But I worked in some dives too. I went from the bottom of the barrel to the top of the sky.” Next stop? “I was chef-owner at Le Marmiton for ten years.” At his tony bistro on Cordell Avenue in Bethesda, close to the National Institutes of Health, two of his regulars were “Dr. Anthony Fauci [director of the National Institute of Allergy and Infec-

tious Diseases during the COVID pandemic] and Dr. Robert Gallo,” co-discoverer of HIV as the cause of AIDS and pioneer of the HIV blood test. FROM HAUTE CUISINE TO PERFECT HIGH Why Maine? After the crowded, big-city life, “It’s a relief to be back in the country. I feel at home here in Machiasport. I like to forage wild food: mushrooms right in my backyard, wild berries, chokecherries—I make beautiful liqueurs out of these wild things. And all of this superb local seafood we have access to is unreal! “I moved here to retire, with my dog, Cadice. She’s an eight-year-old Shiloh Shepherd. She loves Maine and the cold! I built my own house with a friend with our own hands. I got the whole bay on one side, and on the other side I got the Machias River. I loved sailing in Chesapeake Bay and along the Severn River, but the water up here is not very warm, so I do some kayaking here but not sailing. I prefer to watch the water from afar. “In the meantime I met Ben Edwards, who was looking for a chef at Schoppee Farm in Machias. I didn’t want to start working again, but he convinced me to

help him out.” That’s some secret weapon for a downeast organic hemp farm! PEACE THROUGH CHEMISTRY “CBD by itself is not my favorite taste, because if not handled right, there’s a sense of licorice that shows up sometimes when you don’t want it. In the beginning, we tried this, we tried that. One interesting thing I’ve found is that no standard recipe works in Maine. The iodine in the air and the humidity require adjustments to create the right balance of tastes. Ben is a chemist and a pleasure to work with. He calculated the strength of the CBD” so they could blend the science with irresistible flavor. “Without a doubt, the pâte de fruit is my proudest new development. ith their new album Second Nature (April 8, 2022) rising from the ashes of the pandemic, Holly Laessig of Lucius shares a few silver-lining secrets.

What’s kept your heart pounding during lockdown?

Writing a song starts with writing a letter to yourself so you can look at it, let it go, and make something joyous out of it. After being in quarantine so long, we knew our listeners might need that sense of release and escape too. We’re all dancing our way through the darkness. Including Brandi Carlile, your co-producer on Second Nature?

She’s a powerhouse! This was the first time we’ve written with other writers, not just each other. It makes you face yourself and dare to let another person in to write with you. Brandi does so much as an artist herself, but never at the expense of supporting other artists. She’s always lifting others up around her. Beyond dressing alike, you and Jess Wolfe sound like vocal twins. Practice or intuition?

When we first started singing together, we were figuring out how we could both leadsing. We have very different voices separately, but when we sing together we create a third voice. If you’re acting like one unit, the harmony will be a lot tighter.

Tell us about a happy accident.

We were in the studio a few years ago when our guitar player, Pete, runs in and says, “You guys have to come outside!” So we look up in the sky, and the craziest UFO you’ve ever seen is there! We were recording this really weird, spacey music at the time, so it was like we were in a science fiction novel, looking at each other like, “We’re going to be abducted!” It was the first launch of SpaceX, but they hadn’t announced it, and nobody knew it was happening. What are you most looking forward to in Maine?

I just want a good lobster roll! The last time we were there we got some at Eventide Oyster Co. So good! n APRIL 2022 55

ith a kingdom of water and courageous harbor lights spread out before you, flames licking stones in the fireplaces, deep cushions in the sheltering couches, and lap robes for the chill, you may find it hard to leave the sixthfloor patio at Luna Rooftop Bar hotel on Commercial Street. The black window trim and non-gendered bathroom’s bronze tiles (with individual stalls) are a stage set of understated cool, and this restraint is echoed in the cocktail list, where sugar is never the starring ingredient, and jazzy supporting actors like rosemary, coffee, and ground chili get spotlights. Hades ($14) turns out to be a mound of poppy seed-speckled crushed ice (has Hell frozen over?) cresting the rim of a cup holding chilled rum and lime faintly fla-

vored with banana and tea. More intense and seductive, the smoky Adonis ($16) comes rimmed with spicy ground chili, tequila and mezcal dominating the pineapple, grapefruit, and lime. Two women by the window delight in the Persephone ($14), as if in preparation for some later descent, but we’re all in agreement that the Demeter ($16) stands out in the pantheon for its whiskey, Cocchi Dopo Teatro, clove, and coffee extract locally brewed at Rwanda Bean Coffee. This was the most original drink we tried, but all showcased the same

light hand with the simple syrup. Demeter’s roasted marshmallow was the only sugar bomb of the night—a welcome excess.

with kimchee and a “sesame soy emulsion” like tangy kewpie mayo—except the server’s justified recommendation. Or to share the ricotta fritters ($10), heavenly crisp, small brown rockets of crunch and tenderness touched with lemon curd and mint. The bar was closed for a week or two in the

winter to install a new floor, as the original, new in the summer of 2021, had warped from rain and driven snow. The new diagonal black tiles should better withstand the insane weather of Maine, supporting this welcome, away-from-it-all refuge for the foreseeable future. n

Many a sequel eclipses the movie that inspired it.

O

riginally built in 1906, this Cape Elizabeth mansion was utterly revamped for former Fairchild Semiconductor executive Darrell Mayeux by Anastos and Nadeau, with Joseph Waltman as architect, in the late 1990s before being flipped in 2003 with an asking price of $3.8M by Town & Shore Associates. Actually, with so many luscious amenities, it was too heavy to flip. What a slice of rockbound coast! The estate at 878 Shore Road

nett’s former family fortress—and Channelside, designed by John Calvin Stevens. Dazzling, smoky views of Ram Island Ledge Light, Cushing Island, and the ship traffic entering Portland Harbor make this perhaps the finest of the elevated waterfront homes clustered along Shore Road as you approach Delano Park and Fort Williams. (he attended Deerfield Academy and Williams College before serving on a Navy destroyer during World War II) long before the transformation. He was in his eighties when he spoke to us:

“It was designed by Howard Pease. It looks like a John Calvin Stevens design but is not. It was never designated a historic house.” Who do you have to be to live in a

place like this? Holt told us his father was a classmate of FDR’s at Harvard. Before he relocated to New York for a starry career with AT&T, “my father and Sidney St. Felix Thaxter went into law practice in Portland.” The elder Holt was also secretary of the Maine State Senate, and Thaxter’s daughter, the actress Phyllis Thaxter, “was my first love,” Thurston told us. “She was so beautiful; so was her sister, Hilly (Hildegarde).”

rowing up, Thurston Holt was buddies with next-door neighbor John Gannett, Guy Gannett’s son. “He had a [toy] railroad that we ran along the rocks here, with bridges and trestles. Each of the cars was three-and-one-half feet long.” RAILROADED? So why did Darrell Mayeux sell the place in 2003? His answer at the time: “I retired [from Fairchild] midway through the project. I was the worldwide sales and marketing

to put the finishing touches on his Cape Elizabeth palace in the first place. Lawsuit notwithstanding, Mayeux loved his time at 878 Shore Road while in residence. “That whole channel along here is amazing,” he said. n the village, there are two candy stores—the one on Main Street with the spinning red stools, and soda jerks working the fountain, and the rustling newsstand, and the shelves of souvenirs everyone forgets—and the other one, the forbidden shop down the steep leg of the road with no name sliding toward the abandoned woolen mill on River Street. The merchandise in the other one collects dust beneath the curved glass of the wooden counters. Father tells us the candy there is museum quality—mallow cones and wax lips, marzipan and peppermint straws, Turkish taffy and cream filberts and licorice pipes, and spearmint leaves, coconut watermelon slices, and bacon strips. The sign above the storefront is chipped gilt on blistered wood, illegible. The window is as black as an empty mirror. And it occurs to us that perhaps, after all, this is where fireballs go to die. Nonetheless, this is where we head. Banana Bikes, Squirrel Nut Zippers, Goo Goo Clusters. Down the acute spur of No-Name Road. The door opens with a bell that does not jingle. It echoes in the close room that swirls with fog, or smoke, or ghosts, or all three. Burnt sugar scorches the air sifting with confectioners’ sugar. And then he, the Confectioner, wedges through the cloying particulate air. He stands behind the counter and wordlessly asks, “Yes?” We cannot make out his face through the sweet haze of desire, but then it begins. The peach stones hail. The sweetmeats rain. The Tootsies Roll. The circus peanuts softly pelt the floor. Divinity: egg whites and sugar. Pecans and vanilla. We eat sugar and dust, and dust and sugar. Oh, Baby Ruth. Oh, Henry. n
