As the son of Rory Byrne, I have been involved with the family business all my life. My siblings and I were the first Yetis and Scallywags, I’ve enjoyed ski guiding with clients and now as a member of the management team as we lead Powder Byrne into the next generation in exciting new directions. Like many clients, I have fond memories of travelling with PB over the years; Yeti races, snorkelling through the caves in Elba, even the notorious helicopter evacuation of Grindelwald in 1999. Family values and attention to detail are still at the core of what we do. Our holidays and award-winning programmes have been created with decades of family experience and I’m passionate about continuing these traditions. SWITZERLAND LEADS THE WAY BACK FOR SKIERS In early June, Forbes Magazine published an article entitled ‘The 100 Safest Countries in the World for COVID-19’. The article speaks of a report published by a respected consortium of companies and non-profits which looked at over 100 quantitative and qualitative measures to assess the capabilities of countries to handle the ongoing threat of Covid-19. Considerations such as effectiveness of government intervention and protection measures, quarantine efficiency, monitoring and detection, overall strength of health services were all important factors. Switzerland was the No.1 safest country in the world. Switzerland, where the majority of our winter programme is located, has always enjoyed an enviable reputation for quality, efficiency and security. This important recognition for the country’s effectiveness has inspired a new initiative in the tourism and hospitality sector with the launch of its ‘Clean and Safe’ campaign, announced in early June. The Clean and Safe campaign consists of detailed online information, as well as an accredited marque which signifies to guests that the hotel or service provider has made a conscious commitment to comply with new protection guidelines. We welcome the initiative and are working closely with our friends at Switzerland Tourism to promote this message and the reassurance it will bring for our clients returning to Swiss slopes this coming season.

their plans, the email continued, “We are preparing to welcome you and your families and deliver you an unforgettable holiday on the slopes.”

ast Saturday I was standing at the top of a snowy mountain in the small ski resort of Arosa in Switzerland, a glorious view before me. The Alps had just had a phenomenal amount of snow, with Switzerland especially benefiting, the pistes ahead were perfectly prepared, and the sun was out, creating sparkles in the cold air. It was one of those days when you feel lucky to be skiing.

The trip was on. So last Friday, we packed our bags, including plenty of hand sanitiser as well as the more usual ski safety kit of helmets and avalanche transceivers, and set off for London City airport hotly anticpating taking advantage of Switzerland’s great snow conditions, which look set to continue to Easter.

And yet, before the trip I was, like everyone with a ski holiday booked in the near future, watching the effect of coronavirus on ski resorts, checking advice on whether I should go. I’d been concerned to see reports from a chalet in France in February, and, last week the then impending, now confirmed, closure of ski resorts in Italy. Cases elsewhere in the Alps had also risen sharply, including Switzerland and Austria. But I was keenly looking forward to the trip, and had no plans to cancel unless I had to.

During the journey to Arosa, I used my own sanitiser regularly, and took advantage of dispensers, much in evidence at the airports, though not on public transport. I also became acutely aware of all the necessary interactions of travelling - handing over my passport, shuffling trays on the way to departures, opening doors with handles, taking a drink and a sandwich from the air steward – and noticed that more people than usual, from the check-in agent at the Swiss counter onwards, were wearing protective gloves.

My partner and I travelled with tour operator Powder Byrne, which specialises in luxury tailor-made holidays to resorts in Switzerland and Austria, flying Swiss to Zurich, catching a train transfer to the centre of the resort, and staying in a self-catered apartment. And I was glad British tour operators are being proactive with information about coronavirus.

They weren’t, however, wearing masks - and nor were we; I’d followed the advice that the hand sanitiser, frequent and thorough hand washing, and avoiding touching my face, was more useful. The only people I saw wearing masks during the whole trip were Asian travellers in Zurich airport on my way back.

Shortly before the trip, Powder Byrne sent an email reassuring me that it was closely following the Covid-19 situation, and following guidance from the UK Government, the foreign office and the travel trade association ABTA. And, since travellers to Swiss resorts didn’t need to change

chef and delivered, beautifully presented, for us to heat and serve ourselves. It was delicious - and while I was glad to know that behind the scenes the company has reiterated the importance of good hygiene practice as well as training staff to recognise coronavirus symptoms and advise concerned clients, I could also forget about it and enjoy the food.

Snow was glittering in the air, the trees were full of snow, and all I was thinking about was the views and the upcoming thrill of skiing in these fantastic conditions. There were plenty of other skiers on the trains, including many already wearing full ski gear - Zurich is handy enough to Arosa, and several other resorts in Switzerland and Austria, to make a weekend trip possible. Powder Byrne is the only UK operator that goes there, housing guests in self-catering apartments and hotels, and offering a high level of service, including guiding around the pistes and children’s clubs, along with daily visits to accommodation to arrange the next day’s plans.

The only change to my trip was that my return flight was cancelled, and I was rebooked on an earlier flight which I took to be because Swiss, like other airlines, were consolidating empty planes – and it was busier than the flight out. And, while it was still busy enough, Coronavirus had also made the resort quieter. On an evening outing to Arosa’s slope-side five-star Tschuggen Grand hotel, to use the extensive spa and eat at its ‘fine fast food’ Basement restaurant, the manager told me that, like all the hotels, it has had cancellations, no doubt from people who like me had been concerned about Coronavirus, but made the opposite decision.

There’s also its useful MyPB app, which as well as holding information like flight and accommodation details, information on the resort, and how to contact the concierge service, had daily updates of the latest coronavirus advice, and details of the protective measures the company had in place.

And the same is true for Powder Byrne. In a statement, Powder Byrne’s managing director Simon Meeke told the Telegraph, “Unfortunately we have started to receive a small number of cancellations for families skiing over Easter.”

The most noticeable of these was that while resort staff shook my hand on arrival, this was swiftly followed by the offer of hand sanitiser in the car - repeated every time we took Powder Byrne up on its in-resort driver service. Our apartment was spotless, though I was more immediately struck by full-length picture windows with fine mountain views, our welcome hamper of food and drink, and the need for a fast turnaround so we could go skiing almost immediately with the Powder Byrne guides.

While Arosa is not well known to UK skiers and snowboarders, it is linked by lift to neighbouring Lenzerheide, and the two share a sizable 225km ski area. We found no queues, fairly quiet slopes - not so unusual in Arosa – and, as anticipated, great snow. And, travelling the whole area on Saturday, soft snow giving easily under skis under blue skies, then eating lunch and clinking wine glasses on the sunny terrace of the Mottahütte made me so glad I hadn’t given up on the trip - this was business as usual. We weren’t alone - restaurants on the mountain were humming with life, and at the end of the day we joined an enthusiastic crowd for music outside the mid-mountain Carmennahütte and rounds of creamy, nutty secret-recipe ‘Munggapfupf’ shots.

But with the current travel advice, many, like I did, are still planning to go ahead. “The vast majority of our clients are still planning to travel and we look forward to welcoming them into their resorts and delivering a fantastic experience,” Meeke said. “Arosa is no exception, there are no travel restrictions in place at the moment.”

I used hand sanitiser regularly, but otherwise, the trip was like most others. Every day I couldn’t wait to draw the curtains to see what the skiing day would hold - more snow and powder turns on Sunday, Monday and Tuesday - and evenings were taken up with, eating in or out, visiting a spa, window shopping Arosa’s long main street, and relaxing back at the apartment.

Our Easter programme in our Graubunden resorts in Switzerland are all fully operational and we hope to operate our full programme during the Easter holidays.”

Whilst we always deliver serious instruction and our objective is to teach the building blocks for a lifetime of enjoyable skiing, we do so in a way that doesn’t feel like ‘ski school’... after all, this is their holiday too. We find many children pick up the essential skills of balance and spatial awareness on the slopes through play and discovery, rather than repeating drill after drill after drill… and this theme runs through our approach before novices are ready to be pushed a little further.

We believe that the first experiences on the slopes should always be fun, and we try to remove any worries or pressures that might distract them. The first experiences are crucial of course, and for those who are ready at age 3 to take their first tentative steps on skis, our carefully designed Yeti Primer programme gives them the perfect start. Over three decades it has been tried, tested and developed with the input of our most demanding clients (the toddlers, of course).

As they progress with their skiing, we ramp it up with more technical sessions and stronger skiers will be pushed to discover new skills and disciplines as we seek to make them rounded skiers in all conditions and terrain. Mountain awareness and safe skiing is the foundation of our SnoZone (10 - 14 years) and PB Ski Academy (14 years +) programmes which offer structured group instruction through to their teenage years. ANDERMAT T AWAKENS Andermatt is part of Central Switzerland’s largest ski domain with a linked ski area of 180km between the areas of Andermatt, Sedrun and Disentis. Over the past couple of years the Scandinavian resort operator SkiStar has been involved in re-modelling the ski area and creating new lifts to connect the zones of Natschen and Sedrun and Disentis. The ski area has been rejuvenated to a level that can now rival other Swiss mega-resorts, and the sleepy, poorly-connected resort that time forgot for over 30 years is a distant memory.

We’ve had our eye on Andermatt for a few years, knowing that the exciting investments in hotel facilities, private accommodation and ski infrastructure would create an exciting new opportunity for skiers. With the opening of the world-class Radisson Blu and The Chedi hotels we’ve created a programme for half term that will appeal to skiers of all levels; from the gentle nursery slopes of Natschen, newly linked by new ski lifts and served by new slope facilities, to the off-piste paradise of the iconic Gemstock, one of the most celebrated mountains for serious skiers in Switzerland. Andermatt is one to watch...

The iconic Gemstock mountain that dominates the eastern skyline at 2963m offers steep descents for confident skiers and is home to some of the worlds best off-piste. The top station is one of the great Alpine viewpoints and gives you the option to break right and off towards the Bernhard Russi run (named after the famous ski-racing hero) and the famous off-piste routes such as Giraffe and Geisberg. Turn left from the cable-car and enjoy the beautiful St Anna Gletscher red run which drops 3.5km down to the base.

Andermatt sits at a dramatic crossroads between 4 valleys in the centre of the St-Gotthard Massif, at an altitude of 1437m, within convenient reach of Zurich by road and rail. It is surrounded on all sides by spectacular views of the high altitude passes which climb off in different directions: the Furka Pass, the Oberalp Pass and the St-Gotthard Pass. Thanks to these passes travellers have been journeying through these valleys since medieval times, enjoying a warm welcome and hospitality from the friendly locals in all weathers. With close associations to the Swiss military since the late 19th century the village was all but cut off as a garrison town until the end of the Cold War and it was generally overlooked by tourism. However, since the departure of the Swiss army and a significant investment and re-generation programme over the last decade thanks to the charismatic Egyptian-born billionaire Samih Sawiris, everything has changed. What awaits you now as you climb up the steep approach from Gotshenen past the historic ‘Devil’s Bridge’ is nothing short of a revelation.

While you pick your line, younger skiers will be in their element on the Natschen nursery slopes, accessed by quaint mountain train up from the village, whilst improvers will make their way across the new ski terrain linked with Sedrun made possible by two large chair lifts which open up some great cruising terrain. For a full day adventure you can ski all the way to Disentis before taking the train back to Andermatt, enjoying a little après-ski on the way back home to complete a memorable day.

olo Valley opened the gates to their purpose built ranch in Sotogrande, Spain in the summer of 2015 with the dream of introducing new players and families to the thrilling, fast paced sport of polo. Born out of Rory Byrne’s own experience of learning to ride and play polo and his son Christian’s desire to share the sport he loves and make it more accessible, Polo Valley has quickly established itself as a one of a kind polo facility and a unique holiday destination for families to saddle up and experience ranchlife in authentic Andalucia. With first-class stabling, livery and training facilities, home to over 50 expertly trained ponies, a team of grooms and polo professionals, you’d be forgiven for thinking that Polo Valley is a no-go-zone for anyone other than polo aficionados. This however could not be further from the truth. Asado Asado is far more than a BBQ as we know it. Asado is the technique and social event of grilling meat over an open fire. Tracing its roots back to the days when huge herds of wild cattle roamed the pampa region and a great source of national pride in Argentina, Asado has become popular across the Spanish speaking world. A fire of charcoal and dry seasoned wood is lit under a grill called a parilla. Once the flames have died down cuts of meat are placed on the parilla and grilled slowly for 1-2 hours above the smouldering embers. Top tip: Turning and adjusting the meat is frowned upon, simply sit back and enjoy the experience with a glass of wine.

The ponies are the beating heart of life at the Finca and the daily routines of the grooms, the ponies and polo professionals create a special buzz and an atmosphere that is exciting to be a part of. In the evenings local players arrive to take part in competitive chukkers, a great spectacle to watch with a gin & tonic in hand from pitchside seats. With the backdrop of ranch-life and the nature and peace of the countryside setting, the Finca provides the perfect location for a laid-back family holiday of discovery and adventure. Popular family activities include horse riding lessons from beginner to expert, guided hacks in the surrounding countryside combined with picnic stops, river rides that include dipping in and out of the Guadiaro river (a highlight for the ponies and their riders), polo lessons and taster sessions for those who can’t resist giving it a go (particularly popular with competitive dads) and hands on horse-care sessions for children with the grooms.

Guadiaro River Ride The Guadiaro river ride is an enjoyable one hour loop that sets off from the Finca and takes you on a winding and gentle hack through the peaceful Andalucian countryside towards the distant hills. As you meander down the dusty path your guide will lead you through the undergrowth and on to the banks of the Guadiaro. The ponies love this part of the hack and they are very sure-footed over the uneven terrain, responding to gentle adjustments on the reigns, happy to take it slow or slightly faster if you’re feeling confident. Once you’re in the river the fun really starts and the ponies splash and dip their heads to refresh themselves. The river is mainly very shallow and it’s great fun to trot or even gallop through the babbling water. Your guide will help you navigate any slightly tricky sections, they know the surrounding countryside like the back of their hand and have a deep understanding of each and every pony on the ranch.

Away from the Finca, Sotogrande is a first class holiday destination and sporting playground with so much to see and do. There are seven excellent golf courses within the immediate vicinity, including Real Club Valderrama, considered one of the best courses in the world, host to the 1997 Ryder Cup and a must play for avid golf fans. We recommend spending a family day at La Reserva Club Sotogrande, an exclusive country club in the hills of Andalucia with incredible facilities and service to match. The star attraction is the ‘only private beach in Spain’, a man-made lagoon surrounded by 2,800 square metres of sandy beach and separate 17,000 square metre sports lagoon providing the perfect setting to enjoy water sports including kayaking, stand up paddle boards and Mirage Eclipse water bikes. No engines are allowed on the lake, so peace is secured and the environment protected.

Further afield we can arrange day trips to captivating Spanish cities such as Jerez and Seville. Head to Jerez in the province of Cadiz for a taste of sherry and flamenco dancing. This ancient city is a great day trip from Sotogrande and is home to tours of bodegas and cellars hosting sherry tastings. Life in the Mountains with Stefan Noll At the helm of the celebrated 5-star Tschuggen Grand Hotel is internationally experienced hotelier, Stefan Noll. Having travelled all over the world working in the hospitality industry he knows what it takes to successfully run a first-class hotel. We had a chat with Stefan to find out a bit more about his experience and what drew him to Arosa and the Tschuggen. 48

What do you love about working in the mountains?

Tell us a bit about your background and previous experience?

Where is your favourite place to ski?

I have been General Manager of the Tschuggen since 1st September 2017.

I love nature and I very much enjoy walking in the mountains with my labrador Luna. Enjoying the scenery, wildlife and nature in all its glory!

I started my career in the hospitality industry with an apprenticeship as a hotel specialist in Germany. Following this three year programme, I moved to London, where I got a job as Assistant Back of House Manager at the Mandarin Oriental Hyde Park. After which I was promoted to Head of Department and a year later I took over the Mandarin’s Michelin-star restaurant Foliage, this is now known as Heston Blumenthal’s restaurant. I had always wanted to work in Asia and since I could not get a transfer to Asia with Mandarin Oriental, I registered with a London based headhunter, who found me a job as Club Manager at The Leela Goa in India. I was responsible for an exclusive part of the hotel with private Butler service, a private beach and pool, as well as a restaurant dedicated to the Club guests. After two years I was offered Rooms Division Manager at The Legian in Bali, which was part of GHM Hotels as was The Leela. After a year at The Legian, I was promoted to Executive Assistant Manager and became the property’s No.2. In this position I had a lot of exposure to Jamie Case, who was the Executive Vice President at GHM, he mentored me for one year and eventually offered me the General Manager position at The Chedi Club Tanah Gajah, Ubud, Bali. I was very happy to be given my first GM role at 32 years. The Chedi Club was a dream come true, I had a great team, a wonderful property and some of the best owners to work with. Nevertheless, after 2 years I felt that I wanted more than the 20 Villas at the Chedi Club. When GHM was looking for a new General Manager for the Chedi in Chiang Mai Thailand I was offered the position. During our time in Thailand, my wife became pregnant and after one and a half years in Thailand, we decided to move back to Europe. GHM was kind enough to facilitate the move with a position as Hotel Manager for the opening of The Chedi in Andermatt. After a year and a fabulous opening of a great property, I moved to the Grande Dame of St Moritz, the Badrutt’s Palace where I became Executive Assistant Manager. St. Moritz was fabulous, an amazing destination, but after three years I wanted to be responsible for my own operation again and when the Tschuggen was looking for a new GM, I applied and fortunately got the job.

I am more of a cross-country skier, but whenever I get a chance I ski in the Tschuggen area with my son.

What influences have you brought to the hotel? Hard to tell, I guess you need to ask the guests!

What changes has the industry seen in Arosa?

We have seen a steady growth in room nights over the past years.

In your eyes what makes Arosa a special destination?

Arosa is a very attractive destination which caters to many needs. One of the biggest advantages is the accessibility of most mountain restaurants by foot. This is especially good for couples where only one skis - it provides the perfect compromise where you can meet up for lunch even if one person isn’t skiing. The family-friendliness of Arosa also makes it very special in my eyes.

What experience do you want to give your guests when they stay at your hotel?

We want our guests to feel at home and be comfortable at the hotel. Alongside being a 5-star hotel we try to foster a cosy yet sophisticated environment.

What new developments are there to the hotel and service this year?

During the spring off-season, we renovated the floors and now have new wooden floors. Furthermore, the rooms have also been equipped with beds made out of all-natural products.

Where do you like to spend your holidays?

I am a keen road cyclist, so I like to go to places where I can follow my hobby. Last year I spent a week cycling in Spain, which was great.

Which is your favourite room in the hotel?

My favourite room is 808, it was the first room I stayed in when I came for my interview. I guess it’s the lucky double eight which helped me get the job!

What has been your favourite moment working at the Tschuggen?

What is your favourite dish on the menu in the hotel?

My favourite moment at the Tschuggen was when one of my favourite and most regular guests from Chiang Mai came to stay in Arosa. In Chiang Mai, he supported an elephant orphanage with a worldwide campaign. He stayed with us very regularly and for several weeks at a time. I knew he used to stay in Arosa many years back, but one day, he checked into the hotel and it was a great surprise reunion after all those years! We have now stayed in touch.

My favourites change with the menu, currently it is the Japanese Ramen soup at La Collina - it is absolutely delicious!

Each route is different, some quite short and others much longer with varying levels of difficulty. You can build your confidence on the gentle routes and progress at your own speed. Some of the via ferrata routes work really well in combination with e-bikes, you can ride out from your hotel enjoying the spectacular scenery without having to rely on your own legs for all the power! he year 1843 saw the creation of the very first iron path - a route on the Dachstein in the Austrian Alps. As the birthplace of via ferrata, Austria still has the most number of routes today, with an astonishing 741 in total. Coming a close second is Italy with over 400 paths to choose from. More than half of these and we think the best of all are located in the beautiful Dolomites region. The Italian via ferrata was born during the First World War, over half a decade later than Austria. They were created to help get soldiers and equipment into strategic positions in the mountains by traversing along the craggy peaks using the steel cables and ropes. Today the routes have been transformed into a fun and popular holiday activity for active families and adventurous individuals. The routes unlock the mountains of the UNESCO world heritage park around Cortina and you can experience a connection with the mountains that you would otherwise never have.

Tenente Fusetti on Sass de Stria & The WWI Museum MEDIUM - FULL DAY Another of our favourites and a slightly more challenging route takes you on a full day via ferrata climb. After a hearty breakfast, fuelling up for your active day ahead, one of our team will drive you up to the Pass Val Parola. This is where the largest openair museum from the First World War is located. The route begins with a walk up through a tunnel blown out of the mountain during the war. Once you have reached the other side and turned the corner you can clip into the start of the via ferrata. The 2 hour ascent takes you through the old Austrian army trenches, a surreal experience seeing the harsh reality of the conditions experienced during the war. Once you have reached the top, a well-deserved break is in order. Sit back, relax and enjoy the sensational views across Cortina and the surrounding peaks. After a one hour walk back down you can enjoy a delicious Tyrolean lunch at one of the local Rifugios and try the regional delicacies, canelderi and spaetzle. If you are hungry to find out more about the historical site, the First World War museum is a great option to round off the day and your guide can organise access before heading back into Cortina. BEST FOR History fanatics and adventurous families

Giovanna Barrati, Fanes Waterfalls EASY - HALF DAY WITH E-BIKE As a gentle introduction to via ferrata we recommend starting on one of the less challenging routes. Our favourite is a half day adventure to Fanes waterfall. To reach the starting point you can enjoy a fun hour’s e-bike ride from your hotel with your guide. Once you are at Parcheggio Pian de Loa you will get into your harness and clip onto the via ferrata cable and follow the path - meandering along the gushing Rio di Fanes eventually arriving at the dramatic Fanes waterfalls. One of the best parts of this route is going underneath the first cascade, with the water plummeting down around you, it’s an experience not to miss. Next is a gentle hike along an old military road and on through a forest into Valle di Fanes which opens out onto a deep gorge carved away by Rio di Fanes. A good point to take a break and take in the surrounding scenery is at the top of Croda Rossa. At 1,480m it is a fantastic viewpoint. On your return there are various options for lunch at one of the local mountain huts or you can return to your hotel for an afternoon relaxing in the spa. BEST FOR Families or your first time doing a via ferrata.

Gianni Aglio DIFFICULT - HALF DAY This via ferrata leads up to the highest of the three Tofane mountains. Beginning with a long and difficult traverse, this route is another challenging one - recommended for the well-trained and more experienced climbers. Starting at 2,900m the views all the way along the route are spectacular and you really will feel on top of the world. After a couple of airy and difficult traverses along the East and North faces of the Torre you will reach the large Bus de Tofane window at 2,920m. Here there are links to Rifugio Giussani and Rifugio Dinona where you can have a pit stop if you fancy a refreshment before continuing up to the top. The final stretch to the summit involves tackling a couple of vertical drops using ladders and navigating a rocky path passing an avalanche barrier. Before descending to Rifugio Cima Tofana at 3,191m where you can enjoy a refreshing drink to celebrate your achievements and then jump in the cable car back down. BEST FOR Well trained and experienced climbers

Power Hour (1.5 hours) with Maria & Andrea Ferrari DIFFICULT Added to the extensive list of via ferrata routes in 2015 the new Andrea e Maria Ferrari via ferrata is one of the shortest routes you can do. It is a great option if you are pushed for time but want to squeeze in a final exciting climb. Although short, this isn’t for the faint-hearted, it is a challenging climb and recommended for the super fit and more experienced. This route scales the right hand side of Torrione di Pomede with a 150m vertical climb of the rock face using 2 footbridges, steel cables and various steels and pegs. This is immediately followed by a 100m scramble along the ridge to reach the crest, Ra Bujela. Peaking at 1,875m, the views are fabulous and you are rewarded with a picturesque descent through the meadows beyond. BEST FOR Fitness enthusiasts and adrenaline junkies

In Search of Sake T

he Japanese have been producing and enjoying sake, a fermented rice drink, for over 2000 years and it is an integral part of the national lifestyle and culture. As international tastes have embraced Japanese cuisine so dramatically in recent years - it is no surprise that the nation’s favourite drink, which has always been carefully developed as the perfect accompaniment to sushi, sashimi and spicy ramen, for example, is now enjoying worldwide attention with an increasing interest and appetite. New styles have been developed to appeal to modern tastes, including sparkling varieties which are light, dry and refreshing. The UK is now one of the fastest growing markets in Europe, along with Germany, so don’t be surprised to see sake appear on more wine lists and dinner tables in the coming years. IN SEARCH OF SAKE

Such is the appeal and interest in this often misunderstood liquor that the respected International Wine Challenge (IWC), which has been benchmarking and judging global wines since 1984, included a sake competition in 2007. Over the past 5 years, sake from the Tohoku region in north east Japan, which hosts many of the experiences in our Japanese programme, has received top awards and recognition. We’re delighted to include sake discovery experiences in our programme so you can discover more, meet the producers and learn how to drink it with the freshest and most delicious fish and seafood - just how it is supposed to be enjoyed. The story of sake is rooted in the early origins of Japan, having been produced for over 2500 years, but for much of the 20th century it was a market in decline. Over many centuries production has grown from a small cottage industry to embrace industrial technology, however this did not stop the number of breweries falling from above 10,000 in 1926 to a mere 1700 by 1997. Production levels peaked in the 1970’s when mass-produced sake started to lose appeal for the younger generation as competition from wine and beer and other spirits increased. This mini-revolution has favoured breweries who have turned their attention to the production of high quality, premium grade sake (previously only available to very few), and the future looks to be following the trend of other premium global spirits such as gin, whiskey and vodka. Specialist producers now place more emphasis on traditional, time-honoured methods that involve more effort, allowing brewers to develop distinctive house styles and precisely control flavour, character and strength, reflecting and showcasing their craft and skill. The Tohoku region, made up of six prefectures: Aomori, Akita, Iwate, Yamagata, Miyagi and Fukushima, has a long and celebrated tradition of sake production, and the port town of Shiogama is home of the award winning Urakasumi brewery, one of the most respected producers in the country. Founded in the Edo period in 1724 Urakasumi

(lit. ‘Misty Bay’) remains a family business and a leading light in the field of innovation, having produced distinctive ranges such as their flagship Urakasumi Zen, a sake so successful it has influenced the direction of the whole industry in recent years. Over the course of three centuries the brewery has prospered and expanded to become a globally recognised brand. Currently headed by president Koichi Saura, 13th generation of the family, he has brought his knowledge and experience of previous roles in Tokyo and New York to return home to lead the family business which also includes the Yamoto brewery in neighbouring Higashi-Matsushima. Under his stewardship, the combined awards for these two breweries include more Gold medals and Japan Sake Awards than any other producer.

majestic tuna and swordfish as well as crimson octopus and the lesser known sea pineapple - an unusual local delicacy, before sitting down to probably the freshest sushi and sashimi you’ll have ever tasted in a hand-picked local restaurant. After lunch you can take a stroll to the shrine of Shiogama Jinja, sitting above the town on a rocky outcrop which gives breathtaking views over the bay studded with hundreds of small pine-topped islands as far as the eye can see. This is an ancient site steeped in history and ritual and legend has it that the Gods taught the local people how to harvest salt from boiling seawater in huge vessels. In gratitude, around 800 AD the area was so named (lit. ‘Shio-gama’ means salt cauldron) and the shrine was dedicated to salt production and the fruits of the sea. To this day the shrine is known as the protector of fishermen and is honoured by seasonal festivals throughout the year. As part of a generations-old tradition, people come to the shrine and dedicate sake to the Gods in the hopes of a good harvest. Urakasumi Brewery has been honoured to present their sake to the shrine as part of this ritual. Perhaps it is most spectacular in spring, when the Hana Matsuri, the Shrine’s rich variety of cherry blossoms, are in full bloom. Watch out for the Shiogama-zakura cherry with its distinctive ball-like double petaled blossoms. Sitting under the cherry blossom soaking up the fragrance in the immaculate gardens with the view over the bay and sipping some of Urakasumi’s award winning sake produced just a stone’s throw away is an experience you’ll never forget.

The ‘Sushi Capital of Japan’ Discover the story of Shiogama, the secrets of the Urakasumi brewery and treat yourself to the freshest sushi and sake on a gastronomic adventure in Tohoku, just a few hours by bullet train from Tokyo. We can create bespoke experiences including guided walking tours of the fish markets, sake breweries and historical shrines of Shiogama, followed by a delicious lunch in one of the local sushi restaurants where the produce comes straight from sea to plate. The fishing fleet of Shiogama town fishes some of the most fertile waters off north eastern Japan and lands the largest catch of maguro tuna in the country. Morning tours of the wholesale market are available with interpreters, offering you a birds-eye view of the catch of the day as it is winched in straight from the boats and prepared for the daily auction. Brokers and buyers inspect the enormous glistening tuna, cutting into their tails to assess the quality and colour of the deep red flesh - these are highly prized tuna sold for huge prices and will soon be on their way to the tables of the best restaurants throughout the country. Shiogama has the most sushi restaurants per capita of any town or city in Japan, earning it the accolade as the ‘sushi capital of Japan’. Start the day with an accompanied early morning tour of the Nakaoroshi Fish Market. Wander the aisles marvelling at exotic seafood, shellfish and the

resorts in terms of skiing and snow quality but also a town that is so rich with history and cultural heritage that it’s in a league of its own. For any skier looking for a more authentic experience, an alternative to the international-styled resorts, you can feel confident of what awaits you in Zao.

Skiing in Aizu, Fukushima prefecture, Tohoku

There are 22 ski resorts in the Aizu ski region, and given the quality, reliability and quantity of snow cover, it’s hard to understand why they are still relatively unknown outside Japan. Two of these resorts, Alts Bandai and Urabandai are located on the slopes of Mount Bandai, commanding spectacular views south over lake Inawashiro. The region is famed for its smooth, dry ‘micro-fine’ powder snow which blows in from the Sea of Japan and is one of the snowiest areas of Japan. The snow is some of the driest on earth, so dry in fact, that no matter how hard you try, you won’t be able to make a snowball! Along with spectacular views of the mountain range, the stand-out aspect of these Aizu ski resorts is their quiet slopes, and compared to skiing the more popular resorts, you’d be forgiven for thinking you’ve arrived in your very own private ski resort. Skiers looking to blaze their own trails and find their own slice of powder paradise may well agree they have found the holy grail in Aizu.

Skiing in Zao Onsen

The ski resort is the largest in the Tohoku region offering a total of 57 slopes served by three gondolas and other lifts and is renowned for its amazing powder snow. It is well connected, with different inter-linked ski zones, offering slopes for all abilities from beginners to experienced skiers. Those in search of distance will not be disappointed as Zao offers a lot more than most. The Juhyogen slope is the longest intermediate slope in the resort offering a run of just over 10km from the top to resort centre. The first 2km are through the majestic ‘snow monsters’ on the highest slopes before you work your way down through a variety of terrain on your way to the finish at the village centre. There is steep gradient to play with here, including the popular Sailer piste, named after the renowned Austrian skier Toni Sailer who was a regular visitor to Tohoku. Sailer was the first to win 3 gold medals for Alpine skiing at the Winter Olympics of 1956 in Cortina d’Ampezzo and with more than 170 major victories to his name, it’s not hard to see why the Japanese have celebrated his love for skiing in Zao with a memorial in his name on the mountain. Should any reassurance be needed, such a key association with one of Austria’s most celebrated skiers should give an indication of the treats that lie in store for serious skiers.

Convenience is king for many skiers. Together with our local specialist partners, we’ve researched and visited two skiin/ski-out hotels in the resorts of Urabandai and Grandeco, each within a 20 minute drive and in particular the Grandeco Tokyu Resort impressed, with beautiful rooms, facilities, a choice of restaurant and an accommodation style with a great mix of Japanese and western influences. This would be a great base for a family or friends, as the slopes are literally from the door, the gentle lower slopes provide plenty for beginners and intermediates to build their confidence, whilst more confident skiers will be spoilt for choice with the options to explore this and other neighbouring resorts. Urabandai resort will no doubt play an important role as we continue to expand our skiing programme in Tohoku.

There is a considerable offering for non-skiers too in Zao, with cat-tours of the snow monsters, lovely cross-country skiing through the protected forests of Japanese larch, and plenty of marked winter walking paths, not to mention the Onsen baths to while away your time. The village centre has a fantastic modern sake museum and tasting bar which celebrates the many award-winning sake producers of the Tohoku region and this, along with a range of bars and restaurants offer attractive après-ski options in addition to the excellent hotel restaurants. Night skiing is available on the Uwanodai piste, the original slope of Zao, which was the site of only the 2nd ski lift to be constructed in the whole of Japan.

Getting to the resorts in Aizu is surprisingly convenient from Tokyo thanks to the efficient shinkansen (bullet train) service. From Tokyo it’s a relaxing 90-minute journey of only 4 stops to Koriyama station, where you’ll be met by a private driver who, in just 1 hour, will deliver you safely to your hotel in the beautiful natural surrounds of Mount Bandai. What you’ll find is a village that is deeply connected with its traditions and heritage and proud to preserve the unique Alpine village atmosphere and aesthetic (no concrete developments permitted here). Many people remark that the village is much smaller, friendlier and more down to earth than they imagined. Of course, the top hotels and chalets offer the extraordinary quality and luxury that you’d expect, but there is great variety in style and sure to be something that suits your taste. Skiing in and around Gstaad

Gstaad offers winter enthusiasts a choice of several ski areas with a particular focus on gentle intermediate slopes. For those in search of adventure, you’ll not be disappointed. Head to Glacier 3000, just a short journey from the village and included in your lift pass. The glacier offers excellent snow conditions and a variety of runs. On your way back down, experienced skiers will enjoy tackling the long winding black run behind Oldenalp or the impressive new red run before joining piste 100 for the final descent into the valley. Skiers will find plenty of scenic rolling runs on the Rinderberg, Lengebrand, Saanerslochgrat, Hornberg and Horneggli ski areas. For epicures, Gstaad is a dream of mountain side restaurants for long lunches and no trip is complete without a visit to Eggli-La Videmanette and taking on the longest run in the region at 10km. Challenge yourself on The Tiger Run, the legendary steepest ski slope, before a lunch to die for on the sunny terrace at the Wasserngrat (leave room for the amazing home-made meringues!)

Ski touring and adventures

Gstaad is well known as a ski touring destination, appealing to those with discerning tastes. The valleys and passes linking several separate chalet villages in the region create a natural playground for ski tourers who are spoiled with many picturesque tracks. Those looking for a wide range of activities beyond the slopes will not be disappointed. Skiers and freeriders regard the destination as an insider tip thanks to quiet slopes. Besides the variety of routes, from the simple Voralpenberg to the demanding high-altitude ski tour, there are also excellent heliskiing options, with no fewer than six landing sites to explore with your local guide.

Family tobogganing and snowshoeing

Gstaad has a variety of great toboggan runs, no fewer than six to be precise, with several mountain restaurants and snow bars along the way to take a break and enjoy the views. Or slow down on a snowshoe tour and get close and personal with the landscape and discover more.

1. Moving towards an all electric vehicle fleet - we’ve introduced 2 electric Smart cars with more electric vehicles in the pipeline. 2. Minimising our resort waste with a focus on the 3R’s: Reduce, Reuse, Recycle. 3. We’ve removed single-use plastic bottles and now gift reusable water bottles for all our clients in resort. 4. Our retired ski jackets and equipment are reused by Kenya Treks, a Responsible Travel member. 5. We’re encouraging our hotel partners and suppliers to be more environmentally responsible and celebrating their achievements.
