When owners Tripp Lindley and Peter McLaughlin launched Tortugas nearly two decades ago, they were told they “wouldn’t make it in this town.” Yet they stuck with it, focusing on fresh seafood in a Caribbean/Cajun style. “We are happy to represent the independent food market, proud to be one and to operate alongside the others,” Lindley said. With such favorites as jambalaya on the menu since its inception, Tortugas also offers a changing variety of fresh fish on its chalkboard menu. With little staff turnover, customers often request wait staff by name, which enhances the experience, said Lindley “This town’s been great to us, has embraced us, we really feel a part of it,” he said.

Having the best steak in town, said Texas Roadhouse managing partner Clint Hacker, comes down to the quality of the steak. “We hand cut our steak every day in 34-degree coolers,” he said.

Everything at Texas Roadhouse is made from scratch, down to the croutons and salad dressing. “We’re not open for lunch because we’re here working for dinner,” Hacker said. “That’s part of our story.”

The biggest seller is the six-ounce sirloin, which comes with two sides for $9.99, a “great value,” according to Hacker

All condiments are served cold on ice, adding to the flavor, Sun said.
