Aside from the health benefits, Colicchio sheds light on the traditional Prosecco-making process, explaining that “most Proseccos are made from the glera grape, machine-harvested before full maturation, resulting in grapes lacking natural sweetness. To compensate, sugar is added, creating a quicker, more cost-effective process.”
Prosecco Zero, however, takes a different route. “The grapes are left to ripen naturally on the vine for an extended period, creating a vintage after each season,” Colicchio continues. “The hand-picked grapes are fully ripened, ensuring they are natural sugar grapes. The meticulous winemaking process, including a secondary fermentation at -4°C, results in a product that stands out for its quality and taste.” Colicchio emphasizes that no sulfites are added during this process.
Wirth recounts how a chance encounter with the creator of Prosecco Zero during a trip to South Florida sparked the idea to launch TAP Beverages and her resulting foray into the import business. As a self-proclaimed longstanding Prosecco lover, and with a background in health and wellness, Tracy was instantly enamoured with the product and sought to bring it to Toronto.
“I was certain there was a Canadian market for it among health-conscious individuals who still like to indulge,” she says. “And with Paul's extensive hospitality experience, I was able to bring it to Canada.” Thus TAP Beverages was born.
Since their first shipment of Prosecco Zero in May of 2023, the product has rapidly gained popularity, selling out their initial 176 cases in just six weeks.
