28 THE ROYAL’S NEW BLOOM Nestled within the grand, heritagelisted structure of The Royal, fleur is the venue’s re-born restaurant, a warm, candlelit space for midweek indulgences, celebratory dinners and in between. fleur presents a cuisine

unconstrained by theme with a soft spot for fine seafood and intricate minimalism. Executive Chef Chase Weber and Head Chef Shane Middleton encourage diners to savour tastes of the familiar and unknown with inventive offerings starring West Australia’s best produce.

“The menu has a touch of Japanese culinary inspiration, however we don’t align ourselves with a particular nation or style of cuisine. Living in Western Australia with access to amazing seafood and freshwater species it was a simple decision to promote the best we have locally - from Abrolhos Island octopus and scallops through to Donnybrook marron. Although, it’s not just seafood, with signature dishes such as Wagin quail and Margaret River Wagyu beef,” says Chase Weber. The carefully curated wine list reads like fleur’s soundtrack – interesting, eclectic, and designed to be thoroughly enjoyed. The wine list is predominantly Australian with touches of European and New Zealand influences. A short but concise sake list from some of Japan’s favourite distillers and a range of Mar-tinys and Snaquiris offer guests the option of trying ‘bite-sized’ cocktails before, during or after dinner. fleur at The Royal, 531 Wellington Street, visit theroyalhotelperth.com. au/fleur
